Abstract

In this paper, we propose a new way for the determination of aw in fresh and salt meat. The principle is founded on the analysis of a small air volume inside the product. First we describe the fundamental definition of water activity, the state‐of‐the‐art of commercial aw meters, the effects of aw on microbiology in food. In the second step, after a description of the sensor, the principle and the procedure of measurement are explained. The measurements of aw are realized in meat at different stages of drying. Reproducibility and the temperature effect are particularly analyzed.

Abstract

In this work an original humidity sensor is described. It is based on the study of Seebeck voltage evolution during the water evaporation of a micro‐module Peltier (MMP). The measurement principle is to detect (after cooling) the small temperature decrease created when total water evaporation occurs over the MMP. All the active thin layers of the sensor are made from (Bi2Te3)0.9(Bi2Se3)0.1 (N) films and (Bi2Te3)0.25(Sb2Te3)0.75 (P) films flash evaporated. Experimental measures were performed in a climatic chamber for several values of relative humidity (50 to 90 per cent). The phenomenon (evaporation) appears after a delay time τ. This delay time is the response time of the sensor. Therefore it is possible to draw the evaporation delay time as a function of relative humidity.

Abstract

This article describes a new humidity sensor using the technique of differential thermal analysis (DTA). The energy of water vaporisation is estimated via the measurement of the Seebeck voltage of miniature thermocouples used in differential mode on a Peltier module causing condensation from the ambient air. This sensor uses the sensitivity of alloys V2VI3 containing [Bi, Te, Sb, Se], 400‐440μV.K–1. Experimental measurements have been performed in a climatic chamber at constant temperature. The time variation of the differential Seebeck voltage with relative humidities HR varying from 10 to 90 per cent makes it possible to identify with precision the point of water evaporation. For each value of the relative humidity, it is directly a function of the condensate mass. The integration of these curves over time makes it possible to calculate the energy of vaporisation and the condensate mass.

Abstract

Purpose

Currently, digital technology has been proposed as a new archetype for developing an effective traceability system in the perishable food supply chain (FSC). Implementation of such a system needs significant investment and the burden lies with the members of the supply chain. The purpose of this paper is to examine the impact on the profit of the supply chain members due to the implementation of an effective traceability system with such a large investment. The study also tries to explore the impact of the implementation of such a system by coordination among the members through a cost-sharing mechanism.

Design/methodology/approach

A two-level supply chain that comprises a supplier and retailer is analyzed using a game-theoretic approach. The mathematical models are developed considering the scenario for an individual, centralized and both members invest using a cost-sharing mechanism. For each of the models, the impact of product selling price, information sensing price and quality improvement level on profit is analyzed through numerical analysis.

Findings

The study reveals that consumer involvement can be a strong motivation for the supply chain members to initiate investment in the traceability system. Further, from an investment perspective cost-sharing model is beneficial compared to the individual investment-bearing model. This mechanism can coordinate as well as benefit the FSC members. However, the model is less beneficial to the centralized model from profit and quality improvement levels.

Practical implications

Food wastage can be less from supplier and retailer perspectives. Moreover, consumers can purchase food items only after verifying their shipping conditions. Consequently the food safety scandals can be reduced remarkably.

Originality/value

Digital technology adoption in the perishable FSC is still considered emerging. The present study helps organizations to implement a traceability system in the perishable FSC through consumer involvement and a cost-sharing mechanism.

Social implications

As an arts and humanities and social science-based research approach, autoethnography is a vital, creative methodology in advancing social justice in mental health.

Originality/value

This study, written by an experienced teacher, mentor and supervisor of the approach with an international reputation, is original in its provision of a comprehensive teaching resource in article form to assist the development of beginning autoethnographers.

Abstract

Purpose

Despite the current progress in realizing how Big Data Analytics can considerably enhance the Sustainable Manufacturing Supply Chain (SMSC), there is a major gap in the storyline relating factors of Big Data operations in managing information and trust among several operations of SMSC. This study attempts to fill this gap by studying the key enablers of using Big Data in SMSC operations obtained from the internet of Things (IoT) devices, group behavior parameters, social networks and ecosystem framework.

Design/methodology/approach

Adaptive Prospects (Improving SC performance, combating counterfeits, Productivity, Transparency, Security and Safety, Asset Management and Communication) are the constructs that this research first conceptualizes, defines and then evaluates in studying Big Data Analytics based operations in SMSC considering best worst method (BWM) technique.

Findings

To begin, two situations are explored one with Big Data Analytics and the other without are addressed using empirical studies. Second, Big Data deployment in addressing MSC barriers and synergistic role in achieving the goals of SMSC is analyzed. The study identifies lesser encounters of barriers and higher benefits of big data analytics in the SMSC scenario.

