Abstract
Purpose
The purpose of this paper is to understand how identities drive customer values, attitudes toward organic foods and satisfaction, all of which influence world or mouth (WOM).
Design/methodology/approach
Questionnaire surveys were administered to the purchasers of organic foods. In total, 512 completed responses were obtained for data analysis.
Findings
Strongly defined social identity and role identity are significant antecedents of consumers’ health consciousness and socially responsible consumer behavior (SRCB). This finding explains why organic shoppers value their health and the environment (i.e. self- and others-oriented values). Additionally, health consciousness and SRCB significantly influence attitudes toward organic foods. The study reveals that attitudes toward organic foods positively influence organic shoppers’ satisfaction, and their satisfaction increases positive WOM. Finally, the moderating effects of involvement and mass media are examined. When organic shoppers are strongly involved with organic foods, their health consciousness has a more positive effect on their attitudes toward organic foods. However, organic shoppers’ involvement did not moderate the effect of SRCB on attitudes toward organic foods. Likewise, the mass media did not moderate the effect of health consciousness and SRCB on attitudes toward organic foods.
Originality/value
This study incorporates critical factors such as the antecedents of the customer values to develop a comprehensive model for understanding of organic shoppers’ consumption of organic foods.

Purpose
Understanding the determinants that influence consumers' attitude to adopt sustainable diets represents an important area of research to promote sustainable food consumption. The aim of this study is to investigate how (1) the individual openness to new foods (ONFs), (2) the involvement in food trends (IFTs) and (3) the social media use (SMU) can potentially impact the attitude towards the adoption of a sustainable diet (ATSD).
Design/methodology/approach
The authors conducted a structured survey in eight countries: Italy, Germany, Poland, USA, Brazil, Japan, Korea and China. The final sample of 5,501 individuals was analysed applying a structural equation model.
Findings
The main results show that attitude towards the ATSD is influenced differently by the antecedents investigated in each country. In particular, the ONF positively influences the ATSD only in Italy, USA and Germany. IFT positively influences the ATSD only in Italy, Poland and USA, while negatively in Germany. SMU has a positive influence on the ATSD only in Japan, USA and Germany, while a negative one in Brazil and Korea.
Originality/value
This study presents a cross-country comparison about the antecedents of attitude towards the ATSD, thus providing evidence for the need of ad hoc marketing strategies by companies and policies by institutions at single country level.

Abstract
Purpose
This study explores the tourists' behavioral intention toward tasting ethnic food by proposing 'enjoyment’ as an indirect mechanism in improvising the model of Wang. In other words, when affective and cognitive components are triggered positively while reading online gastronomy reviews on social media platforms, enjoyment is aroused, subsequently enhancing the desire to taste ethnic foods displayed online.
Design/methodology/approach
Data from 385 visitors from Kashmir, India, were gathered using a purposive sample technique. The research model was put to the test using PLS-SEM.
Findings
Direct and indirect mechanisms influence Behavioral Intention. Enjoyment acts as a mediator. Overall, the results validated the presence of three direct and full mediation paths.
Practical implications
This study will help tourism practitioners justify their promotional activities on social networking sites, particularly in endorsing regional ethnic dishes. For example, tourism authorities could collaborate with bloggers on social media and offer incentives to promote attractive images of ethnic food. Similarly, ethnic food outlets can improve online exposure and interactivity by encouraging travelers to leave feedback after visits.
Originality/value
Unlike other studies, this research broadens our understanding by focusing on direct and indirect mechanisms. The inclusion of a mediator enhanced the total variance of the dependent variable.

Purpose
Despite the pervasiveness of teen-targeted food advertising on social media, little is known about the persuasive elements (or power) found within those ads. This research study aims to engage with the concept of “visual style” to explore the range of visual techniques used in Instagram food marketing to teenagers.
Design/methodology/approach
A participatory study was conducted with 57 teenagers, who used a specially designed mobile app to capture images of the teen-targeted food marketing they encountered for seven days. A visual thematic analysis was used to assess and classify the advertisements that participants captured from Instagram and specifically tagged with “visual style”.
Findings
A total of 142 food advertisements from Instagram were tagged with visual style, and classified into five main styles: Bold Focus, Bespoke, Absurd, Everyday and Sensory.
Research limitations/implications
This study contributes to an improved understanding about how the visual is used as a marketing technique to capture teenagers’ attention, contributing to the persuasive power of marketing messages.
Originality/value
Food marketing is a significant part of the young consumer’s marketplace, and this study provides new insight into the sophisticated nature of such marketing – revealing the visual styles used to capture the attention of its brand-aware audience.

Abstract
Purpose
Food waste is acknowledged as a major environmental issue, but the retail sector has only begun to recognise this in recent years. The purpose of this paper is to answer when, how and why food waste became important for retail in Sweden.
Design/methodology/approach
A mixed-methods approach was used that included a literature review, quantitative data from retail, field studies, 11 interviews and a media study consisting of newspaper articles spanning 10 years. The combined methods provided qualitative rigor and saturation.
Findings
Results show that the increased interest in the issue stems from several factors working together. These factors include the availability of data, the formation of actor networks working together, increased societal environmental awareness, attitude change amongst consumers and retail, and the role of media as an actor and a method for making the issue visible. In addition, results show how the issue surfaced further, as more data became available. Findings suggest that food waste became an environmental issue, and later, the focus shifted to finding solutions for retail.
Originality/value
The results highlight the importance for policy to implement preventive measures and strengthen incentives for retail to work with reducing food waste. Such incentives should target cheap food, education, routines, legislation and business models throughout the food chain.

