Abstract
Purpose
Examining the impact of socioeconomic status (SES) and expenses spent on food preparation on nutritional intake has always been one of the critical concerns for policymakers. This study aims to investigate the association between household food expenditure as well as SES and dietary nutrient intake in Kermanshah, Iran.
Design/methodology/approach
In this cross-sectional study, households were randomly selected from different strict in Kermanshah, Iran. Data were collected with an SES questionnaire, a demographic data collection form, a weekly food purchase checklist and a food record. The authors performed the analysis of covariance to determine the relationship of dietary nutrient intake of study participants across quintile categories of SES and total food expenses per day.
Findings
Out of 125 households, 119 households including 401 people finished the study. A significant association was observed between higher SES and higher intake of vitamin B2 (p-value = 0.03). Moreover, the household members at the top level of total food expenses per day had significantly greater dietary nutrient intake of energy (p < 0.001), potassium (p < 0.001), magnesium (p < 0.001), calcium (p < 0.001), zinc (p < 0.001), vitamin B2 (p < 0.001), B6 (p < 0.001), B12 (p = 0.002) and vitamin C (p = 0.04).
Originality/value
In our study, higher dietary nutrient intake was observed in the household members at the highest level of total food expenses daily as well as SES. Therefore, governments and policymakers should pay basic attention to optimizing food costs and improving the economic status of people.

Abstract
Purpose
Front-of-pack nutritional labels have been extensively studied to support consumers in making healthier and more informed food choices. However, existing research has gathered conflicting evidence about which category of label, nutrient-specific or summary labels, is more effective. As a result, the European Union has postponed its decision on selecting a unified label to collect additional information. This study specifically focusses on individuals with noncommunicable diseases, an overlooked yet relevant segment of consumers who can significantly benefit from the proper use of nutritional labels in their self-care.
Design/methodology/approach
In a sequence of three studies grounded in the front-of-pack acceptance model and focussing on customers with specific noncommunicable diseases, the authors examined the different effects of the NutrInform Battery and Nutri-Score on food acceptance and portion selection. This research involved the use of structural equation modelling and ANOVA and was conducted with a cumulative sample of 2,942 EU adults, residing in countries with or without previous exposure to nutritional labels.
Findings
The results suggest that among individuals with noncommunicable diseases, nutrient-specific labels are perceived as more useful and easier to use. They also generate a better attitude towards the usage of nutritional labels and are more effective in nudging those consumers towards a proper selection of portions.
Social implications
The results provide valuable insights into how front-of-pack nutritional labels can impact the food choices of individuals with noncommunicable diseases and have implications for public health policies.
Originality/value
Investigation of the effects of NutrInform Battery and Nutri-Score on consumers with noncommunicable diseases, an area currently under-researched.

Abstract
Purpose
The inflammatory potential of diet may play a role in the regulation of low-grade chronic inflammation derived from obesity. This study aims to investigate the relationship between the dietary inflammatory index (DII) and anthropometric indicators of adiposity among Turkish adults.
Design/methodology/approach
The study sample consisted of 833 young adults (mean age = 23 ± 5.2 years). The inflammatory potential of the diet was evaluated with a DII. Data on dietary intake were collected by a single 24-h dietary recall, and DII was estimated from 25 dietary components. Also, the Mediterranean diet (Med-Diet) adherence screener was applied using the 14-item assessment tool.
Findings
The proinflammatory diet was statistically associated with young (p < 0.001), singles (p < 0.001), high school degree (p = 0.011), students (p < 0.001), not working or unemployed (p < 0.001), eating outside (p = 0.016) and lower adherence to a Med-Diet (p = 0.027). There was a statistically significant positive relationship between the DII score and body weight (BW), waist circumference and waist-to-height ratio (WHtR) (r = 0.107; p = 0.002, r = 0.092; p = 0.008, r = 0.115; p = 0.001, respectively). Besides, there was a statistically significant negative relationship between MED score and BW, WHtR and neck circumference (r = −0.101; p = 0.004, r = −0.084; p = 0.016, r = −0.175; p = 0.000, respectively).
Originality/value
To the best of the authors’ knowledge, this was the first Turkish study to assess the association between the anthropometric indicators of obesity and DII or adherence to Med-Diet in young adults. Lower DII scores and higher adherence to Med-Diet are related to the better status of anthropometric indicators of adiposity.

