Abstract

Purpose

Claims about environmental impact, health effects and taste of food products are restricted in the EU. The purpose of this paper is to quantify how much such claims would change the willingness to pay (WTP) for organic products in Croatia.

Design/methodology/approach

For estimating the WTP under different claims the authors used an experimental auction. Participants (258) bid for real food products (organic and conventional tomatoes and apples) and are endowed with cash at a location where they usually go shopping.

Findings

For the sample the authors find that consumers are willing to pay on average a premium of 42 percent for organic apples and 59 percent for organic tomatoes. On top of that, WTP increases between 16-20 percent for environmental claims and 12 percent for health claims. Taste-related claims are not significant.

Practical implications

Sellers and producers of organic food can benefit from adding claims to organic labels. To protect consumers from manipulation, regulators are well advised to be cautions when allowing claims about credence attributes of food.

Originality/value

The authors quantify the influence of claims about organic products on the WTP by using experimental auctions which are particularly suitable to investigate effects which cannot be observed on the market.

Abstract

Purpose

The purpose of this paper is to explore the differences between consumer motives regarding purchase of traditional food in two European countries (Croatia and Austria) with a different history and development in regards to traditional and/or regional food.

Design/methodology/approach

A word association test and soft laddering interviews were used to elicit consumers’ perception and purchasing motives for traditional food. Additionally, the questionnaire contained socio-demographics and questions about shopping habits concerning traditional food. Semi-structured, individual, face-to-face interviews were performed with 31 Croatian and 28 Austrian respondents.

Findings

The most frequent associations/definition in both countries refers to heritage (food of generations) and elaboration (traditional receipt). The meaning of traditional food is for both samples positive. Hierarchical value maps for both countries contain ladders standing for health or support of local farmers. Additionally, the Austrians connect traditional food with environmental friendly production while for the Croatians sentimental hedonism ladder starts with perception of traditional food as a mean to connect with the childhood.

Practical implications

The findings can be used by traditional food producers in order to better understand consumers’ motives and accordingly adapt their marketing strategies.

Originality/value

This is the first work which uses free association test and laddering interviews to reveal consumers perception and motives for purchase of traditional food both in Croatia as well as in Austria.

Abstract

Purpose

In the contribution the authors show how the concept of community-powered co-innovation can successfully be implemented in order to improve the situation of small-scale farmers. The purpose of this paper is to focus on developing countries in consideration of economic, social and ecological sustainability aspects.

Design/methodology/approach

All findings are based on an in-depth, detailed examination of one specific case. The case study approach allows analysis of innovation and cooperation within rural societies while considering their contextual conditions.

Findings

The case study goes back to an initiative begun in 2011. Stakeholders from Nepal were connected to five Austrian distributors and nine German distributors selling their products in Austria and Germany. In total, about 600 Nepalese farmers are cultivating on average less than 1 ha of agricultural land each. A German entrepreneur founded the first Demeter farm in Nepal and founded an ethical business in Nepal to cooperate with the farmers there. The University of Natural Resources and Life Sciences Vienna (BOKU) acted as a knowledge broker. The whole initiative followed the Triple Helix concept.

Research limitations/implications

The study shows qualitative results out of an individual initiative. The findings are of a qualitative nature, they are not necessarily transferable to comparable cases. The outcome has to be interpreted as hypotheses, further research activities are required for broader application.

Originality/value

The case study shows how the authors can sustainably improve the economic and social situation of underprivileged market participants in the least developed countries by establishing a teaching-based cooperation between a university, an ethical business and farmers.

Abstract

Purpose

The aims of this paper is to determine, via an empirical study of beer consumers in Croatia, the influence of tasting on the validity of conjoint analysis (CA) under presence of familiar or unfamiliar brands.

Design/methodology/approach

The research comprised a face‐to‐face survey with 403 beer consumers. The respondents were divided into four groups regarding CA experiment (familiar/unfamiliar beer brand in combination with presence or absence of beer tasting). CA validity was measured with five criteria: face validity, convergent validity, internal validity, predictive validity and subjective evaluation of conjoint task. In addition to the CA experiment, a structured questionnaire was used consisting of a few questions regarding respondents' socio‐economic characteristics, beer purchasing, and consuming behaviour.

Findings

The research results confirmed that tasting as an additional presentation method has significant influence on validity of CA. However, the results of the study indicate that tasting should be used as a stimulus presentation method for CA with food and beverage products/brands, which are unfamiliar to the consumers. When testing familiar brands and brands with established perceptions, simpler and less expensive verbal stimulus presentation can be used.

Practical implications

According to the research results, it could be concluded that when performing CA with strong familiar brands, it is not necessary to use CA with tasting since tasting increases research complexity and costs and it does not achieve better results. However, tasting as a stimuli presentation method gives better results than pure verbal CA in the case of unfamiliar brands.

Originality/value

The paper is one of the first to deal with tasting as a presentation method in conjoint analysis and its results have direct implications for the future use of CA with food and beverages.

