Abstract

Purpose

This paper aims to provide a perspective on food waste by tourists and tourist households, now and in the future.

Design/methodology/approach

This is a perspective article that summarizes contemporary thinking about food waste and conceptualizes food waste specifically for tourist household settings.

Findings

In tourism, food is more than nourishment and extends to visitor experiences and attractions. Yet food waste arising from tourism activity is a major environmental and societal issue. Festive moods and holiday spirits – synonymous with over-sized portions, bountiful buffets and entertainment excess – exacerbate food waste. Cultural norms that portray food waste as a sign of good hospitality further aggravate the problem. This paper argues that efforts to reduce food waste in tourism require new conceptualizations of tourist households, and where food waste occurs in relation to tourism, and of who should be responsible for preventing and managing food waste.

Research limitations/implications

The tourism industry faces ever-growing economical, societal and legislative reasons to address food waste, which are dynamic and difficult to predict.

Practical implications

Savvy meal providers will migrate towards reducing their food waste or turning it into assets. However, a focus on preventing food waste only in traditional food service and accommodation establishments ignores the reality of growing tourist households and will stifle sustainability efforts unless theoretically unpacked and practically addressed.

Social implications

A third of food produced globally is lost or wasted. Stark facts, proclamations and regulations underscore food waste as a burgeoning global problem with major environmental, social and economic costs.

Originality/value

Food waste, in general, and by tourists, is a burgeoning environmental, social and economic challenge. This is one of the first articles to focus on this topic and introduces the concept of tourist households.

Abstract

Purpose

This study intends to decompose the tourist choice process into two stages (decision to take a holiday and tourist expenditure), and to propose and test various expectations on the dimensions which explain the above decisions.

Design/methodology/approach

In order to simultaneously model the two decisions, we use a system of equations based on the Heckit model.

Findings

The dimensions affecting the decision to go on holiday are income, household size, education, size of the city of origin and opinion of going on holiday. The determinant factors influencing the level of expenditure are distance between origin and destination, type of accommodation, income, household size, age, marital status and length of stay. An important finding of this analysis is the differentiated effect of a given dimension on each decision.

Research limitations/implications

The lack of information on some explanatory dimensions. Joint modelling. The spending decision should be modelled jointly with the decision to go on holiday due to the dependency between them.

Practical implications

The promotion of destinations should be developed with special attention paid to some faraway markets of origin, due to the expected propensity for these tourists to spend longer periods at the destination. The specialisation of destinations in terms of accommodation type and length of stay. The design of holiday packages should be adapted to the needs of the tourists identified, as they represent the most profitable tourist profiles.

Originality/value

The particular findings, and the research and practical implications proposed show the relevance of the topic analysed. Also, these aspects are backed by a sample of 3,781 individuals, which assures the robustness of the results.

Abstract

Purpose

This study aims to understand whether poverty alleviation can be realized in tourism via tourism cooperatives. As a fast growing industry in the world, tourism has accelerated economic development in many participating places. A large number of tourism cooperatives have emerged to capture conspicuous economic benefits from tourism in many rural areas of China. The role of tourism cooperatives has not yet been explored from the poverty alleviation perspective.

Design/methodology/approach

Two field trips to Yuhu Village, Lijiang, China, which included in-depth interviews, were conducted during August and December 2011, aiming at understanding the roles of tourism cooperatives in poverty alleviation. In-depth interviews with villagers (45) and mangers of tourism cooperative (5) were conducted. A systematic coding procedure including open, axial and selective coding was conducted with the software assistance of ATLAS.TI6.2.

Findings

Evidence from Yuhu suggested that resources and power changes, both of which are further divided into both individual and collective levels, are the main contributors to substantial improvements of the poor. Material and social resources were significantly accumulated. In addition, empowerment, referring to the improvements in status, legitimacy and capability/knowledge, facilitated villagers to obtain favorable policies. By embracing a more broad understanding of poverty, the tourism cooperative is proven to effectively alleviate the poverty suffering of Yuhu villagers.

