Abstract

Purpose

This study aimed to develop the integration of the multiperiod production-distribution model in a closed-loop supply chain involving carbon emission and traceability. The developed model was for agricultural food (agri-food) products, considering the reverse flow of food waste from the disposal center (composting center) to producers.

Findings

The results indicate that integrating the production and distribution model considering food waste recycling provides low carbon emissions in lower total costs. The sensitivity analysis also found that there are trade-offs between production and distribution rate and food waste levels on carbon emission and traceability.

Research limitations/implications

This study focuses on the mathematical modeling of a multiperiod production-distribution formulation for a closed-loop supply chain.

Originality/value

The model of the agri-food closed-loop supply chain in this study that considers food recycling and carbon emissions would help stakeholders involved in the agri-food supply chain to reduce food waste and carbon emissions.

Abstract

Purpose

Food banks play an increasingly important role in society by mitigating hunger and helping needy people; however, research aimed at improving food bank operations is limited.

Design/methodology/approach

This systematic review used Web of Science and Scopus as search engines, which are extensive databases in Operations Research and Management Science. Ninety-five articles regarding food bank operations were deeply analyzed to contribute to this literature review.

Findings

Through a systematic literature review, this paper identifies the challenges faced by food banks from an operations management perspective and positions the scientific contributions proposed to address these challenges.

Originality/value

This study makes three main contributions to the current literature. First, this study provides new researchers with an overview of the key features of food bank operations. Second, this study identifies and classifies the proposed optimization models to support food bank managers with decision-making. Finally, this study discusses the challenges of food bank operations and proposes promising future research avenues.

Abstract

Purpose

Access to food through retail supply chain distribution can vary significantly among the urban poor and leads to household food insecurity. The paper explores this sustainable supply chain phenomenon through a field study among South Africa's urban poor.

Design/methodology/approach

Urban metabolic flows is the theoretical basis in the context of supply chain management (SCM). The field study comprised 59 semi-structured interviews in one South African township. Data were recorded, transcribed and translated, and coded using NVivo 12 to provide an inventory of eight themes categorized and patterned from the analysis.

Findings

Findings indicate societal factors play a significant role affecting food distribution, access and security from a spatial perspective of retail outlet locations and a nutritional standpoint regarding quality and quantity of food.

Research limitations/implications

The study is exploratory in one township, and while rigorously conducted, the generalizability of findings is limited to this context.

Practical implications

The study practically contributes by providing guidance for food retailers and policymakers to include nutritional guidelines in their distribution planning, as well as the dynamics of diverse neighbourhoods that exist in modern urban contexts.

Social implications

New forms of retail food distribution can provide better security and access to food for the urban poor, contributing to Sustainable Development Goals (SDGs) 2 Zero Hunger and 11 Liveable Cities.

Originality/value

The study is interdisciplinary and contributes by linking UN SDGs and SCM through urban metabolic flows from development studies as an overarching framework to enable analysis of relationships between physical, social and economic factors in the urban environment.

Abstract

Purpose

This paper evaluates the feasibility and benefits of a local food distribution system, which connects farmers and restaurant owners from a logistics perspective. This paper considers a platform to improve operations and investigates various schemes for delivering locally produced food to restaurants using a food hub.

Design/methodology/approach

To compare distribution scenarios and derive managerial implications, a simulation model has been developed and executed in Matlab 2019a©. The model evaluates various settings of business connections between farmers and restaurateurs.

Findings

Results of computational experiments highlight great potentials of such a system, particularly to reduce travel distances. To obtain these positive externalities, the local system requires specific attention during the design of logistical aspects and needs to be planned following a specific structure.

Practical implications

The developed simulation model can be used to improve understanding of related short food supply chains by analyzing specific cases where the main actors involved differ in terms of type, number, and location.

Originality/value

The paper analyzes the feasibility and the effects of a new distribution system that can connect supply chain actors directly. The analyses focus on logistics aspects, a topic that is often neglected in sustainable consumption research. Furthermore, the paper does not focus of a single case study but develops a customizable model to be used in various settings.

Abstract

This article draws upon our perspective as academic-practitioners working in the fields of food insecurity, food systems, and inequality to comment, in the early stages of the pandemic and associated lockdown, on the empirical and ethical implications of COVID-19 for socio-economic inequalities in access to food in the UK. The COVID-19 pandemic has sharpened the profound insecurity of large segments of the UK population, an insecurity itself the product of a decade of “austerity” policies. Increased unemployment, reduced hours, and enforced self-isolation for multiple vulnerable groups is likely to lead to an increase in UK food insecurity, exacerbating diet-related health inequalities. The social and economic crisis associated with the pandemic has exposed the fragility of the system of food charity which, at present, is a key response to growing poverty. A vulnerable food system, with just-in-time supply chains, has been challenged by stockpiling. Resultant food supply issues at food banks, alongside rapidly increasing demand and reduced volunteer numbers, has undermined many food charities, especially independent food banks. In the light of this analysis, we make a series of recommendations. We call for an immediate end to the five week wait for Universal Credit and cash grants for low income households. We ask central and local government to recognise that many food aid providers are already at capacity and unable to adopt additional responsibilities. The government's – significant – response to the economic crisis associated with COVID-19 has underscored a key principle: it is the government's responsibility to protect population health, to guarantee household incomes, and to safeguard the economy. Millions of households were in poverty before the pandemic, and millions more will be so unless the government continues to protect household incomes through policy change.

Abstract

Purpose

This paper aims to analyze the conceptions that underlie the notion of “sustainable food” of different social actors based on a study focused on promoting sustainable food strategies on university campuses.