Abstract

Purpose

The rise of CSR followed a demand for CSR standards and guidelines. In a sector already characterized by a large number of standards, the authors seek to ask what CSR schemes apply to agribusiness, and how they can be systematically compared and analysed.

Design/methodology/approach

Following a deductive‐inductive approach the authors develop a model to compare and analyse CSR schemes based on existing studies and on coding qualitative data on 216 CSR schemes.

Findings

The authors confirm that CSR standards and guidelines have entered agribusiness and identify a complex landscape of schemes that can be categorized on focus areas, scales, mechanisms, origins, types and commitment levels.

Research limitations/implications

The findings contribute to conceptual and empirical research on existing models to compare and analyse CSR standards. Sampling technique and depth of analysis limit this research, but the authors offer insights into patterns of CSR standard development in agribusiness and point to important research avenues.

Practical implications

These findings can help agribusiness managers to select and analyse CSR standards and other forms of CSR guidance.

Social implications

Standard and guidance setting activities can be expected to have real‐life effects on CSR outcomes. These effects need to be better understood by policy makers and stakeholders. The authors' meta‐analysis contributes to further research on who or what influences standard development.

Originality/value

Models to compare CSR schemes are rare and often focus on a small number of cases. The authors provide decision makers and researchers with insights into structural conditions through a meta‐analysis of a larger number of CSR schemes.

Abstract

Purpose

The aim of this paper is to investigate consumer attitudes to, and acceptance of, affective communication in the context of pre‐knowledge regarding wood‐based food additives.

Design/methodology/approach

A survey of 263 Austrian consumers was carried out to investigate pre‐knowledge, attitude and attitude change as a result of affective communication about wood‐based food additives.

Findings

About 14 per cent of the sample had pre‐knowledge concerning wood‐based food additives. In general the attitudes towards wood‐based additives were significantly better than those towards food additives in general. The results indicate a connection between pre‐knowledge and attitude. Respondents who had knowledge about wood‐based food additives evaluated them better, especially in contrast to those who had wrong ideas about them. Furthermore, it proved possible to improve the evaluations of those respondents who did not know about wood‐based additives by providing basic information.

Practical implications

The provision of additional information would improve the marketing potential of wood‐based additives, especially in contrast to additives in general. If the topic is ignored, there is a risk that public discussion could be based on non‐knowledge‐based conceptions by some consumers. The provision of early impact information is suggested in this regard.

Originality/value

Although the use of wood as a raw material in the food industry is common, it has not been a subject of public or scientific discussion to date.

Abstract

Purpose

Taking as a case study the city of San Carlos de Bariloche – in northern Patagonia, Argentina – this paper aims to compare its urban structure with previous urbanization models and identify some characteristics of this tourist city that could inspire the construction of an adapted urban model for Latin American tourist cities, particularly those based on natural attractions.

Design/methodology/approach

Based on multivariate analysis of population census data and local economic statistics, this paper compares the residential location of different social groups and the location of main economic activities in Bariloche. First, principal component analysis (PCA) is combined with cluster analysis to classify Bariloche’s neighborhoods. Second, different maps are analyzed to study the location of economic activities, in comparison with previous clusters.

Findings

The results of this paper show that Bariloche partially adjusts to previous urbanization models, as the landscape and physical environment determine the characteristics of its urban growth, as well as the development of tourist activities. Therefore, this paper then proposes an adapted urban model for the case of Bariloche, which could be also contrasted with other Latin American tourist cities in the future.

Originality/value

Bearing in mind that there is no model of Latin American tourist cities so far, this paper tries to analyze to what extent the assumptions and patterns of previous urban models could be adapted to Latin American tourist cities, such as Bariloche, which base their attractiveness and economic dynamism on its natural physical environment.

Abstract

Purpose

The academic and management literature offers an abundance of techniques for helping organizations improve their performance. Generally, though, these techniques have not been subjected to rigorous, evidence-based evaluation or have been tested in practice over time. The purpose of this paper is to describe a longitudinal study into the effectiveness of the High Performance Organization (HPO) Framework at a social care and rehabilitation organization.

Design/methodology/approach

The HPO Framework was applied at LIMOR in the Netherlands. The longitudinal nature of the study consisted of conducting an “HPO diagnosis” twice at the organization, in 2012 and 2015. In the second diagnosis, the effectiveness of the interventions the organization undertook to address the recommendations originating from the first HPO diagnosis was also measured.

Findings

The study aimed to discover whether the HPO Framework was a suitable improvement technique with which to increase the performance of a social care and rehabilitation organization in a sustainable way. The results showed that it was used to ward off and contain the negative effects of external turbulent developments, and thereby helped LIMOR to perform better than comparable organizations.

Originality/value

As a longitudinal study of the workings and effects of the HPO Framework at a social care and rehabilitation organization, this study is the first of its kind. Moreover, it addresses two gaps in the current literature, by contributing longitudinal evidence to the body of knowledge on improvement techniques, specifically in the non-profit sector, and by adding insights on the practical workings of the HPO Framework in a non-profit context, specifically the social care and rehabilitation sector.
