Abstract

Purpose

This study aims to assess the information-seeking behaviors, attitudes and beliefs about pregnancy-related nutrition, food-related myths and taboos and supplementation among pregnant women in different communities of Pakistan.

Design/methodology/approach

A cross-sectional quantitative survey method was used in this study, which included 150 pregnant women from various locations in Lahore and Faisalabad.

Findings

Most participants were between the ages of 25 and 29, having 14 years of education. Regardless of age or number of children, all selected women had the same dietary awareness. Regarding myths and taboos, highly significant values (p = 0.001) were found in various studied variables. No significant difference was observed in knowledge level between age and number of children. It was observed that food myths and taboos significantly (p = 0.001) impact pregnant women’s dietary choices.

Research limitations/implications

This survey experienced limited representativeness; many participants provided incomplete food and nutritional information. This research was conducted in two major districts of Pakistan, i.e. Lahore and Faisalabad; therefore, the results can be generalized for a population of pregnant women living in the northeastern region of Pakistan.

Practical implications

This study can provide helpful insight for health-care professionals to improve pregnant women’s nutritional status and knowledge.

Social implications

The outcomes of this study can help guide how pregnant women might be educated and have better nutritional awareness at domestic and professional levels.

Originality/value

In Pakistan, there is a lack of research on pregnant women’s nutritional knowledge, and this research can assist health-care professionals in providing diversified knowledge to promote maternal health.

Abstract

Purpose

The paper aims to explore how values and knowledge are expressed in student’s discussions about food and health.

Design/methodology/approach

Food practices present a complex phenomenon extending beyond biomedical descriptions, including social dynamics of food in families and communities. Contextual conditions of social groups and settings have significant impacts on food choices and practices. Although values constitute a central part of educational goals, deliberate values education remains an often-neglected area, with a tendency in both curricula and educational practice to focus on knowledge and overlook how values intersect with knowledge. The paper utilises group interviews supported by participant observations to study the food and health practices as expressed in students' discussions.

Findings

The paper’s findings show how values are expressed together with knowledge as value-knowledges around food and health within the social contexts of family, cultural identities and peer relationships. While moving through their lives, students draw on and utilise biomedical, social-cultural and sensory value-knowledges, simultaneously considering the nutrition and taste of foods, the value of connecting with family and peers in cultural settings as well as getting enough food to feel satiated.

Originality/value

The paper presents an original approach around the necessity to consider and integrate cultural identities in discussions and education about food and health to empower students and their communities in a way that is socially just and equitable. This involves shifting discussions of health education away from students as (ir)rational obstacles but rather as partners in co-creating knowledge for sustainable food and health equity.

Abstract

Purpose

The escalating prevalence of non-communicable diseases has underscored the crucial role of Front-of-Pack-Labelling (FoPL) in shaping consumer decisions. However, the research in this field is still in its developing stage, leading to a fragmented and limited body of work. Given the critical importance of FoPL, it is imperative to conduct a comprehensive literature review of existing research to outline the academic aspect of FoPL research. This research paper aims to combine the available research to generate a systematic compilation of literature, thereby contributing to the advancement of knowledge in this vital area.

Design/methodology/approach

To achieve the objectives, a systematic literature review technique was followed. The database used for the extraction of documents was Scopus. Sixty-three articles were critically examined to extract the relevant information.

Findings

Based on the analysis types of a study conducted, data collection source, types of FoPL studied, key themes, theoretical model, antecedents, dependent/independent variables and outcome were identified. It also explained the underlying phenomenon of FoPL’s impact on the various outcomes. An integrative theoretical model was also proposed based on the underlying mechanism, antecedents, moderator, mediator and outcome. Towards the end of the paper, research gaps were also identified for future paths in unexplored areas.

Originality/value

To the best of the authors’ knowledge, this paper is the first attempt in the field of FoPL to comprehensively include all the dependent and independent variables involved and propose a framework along with future research prospects. The findings will guide researchers and policymakers.

Abstract

Purpose

This study aims to determine the influence of bruise damage generated from the impact test on the physical, chemical and nutritional responses of tomato fruit.

Design/methodology/approach

The impact loading was applied from different heights. The impact energies for 20, 40 and 60 cm drop heights were 129.59, 259.18 and 388.77 mJ, respectively. The injured samples were kept for 48 hours at low (10 °C) and ambient (22 °C) storage temperatures. Weight loss, firmness, color, total soluble solids (TSS), lycopene and carotenoids were measured before the impact test (day 0) and after 48 hours of the impact and storage.

