Abstract
Debates over ritual slaughter, sacred food, fasts, and forbidden foods, perpetuated by religion and tradition, are nothing new. Dietary obligations and prohibitions, in all their diversity, have always been the object of comment, critique, or even concern from one human group towards another. The consumption of meat (or its prohibition) has always been about more than its nutritional function. Reducing religious dietary obligations to hygienic or gustatory practices would be an unrealistic attempt to erase the diversity of the procedures which people undertake to give meaning to life, death, and the world, and to locate themselves in relation to “others”. These rites, legitimated by myths, inevitably provoke phenomena of influence, reciprocated within and outside groups. The selection of food – of meat in particular – plays a primordial role as a social marker, the rules of which contribute to the organisation of groups by tracing differences between individuals, between men and women, and between communities. Formerly attached to a totemic group and its territory, then to a religion and its society, dietary practices are globalising and encountering one-another. Questions are now raised about the management, in shared spaces, of a diversity of dietary prohibitions and obligations. These questions are at the core of this chapter, notably, what place should be reserved for dietary particularities in collective catering in human organisations? And what limits should be given to the expectations of each regarding dietary purity or fasting?

Abstract
Purpose
As studies investigating the effects of fructan sources, such as yacon, on glucose and lipid metabolism showed different results, additional research is required to establish a clear relationship between them. Thus, this paper aims to evaluate possible effects of the consumption of the yacon pulp flour (YPF) on biological and metabolic parameters such as food consumption, weight gain, serum glucose levels and fecal lipid excretion of rats, as well as determine the role of glycemic index (GI) of the diets added of this ingredient on those parameters.
Design/methodology/approach
For this purpose, 24 male albino Wistar rats were divided into four groups, which received the following treatments for 17 days: Group 1 (G1) (Control) – American Institute of Nutrition (AIN)-M; Group 2 (G2) – AIN-M added 5 per cent YPF; Group 3 (G3) – AIN-M added 10 per cent YPF and Group 4 (G4) – AIN-M added 15 per cent YPF. Analysis of fasting and postprandial glycemia was conducted for elaboration of the glycemic curve and calculation of the GI of the diets. Lipids loss was measured by quantification of crude fat in feces after consumption of the diet.
Findings
YPF, regarding the concentration in the diets, did not elevate the fasting glucose among the groups. The postprandial glucose of the animals declined in different postprandial glucose peaks of the groups ingesting YPF in relation to the control one, especially in group treated with 15 per cent YPF, between 30 and 60 min (p <0,05), confirming the influence of the dietary fiber on the absorption of the glucose. The ingestion of YPF increased dragging of lipids to the animal feces, proportional to the amounts of YPF added to the diets. According to the regression analysis, followed by regression testing to 5 per cent, there was a significant difference between the experimental groups, being that the elevation of the percentage of YPF added to the diet caused a proportional increase in the lipid levels in the animal feces.
Originality/value
YPF could be an alimentary source of interest, mainly when the focus is on disease risk prevention such as diabetes, obesity and dyslipidemias.

Abstract
Purpose
Dietary intake is a modifiable risk factor for metabolic syndrome (MetS). Therefore, this study aims to evaluate the association between the Healthy Eating Index-2015 (HEI-2015) and MetS.
Design/methodology/approach
MetS was diagnosed among 2,326 adults. Dietary intake was assessed by a validated food frequency questionnaire. The HEI-2015 was administered to assess the diet qualities. Multivariate logistic regression was also used to evaluate the relationship of HEI-2015 with MetS and its components.
Findings
The odds of MetS was lower in women who were in the third quintile of HEI-2015 compared with those in the first quintile after adjusting for age and energy intake (OR: 0.62, CI: 0.41 to 0.93). In addition, moderate adherence to HEI-2015 reduced the odds of high fasting blood glucose levels in both men and women (OR men: 0.30, CI: 0.11 to 0.85 OR women: 0.34, CI: 0.14 to 0.79). However, these relations were not linear. Adherence to HEI-2015 had no significant relationship with the prevalence of MetS and its components in the whole population.
Originality/value
A significant relationship was observed between moderate adherence to HEI-2015 and fasting blood glucose in both men and women. Moreover, moderate adherence to this dietary pattern decreased the prevalence of MetS in women.

