Abstract

Purpose

This study aims to develop a measurement model of the halal supply chain resilience (HSCRES) index, which represents the capability of the supply chain (SC) to handle disruption caused by halal risks. A case study is conducted to apply the HSCRES index in the halal chicken SC in Yogyakarta, Indonesia, to test the proposed methodology.

Design/methodology/approach

A literature synthesis was conducted to establish the main capability and vulnerability factors and their relevant indicators. The indicators were validated using the confirmatory factor analysis approach. Then, applying an analytical hierarchy process involving ten experts – practitioners and academicians – the weight of each indicator was obtained. A survey of 20 employees of slaughterhouses, 35 sellers and 100 consumers was conducted to obtain the value of each indicator. Finally, the HSCRES index was calculated by comparing the total weighted capability value to vulnerability.

Findings

The results revealed that the resilience of halal chicken SC in Yogyakarta is at a good level, with an index of 3.459, and “halal team” is the most significant indicator. The findings also revealed several capabilities that need improvement, including dedicated halal facilities, employees’ halal competence and halal regulation. However, the lack of a halal certification board, lack of management commitment and packaging contamination were found as vulnerability indicators that need to be reduced.

Research limitations/implications

The case of this study is limited to the halal chicken SC in Yogyakarta, Indonesia. As a consequence, the obtained results are limited to a specific context. The application of this method to different areas and objects enables the establishment of different capability and vulnerability indicators.

Practical implications

The halal resilience measurement model offers a comprehensive understanding of the strengths and weaknesses of the HSC. The findings can help stakeholders improve preparedness for halal risks, deal with halal risks better and recover more quickly. Measuring the HSCRES index can be particularly useful for policymakers in developing evidence-based strategies to increase HSCRES.

Originality/value

The current study is the first to define and classify the contributing halal resilience attributes and also to calculate the halal resilience index.

Abstract

Purpose

This paper aims to reduce waste management and generate wealth by investigating the novelty of combining chicken feather fiber and bamboo particles to produce hybrid biocomposites. This is part of responsible production and sustainability techniques for sustainable development goals. This study aims to broaden animal and plant fiber utilization in the sustainable production of epoxy resins for engineering applications.

Design/methodology/approach

This research used two reinforcing materials [chicken feather fiber (CFF) and bamboo particles (BP)] to reinforce epoxy resin. The BPs were kept constant at 6 Wt.%, while the CFF was varied within 3–15 Wt.% in the composites to make CFF-BP polymer-reinforced composite (CFF-BP PRC). The mechanical experiment showed a 21% reduction in densities, making the CFF-BP PRC an excellent choice for lightweight applications.

Findings

It was discovered that fabricated composites with 10 mm CFF length had improved properties compared with the 15 mm CFF length and pristine samples, which confirmed that short fibers are better at enhancing randomly dispersed fibers in the epoxy matrix. However, the ballistic properties of both samples matched. There is a 40% increase in tensile strength and a 54% increase in flexural strength of the CFF-BP PRC compared to the pristine sample.

Originality/value

According to the literature review, to the best of the authors’ knowledge, this is a novel study of chicken fiber and bamboo particles in reinforcing epoxy composite.

Abstract

Research methodology

The main data used to develop this case were remote, synchronous interviews with the three characters in the case. The authors conducted two interviews with the main character in the case, Geoff Brown, specifically: (1) an initial 30 min interview to determine the fit and focus of the case and to help create the interview protocol for the full case interview (this initial interview was conducted on March 12, 2024); and (2) an hour-long interview to ask targeted questions to fully develop the case narrative (this interview was conducted on March 28, 2024). Geoff Brown was also involved in reviewing drafts of the case, approving the final version of the case and reviewing the assignment questions in this instructors’ manual (IM).