Findings

The drop height of 60 cm and storage at 22 °C showed the highest values in the bruised area. The impact from the 60 cm drop height significantly reduced weight, lightness, yellowness, hue, firmness, lycopene and carotenoids, particularly at 22 °C storage condition. Redness (a*) and color index (CI) showed a remarkable increase (p < 0.05) at 22 °C on tomatoes affected from the highest impact level (388.77 mJ) after 48 hours of storage. No pronounced significance was seen between TSS and drop heights. This study has confirmed that tomato bruising for a short-term storage period induces physiological changes at different storage temperature conditions.

Originality/value

The study can confirm the crucial role of inappropriate handling in increasing fresh produce loss within short-term storage. Also, this research can be considered as a guideline for transporters, handlers, processors, distributors and horticulture researchers in the fresh produce supply chain during postharvest operations.

Abstract

Purpose

This study aims to explore the interrelationships among quality and safety metrics within the Global Food Security Index (GFSI). Its primary objective is to identify key indicators and their respective influences on food security outcomes, thereby enriching comprehension of the intricate dynamics within global food security.

Design/methodology/approach

The analysis encompasses data from 113 countries for the year 2022, utilizing Bayesian Belief Network (BBN) models to identify significant drivers of both the GFSI and quality and safety dimensions. This methodological approach enables the examination of probabilistic connections among different indicators, providing a structured framework for investigating the complex dynamics of food security.

Findings

The study highlights the critical role of regulatory frameworks, access to clean drinking water, and food safety mechanisms in fostering food security. Key findings reveal that “nutrition monitoring and surveillance” has the highest probability (75%) of achieving a high-performance state, whereas “national dietary guidelines” have the highest probability (41%) of achieving a low-performance state. High GFSI performance is associated with excelling in indicators such as “access to drinking water” and “food safety mechanisms”, while low performance is linked to underperformance in “national dietary guidelines” and “nutrition labeling”. “Protein quality” and “dietary diversity” are identified as the most critical indicators affecting both the GFSI and quality and safety dimensions.

Originality/value

This research operationalizes a probabilistic technique to analyze the interdependencies among quality and safety indicators within the GFSI. By uncovering the probabilistic connections between these indicators, the study enhances understanding of the underlying dynamics that influence food security outcomes. The findings highlight the critical roles of regulatory frameworks, access to clean drinking water, and food safety mechanisms, offering actionable insights that empower policymakers to make evidence-based decisions and allocate resources effectively. Ultimately, this research significantly contributes to the advancement of food security interventions and the achievement of sustainable development goals related to food quality and safety.

Abstract

Purpose

In the recent few decades, there has been a rampant increase in the demand of sustainable food products around the world because of high cognizance of consumers toward environment and health. Asian countries, especially India and China, are also expecting a tremendous boost in the domestic demand for organic food products in the upcoming few years. Therefore, it becomes pertinent to explore the factors affecting the purchase intention behavior of organic food items, especially in emerging economies, i.e. India. Hence, the paper aims to explore the factors driving the purchase decision of organic consumers by collecting data set from 603 organic food item consumers in India.

Design/methodology/approach

The study has applied advanced statistical tools, i.e. structural equation modeling, Harman’s single factor test and other statistical measures, to analyze the collected research data.

Findings

The results posit that consumers’ purchase intention has a favorable impact on health aspects; trustworthiness; social innovativeness; functional value; subjective norms and organic product knowledge. Moreover, the result explicates that health consciousness and trustworthiness are vital predictors of organic food purchase intention.

Practical implications

The findings may assist the producers, processors, marketers, policymakers and regulators in devising appropriate policies and strategies for comprehending the complex phenomenon of organic consumers’ purchase behavior.

Originality/value

To the best of the authors’ knowledge, this is the first study to explore the drivers of purchase intention of organic food items by collecting data from well-defined consumers of organic food items in India.

Abstract

Purpose

This study aims to investigate the use of rose petals rich in bioactive components possessing several health benefits in the form of pigmented sweetened rose petals crush (P SRP C) at varying levels in the formulation of cookies to develop consumerfavored natural flavored food products.

Design/methodology/approach

PSRPC was used as functional ingredient in millet cookies at varying levels of 5%, 10%, 15% and 20%. Developed cookies were evaluated for physical parameters, bioactive components along with their associated antioxidant activity, texture (hardness, fracturability), surface morphology and molecular interactions. Most acceptable cookies were selected on the basis of sensory evaluation.