Purpose
Healthy diet and lifestyle have been shown to be important for obese patients in the management of diet‐related diseases especially in the improvement of cardiovascular disease risk indicators. The purpose of this paper is to determine the effects of a calorie‐restricted low‐fat diet on body weight, cardiovascular disease risk and liver function indicators in an obese, cardiology outpatient with type II diabetes.
Design/methodology/approach
A male, obese cardiology outpatient was assigned to a calorie‐restricted (6,694.4 kJ/d) low‐fat (not to exceed 20 per cent of total energy intake) diet for 12 weeks. His body mass index (BMI), blood pressure (BP), pulse rate, fasting glucose, total cholesterol, triglyceride, low‐density lipoprotein cholesterol, high‐density lipoprotein (HDL) cholesterol, alanine aminotranseferase, aspartate aminotranseferase (AST) concentration and TC/HDL ratio were measured prior to the start of the diet and during weeks four, eight and 12 of the diet.
Findings
The patient found it difficult making changes to his diet and only reduced his weight by 1 kg. He significantly reduced his serum triglyceride by about 20 per cent, TC/HDL ratio by 13 per cent and fasting blood glucose concentration by 31 per cent. However, there was no significant change in his BP, pulse rate, total and LDL cholesterol concentration. He also reduced his AST concentration by 20 per cent and alanine aminotranseferase (ALT) by 19 per cent.
Originality/value
This paper usefully shows how healthier food choices involving increased intake of fruits and vegetables and restricted intake of total and saturated fat reduced the risk of cardiovascular death in a male cardiology outpatient with type II diabetes.

Purpose
A pragmatic evaluation of the practicality of diabetes screening for users of serotonin specific reuptake inhibitors (SSRI’s). The paper aims to discuss this issue.
Design/methodology/approach
This study audited the response of SSRI-users to personal invitation for diabetes screening. One-third of such patients had been screened during the past year. The remaining 217 patients were invited for fasting blood glucose tests and the improvement in screening rates measured. The rate of positive results was compared to a cohort who received fasting blood glucose screening due to physical risk factors for diabetes.
Findings
Specific invitation increased the take-up of screening from 34 to 52 per cent of SSRI-users. Engagement was significantly better when patients could be contacted by telephone rather than letter. The SSRI-using cohort had a greater rate of identified diabetes than a cohort with physical risk factors for diabetes.
Practical implications
SSRI-users are a difficult group to engage in medical screening and an assertive approach is of value. It is likely that the physical care of these patients would be enhanced by the active maintenance of contact by a practice healthcare professional. Screening of SSRI-users for diabetes is justified by both detection rate and the importance of establishing co-morbidity in terms of treatment decisions.
Originality/value
Co-morbidity of diabetes and depression has been observed to result in a poor prognosis for the patient which can be tempered if successful engagement leads to early treatment of both conditions with a more tailored choice of medication and care.

Navigating the social fields of identity on the playground, in the classroom and in the community is a complex and intricate set of networks, each of which may simultaneously support or restrict certain individuals. For students in an American English for Speakers of Other Languages (ESOL) reception class, and an ESOL pull-out program, these navigations are perhaps the most important and far reaching negotiations they enter into. Content-based study, knowledge of English, and cultural competency (all of these very important skills and understandings) pale in comparison to the social identity survival games played out by students and staff in the school yard. Over the course of 15 months in an American elementary school, the conflicts between non-discriminatory policy and discriminatory practice were examined.

Abstract
Purpose
The main purpose of this study is to experiment with interest-free microfinance (IFMF) products and investigate the factors affecting IFMF institutions.
Design/methodology/approach
This study uses both quantitative and qualitative data types that will be collected through questionnaires, secondary data, interviews and experimental tests to answer key questions. The collected data were analyzed using repeated-measures analysis ANOVA. This study determines the factors affecting the default rate of Islamic microfinance (MF) products, and evaluates the repayment performance of IFMF products using field experiments.
Findings
The participants found that the repayment performance level is higher than that of Qard Al-Hassan, which shows that it is one of the best mechanisms to reduce the default rate among borrowers. It has been observed that women have higher repayment performance than men, and those with different income sources have higher repayment performance levels than those who do not. This study showed that the effects of age, marital status and educational status on the repayment performance level of the participants were not statistically significant. In addition, it was shown that the participants’ status of having or not having children did not have a significant effect on the level of repayment performance.
Originality/value
This study differs from other studies in two ways. First, in terms of field experimentation, this study focuses on the practical impact of IFMF products on customer reimbursement performance. Second, this study tested different demographic variables that could affect the reimbursement performance.

