Abstract

Purpose

An extended period of economic growth along with stubborn childhood stunting and wasting levels raises questions about how consumer food purchasing behaviors respond to income increases in Rwanda. The purpose of this paper is to assess the role income, prices, policy, agricultural production, and market access play on how rural households purchase different food groups.

Design/methodology/approach

Six separate log-normal double hurdle models are run on six different food groups to examine what affects the probability a household purchases in each food group and for those who do purchase, what determines the quantity purchased.

Findings

Rural Rwandans are price and expenditure responsive but prices have more impact on food group purchases. Crop production resulted in reduced household market procurement for its associated food group but had mixed effects on the purchases of all other food groups. Rural Rwandans purchase and consume low amounts of animal-based proteins which may be a leading factor related to the high stunting and wasting rates. Owning an animal increased the purchased quantity of meat but lowered the purchased quantity of most other food groups.

Practical implications

Results suggest that policies and programs have to address multiple constraints simultaneously to increase the purchases of the limited food groups in the rural household diets that may be contributing to the high rates of stunting and wasting.

Originality/value

This study is the first to evaluate the interplay among prices, household income, household production, policies and donor programs, and demographic variables on rural Rwandan household food purchases.

Abstract

Purpose

Developed countries have devised guidelines for various eating habits, many of which simply recommend “eating various foods” without specifying how much food the individual should consume each day. The authors aimed to examine the relationship between the variety of food consumed and the probability of nutritional adequacy in middle‐aged Japanese.

Design/methodology/approach

In total, 215 subjects (102 men and 113 women) provided complete dietary records for seven days in each of the winter, spring, summer and autumn. Subjects were categorized into groups of five according to the amount of each food eaten per day, calculated energy, and nutrients in the food. Results were compared with respective indicators of nutrition defined by the Dietary Reference Intakes for Japanese (2010).

Findings

The percentage of overweight subjects was higher in the group that did not consume a wide variety of foods. Intake of energy, calcium, zinc, magnesium, vitamins B1, B2 and C were insufficient in the subjects who did not consume a wide variety of foods. Although a trend toward sufficient nutrient intake was observed in the group that consumed a variety of foods, the estimated average requirement for several nutrients such as calcium and zinc was below accepted standards for good nutrition.

Originality/value

The variety of foods eaten is related to the adequacy of intake levels of certain nutrients and to body mass index in middle‐aged Japanese subjects. Eating a wide variety of foods is important to ensuring adequate nutrient intake.

Abstract

Purpose – This study explores U.S. consumer attitudes toward organic foods in order to demonstrate that multiple and meaningful segments can be identified based on attitudes and beliefs rather than demographics and that a more targeted marketing strategy could likely create a better fit with consumer wants and needs.

Methodology – Q-methodology is employed, in part to demonstrate its usefulness for segmentation purposes.

Findings – Six meaningful segments of consumers are generated based on attitudes toward organic foods: Health Enthusiasts, Organic Idealists, Hoban's Hogwashers, Unengaged Shoppers, Bargain Shoppers, and Cynical/Distrustfuls. These groups vary in attitudes toward organic food, and despite conventional wisdom, exhibit a reasonable match between attitude and purchase behavior. Segments are also generated for viewpoints toward conventionally grown foods, revealing that consumers do not simply hold binary positions (pro-organic, anticonventional), but instead consider each food type on its respective merits. Positioning and media choice strategies are considered for each organic food segment.

Originality – This chapter distinguishes between different types of consumers of organic food by using Q-methodology, with the result being a rich, detailed description of the values and preferences of each group. With these descriptions, the organic food industry can better align its marketing efforts with the priorities of individual consumer groups, rather than their simplistic demographics as are commonly utilized. The chapter also offers a unique perspective on the attitude–behavior gap, revealing that when the attitude is understood in greater detail, the gap appears to disappear.

Abstract

Purpose

The purpose of this paper is to develop a group-based food diversity index, which represents diversity in household expenditures across food subgroups. The index is compared to a product code-based index and applied to reassess determinants of food diversity demand.