Case overview/synopsis

This case focuses on Geoff Brown, Executive Director at Alberta Chicken Producers (ACP), which is a not-for-profit organization in Alberta, Canada, that is responsible for representing 250 regulated chicken producers. Brown is grappling with what to do with the remote/hybrid work policy at ACP. Part of the impetus for reconsidering this policy was the comments from ACP’s long-tenured Office Manager and Executive Assistant, who had been asking Brown to bring this policy forward to a staff meeting for discussion throughout the past year. Brown now feels ready to move these discussions forward but is unsure of how to proceed and what the best practices would be to ensure that the policy in place for remote work is beneficial for work engagement, individual and organizational work performance, work–life balance, employee relationships and fairness perceptions.

Complexity academic level

The target audience for this case is undergraduate and graduate students taking a course in the disciplines of human resources management or organizational behavior. This case will be especially relevant for a human resources management course when studying the topics of employee benefits (e.g. work–life balance), health and safety (e.g. stress) and work design (e.g. telecommuting), and this case will be especially relevant for an organizational behavior course when studying the topics of motivation (e.g. fairness), communication, organizational culture and decision-making.

Case overview/synopsis

The McDonald’s case examines the challenges associated with market expansion by global brands. The case occurs during the early-globalization era in the 1990s. Barbados, a developing country, is the site for potential expansion. Prospective investors, the Winters, are desirous of establishing a McDonald’s in Barbados. They need to thoroughly analyze the previous experience of McDonald’s against the host country’s current international business environment, e.g. political, economic, cultural and competitive environment. This case analysis provides a framework for understanding the multifaceted reasons behind McDonald’s exit from Barbados, considering the complex interplay of political, economic, sociocultural, technological and legal factors in the international business environment. The case equips the instructor and students to explore the risks of international expansion, particularly in developing country markets. The case study on McDonald’s failure in Barbados highlights the need to thoroughly examine one’s market entry strategy and available information on the host market and be more locally responsive regarding tastes and preferences. The case study also presents essential lessons for firms and planners from developing countries. Local firms innovated and enhanced their operations in response to the threat from the entry of the global fast-food giant. Yet, they did not seek to internationalize once McDonald’s exited the Barbadian market. The case study, therefore, considers strategies firms from developing countries could utilize to penetrate markets from developed countries.

Complexity academic level

At the undergraduate level, the McDonald’s Barbados case can be used in international business classes to highlight risks in the international business environment and the need for a carefully planned and executed market entry strategy.

Abstract

Purpose

The demand for energy is increasing massively due to urbanization and industrialization. Due to the massive usage of diesel engines in the transportation sector, global warming is increasing rapidly. The purpose of this paper is to use hydrogen as the potential alternative for diesel engine.

Design/methodology/approach

A series of tests conducted in the twin cylinder four stroke diesel engine at various engine speeds. In addition to the hydrogen, the ultrasonication is applied to add the nanoparticles to the neat diesel. The role of nanoparticles on engine performance is effective owing to its physicochemical properties. Here, neat diesel mixed 30% of biodiesel along with the hydrogen at the concentration of 10%, 20% and 30% and 50 ppm of graphite oxide to form the blends DNH10, DNH20 and DNH30.

Findings

Inclusion of both hydrogen and nanoparticles increases the brake power and brake thermal efficiency (BTE) of the engine with relatively less fuel consumption. Compared to all blends, the maximum BTE of 33.3% has been reported by 30% hydrogen-based fuel. On the contrary, the production of the pollutants also reduces as the hydrogen concentration increases.

Originality/value

Majority of the pollutants such as carbon monoxide, carbon dioxide and hydrocarbon were dropped massively compared to diesel. On the contrary, there is no reduction in nitrogen of oxides (NOx). Highest production of NOx was witnessed for 30% hydrogen fuel due to the premixed combustion phase and cylinder temperatures.

Abstract

Purpose

This paper aims to evaluate the effects of salting duration and salt concentration on the physicochemical, colour, texture and sensory attributes of buffalo meatballs.

Design/methodology/approach

Minced buffalo meat was mixed with salt at 1 or 2% concentration and stored for 0 h, 24 h or 48 h during the preparation of meatballs. The developed meatballs were analysed for moisture content, water holding capacity (WHC), pH, cooking yield, shrinkage, colour, texture profile analysis, gelling properties and sensory attributes.