Abstract
Purpose
This study aims to assess the association of Healthy Eating Index (HEI) with levels of fasting blood sugar (FBS) and lipid profile in normoglycemic and elevated FBS patients.
Design/methodology/approach
This case-control study was conducted on 144 participants, namely, 72 normoglycemic subjects (FBS < 100 mg/dl) and 72 high-glycemic patients (FBS ≥ 100 mg/dl) aged 20–60 years of age, who were selected from the nutrition and diet clinics in Tehran city. The dietary intake was collected by using a validated food frequency questionnaire to determine the HEI score.
Findings
The mean±SD age and body mass index of participants were 47.1 ± 12.7 years and 29.6 ± 6.0 kg/m2, respectively. The median (interquartile range) of HEI scores in the normoglycemic group and the high-glycemia group were 19.34 (15.24–24.31) and 16.53 (13.35–24.07), respectively. In the overall population, the findings of the multi-variable linear regression model indicated a positive association between the HEI score and high-density lipoprotein-cholesterol (HDL-C) (ß = 0.34; 95%CI: 0.05–0.64, P = 0.01). However, there is no significant association between HEI and HDL-C in normoglycemic (ß = 0.19; 95%CI: −0.31, 0.69, P = 0.45) and hyperglycemic subjects (ß = 0.28; 95%CI: −0.10–0.66, P = 0.15). Furthermore, the association of HEI with levels of FBS, triglycerides (TGs) and low-density lipoprotein-cholesterol (LDL-C) was not significant in any of the analyzed groups, including the total population, normoglycemic individuals and hyperglycemic subjects.
Originality/value
This study was the first study to assess the role of HEI and its components with levels of FBS and lipid profile in normoglycemic and hyperglycemic individuals in Iran. The findings suggested that higher adherence to HEI may be associated with an increase in the HDL-C level. However, HEI could not predict FBS, TGs and LDL-C levels in the adult population.

Abstract
Purpose
Foods rich in polyunsaturated fatty acids are vulnerable to oxidation during processing and storage. The intake of oxidized lipids (OLs) and their subsequent relation with chronic disease risk are unknown in the US population. The paper aims to discuss these issues.
Design/methodology/approach
The association between OL intake and markers of adiposity and glucose homeostasis was determined based on data collected from two cycles of National Health and Nutrition Examination Surveys with a survey sample of 9,982 subjects between the ages of two to 85 years. Means or geometric means of markers of adiposity, glucose and lipid parameters were compared between the “low” and “high” consumers of OL using the t-test. Associations between OL intake and markers of adiposity, glucose and lipid parameters were determined by multivariate regression analysis.
Findings
Mean markers of adiposity were all significantly lower in subjects in the “high” OL group as compared to the “low” OL group. Fasting glucose concentrations were positively associated with OL intake unlike markers of adiposity which were negatively associated with OL intake.
Practical implications
Higher intake of OLs is associated with lower BMI and adiposity. However, the direct association between OL intake and fasting glucose levels suggests that lower markers of adiposity do not suggest a decreased risk of glucose intolerance.
Originality/value
This is the first study to estimate the consumption of OLs in the US population and its link to adiposity and glucose tolerance.

Purpose
Non-communicable diseases such as type 2 diabetes, hypertension, cancers and cardiovascular diseases have become a major health concern globally. As literature claims that frequent consumption of fruits and vegetables can delay the onset of type 2 diabetes and its complications, this paper aims to evaluate the potential hypoglycemic properties in five types of non-leafy vegetables (pumpkin, sweet potato, bitter gourd, onion and lady’s finger), which are commonly available in Malaysia.
Design/methodology/approach
Articles were identified through several main search engines, including Pubmed, Google Scholar, Taylor and Francis Online, EDS, Wiley, ScienceDirect and Scopus. The search was limited to selected keywords to refine the outcome.
Findings
All the five types of non-leafy vegetables demonstrate hypoglycemic properties to some extent. Emerging findings indicate that there are several phytonutrients in the non-leafy vegetables contributing to the hypoglycemic effects. To date, the underlying mechanism of action remains to be elucidated, although a number of potential mechanisms of action have been proposed in the literature.
Originality/value
This review provides some insights into the hypoglycemic properties in non-leafy vegetables. In addition, phytonutrients that are responsible for the hypoglycemic effects and their mechanism of action are also highlighted.