Design/methodology/approach

A group-based food diversity index is developed by adapting the US Healthy Food Diversity Index. Using Food Acquisition and Purchase Survey data on 4,341 US households, correlation coefficients, descriptive statistics and linear regressions are estimated to compare and reassess the determinants of group and product code-based food diversity demand.

Findings

Results show that the group and product code indices capture different forms of food diversity. The indices are only moderately correlated and have varying means and skewness. Education, gender, age, household size, race, SNAP and food expenditures are found to significantly affect food diversity. However, the magnitude and direction of the effects vary between group and product code indices. Given these differences, it is essential that studies select a diversity index that corresponds to their objective. Results suggest that group-based indices are appropriate for informing food and nutrition policy, while product code-based indices are ideal for guiding food industry management’s decision making.

Originality/value

A group-based food diversity index representative of household expenditures across food subgroups is developed.

Abstract

Purpose

This paper aims to evaluate the impact of the groups from the Brazilian Food Pyramid on macro and micronutrient content of food consumed by adolescent girls from a school-based study.

Design/methodology/approach

Baseline data from “Healthy Habits, Healthy Girls” school-based randomized control trial was used for this study. A sample of the girls aged 14 to 18 years old (n = 253) from ten schools in Brazil was evaluated. Participants completed validated food frequency questionnaire, from which, the total kilocalories and/or grams from each food groups were calculated. Descriptive statistics, t-student test and linear regression were used for the analysis with a significant level of p < 0.05.

Findings

Mean daily intake of the girls was 2,887.09 (standard error 91.50) kcal/day. There was a positive significant association between relative intake of the “Oil and Fats” group and protein (ranged from 24.95 to 96.12 kcal/d), fats (48.36 to 192.62 kcal/d), iron (56.93 to 162.85 kcal/d) and sodium (208.08 to 699.69 kcal/d) contents. In regards to the intake of “Sugars and Sweets” group, there was a positive significant association for carbohydrates (97.53 to 491.70 kcal/day), total fiber (0.56 to 2.64 kcal/d), iron (0.85 to 4.40 kcal/d) and sodium (175.59 to 838.48 kcal/d) content.

Originality/value

Findings demonstrate that girls over consumed the “Oils and Fats” and “Sugars and Sweets” groups reflecting on increased of important macro and micronutrients of their diet. Therefore, consuming up to 1 serving size of these groups is a good way to promote healthy eating among this population.

Abstract

Purpose

The purpose of this paper is to see if edutainment containing only healthy food can change children’s preferences and food choices toward healthy eating, especially in overweight or obese children, and if the children’s self-regulation, emotional overeating and parents that use food as a reward would influence those changes. This is important because childhood obesity is one of the biggest public health problems of the 21st century.

Design/methodology/approach

The authors conducted a study in two public schools (total 189 children) with a between-subjects experimental design (control vs experimental group), where children in experimental group watched an episode of Nutri Ventures series without unhealthy foods.

Findings

The results showed no differences in both children’s preferences and children’s food choices between the control and experimental group, with exception of older children, and contrary to our expectations. Older children in the experimental group chose more unhealthy food than children in the control group. The authors also saw differences in food choices between “emotional overeating” groups, where the children in “high” group tended to choose less healthy food items, especially in the experimental group of children. This leads the authors to believe that isolated edutainment may not be enough to change preferences and food choices; instead it might even have an opposite effect.

Originality/value

This study aimed to identify if edutainment containing only healthy food could be more effective in childhood obesity prevention but instead it showed how complex the whole topic can be.

Abstract

Purpose

Through the application of domain-analytic principles, the purpose of this paper is to explore how participants’ understandings of healthy eating are related to their grouping and classification of foods.

Design/methodology/approach

In total, 30 food-interested people were asked to (1) sort a series of 56 statements about food, health, and eating on a scale from “most disagree” to “most agree”; (2)complete an open card sort of 50 foods; and (3) classify these 50 foods on a scale from “most unhealthy” to “most healthy”. Exercises (1) and (3) involved Q-methodology, which groups people who share similar understandings of a phenomenon.

