Abstract
Purpose
This study investigates factors motivating upcycled food choices and assesses the association between these factors and hesitancy towards upcycled food consumption in a Swedish population.
Design/methodology/approach
An online food choice questionnaire was used. Participants (n = 682) were categorised into Inclined and Hesitant groups based on their intention to consume upcycled foods. The factors motivating upcycled food choices were identified using explanatory factor analyses. Independent t-tests assessed the differences in the mean importance score of factors between the two groups. The association between upcycled food choice factors and hesitancy towards consumption was evaluated by logistic regressions (adjusted for sociodemographic characteristics).
Findings
The most important upcycled food choice factor in both groups was ethical concerns, followed by natural content, sensory appeal, price, healthiness, familiarity and impression. The Inclined group’s mean importance score for ethical concern was higher than the Hesitant group (pvalue<0.001) and, except for natural content, the mean importance scores for the other factors were higher in the Hesitant group compared to the Inclined group (pvalue<0.05). Participants who perceived ethical concern as an important factor had lower odds of hesitancy (Odds ratio = 0.39; 95%CI:0.26,0.59; pvalue<0.001), and those who considered sensory appeal an important factor had higher odds of hesitancy (Odds ratio = 2.42; 95%CI:1.62,3.63; pvalue<0.001) towards upcycled food consumption compared to participants who did not consider these as important factors.
Originality/value
This is the first study investigating health and non-health-related upcycled food choice motives using a food choice questionnaire. Identifying these motives helps food developers and researchers determine factors influencing upcycled food consumption.

Purpose
Hospitality companies increasingly sell their unsold, or so-called rescued meals, on food waste reduction applications (e.g. Too Good To Go [TGTG]). The purpose of this research is to explore the influence of product construal and benefit appeals on consumer evaluations.
Design/methodology/approach
Study 1 (N = 277 participants) is an online experiment with a 2 × 3 between subject design analyzed using ANOVA and planned contrast analysis. Study 2 is a 2 × 2 field experiment (N = 147 sold rescued food boxes) using chi-square tests for the main analysis.
Findings
This study finds that an abstract product description (e.g. a magic box with an opaque content) matched with an environmental benefit appeal renders significantly higher consumer evaluations in comparison to when the same product is paired with financial benefits. In contrast, a concrete product presentation featuring financial benefits as opposed to environmental benefits increases consumer purchase intentions and willingness to pay.
Research limitations/implications
We empirically show how the interaction and congruency between product construal and benefit appeals affect evaluations in a last-minute purchase context.
Originality/value
To the best of the authors’ knowledge, this is the first study to look at the interactive effect between product construal and benefit appeals in a food waste and technology context.

Abstract
Purpose
In this case study, we examine how a citrus peel valorising company based in the Netherlands was able to adopt a circular business model while navigating regulatory, managerial, and supply chain-related barriers.
Design/methodology/approach
In-depth, semi-structured interviews with key personnel in the company, notes from field observations, photographs of the production process, and documents from a legal judgement served as data for this single, qualitative case study. Data were coded inductively using the in vivo technique and were further developed into four themes and a case description.
Findings
Results from our study indicate that the regulatory and political contexts in the Netherlands were critical to the company’s success. Like in the case of most fruitful industrial symbioses, partnerships founded on mutual trust and economically appealing value propositions played a crucial role in ensuring commercial viability. Collaborating with larger corporations and maintaining transparent communication with stakeholders were also significant contributing factors. Lastly, employees’ outlook towards circularity combined with their willingness to learn new skills were important driving factors as well.
Originality/value
In addition to expanding the scholarship on the adoption of circular business models, this research offers novel insights to policymakers and practitioners. It provides empirical evidence regarding the importance of public awareness, adaptable legislation, and harmonised policy goals for supporting sustainable entrepreneurship in the circular economy.

Abstract
This paper builds homogenous series of the rate of surplus value (RSV) for the Chinese economy over the extended period 1956–2014 with a Marxian approach. It finds that the high profitability that stimulated capital accumulation in the decade before the 2008 crisis had relied on the continuous growth in the RSV. Given that the global crisis and changes in the domestic economy undermine all the conditions maintaining the accumulation model (an expanding external market, a relatively large reserve army of labor, and a low debt-income ratio), the RSV has failed to increase and profitability declined since 2008. Thus, this paper interprets the so-called new normal of the Chinese economy as a stage of declining profitability that results mainly from the stagnant RSV and the rising value composition of capital.

