Abstract

Purpose

Grounded in the theory of mental budgeting, this paper aims to investigate how the regret and perfectionism of exposition attendees influences their purchasing strategy.

Design/methodology/approach

This research collected on-site data at a well-established specialty food exposition in China. Confirmatory factor analysis and structural equation modeling were applied to test the proposed model.

Findings

The findings confirm the effect of psychological mechanism (regret and perfectionism) on exposition attendees’ purchasing strategy as one that boosts/impairs their confidence in purchasing healthy food at the exposition. Specifically, regret and perfectionism show differential contributions to purchasing strategy dimensions. Variety seeking has a positive effect, whereas price consciousness has a negative effect, on purchase confidence.

Practical implications

Event organizers and exhibitors should understand attendees’ consumption-related psychological mechanism and devise effective management and marketing strategies for optimal consumption experiences at expositions. They can create an informative and worry-free experience that facilitates a pleasant thought process to reduce uncertainty in attendees’ on-site decision-making.

Originality/value

The current research pioneered a unique model conceptualizing the important, yet underexplored, phenomenon of purchasing mechanism in the exposition setting. Addressing the emerging interest in food expositions, to the best of the authors’ knowledge, this study is the first for examining purchasing mechanism from the perspective of mental budgeting, providing insightful knowledge about how the psychological mechanism affects exposition attendees’ pre-purchase evaluation and confidence toward purchasing healthy food at expositions.

Abstract

Purpose

Provenance and ethical standards reflect foods that traceable and are supportive of the environment, sustainability and justice in the food supply chain. The purpose of this study is to understand higher education consumers’ food choices and to examine the predictors of purchasing intention of food with provenance and ethical standards.

Design/methodology/approach

An online questionnaire was completed by 296 students and staff members of the University of Central Lancashire. The questionnaire collected information on socio-demographic profiles; food choices, provenance and ethical standards; ethical purchasing and sourcing requirements and purchasing intention of food products with provenance and ethical standards. Descriptive statistics were used to determine the frequency of distribution of all socio-demographic characteristics. Multiple regression was used to examine if attitude, perceived behavioural control and subjective norms of the Theory of Planned Behaviour (TPB) significantly predict the consumers’ purchasing intention (Step 1). Exploratory factor analysis was conducted on the behavioural items using principal components estimation and varimax rotation. Multiple regression on the expanded TPB (Step 2) using the obtained factor scores were conducted to determine if the factors were significant predictors of purchasing intention of food with provenance and ethical standards.

Findings

Multiple regression on the expanded TPB model revealed that only attitude and perceived behavioural control were significant predictors of purchasing intention of food with provenance and ethical standards. The regression model explained about 50 per cent of the variance of the intent to purchase food with provenance and ethical standards where R2 = 0.50 (Adjusted R2 = 0.47). This was significantly different from zero F (5, 89) = 17.77, p < 0.001. The incorporation of “Preference for ethically sourced food” and “Perceived knowledge and status of provenance standards” did not increase the prediction of purchasing behaviour.

Originality/value

Two broad themes were identified from the factor analysis where the first factor prioritises “Preference for ethically sourced food” and the second factor conceptualises “Perceived knowledge and status of provenance standards”. The TPB was expanded to incorporate both factors but did not increase the prediction of purchasing intention. The authors recommend that other potential predictors, for example, moral concerns or perceived value of food with provenance and/or ethical standards to be tested using an extended TPB framework. The study is of value to higher and further education catering services to encourage more sustainable and local food consumption.

Abstract

Purpose

This purpose of this paper is to understand the environmental impacts of stakeholder-driven sustainable purchasing policies in institutional settings.

Design/methodology/approach

The research is framed using stakeholder and life cycle assessment (LCA) theories. The study uses a multi-method approach. Starting with interviews to understand the breadth of sustainability issues and significant food purchases facing institutional purchasing managers, the authors subsequently perform LCA of these various policies using the most popular food item in different categories.

Findings

From the interview results, the authors found that food purchasers focus predominately on cost, thus, are committed to food and packaging reduction. They are driven to buy local foods based on their consumer stakeholders but share their commitment to buying local products if the cost is appropriate. In the LCA of popular food items in multiple scenarios, avoiding food waste of various forms had significantly higher carbon emissions savings than packaging reduction or transportation minimizing (buy local) strategies.

Research limitations/implications

The sample relied solely on the perceptions of institutional purchasing managers in university dining services. Future research should involve collecting data from other stakeholder groups such as the customers themselves, institutional leaders, and in other types of institutional settings such as hospitals and government agencies.