Originality/value

Understanding poverty from a multi-dimensional perspective is deemed to be critical to reveal the actual story, as evidenced in this study, with analyzing resource flows and power changes at different stages of tourism development. By embracing a more broad understanding of poverty, the role of tourism cooperatives in poverty alleviation was able to be noticed and emerged from in-depth interviews. A systematic scrutiny has been carried out to examine the pro-poor effects brought about by tourism cooperatives.

Abstract

Purpose

The development of tourism around Wolong Nature Reserve changes the local communities' ways of life. This study discusses how ecotourism affects the households' use of their capitals, the livelihood strategies as well as illustrates the impact on the habitats in the reserve through Department for International Development’s (DFID) Sustainable Livelihood Framework (SLF) with data collected during fieldwork.

Design/methodology/approach

The study focuses on (1) Calculating Livelihood Capital Index. (2) The effects of livelihood capitals on livelihood strategy were calculated by multinomial logistic regression.

Findings

The study has yielded the following results: (1) In general, tourism promotes people's livelihood capitals. The growth in different types of households under tourism settings is ranked as full-time tourism operators > part-time tourism operators > traditional living households. (2) Tourism development mainly shifts livelihood strategies in two ways. Firstly, travel operating replaces some traditional practices that make livings; secondly, increased needs for potherbs and herbs from tourists let households enter into the hills to pick the plants more actively, which intensifies the destruction of giant panda's habitats. (3) Nine types of livelihood capitals indicators, namely farmland quality, distance between house and roads, number of laborers, average housing area, average income per person, whether family members being village cadres, and ever having received skills training shape livelihood strategies in different levels.

Originality/value

Three discussions are drawn from the study: (1) Enhancing the exploit for tourism resources to form a diversified competition. (2) Introducing herb growing to fulfill tourists' needs and improve people's livelihood in the meantime. (3) Optimizing the tourism surveillance and management system and improving the rules and regulations.

Abstract

Purpose

The purpose of this paper is to investigate antecedents of households' local demand for domestic tourism in Jordan.

Design/methodology/approach

A sample of 600 households is surveyed and a two‐stage demand model is estimated. Stage 1 identifies the antecedents of the probability of entering the domestic tourism market. Stage 2 identifies the antecedents of households' expenditures on domestic tourism. The Heckit method is used to estimate the first stage and the OLS is used to estimate the second stage.

Findings

Certain socio‐economic factors (household characteristics, individual characteristics and ability variables) impact the local demand for domestic tourism, as do price and income variables.

Research limitations/implications

The generalizability of results to other countries is limited.

Practical implications

Identification of antecedents of local demand for domestic tourism helps governments to formulate and modify future tourism strategies.

Originality/value

This paper contributes to the literature by including socio‐economic variables in the domestic tourism demand model. Further, there is a dearth of studies in Jordan in general and regarding domestic tourism in particular.

Abstract

This chapter delineates the antecedents of tourists’ perceptions of the extent to which they perceive the prices they pay as being fair. The study also tests the relative importance of overall price fairness perception, which is measured as the relative gap between the expected price and the perceived price. A model and hypothesis was developed and tested, with reference to existing theories. Data was collected from nine nature- and activity-based firms in Northern Norway. A regression analysis was performed, in order to test the relative effects and strengths of the antecedents of tourist perception of price fairness. The results revealed that both information and monetary antecedents affect perceptions of price fairness. In particular, monetary-related antecedents such as household income, payment in advance, and value for money affected perception of whether prices were fair. Interestingly, information-related antecedents such as previous experience affected negative perceptions of price fairness. The results are discussed in terms of their implications for the tourist industry.

Abstract

Purpose

The purpose of this paper is to investigate the influence of breeding containers on the production of Aedes mosquitoes after a vector-control program in households that might support dengue transmission in tourist attraction areas of Bang Kachao Riverbend, Thailand.

