Abstract

Purpose

Delivery of safe products while meeting customer demand is a critical marketing requirement for logistics. To meet this requirement, this paper aims to develop a decision‐making model for distribution strategies in cold chain network with the real‐time flow and quality information of perishable foods.

Design/methodology/approach

This paper first presents a real‐time monitoring solution for cold chain distribution by integrating radio frequency identification (RFiD), sensor, and wireless communication technologies. With the enhanced visibility of product flow and quality information, a multi‐stage planning model is developed to determine optimal distribution plans so that the overall cost of the entire cold chain network is minimized.

Findings

The proposed distribution‐planning model can capture the dynamics of logistics due to frequent update of product quality information during distribution. Therefore, the distribution decision will be adjusted at sequential stages to optimally preserve the product value and meet demand. The proposed solution and model can ensure an effective cold chain logistics and thus meet the marketing requirement.

Research limitations/implications

The current planning model cannot quantitatively capture all benefits, such as the social impact, due to the implementation of RFiD and other technologies.

Originality/value

The proposed solution to achieve complete visibility of the cold chain is innovative and addresses the urgent requirements for cold chain logistics from marketing perspective. For the first time, the economic benefits of real‐time information on product quality can be quantitatively evaluated by the multi‐stage planning model and this has been verified by a numerical case study.

Abstract

This chapter provides insights into the distribution challenges faced by alternative food networks (AFNs) in Japan. Consumers in Japan are showing increasing interest in supporting and buying directly from farmers, reflecting a growing demand for local food production and consumption. This trend parallels the increasing popularity of AFNs which are often touted as distribution models that seek to reconfigure the relationship between producers and consumers. Although AFNs are defined as a bottom-up response to the unsustainable nature of the industrial food system and the exploitative trade relations that are embedded within global food supply chains, there is little in the literature regarding challenges that emerge when scaling AFNs. This chapter focuses on the distribution challenges that emerge for AFN models that exist outside of direct market transactions, by comparing AFN models in Japan with a local wholesale market system that exists within the conventional, mainstream food system. Based on an analysis of the nuances and complexities that AFNs face in coordinating aggregation and distribution, we argue that the promotion of local food systems can also benefit existing conventional food systems, by leveraging the infrastructure of local wholesale markets. The distribution logistics and fundamentals of parity pricing from the wholesale market system would enable AFNs in Japan to establish a more accessible and sustainable food system. Using four case studies, including a local wholesale-market and three AFN models that distribute agricultural products from rural to rural, and rural to urban areas located in the Kansai region of Japan, we deepen the discussion of how small-scale farmers and their involvement in AFNs can better support sustainable food system transformation.

Abstract

Purpose

The purpose of this paper is to model the distribution stage of the public distribution system (PDS) and optimize the inventory policy during this stage of the PDS to address some of the inefficiencies present in the system. This study models this supply chain as a multistage supply chain consisting of storage depots, issue centers, fair price shops and card holders.

Design/methodology/approach

A two-stage modeling approach is used to model the distribution stage in the PDS. In the first stage, the authors developed a simulation model for periodic review-based stock policy with appropriate assumptions. This helped minimize the total supply chain cost (TSCC). The TSCC consists of three cost elements, namely, ordering cost, holding cost and shortage cost. These three cost elements, in turn, depend on inventory policy parameters, such as review periods and base stock levels, at various echelons. In the second stage, a Genetic Algorithm based optimization approach was used.

Findings

A set of optimal policy parameters was identified. It is observed that base stock levels at issue centers are higher as compared to those in the FPS and the TSCC is less in scenario, when backorder cost is equal to the holding cost.

Practical implications

Present study will be useful to policy makers in improving PDS performance. This optimization of inventory policies helps actors in the PDS supply chain to choose appropriate policy parameters in the present inventory policy so as to reduce the overall distribution cost.

Originality/value

Unlike the previous researchers who examined the PDS from the social security perspective and tried to address specific problems to improve functioning of the PDS, this study looked at the problem as a supply chain-related problem and optimized the inventory parameters in one of the subsets of the PDS supply chain.

Abstract

Examines food distribution in Hungary as a case study for changes occurring in Eastern European food markets. The analysis is based on models of evolution of food distribution structures. Data for the study was assembled from a wide range of Western and Eastern publications. This information is supplemented by means of extensive interviews with both state and private experts in Hungary. The outcome is a comprehensive statement of the structure of food distribution at retail, wholesale, processing, and farm levels. The estimates presented here are believed to be considerably more accurate than in earlier reports. This is employed to locate both food manufacturing and food distribution within the evolutionary model; and to forecast its likely evolution. Concludes that Hungary will develop in the direction of Western food distribution patterns, and that while it is estimated to be currently approximately 25 years behind the West, will rapidly catch up. The country still needs to restructure agricultural production but will also have to change its product mix to include foods that appeal to the Western world, increase the quality and range of foods currently offered, and develop high‐value niche markets.