Practical implications

The research provides managers with insights concerning the trade-offs between different sustainability objectives. In particular, findings show that reducing waste related animal protein has a bigger impact on environmental performance than many other popular sustainability objectives such as buying local or reducing packaging waste.

Social implications

The paper focuses on the purchasing trade-offs of buying local vs national food products, different packaging solutions, and food waste generation. These decisions offer some social benefits (improve the economic situation for local farms vs consolidated food producers) as well as multiple environmental benefits.

Originality/value

The paper presents new findings on the sustainability purchasing priorities of stakeholders in institutional food settings and subsequent LCA of those policies to show which might have the most environmental impact.

Abstract

Purpose

There is limited research examining the relationship between social media and green food purchasing behaviour. In the current study, we examine the factors that affect consumers’ green food purchasing behaviour in Türkiye.

Design/methodology/approach

Data collected from the participants by survey method were analysed using Smart PLS 4.0 with IBM SPSS 26 and PLS to run SEM.

Findings

Our findings have revealed that from all the structural elements in the theory of planned behaviour (TPB), only attitude and perceived behavioural control contribute to consumers’ green food purchasing behaviour, while subjective norms do not contribute to consumers’ green food purchasing behaviour. Additionally, it was found that social media usage (SMU) and digital marketing interactions (DMI) have a positive and significant effect on green food purchasing behaviour. More information, experiences, opinions and recommendations on green foods in social media channels can encourage consumers to buy more green food.

Originality/value

This study first evaluates the applicability of the TPB model in explaining green food purchasing behaviour. This study is extended with two new factors included in the original framework of the TPB model, namely, SMU and DMI.

Abstract

Purpose

The purpose of this paper is to reveal influential information used in vegetable purchasing decisions of household primary food shoppers in China and in Taiwan.

Design/methodology/approach

Two in-person surveys were administrated separately in Shanghai, China and in Taipei, Taiwan, the two most populous metropolitan areas in China and in Taiwan, respectively.

Findings

Results reveal that about 32 per cent of respondents in Taipei purchase vegetables once in every two to three days. The majority of respondents in Shanghai (81 per cent) purchase vegetables on a daily basis. Results of factor analysis reveal the four dimensions, origin labelling, promotion, selection, and quality, influence purchasing decisions of respondents in Taipei and in Shanghai. For household primary food shoppers in Taipei, origin labelling and selection help food shoppers in Taipei in vegetable purchasing decisions, but not promotion. For those food shoppers in Shanghai who purchase large volume of vegetables, quality is the most important factor in purchasing decisions.

Originality/value

This study provides new insights into vegetable purchasing decisions in two populous cities in China and Taiwan. The contributions of this study are to provide valuable information in vegetable purchasing decisions for effective information communication in retailing; and to fill in the gap of research in vegetable purchasing decisions in consumer behaviour studies in Chinese societies.

Abstract

Purpose

This paper investigates the impact of individualistic (health) and collectivistic considerations (environmental) on the purchasing intention of organic foods.

Design/methodology/approach

The study collected 391 responses from service holders of diversified tiers from Bangladesh. It considers two-step structural equation model (SEM), as well as the Ordinal Logistic regression to analyze the fact.

Findings

SEM analysis explores that, both the individualistic and collectivistic considerations affect purchasing intention of organic foods. The regression result finds that income, the number of earning members, occupation, age and BMI are influential determinants of weekly purchasing frequency of organic foods. This research suggests, along with consumer's economic solvency an organized market with dissemination of health and environmental benefits of organic foods acts as a catalyst for purchasing intention of those products.

Research limitations/implications

However, there is still scope of investigating intention-behavior gap between the actual purchasing behavior and purchasing intention, which is not addressed in this study.

Originality/value

To understand the perception of comparatively educated and solvent people toward purchasing intention of organic foods, this research is one of the pioneering attempts in the context of an unorganized organic food market.

Abstract

Purpose

The purpose of this paper is to integrate food-related lifestyle (FRL) approaches and perspectives from the theory of planned behavior (TPB) to investigate the profiles of consumers who purchase organic food online and to analyze differences in the related behaviors of consumers with different FRLs.

Design/methodology/approach

A link to a web site explaining the content and presenting an online questionnaire was provided through the e-newsletters of five well-known Taiwanese organic food distributors. Respondents were given NT$50 e-gift coupons after they had completed the questionnaire. A total of 950 questionnaires were distributed, and 753 valid samples were obtained.