Findings

The salting durations of 24 and 48 h had significant (p < 0.05) effects on the WHC and colour attributes of the buffalo meatballs. A 2% salt addition in meatballs significantly (p < 0.05) affected pH and cooking yield. Salting for 24 h with 2% salt concentration significantly (p < 0.05) increased the hardness, chewiness and gel strength of the meatballs. Thus, salting for 24 h with a 2% salt concentration improved the physicochemical, textural and sensory attributes of buffalo meatballs.

Practical implications

The study highlighted the importance of salting treatment during the preparation of meat products. For example, salting buffalo meatballs with a 2% salt concentration for 24 h could improve their functional and sensory attributes.

Originality/value

Studies on salting durations at different salt concentrations in buffalo meat are very limited. An optimized combination of salting duration and salt concentration during the preparation of buffalo meatballs could improve the quality attributes and acceptability of these products.

Abstract

It is estimated that the largest share of future food fish will come from aquaculture production and that sustainable aquaculture is a precondition to realising this potential. Sustainable aquaculture will also play a key role in achieving several of the targets set out in SDG14. It is now established that most of the aquafeed ingredients used today are not sustainable and cannot support the projected growth of the sector, hence the need for sustainable alternatives. Sustainable aquaculture is multidimensional, therefore, this chapter focuses on sustainable feed ingredient sourcing. The authors explored a group of highly promising emerging novel ingredients known as microbial ingredients (MIs), means of producing them and how they can help achieve sustainable aquaculture and SDG14 targets. Specifically, the chapter narrows down on producing MIs from Norwegian spruce tree hydrolysates using a biotechnological approach and how Foods of Norway, a centre for research-based innovation at the Norwegian University of Life Sciences is leading efforts to produce feed-worthy MIs from industrial and agricultural by-products through biotechnology-based valorisation. MIs such as yeast, fungi, and bacterial meal can support the growth of Atlantic salmon without compromising the health of the fish. Thus, MI has a net positive impact on climate and can help achieve some targets in SDG14 by reducing pressure on marine resources used as fish feed ingredients. Suggestions on how to address current bottlenecks in scaling up MIs have also been provided in the chapter.

Abstract

Purpose

This study aims to understand how unimanual and bimanual motor actions in the form of writing a message (handwriting and typing) influences consumer behavior intention and attitude.

Design/methodology/approach

Three studies have been conducted to understand how the method of writing (typing or handwriting) and moderator type of message (moderator: emotional vs. rational) can influence persuasion variables.

Findings

This paper shows evidence that bimanual and unimanual motor actions activate contralateral brain hemispheres and influence consumer behavior. Specifically, how the use of these motor actions leads to a change in behavior intention and attitude. Furthermore, how bidirectional behavior and role-reversal occurs when a unimanual vs bimanual motor actions are used to create an emotional or rational message.

Research limitations/implications

This research focuses on explaining cognitive implications of unimanual vs bimanual motor actions (typing vs handwriting) on self and specifically on consumers when they are exposed to situations of producing/creating a message. Adding further evidence to persuasion, behavior intention and attitude research in embodied cognition (e.g. Petty and Cacioppo, 1986b; Briñol and Petty, 2008), the role of haptic interfaces in online marketing and consumer behavior (e.g. Brasel and Gips, 2015). The authors did not collect any FMRI data but it can be the future scope of this work.

Practical implications

The novel findings of bimanual and unimanual motor actions have a direct application to the current scenario of the online reviews/surveys, which have become a crucial point for e-commerce businesses and retailers that require customers to give feedback. Since, consumer emotions can influence behavioral outcomes and decision making through sensory cues (Abdolmohamad Sagha et. al, 2022; Haase Wiedmann and Labenz, 2022). From this perspective, depending on the mapping/recording of the felt emotionality or rationality by the customer, the feedback method can be oriented in a way to reduce the effect of negative reviews. Further applications are suggested for retailers, increasing prosocial or sustainable behavior and attitudes.