Findings

Cookies formulated from millet flour were significantly different from wheat flour cookies. Furthermore, the incorporation of PSRPC in millet cookies increased the total phenolic content, flavonoid content and antioxidant activity. Texture analysis results showed that cookies with higher level of PSRPC had lower hardness and fracturability. PSRPC-incorporated cookies were darker and redder due to the pigments found in rose. Surface morphology and functional groups were altered on addition of PSRPC. Cookies incorporated with 10% PSRPC were highly acceptable on the basis of sensory score.

Originality/value

The current study developed newer conditions for development of cookies from PSRPC. Results foresee the potential of PSRPC as a functional ingredient in value-added food products having health benefits.

Purpose

This paper aims to address the critical labor shortage in the food industry by exploring the potential of 3D food printing technology as a strategic solution. The study investigates how 3D food printing can enhance productivity, reduce labor costs, and offer innovative applications in various sectors of the food industry.

Design/methodology/approach

The research employs a comprehensive review of existing literature and case studies to analyze the current state of labor scarcity in the food industry and the technological advancements in 3D food printing. The paper also assesses the technical, operational, regulatory, and ethical challenges of 3D food printing and provides strategic recommendations for stakeholders.

Findings

3D food printing technology presents a viable solution by automating labor-intensive tasks, enhancing labor efficiency, and enabling customized food production. The technology’s potential benefits include improved productivity, reduced operational costs, and the ability to meet personalized nutritional needs. However, the adoption of 3D food printing faces challenges such as high initial costs, maintenance requirements, and scalability issues. Additionally, regulatory and consumer acceptance hurdles need to be addressed.

Practical implications

Policymakers are encouraged to support the development and adoption of 3D food printing through funding and clear regulatory frameworks. Business leaders should consider strategic investments in 3D printing technology and training programs to harness its benefits. Technology developers must focus on advancing the capabilities and user-friendliness of 3D food printers. Addressing these aspects can help the food industry overcome labor scarcity and achieve long-term sustainability and efficiency.

Originality/value

This paper provides a comprehensive analysis of 3D food printing technology as a strategic response to labor scarcity in the food industry. Abstract

Purpose

The purpose of this study is to investigate how the different generations of consumers behave in the field of healthy and quality food consumption, considering their perceptions about healthy attributes and healthy eating style, what are the main trusted sources influencing consumption or the attention towards healthy and quality food, how do they behave towards healthy and quality foods and which benefits and barriers affect their consumption.

Design/methodology/approach

Data for this study were obtained from a questionnaire survey carried out over a six-month period in 2021. The questionnaire was administered online. The sampling procedure was based on a convenient non-random sampling method applied to the Italian population aged between 18 and 75 years old. The data collection process resulted in 1,646 completed questionnaires.

Findings

The results show that, in line with the theory of generational cohorts, each generation has its own specificities regarding food behaviour. The study reveals a highly sensitive approach towards healthy and quality food consumption from both Z-ers and the Baby Boomers, whilst X-ers are quite aligned with the other generations. Millennials show specific, sometimes contradictory, attitudes and habits.

Originality/value

The present results offer new insights into the analysis of healthy and quality food consumption, highlighting significant differences amongst generations, which can inspire public and private intervention aimed at encouraging the overall attention and consumption of healthy and quality food with related implications in terms of society's well-being and longevity improvements.

Purpose

The escalating global mortality rates attributed to cardiovascular diseases (CVDs) have drawn the attention of the World Health Organization (WHO), prompting researchers worldwide to address this pressing health concern actively. This study aims to unravel insights into the relationship between specific diets and CVDs by examining authors, countries, articles, journal productivity and their impact.

Design/methodology/approach

Diet patterns are recognised as contributing to the rise of CVDs, prompting a comprehensive analysis of relevant literature from Scopus, Web of Science and PubMed databases using the Biblioshiny software.

Findings

The analysis delves into cluster development and major themes within the literature, encompassing holistic approaches to cardiovascular health, the nexus between diet, nutrition and cardiovascular health, the impact of plant-based diets on diverse populations, the role of the Mediterranean diet in cardiovascular health and the influence of dietary diversity on cardiovascular health across cultures.

Originality/value

Noteworthy developments in emerging areas like dietary history records, NutriOptimisation and MediCulinary Sensitivity are identified, providing a foundation for future researchers to contribute to achieving Sustainable Development Goals (SDG) 3.