Design/methodology/approach

The research incorporates the views of various actors linked to a sustainable food project on the campuses of the National Autonomous University of Mexico (Universidad Nacional Autónoma de México), which is one of the most important universities in Latin America. The study includes a literature review on food sustainability strategies on university campuses and implemented sustainable food programmes in 100 universities worldwide. It also incorporates semistructured interviews and discussion groups conducted with consumers of the university community, 60 smallholder farmers and managers of 23 alternative food networks in Mexico City.

Findings

This research evidence the diversity of meanings and perspectives associated with food sustainability and a generalized emphasis on its environmental dimensions, although environmental problems tend to be partially understood. It also highlights the priority students and producers give to the accessibility of healthy foods.

Research limitations/implications

The results of this study revealed important elements, potentially useful for designing sustainable food strategies on the campuses, considering the principles of the rights-based approach to development and social participation.

Originality/value

The research evinces tensions in the definition of food sustainability and its translation into actions from a multistakeholder perspective.

Abstract

Purpose

The purpose of this paper is to present a quantitatively supported explanation of the intellectual development, the schools of thought and the sub-areas of the food cold chain (FCC) research to derive meaningful avenues for future research.

Design/methodology/approach

This study builds on bibliometric analysis and network analysis to systematically evaluate a sample of 1,189 FCC articles published over the past 25 years. The descriptive statistics and science mapping approaches using co-citation analysis were performed with VOSviewer software.

Findings

The findings reveal a state-of-the-art overview of the top contributing and influential countries, authors, institutions and articles in the area of FCC research. A co-citation analysis, coupled with content analysis of most co-cited articles, uncovered four underlying research streams including: application of RFID technologies; production and operation planning models; postharvest waste, causes of postharvest wastage and perishable inventory ordering polices and models; and critical issues in FCC. Current research streams, clusters and their sub-themes provided meaningful discussions and insights into key areas for future research in FCC.

Originality/value

This study might reshape practitioners’, researchers’ and policy-makers’ views on the multifaceted areas and themes in the FCC research field, to harness FCC’s benefits at both strategic and tactical level. Finally, the research findings offer a roadmap for additional research to yield more practical and modeling insights that are much needed to enrich the field.

Abstract

Background: Rising food bank usage in the UK suggests a growing prevalence of food insecurity. However, a formalised, representative measure of food insecurity was not collected in the UK until 2019, over a decade after the initial proliferation of food bank demand. In the absence of a direct measure of food insecurity, this article identifies and summarises longitudinal proxy indicators of UK food insecurity to gain insight into the growth of insecure access to food in the 21st century.

Methods: A rapid evidence synthesis of academic and grey literature (2005–present) identified candidate proxy longitudinal markers of food insecurity. These were assessed to gain insight into the prevalence of, or conditions associated with, food insecurity.

Results: Food bank data clearly demonstrates increased food insecurity. However, this data reflects an unrepresentative, fractional proportion of the food insecure population without accounting for mild/moderate insecurity, or those in need not accessing provision. Economic indicators demonstrate that a period of poor overall UK growth since 2005 has disproportionately impacted the poorest households, likely increasing vulnerability and incidence of food insecurity. This vulnerability has been exacerbated by welfare reform for some households. The COVID-19 pandemic has dramatically intensified vulnerabilities and food insecurity. Diet-related health outcomes suggest a reduction in diet quantity/quality. The causes of diet-related disease are complex and diverse; however, evidence of socio-economic inequalities in their incidence suggests poverty, and by extension, food insecurity, as key determinants.

Conclusion: Proxy measures of food insecurity suggest a significant increase since 2005, particularly for severe food insecurity. Proxy measures are inadequate to robustly assess the prevalence of food insecurity in the UK. Failure to collect standardised, representative data at the point at which food bank usage increased significantly impairs attempts to determine the full prevalence of food insecurity, understand the causes, and identify those most at risk.

Abstract

Background: The study focuses on the challenges encountered during the distribution of food and face-mask items during the first COVID-19 lock-down by various relief supply chain actors.

Methods: Data were collected from forty (40) relief actors through online (via Zoom and telephones) and face-to-face interviews, between January 2021 to March 2021. Data was coded based on per-determined themes after which it was further processed using Atlas ti. v7.57 to generate patterns.

Results: The study established challenges related to needs identification, procurement, warehousing, transportation, handling, beneficiary verification, and last-mile distribution. Additionally, the media and politics coupled with the emergence of new actors and governance issues were part of the challenges identified.

Conclusions: The identified challenges were internal and external to the relief supply chain; hence actors could have control over some while others were beyond their control. The findings could inform practitioners and policymakers on what challenges are likely to affect their operations, especially during a pandemic, and design appropriate coping mechanisms.

Abstract

Purpose

This paper shows the accounting, accountability and calculative practices associated with emergency food allocations by the City of Turin through a program to feed the vulnerable during COVID-19.

Design/methodology/approach

This is a single case study framed by Foucault's governmentality concept. The data was collected through interviews with key institutional actors and triangulated against decrees, circulars, ordinances and other publicly available documents.

Findings

The accounting tools of governmentality are always incomplete. Sometimes unique situations and crises help us to revise and improve the tools we have. Other times, they demand entirely new tools.

Research limitations/implications

Accounting needs both things to count and a context to count them. In the case of food assistance, what is counted is people. In Turin's case, many people had never been counted – either because there was no need or because they were unaccounted for by choice. Now, the government was accountable for the welfare of both. Thus, new classification systems emerged, as did organisational and accounting solutions.

Originality/value

Although the accounting-for-disasters literature is diverse, studies too often favour the macro social, economic and political issues surrounding crises, neglecting the micro issues associated with governmentality and calculative practices.