Research limitations/implications

The research outcome revealed that to handle operations efficiently a 360-degree view of suppliers, distributors and logistics providers' information and trust is essential.

Practical implications

In the Post-COVID scenario, the supply chain practitioners may use the supply chain partner's data to develop resiliency and achieve sustainability.

Originality/value

The unique value that this study adds to the research is, it links the data, trust and sustainability aspects of the Manufacturing Supply Chain (MSC).

Abstract

Purpose

Adopting lean principles can unleash several opportunities for firms seeking to increase the efficiency and effectiveness of their product development (PD) process. This study aims to investigate the implementation paths of lean tools in the innovation process of small and medium-sized enterprises (SMEs).

Design/methodology/approach

A set of 47 lean tools are identified from the literature and ascribed to the five lean thinking principles, i.e. Value, Map, Flow, Pull and Perfection. Their practical adoption – in terms of “when” and “how” – is then explored in a multiple case study of three SMEs in the manufacturing industry.

Findings

SMEs adopt multiple lean tools in different phases of their innovation process. They are still at the beginning of the holistic adoption of lean PD, but some core lean tools, such as A3 reports and visual management, are adopted systematically. Results reveal that specific sets of lean tools and supporting principles are more valuable in certain phases of SMEs innovation process. Specifically, the lean tools concerning the principle of Value and Map can enable the phases of Innovation inputs, Concept development and Solution implementation; the ones ascribed to Flow and Pull the phases of Concept development, Testing and experimentation, and Solution implementation; the Perfection tools to the final phases of Testing and experimentation, Solution implementation and Market introduction.

Practical implications

Results provide a reference for SMEs already adopting lean tools in their production process to be extended to the PD process, especially when the delivery of new products is pivotal. Innovative SMEs could evaluate the introduction of specific lean tools in one or more definite phases of their PD process.

Originality/value

The study contributes to the literature on the complementarity between lean and innovation by studying the context of SMEs with a process perspective, thus unveiling the potential paths of a widespread application of lean innovation in SMEs.

Abstract

Purpose

The purpose of this study is to increase awareness of current supply chain (SC) security-related issues by providing an extensive analysis of existing SC security solutions and their limitations. The security of SCs has received increasing attention from researchers, due to the emerging risks associated with their distributed nature. The increase in risk in SCs comes from threats that are inherently similar regardless of the type of SC, thus, requiring similar defence mechanisms. Being able to identify the types of threats will help developers to build effective defences.

Design/methodology/approach

In this work, we provide an analysis of the threats, possible attacks and traceability solutions for SCs, and highlight outstanding problems. Through a comprehensive literature review (2015–2021), we analysed various SC security solutions, focussing on tracking solutions. In particular, we focus on three types of SCs: digital, food and pharmaceutical that are considered prime targets for cyberattacks. We introduce a systematic categorization of threats and discuss emerging solutions for prevention and mitigation.

Findings

Our study shows that the current traceability solutions for SC systems do not offer a broadened security analysis and fail to provide extensive protection against cyberattacks. Furthermore, global SCs face common challenges, as there are still unresolved issues, especially those related to the increasing SC complexity and interconnectivity, where cyberattacks are spread across suppliers.

Originality/value

This is the first time that a systematic categorization of general threats for SC is made based on an existing threat model for hardware SC.

Abstract

Purpose

The food supply chain (FSC) challenges coupled with global disruptions, such as the recent coronavirus disease 2019 (COVID-19) pandemic outbreak, exacerbate its vulnerability. The Internet of things (IoT) is one of the disruptive technologies being adopted in food supply chain management (FSCM). This study aims to address the challenges of IoT adoption in the FSC by systematically analyzing the prior pertinent literature.

Design/methodology/approach

A structured literature review was used to collate a list of peer-reviewed and relevant publications. A total of 72 out of 210 articles were selected for the final evaluation.

Findings

The literature review findings suggest five themes: technical, financial, social, operational, educational and governmental related challenges. A total of 15 challenges were devised from the review related literature of IoT adoption. The study concludes with future research recommendations for scholars and practical implications for practitioners.

Research limitations/implications

While this study focuses on the overall FSC, further research should address other domains in the FSC such as cold supply chain, agriculture and perishable food to gain a better contextual understanding of the specific case.

Originality/value

The topic of IoT adoption in the FSCM is still considered emerging. Therefore, the present work contributes to the limited studies and documentation on the level of IoT implementation in the FSCM. This study should help organizations to assimilate how to adopt and manage the IoT application by addressing the factors and challenges presented in this research.