Design/methodology/approach

A cross-sectional study was conducted in an ecotourism area of Bang Kachao Riverbend, Thailand, during the period October 2016 to September 2017. A total of 832 households from five villages participated in the study. Data collection employed an interview questionnaire, larval mosquito survey and measurements of the chemical properties of the water in each container. A binary logistic regression model was used to investigate the characteristics of water containers influencing the presence or absence of Aedes immatures.

Findings

The study found that water containers located inside households had a highly presence of Aedes immatures (2.22 times) compared with outdoor containers. Water containers without lids and water containers with ineffective had a high presence of Aedes immatures (3.69 and 2.54 times, respectively). In addition, the chemical properties of the water inside the containers, such as pH, influenced the presence of Aedes immatures (1.76 times) (OR=1.76, 95% CI=1.59–1.96).

Originality/value

The study results emphasized the characteristics of water containers in households located in a tourist attraction area. The findings may inform public health vector-control messages for households located in the tourist attraction area.

Abstract

Purpose

The purpose of this paper is to examine the relationship between the ecomuseum and solidarity tourism and to measure their impact on community development.

Design/methodology/approach

The study presented here adopts two methods for collecting qualitative data: in-depth interviews and observations. The total number of village households was 42 and the number of households that hosted tourists in their home was 20. Due to the exploratory nature of this study, qualitative methods were employed in the form of lengthy interviews with 13 residents.

Findings

The findings indicate that tourism for the Bogatepe Village ecomuseum has focused on a solidarity perspective which has provided significant benefits to the community ensuring local sustainable development. The ecomuseum as a concept and a destination has helped to control tourism and strengthened the impact of solidarity tourism on the local community.

Research limitations/implications

The research presented here must be seen as exploratory. More generally, further research is needed to look at the possibility of developing this type of tourism in other rural areas and similar regions of Turkey (covering both small and large areas) with an important cultural heritage.

Originality/value

The combination of the ecomuseum and solidarity tourism can provide a sustainable solution for tourism in rural areas and provide a model in the development of tourism to other villages in Turkey. The question is whether it could also be used in larger rural areas. The study underlines that Bogatepe is certainly worthy of future study.

Abstract

Purpose

The authors investigate cocoa farmers' willingness and motivation to participate in agritourism entrepreneurship in Ghana.

Design/methodology/approach

Primary data were obtained from 583 cocoa farmers. Contingent valuation method, ordered probit and truncated regressions were employed.

Findings

Cocoa farmers' willingness to participate in agritourism was high. The minimum fee farmers were willing to charge per tourist per day ranged from US$0.870 to US$6.957. Agritourism products farmers were willing to offer to tourists are interaction with rural folks, indigenous cuisine, quality locally stored drinking water, indigenous primary healthcare and on-site restrooms. Cocoa farmers' motivations to participate in agritourism are income generation, alternative livelihood strategy and education. Education, being a native, farm size, motorable roads to farm, and distance to farm influence minimum fee farmers were willing to accept to participate in agritourism.

Research limitations/implications

Agritourism could be considered in rural and tourism development policies of developing countries.

Originality/value

The authors investigate cocoa farmers' participation in agritourism, motivations and determinants of willingness to participate.

Abstract

Emerging initiatives in British Columbia and elsewhere clearly suggest that by working with tourism stakeholders, the wine industry can not only contribute to the development of rural tourism, but it can also gain valuable direct marketing and value added sales advantages. For these benefits to be fully realized, more must be known about the character of travel markets interested in wine tourism. To provide insights into BC's domestic wine tourist markets, this research involves two overriding phases of investigation. Initially, it conducts an overview analysis of BC's domestic wine tourists. The second phase of the study involves describing a small but valuable and growing niche market of culturally oriented wine tourists. It then suggests several product development strategies suited to attracting and retaining such wine tourists. The strategies relate to incorporating a range of wine and non‐wine related activities into the tourism experience, creating strong connections between local wines and regional cuisine, building cultural and heritage dimensions into wine tourism product packages, incorporating and promoting environmentally friendly resource management practices; and, protecting wine tourism landscapes. While the empirical part of this investigation is focused on BC wine tourists, the findings provide insights into strategies suited to other wine producing regions in Canada and elsewhere.
