Abstract
Purpose
Advanced glycation end products (AGEs) are continuously formed in the body during normal metabolism and ageing through a non‐enzymatic glycosylation reaction between proteins and carbohydrates, known as the Maillard's reaction. Many AGEs are capable of forming cross‐links between proteins and most of them have fluorescent properties. Production of AGEs is markedly increased in diabetes mellitus where they play a pathological role. The aim of the present study is to investigate the possible inhibitory effects of urea, metformin and ascorbic acid on in vitro formation of fluorescent AGE products by comparing their inhibitory capacity with a well‐known AGEs inhibitor, aminoguanidine.
Design/methodology/approach
Experiments were carried out using bovine serum albumin and D (+) glucose to produce glycated bovine serum albumin, a fluorescent AGE. Fluorometer analysis was then performed to measure AGEs production and fluorescent intensity was compared between glycated samples with and without the inhibitors.
Findings
Aminoguanidine which is known to form guanidine‐carbonyl adduct, reversing the glycation process. was found to inhibit AGEs formation by 57 per cent. Although urea and metformin inhibits glycation by the same route, it was the most effective inhibitor among all four inhibiting agents used. Ascorbic acid, an antioxidant, also inhibits fluorescent AGEs by 52 per cent. It was also a good cross‐link inhibitor. Urea showed an inhibitory effect of 27 per cent. It is suggested that urea formed in the body might be a possible natural protector of AGEs formation. Finally, metformin, an antidiabetic drug inhibits AGEs production by only 12 per cent. It is known to rather increase peripheral sensitivity to insulin and lower blood‐glucose level.
Originality/value
The paper shows that aminoguanidine is the most efficient inhibitor and ascorbic acid supplementation could prove useful in diabetic patients to remove reactive species generated in the Maillard's reaction.

Abstract
Purpose
The purpose of this paper is to focus on some of the reported natural advanced glycation end‐products (AGE) inhibitors providing an outline of AGE‐breakers and the potential anti‐glycation properties of some foodstuffs.
Design/methodology/approach
Literature searches were conducted to find a link between common household spices, medicinal herbs, AGE and diabetes which could lead to practical home‐based recommendations for changes in a person's diet.
Findings
Findings tend to indicate the potential of some dietary components to prevent and/or inhibit AGE formation. Thus, these dietary agents may be exploited for controlling AGE‐mediated diabetic pathological conditions and as possible natural protector of AGE formation in vivo. Consequently, the quest for new AGE inhibitors is considered of paramount importance which can be of therapeutic potential in patients with diabetes or age‐related diseases.
Practical implications
Studies on the inhibition of AGE formation have received increasing recognition from both a nutritional and medical research standpoint. Inhibition of the formation of AGE is believed to play a key role in the prevention of diabetic and cardiovascular complications. Investigation of nutritional bioactive compounds with anti‐glycation properties provides future perspectives for prevention or intervention related to AGEs complications.
Originality/value
This paper adds on to the evidence of the use of dietary agents as natural inhibitors of AGE and hence the prevention of diabetic complications and age‐related diseases.

Purpose
Renal failure is an end-stage consequence after persistent hyperglycemia during diabetic nephropathy (DN), and the etiology of DN has been linked to oxidative stress. The purpose of this research was to determine the beneficial synergistic effects of S-Allyl Cysteine (SAC) and Taurine (TAU) on oxidative damage in the kidneys of type 2 diabetic rats induced by hyperglycemia.
Design/methodology/approach
Experimental diabetes was developed by administering intraperitoneal single dose of streptozotocin (STZ; 65 mg/kg) with nicotinamide (NA; 230 mg/kg) in adult rats. Diabetic and control rats were treated with SAC (150 mg/kg), TAU (200 mg/kg) or SAC and TAU combination (75 + 100 mg/kg) for four weeks. The estimation of body weight, fasting blood glucose (FBG), oral glucose tolerance test (OGTT), oxidative stress markers along with kidney histopathology was done to investigate the antidiabetic potential of SAC/TAU in the NA/STZ diabetic group.
Findings
The following results were obtained for the therapeutic efficacy of SAC/TAU: decrease in blood glucose level, decreased level of thiobarbituric acid reactive substances (TBARS) and increased levels of GSH, glutathione-s-transferase (GST) and catalase (CAT). SAC/TAU significantly modulated diabetes-induced histological changes in the kidney of rats.
Originality/value
SAC/TAU combination therapy modulated the oxidative stress markers in the kidney in diabetic rat model and also prevented oxidative damage as observed through histopathological findings.