Purpose
Food waste occurs in every stage of the supply chain, but the value-added lost to waste is the highest when consumers waste food. The purpose of this paper is to understand the food waste behaviour of consumers to support policies for minimising food waste.
Design/methodology/approach
Using the theory of planned behaviour (TPB) as a theoretical lens, the authors design a questionnaire that incorporates contextual factors to explain food waste behaviour. The authors test two models: base (four constructs of TPB) and extended (four constructs of TPB plus six contextual factors). The authors build partial least squares structural equation models to test the hypotheses.
Findings
The data confirm significant relationships between food waste and contextual factors such as motives, financial attitudes, planning routines, food surplus, social relationships and Ramadan.
Research limitations/implications
The data comes from an agriculturally resource-constrained country: Qatar.
Practical implications
Food waste originating from various causes means more food should flow through the supply chains to reach consumers’ homes. Contextual factors identified in this work increase the explanatory power of the base model by 75 per cent.
Social implications
Changing eating habits during certain periods of the year and food surplus have a strong impact on food waste behaviour.
Originality/value
A country is considered to be food secure if it can provide its citizens with stable access to sufficient, safe and nutritious food. The findings and conclusions inform and impact upon the development of food waste and food security policies.

Abstract
The chapter analyses the international economic specialization of the Republic of Belarus based on the balance of payments and national statistics data by type of economic activity. It also demonstrates application of the customized Trade in Value Added methodology for analysis of the international economic specialization of Belarus. The methodology has been developed for the calculation of selected key figures for 2011–2016. Using of “Input–Output” tables to measure intersectoral relationships enabled assessment of the international trade not only in terms of prices of goods and services, but in terms of value added of each product. The analysis shows that the most important industries of the international economic specialization of Belarus are oil products, chemical products, food stuffs, equipment and vehicles, transport services, computer services. Domestic value added share of exports is about 60%, which corresponds to the level of such countries of Central and Eastern Europe as the Czech Republic, Slovakia, Estonia, Poland. Consequently, import intensity of exports accounts for about 40%. The results of the study have allowed to assess the interrelation between production, exports, and economic growth and to provide recommendations ensuring a deficit-free balance of payments.

Abstract
The extent to which the ratio of inventory to value added for manufacturing industry varies between regions in the UK is examined. An analysis of regionally disaggregated inventory data obtained from the British Census of Production reveals wide regional variations in this ratio, with the three most peripheral regions being significantly overstocked relative to the national average. Stock levels in one of these regions, Scotland, are examined in detail in an effort to identify possible causes of the overstocking. Industrial structure and length of supply line appear not to be important factors. As much of the excess inventory is in the work‐in‐progress category, the overstocking is largely intrinsic to the production operation.

Abstract
Purpose
Cassava production surged noticeably in Southeastern Africa beginning in the 1990s. The purpose of this paper is to examine the commercial responses and food security consequences of cassava production growth in the region.
Design/methodology/approach
The paper incorporates a mix of quantitative analysis, based primarily on original analysis of national farm household survey data, together with key informant interviews with value chain participants in the three neighboring countries of Malawi, Mozambique and Zambia.
Findings
In the cassava production zones, cassava's high productivity translates into per kilogram carbohydrate costs 60 per cent to 70 per cent of the cost of cereals such as maize and wheat, thereby opening up a range of profitable opportunities for commercialization of cassava‐based foods, feeds and industrial products. Despite this potential, cassava commercialization in Southeastern Africa remains in its formative stages, with only 10 per cent to 30 per cent of production currently marketed. Unlike West Africa, where cassava commercialization has centered on marketing prepared cassava‐based convenience foods, the emerging cassava markets in Southeastern Africa have centered on fresh cassava, low value‐added cassava flour, and experiments in industrial processing of cassava‐based starches, biofuels and feeds. Strategic investment in a set of key public goods (breeding, training in food sciences and food safety, and research on in‐ground cassava storage) can help to shape this transition in ways that benefit both commercial interests and the food security of vulnerable households.
Originality/value
The paper compares cassava commercialization across differing agro‐climatic zones, policy environments and food staple zones.

Abstract
This paper analyses the consumption habits of tourists coming from different origins and choosing Italy as a holiday destination, in terms of expenditure level and composition. The economic role of both international and domestic demand and the plot of interactions going from tourist expenditure behaviour to the tourism industry have been measured. Furthermore, the impacts which localised expenditure (total and by item) can generate in each regional economic system are discussed, and estimates of the “centralising” and “leakage” effects are presented. The balance between these effects selects the net centralising regions of economic benefits deriving from tourism demand localised everywhere, with respect to those regions producing a net leakage of the positive effects generated by the demand localised in them.