Findings

Attitudes toward purchasing organic food online had the greatest positive influence on purchase intentions, followed by cognitive control and, finally, subjective norms. Populations with different FRLs were divided into traditional food, uninvolved food, and enthusiastic food shoppers, and these all showed significant differences with respect to the TPB model, their online organic food purchasing profiles, and demographic variables.

Originality/value

Organic food businesses draw on various features of the internet to solve issues such as the difficulty of storing and transporting perishable food items. However, few studies have combined theories of online consumer behavior with food characteristics and psychographic approaches to analyze the overall consumer profiles of purchasers of organic food. The author believes that the conclusions of this study may be used by the food industry to analyze consumer demand, draw inferences about organic food-related habits in consumers’ everyday lives, and design more appropriate internet marketing strategies.

Abstract

Purpose

This study aims to scrutinize the halal trust model by integrating the quality and valence theory in the mobile food purchasing service during the COVID-19 outbreak.

Design/methodology/approach

This research uses data from 368 Muslim customers collected via an online survey from Bandung, West Java, Indonesia. This study uses partial least square modelling to appraise the formation of halal trust, including halal food quality, mobile apps quality, perceived benefit and health risk as drivers and loyalty as the consequence.

Findings

The data analysis notes that the combination of perceived quality and valence theory provides a comprehensive understanding of halal trust in mobile halal food purchasing during COVID-19. This study also verifies the crucial role of halal food quality and mobile apps quality in gaining halal trust.

Research limitations/implications

This study used data from Muslim customers of the greater Bandung, Indonesia. The data limited the generalization of this study's findings. Moreover, this study predicted halal trust by integrating perceived benefit, perceived trust and quality as the predictors, whereas other determinants such as commitment and reputation were not included. Therefore, future researchers can incorporate these issues in their future halal trust research.

Practical implications

To gain Muslim trust, this study recommends managers whose halal food is sold via mobile apps ensure that their halal food has a quality standard, made of, and processed according to Islamic values. Next, having a high-quality mobile app is also a must.

Originality/value

This study is early research that examines the integration of the quality and valence theory to evaluate halal trust in mobile halal food purchasing during COVID-19.

Purpose

To investigate the determinants of Muslim Millennials’ purchasing behavior of Halal food in a Muslim-majority country under the reflective and reflexive systems.

Design/methodology/approach

Through 339 responds collected from the survey, this study uses 319 responds from Muslim Millennial consumers in Indonesia for further analysis. Data analysis is conducted using a partial least square (PLS) to verify the relationships between the variables herein.

Findings

Though purchasing Halal food is familiar to Muslim Millennial consumers in a religious society, this study demonstrated that purchase intention and habit can independently affect their purchasing behavior. In forming the purchase intention, attitude, subjective norms, perceived behavioral control, and religiosity are all necessary determinants on this phenomenon.

Practical implications

This study enlightens the food providers to continuously intervene in the purchase intention of Muslim Millennials as a consumer group as purchasing of Halal food is also a matter of habit for such consumers in the religious community. To strengthen Muslim Millennials’ purchase intention of Halal food, governments should harmonize their actions with the various stakeholders involved in this purchase intention.

Originality/value

This study focuses on the Muslim Millennial consumer group regarding their Halal food purchasing behavior by integrating two behavioral theories (theory of planned behavior and theory of interpersonal behavior) to obtain a more comprehensive explanation of their purchasing behavior.

Abstract

Purpose

In this study, Ajzen's Theory of Planned Behavior is used as a theoretical framework with the aim of extending prior research examining halal food purchasing behavior in Malaysia.

Design/methodology/approach

Data are collected through self‐administered questionnaires. This paper uses multiple regression analysis to identify the factors affecting halal food purchasing behavior of Malaysian consumers.

Findings

The multiple regression analysis results indicate that all factors have positive and significant influence on halal food purchasing intention.

Research limitations/implications

Like other empirical studies, this study is not without its limitations. The sample size itself is relatively small. The study can be strengthened by increasing the sample size and including participants in other geographical areas. This study also considered only three antecedents of halal food purchasing among consumers in Malaysia. As Malaysia is actually trying to play for a bigger role in the halal industry, more research is needed to identify and address problematic aspects of consumption of halal food. Potential correlations between some of the independent variables (e.g. trust, moral obligation, habit, and self‐identity) need to be reported in a future study.

Originality/value

This study contributes to and extends our understanding of the halal food purchasing behavior, identifying the rationales for purchasing of halal foods. From a managerial viewpoint, the findings provide support for investment decisions and for decisions relating to the establishment of Malaysia as a halal hub that address and take the concerns and needs of businesses and Malaysian Government agencies into consideration.