Abstract
Purpose
This paper aims at understanding whether firms conceive and use social media as disseminators, as well as amplifiers, of their results concerning sustainability and responsibility and whether this practice stimulates stakeholder engagement and participation, laying the foundation for a dialogue on corporate social responsibility.
Design/methodology/approach
This research analyses the theoretical background of communication related to sustainability and responsibility and the company–stakeholder dialogue in the food sector. An inductive interpretive approach is provided by conducting a qualitative content analysis related to the communication practices of the food company Ferrero (Italy) from June 2015 to September 2019.
Findings
Companies can use social channels to present their vision, values, approaches and choices related to sustainability and responsibility. Social media can become useful networks to reach stakeholders requiring and claiming for transparency about more and more relevant topics – allowing, at the same time, a two-way relationship and dialogue.
Research limitations/implications
The limitation of the paper is that it presents the observation of a single firm.
Practical implications
The managerial implications relate to the value created by a dialogical communication: this is a strong foundation for enhancing relationships capable of maintaining and increasing the company's reputation. The establishment of an interchange about sustainability and responsibility represents a new way to direct the company and its stakeholders towards mutual support in creating value.
Originality/value
This article contributes to enriching the debate on the degree of knowledge, understanding, response and reaction to social media–based corporate social responsibility (CSR) communication.

Abstract
Purpose
This study aims to investigate diners’ self-presentation mechanism as manifested in foodstagramming. Drawing upon the social cognitive and self-presentation theories, this study develops a conceptual model to examine the relationships among food experiential value (i.e. extrinsic value and intrinsic value), self-efficacy, strategic self-presentation and self-presentation outcomes.
Design/methodology/approach
The authors adopt a multi-study approach with two empirical studies (Study 1: tourists, n = 254; Study 2: residents, n = 252) and use partial least squares structural equation modeling to test the proposed model.
Findings
The results consistently show significant effects of extrinsic value, intrinsic value and self-efficacy on strategic self-presentation, which subsequently evokes perceived enjoyment and behavioral intention. The impact of food experiential value on self-efficacy varies between tourists and residents. The mediating effects of self-efficacy and strategic self-presentation are also confirmed.
Practical implications
Restaurant managers and destination marketers should acknowledge the importance of food experience as expressive capital and recognize self-presentation as a meaningful tool that links restaurant food experience with consumers’ personal branding. Businesses should strive to create a desired experiential setting shaped by food price, restaurant service, food aesthetics and consumers’ feelings, allowing diners to translate these stimuli into self-presentational resources.
Originality/value
This study dives into an important, yet under-examined, phenomenon of foodstagramming. To the best of the authors’ knowledge, this study is the first to theoretically link food experience to foodstagramming behavior via a self-presentation mechanism. Findings provide important theoretical and managerial implications.

Purpose
Leveraging marketer-generated content (MGC) can increase firms' success. However, few studies uncover the effects of MGC-related attributes on consumer engagement in the context of food marketing. This paper aims to explore the influence of MGC characteristics (valence, content types, vividness and interactivity) on consumer engagement.
Design/methodology/approach
This study uses WeChat official account data of seven food companies from China and conducts negative binomial regression models.
Findings
The findings indicate that different MGC-related characteristics have separate impacts on consumer WeChat engagement. Title valence, transactional title content and title with punctuation vividness negatively affect consumers' consuming engagement. Knowledgeable or entertaining title content and title with interactivity both positively affect consumers' consuming engagement. Moreover, transactional body text content negatively influences consumers' contributing engagement, whereas entertaining body text content shows positive effects. Vivid and interactive MGC body text attributes enhance consumers' contributing engagement behavior.
Originality/value
This study contributes to social media research in food marketplaces and sheds light on the effect of different WeChat MGC characteristics on separate consumer engagement.

Abstract
Purpose
This study aims to explore the degree of Chinese consumers' trust and confidence in the Chinese dairy products supply chain and the relationships between trust and overall confidence in dairy products safety and quality.
Design/methodology/approach
This study collected data from 1,278 respondents by field survey from five provinces of China. The data were analyzed using ordered logit model.
Findings
This study shows the following results: (1) Chinese consumer confidence in domestic dairy products and trust in actors of the dairy chain are at a moderate-to-low level. (2) Government regulators are considered to take the most responsibility, with both an optimism-enhancing and a pessimism-reducing effect (the former effect is greater), while perceived trust in dairy farmers and retailers has little effect. (3) Perceived care has both an optimism-enhancing and a pessimism-reducing effect, and the former effect is stronger. Competence and openness have an optimism-enhancing effect and a pessimism-reducing effect, respectively. (4) The importance of the three dimensions of trust related to optimism-increasing and pessimism-reduction is limited, except in the case of government regulators.
Originality/value
This study contributes to a better understanding of consumer trust in food safety and also help demonstrate to the actors and institutions involved in the dairy supply chain the best way to improve the performance of their duties to meet the consumers' needs for safe and quality dairy products.