Abstract

Purpose

The purpose of this paper is to predict or even control the food safety risks during the distribution of perishable foods. Considering the food safety risks, the distribution route of perishable foods is reasonably arranged to further improve the efficiency of cold chain distribution and reduce distribution costs.

Design/methodology/approach

This paper uses the microbial growth model to identify a food safety risk coefficient to describe the characteristics of food safety risks that increase over time. On this basis, with the goal of minimizing distribution costs, the authors establish a vehicle routing problem with a food safety Risk coefficient and a Time Window (VRPRTW) for perishable foods. Then, the Weight-Parameter Whale Optimization Algorithm (WPWOA) which introduces inertia weight and dynamic parameter into the native whale optimization algorithm is designed for solving this model. Moreover, benchmark functions and numerical simulation are used to test the performance of the WPWOA.

Findings

Based on numerical simulation, the authors obtained the distribution path of perishable foods under the restriction of food safety risks. Moreover, the WPWOA can significantly outperform other algorithms on most of the benchmark functions, and it is faster and more robust than the native WOA and avoids premature convergence.

Originality/value

This study indicates that the established model and the algorithm are effective to control the risk of perishable food in distribution process. Besides, it extends the existing literature and can provide a theoretical basis and practical guidance for the vehicle routing problem of perishable foods.

Abstract

Purpose

The food industry and its distribution solutions often lie at the center of sustainability-related arguments. However, little is known about the dynamic role of business capabilities for sustainable transformations in the context of local food distribution. Accordingly, this study aims to investigate how dynamic capabilities drive sustainable supply chain management (SSCM) business practices in short food supply chains (SFSCs) through the professionalization and expansion of online distribution channels.

Design/methodology/approach

The present study analyzes sustainability-related practices at six online distribution channels selling local food products in Germany and Austria. By applying a cross-case study and theory-elaboration approach, the study analyzes empirical data derived from these businesses and provides insights into how dynamic capabilities can facilitate SSCM practices within SFSCs. Hereby, potential pathways for a sustainable transformation in this industry context are deduced through abductive reasoning.

Findings

The empirical findings provide evidence that supply chain orientation, coordination, innovation practices and strategies are highly relevant for SFSCs seeking to reach upscaling effects in regional markets. However, because SFSCs may not be able to reach mass markets without weakening their own sustainability performance, the present study recommends addressing sustainability inefficiencies in the region and developing further expansion potentials through replication in other regions. In this approach, related and necessary SSCM dynamic capabilities were identified and validated based on the empirical findings.

Originality/value

Although SFSCs include sustainability aspects at their core – particularly regarding resource usage, environmental friendliness and social-standard assurance – missing distribution-related capabilities limit growth such that these businesses often remain in a niche. To address this issue, the study builds on dynamic capabilities theory by identifying and describing core SSCM practices and capabilities; moreover, this study is among the first to elaborate empirically on the use of dynamic capabilities theory in this specific industry context.

The purpose of the study is to propose a framework for fleet management and make suitable distribution solution choices in the food industry.

Design/methodology/approach

This study reviews the literature to examine food distribution criteria. These criteria are used in the analytic hierarchy process (AHP) assessment and combined with discrete events simulation in a structured framework, which is validated through an empirical study.

Findings

The empirical case results demonstrate that both the AHP and discrete events simulation converge toward the same solution in most cases.

Originality/value

This study contributes to the literature on distribution management and develops a framework that can both guide future research and aid logistics practitioners in analysing distribution decision-making systems in dynamic environments.

Abstract

Purpose

This study aimed to develop the integration of the multiperiod production-distribution model in a closed-loop supply chain involving carbon emission and traceability. The developed model was for agricultural food (agri-food) products, considering the reverse flow of food waste from the disposal center (composting center) to producers.

Findings

The results indicate that integrating the production and distribution model considering food waste recycling provides low carbon emissions in lower total costs. The sensitivity analysis also found that there are trade-offs between production and distribution rate and food waste levels on carbon emission and traceability.

Research limitations/implications

This study focuses on the mathematical modeling of a multiperiod production-distribution formulation for a closed-loop supply chain.

Originality/value

The model of the agri-food closed-loop supply chain in this study that considers food recycling and carbon emissions would help stakeholders involved in the agri-food supply chain to reduce food waste and carbon emissions.

Abstract

In this paper, the relation between the constructs operational complexity, Web‐based orientation of the company and the company’s distribution structure used for the fulfilment of Internet customer orders is investigated in the food home shopping branch. A model is proposed with relations between these constructs, which is researched through a survey among food e‐tailers. A positive association between operational complexity and the distribution structure used could be established, meaning that more complex operations (with a full‐line assortment and a large number of orders) tend to have special (Internet orders only) distribution centres for the fulfilment of Internet customer orders. Companies with a store infrastructure tend to keep using this existing infrastructure (unless the number of orders becomes large) and new Internet‐only companies tend to use special Internet‐orders only warehouses, unless the number of orders is small, in which case co‐operation with existing stores is preferred.