Purpose
Increasingly, interest in and the uptake of herbal infusions has advanced, namely, owing to their bioactive properties and potential links to health. Given this, the purpose of the present review was to collate evidence from human trials for five popular herbal infusions.
Design/methodology/approach
The systematic review comprised ten human trials (560 participants), investigating inter-relationships between herbal infusions consumption and health. Only human studies involving German chamomile (Matricaria chamomilla L. Asteraceae), ginger (Zingiber officinale Roscoe Zingiberaceae), lemon balm (Melissa officinalis L. Lamiaceae), peppermint (Mentha x spicata L. Lamiaceae)/spearmint (Mentha spicata L. Lamiaceae) and rosehip (Rosa canina L. Rosaceae) teas were included in the present paper.
Findings
Most herbal infusions serve as a good source of flavonoids and other polyphenols in the human diet. Studies included in this paper indicate that herbal infusions (1-3 cups tended to be drank daily; infusion rates up to 15 min) could benefit certain aspects of health. In particular, this includes aspects of sleep quality and glycaemic control (German chamomile), osteoarthritic stiffness and hormone control (spearmint), oxidative stress (lemon balm) and primary dysmenorrhea (rosehip).
Research limitations/implications
Ongoing research is needed using homogenous herbal infusion forms, brewing rates and volumes of water to further reinforce these findings. In the meantime, herbal infusions could provide a useful supplementary approach to improving certain aspects of well-being.
Originality/value
The present paper collates evidence from human trials for five popular herbal infusions.

Abstract
Purpose
This paper aims to depict the mechanistic role of vitamin D on dementia prevention, relief of the severity and the complication of the disease. All papers indexed in scientific databases, including Scopus, Elsevier, PubMed, Embase and Google Scholar between 2000 and 2021 were extracted and discussed. To present the mechanistic role of vitamin D in declining the severity of dementia, keywords including dementia, vitamin D, oxidative stress, inflammation, amyloid beta-Peptides were used.
Design/methodology/approach
Dementia is a prevalent cognitive disorder worldwide, especially in elderly people, which is accompanied by serious disabilities. Besides genetic, biological and lifestyle factors are involved in the incidence of dementia. An unhealthy diet along with micronutrient deficiencies are among modifiable factors. Vitamin D is one of the important micronutrients in brain health. Besides the involvement in gene expression, bone mineralization, apoptosis, inflammation, skeletal maturation, neurotropic action and hemostasis of phosphate and calcium, vitamin D also exerts neuroprotective effects via genomic and non-genomic pathways.
Findings
Vitamin D up-regulates the expression of various genes involved in dementia incidence via various mechanisms. Decreasing oxidative stress and the neuro-inflammatory cytokines levels, regulation of the expression of alternated Proteins including Tau and Amyloid-ß, calcium homeostasis in the central nervous system and also vascular are considered main mechanisms.
Originality/value
Considering the importance of diet in preventing dementia, adherence to a healthy diet that provides essential nutrients to brain function seems to be urgent. Controlling serum levels of vitamin D periodically and providing vitamin D by related sources or supplements, if there is a deficiency, is recommended. Future studies are needed to clarify other related mechanisms.

Purpose
For the prevention and cure of disease, patient use various types of chemical and drug agents. Along with their curative effect, almost all drugs have some destructive effects and side-effects. Due to the minimal and/or none of unwanted side-effect, recently, the use of herbal remedy as the drug of choice becomes the preference choice. The mangosteen, Garcinia mangostana, contains various types of polyphenols. It has been used as a traditional medicine from the ancient times till present days. The purpose of this paper is to investigate the biological properties of mangosteen in relation to health promotion effects.
Design/methodology/approach
Several research papers from well-known database (such as PubMed, Google scholar, Scopus and Sciencedirect) were reviewed without considering publication-times to understand the biological properties of mangosteen.
Findings
Mangosteen and its xanthone exerted diverse biological activities such as anti-oxidant, anti-inflammatory, anti-allergy, anti-bacteria, anti-fungal, anti-malaria, anticancer and anti-diabetes.
Originality/value
Based on these studies, mangosteen is beneficial dietary supplement of overall human health.