Findings

Participants’ understandings of healthy eating – revealed by the first Q-methodology exercise – were related to shared food priorities, values, and beliefs; these understandings were indirectly connected with food identities, which was not expected. This suggests that lay domain knowledge is difficult to capture and must involve other methodologies than those currently employed in domain-analytic research.

Research limitations/implications

Although a small sample of food-interested people were recruited, the purpose of this study was not to make generalized claims about perspectives on healthy eating, but to explore how domain knowledge is related to everyday organizational processes.

Originality/value

To “classify” in Library and Information Science (LIS) usually involves an engagement with formally established classification systems. In this paper the author suggests an alternative path for LIS scholars: the investigation of everyday life classification practices. Such an approach has value beyond the idiosyncratic, as the author discusses how these practices can inform LIS researchers’ strategies for augmenting the messages provided by static classification technologies.

The recent high food price and volatility, as well as economic recession, have reversed the last decade's progress in reducing hunger and poverty. This aim of this paper is to conduct a factor and sequential typology analysis to identify groups of countries categorized according to five measures of food security.

Design/methodology/approach

The recent high food price and volatility, as well as economic recession, have reversed the last decade's progress in reducing hunger and poverty. This paper conducts a factor and sequential typology analysis to identify groups of countries categorized according to five measures of food security – consumption, production, imports, distribution, and agricultural potential – by using indicators from 175 countries. The analysis first identifies five distinct food security groups, measured by the levels of nutrient intake, and then further splits these groups based on indicators of food production, trade security, and agricultural potential.

Findings

The results suggest that the terms of “developing country” or “low income country” can be inaccurate in the discussion of food security because they are too general and can actually mask the extreme heterogeneity in different aspects of food security. The results also indicate that different responses are needed by different types of food‐insecure countries to address their unique food and economic challenges.

Originality/value

The typology of food security and linkage between agricultural potential and food security contribute to a better understanding of the effectiveness of different policy interventions under a country's unique conditions.

Abstract

Purpose

The aim of this study is in twofolds. First, to take a critical look at nutrient consumed and its trends and second, to examine the relationship between share of nutrient consumed across selected food groups and per capita income in Nigeria.

Design/methodology/approach

The author uses seemingly unrelated regressions.

Findings

The result of the first objective reveals that the average calorie, protein and fat intakes were still below the recommended daily allowance since the 1960s as diets in Nigeria remained very much cereal-based over the years. Also, the results of objective two show that calorie, protein, and fat share of animal products respond positively but inelastic to the per capita income growth in Nigeria over the years.

Originality/value

Contrary to previous studies, the present study is designed not to fit aggregated nutrient demand from various food items as a function of income, but to relate the nutrient share of each homogenous and heterogeneous food product categories to the aggregated nutrient intake from these food groups and per capita income in Nigeria.

Abstract

Purpose

The purpose of this paper is to describe and analyse the principle and practice of self-catering system in a Danish prison. Self-catering is a reflection of the Danish correctional principle of normalisation between prison and community life. Unlike some other jurisdiction, issues of control in meal preparation are subordinate to prisoners’ right to choose and prepare their own food.

Design/methodology/approach

Findings are derived from 13 months of ethnographic fieldwork in a Danish maximum security prison for men, including in-depth interviews with 68 prisoners.

Findings

Overall findings showed that thinking about meals and their preparation is time consuming for prisoners who tend to be positive about the system making connections with their ability to exercise responsibility for making healthily choices. The research concludes that prisoners’ possibility for developing cooking competences during incarceration could support prisoners change in social identity from crook to cook.

Originality/value

Food is a fundamental need and the ability to choose what to eat and to prepare one's own food should be a right for all people, including prisoners. This research shows that Danish prisoners are very pleased about the system of self-catering. Most prisoners are concerned about preparing their own meals according to their taste and cultural diversity. If the prison offers the opportunity to train as a chef during imprisonment it could support the prisoner's change in social identity from crook to cook on the outside.