Social implications

Marketing and advertising research conducted in different social settings is considered important in neuropsychology and neurophysiology research (Pozharliev et al., 2017). Therefore, this research can be extended to test in different social settings and marketing contexts, for example, in the virtual reality, metaverse and gamification. Thus, this research can serve as an avenue to examine the bimanual and unimanual motor actions in a scenario where the participants can combine several motor actions, for example, talking on the phone or walking while filling consumer reviews online/offline and wearing the VR devices like Apple Vision Pro and performing unimanual or bimanual motor actions.

Originality/value

Mapping of human behavior has always been done dependent on the cognition aspect and limited in its scope for embodied cognition. The results can be used for more direct and impactful ways of conducting surveys, feedback and handling communications for major businesses. In addition, it can be a helpful tool for message persuasion for a new brand or increasing awareness about sustainable consumption depending on typed or handwritten inputs by a potential consumer.

Abstract

Purpose

The proliferation of industry platforms has disrupted several industries. Firms adopting a platform business model have experienced a substantial expansion in size and scale, positioning themselves as the foremost valuable entities in market capitalization. Over the past two decades, there has been a substantial expansion in the body of literature dedicated to platforms, and different streams of research have emerged. Despite considerable efforts and the significant progress made in recent years toward a comprehensive understanding of industry platforms, there is still room for further harnessing the field’s diversity. As a result, the aim of this article is to examine the field’s structure, identify research concerns and provide suggestions for future research, thereby enhancing the overall understanding of industry platforms.

Design/methodology/approach

We conducted a thorough examination of 458 articles on the topic using bibliometric methods and systematic review techniques.

Findings

Through co-citation analysis, we identified five distinct clusters rooted in various bodies of literature: two-sided markets, industry platforms, digital platforms, innovation platforms and two-sided networks. Furthermore, the examination of these five clusters has revealed three key areas that demand further consideration: (1) terminologies, (2) classifications and (3) perspectives.

Originality/value

While previous reviews have provided valuable insights into the topic of industry platforms, none have explored the structure of the field so far. Consequently, as a first step toward advancing the field, we uncover the structure of the literature, identifying three major areas of concern. By addressing these concerns, our goal is to converge different clusters, thereby harnessing the diversity in the field and enhancing the overall understanding of industry platforms.

Purpose

Food quality and safety issues have always been imperative topics discussed by people. The anti-tampering of blockchain technology and the transparency of information make it possible to improve food traceability and safety quality. How to effectively apply blockchain traceability technology to food safety has great research significance for improving food safety and consumer quality trust.

Design/methodology/approach

The paper aims to analyze the differences in product quality levels and market participants’ profits before and after the use of blockchain-driven traceability technology in the food agricultural product supply chain (SC) in the dynamic game frameworks of supplier-led and retailer-led modes, respectively, and explores the willingness, social welfare and consumer surplus of each member of the agricultural product SC to participate in the blockchain. Besides, We investigate the SC performance improvement with the mechanism of central centralized decision-making and revenue-sharing contract, compared to the SC performance in dynamic games.

Findings

The results are obtained as follow: The adoption of blockchain traceability technology can help improve the quality of food agricultural products, consumer surplus and social welfare, but the application and popularization of technology is hindered by traceability technology installment costs. Compared with the supplier leadership model, retailer-led food quality level, customer surplus and social welfare are higher.

Research limitations/implications

How to effectively apply blockchain traceability technology to food safety has great research significance for improving food safety and consumer quality trust.

Practical implications

Food quality and safety issues have always been hot topics discussed by people. The anti-tampering of blockchain technology and the transparency of information make it possible to improve food traceability and safety quality.

Social implications

The research results enrich the theories related to food safety and quality, and provide a valuable reference for food enterprises involved in the decision-making exploration of blockchain technology.

Originality/value

Based on the characteristics of blockchain technology, the demand function is adjusted and the product loss risk of channel members is transferred through a Stackelberg game SC composed of agricultural products suppliers and retailers.