Purpose
The purpose of this paper is to evaluate the association between food consumption classified by the degree of processing and cardiometabolic risk factors in a population at risk of cardiovascular disease.
Design/methodology/approach
A cross-sectional study conducted with 325 adults and elderlies who present a cardiovascular risk factor. The food consumption was evaluated by a 24 h dietary recall, and it was classified according to the NOVA classification.
Findings
Individuals who presented a higher consumption of processed and ultra-processed food had a higher prevalence of abdominal obesity, waist/hip ratio (PR = 1.005; p-value = 0.049), waist circumference (PR = 1.003; p-value = 0.02) and high total cholesterol (PR = 1.008; p-value = 0.047), while ultra-processed had a higher prevalence of excess weight (PR = 1.004; p-value = 0.04), and abdominal obesity, waist/hip ratio (PR = 1.005; p-value = 0.04), waist circumference (PR = 1.004; p-value = 0.004) and waist/height ratio (PR = 1.003; p-value = 0.03).
Practical implications
An association was found between the degree of food processing and cardiometabolic risk factors, even in a population that already has a risk factor for cardiovascular disease, reinforcing the importance of personalized nutrition orientation that considers the profile of the target population as well as types of meals.
Originality/value
Food processing in itself can influence cardiometabolic risk and, as far as is known, no study has evaluated food processing in individuals who already have some type of cardiovascular risk. Also, consumption was assessed by the degree of processing between meals.

Purpose
The purpose of this paper is to assess the association between galactose intake and risk of nonalcoholic fatty liver disease (NAFLD).
Design/methodology/approach
In total, 196 newly diagnosed patients with NAFLD and 803 controls were recruited from a referral hepatology clinic. Dietary intakes were assessed using a validated and reliable food frequency questionnaire. Dietary intakes of galactose were compared between cases and controls.
Findings
Median (interquartile range) of dietary galactose intake was 2.24 (1.36-3.53) g/day for all subjects. In age and sex adjusted-model, subjects in the highest tertile of galactose intake had more than three times higher risk of NAFLD compared with those in the lowest tertile (odds ratio [OR]: 3.05; 95 per cent confidence interval [CI]: 2.02-4.54), (p-value < 0.001). Additionally controlling for body mass index (BMI), physical activity, energy intake and dietary lactose intake, the direct association between galactose intake and NAFLD remained significant (OR: 2.77; 95 per cent CI: 1.55-4.95), (p-value < 0.001).
Originality/value
This study was the first one to assess the association between galactose intake and risk of NAFLD.

Purpose
The purpose of this study was to investigate the impact of replacing two different fats on dyslipidemia, glycemic balance and adipose tissue redox status in obese rats.
Design/methodology/approach
Obesity was induced by feeding a high-mutton-fat diet during three months. An experimental group (n = 24) was divided into two groups that were fed during one month, 20 per cent of margarine or sardine oil. At Day 30, six rats from each group were sacrificed and the remaining rats were then subjected to a change in diet for one month: margarine was replaced by sardine oil and inversely, and then the rats were sacrificed. Three other groups (n = 6), each fed during two months, 20 per cent of margarine, sardine oil or mutton fat, served as controls.
Findings
Substitution of sardine oil by margarine compared to control sardine oil had increased triacylglycerols (TGs), glycosylated hemoglobin (HbA1c) and isoprostanes (IsoPs) values, but decreased thiobarbituric acid reactive substances (TBARS) and superoxide dismutase activity. Replacing margarine by sardine oil compared to control margarine reduced total cholesterol, TG, HbA1c, TBARS and IsoP contents but enhanced glutathione reductase and peroxidase activities. Nevertheless, comparing with the mutton fat, the two substitutions had improved glycemic and lipidic abnormalities and attenuated lipoperoxidation by enhancing enzymatic antioxidant defense. These favorable effects were better when margarine was replaced by sardine oil.
Originality/value
Substituting margarine with sardine oil seems to attenuate beneficial cardiometabolic risk markers associated to obesity and potentiate efficiency adipose tissue against the oxidative stress induced by the obesogenic diet.