Abstract
Purpose
Covid-19 is a serious threat to the dietary quality of vulnerable communities in developing countries with limited economic resources. This study explored the implications of COVID-19 on daily dietary behavior and food consumption patterns of perishable and nonperishable food commodities based on the gender of household headship in Pakistan.
Design/methodology/approach
The data was collected through an online survey using the snowball sampling technique. A mixed design ANOVA, an independent t-test and a multivariate probit model were used to look at the data from 417 female-headed households and 1,131 male-headed households that were surveyed in the study.
Findings
Female-headed households experienced a greater decrease in their daily intake of perishable and nonperishable food commodities compared to male-headed households during COVID-19. The decrease in consumption of perishable food commodities was greater than the decrease in nonperishable food commodities for both female-headed and male-headed households. Female-headed households witnessed the largest decrease in daily intake of animal-derived foods, while male-headed households observed the highest diminution in consumption of fruits. Female-headed households and male-headed households reduced their consumption of perishable food commodities by more than one-third and one-fifth, respectively. Households with lower socioeconomic status reported higher reductions in their daily intakes of food commodities compared to households with higher socioeconomic status.
Research limitations/implications
The cross-sectional nature of the collected data does not allow the development of a causal relationship between COVID-19 implications and food consumption changes in daily dietary patterns.
Originality/value
Dietary and consumption patterns of populations are changing worldwide due to COVID-19. There is no study to assist policymakers in determining how COVID-19 is affecting the daily food consumption patterns of perishable and non-perishable food commodities of households based on gender in the developing world.

Purpose
This study aims to assess dietary choices of pregnant women and its relationship with their anaemia status.
Design/methodology/approach
A mixed-method study comprising a survey and three focus group discussions (FGDs). The survey included 380 adult pregnant women with data collected on food choices, preferences and haemoglobin (Hb) status.
Findings
More than 50% of women in the study had Hb concentration < 11.0 g/dl; mean Hb was 10.24 g/dl (SD = 1.59). Univariate analysis was used to generate descriptive tabulations for socio-demographic characteristics of respondents, dietary choices for women and anaemia status. T-test and bivariate analysis between dietary diversity score of the women among the food groups consumed as well as their anaemia (Hb) status. This showed that women with high dietary diversity score had improved Hb status (P = 0.003), and those who consumed meat and fish as well as dark leafy vegetables had significantly high diversity scores (P = 0.031 and P = 0.049). Thematic analysis was used for analysing qualitative data.
Research limitations/implications
The sample used in the study is unlikely to be fully representative of pregnant women in the Accra Metropolis. In addition, this study used a cross-sectional study design, making it difficult to establish causal associations between nutritional status and food choice of pregnant women. It does not also show variation in dietary practices by seasons of the year. The scope of the study did not allow for a detailed analysis, and this should be considered in future studies. Also, the study did not explore an obstetric factor like past bleeding history as well as the menstrual cycle of these pregnant women, as these factors are likely to interfere with the anaemia status of the pregnant women.
Originality/value
This paper contributes significant value by specifically focusing on and clarifying the complex relationship between dietary choices and aneamia among pregnant women. It also provides insights into the distinct dietary patterns and preferences of pregnant women, which may be contributing to the high prevalence of aneamia. The results of the study can inform the development of localized, evidence-based interventions to address this critical public health concern, ultimately leading to improved maternal and foetal health outcomes.

Abstract
Purpose
This study analyzed the factors affecting visual attention toward sugar-reduction information (SRI) on sugar-reduced beverages (SRBs) and identified the most optimal SRI type and location using eye-tracking. The eye-tracking results were compared with those of a self-reported questionnaire.
Design/methodology/approach
An eye-tracking experiment was conducted on 50 Korean people in their 20s and 30s to analyze implicit responses. Subsequently, a self-reported questionnaire was administered to analyze explicit responses, facilitating the investigation of perceptions, attitudes, preferences, intentions to purchase SRBs, and preferred SRI types and positions.
Findings
The results were as follows. First, personal trait-, state-, and product-related factors were found to affect eye movement in relation to SRI. Second, eye-tracking revealed that SRI types and locations that drew long-lasting fixation and attracted considerable attention were similar to those preferred in the self-reported questionnaire. Therefore, to efficiently convey information on SRBs, SRI should be combined with a graphic, and not merely a word, and placed in the upper-right corner, exhibiting consistency with the results of two previous experiments.
Originality/value
This study specifically focused on considering personal and product-related traits while conducting an eye-tracking experiment to investigate the factors that attract consumers' attention. Furthermore, this study is the first to investigate the use of SRI labels to promote SRB selection. What is significant is that both explicit and implicit responses were assessed and compared via a self-reported survey and eye-tracking experiments for various SRB categories.

Abstract
Purpose
Studies on developed economies showed that imposing taxes on animal-based foods could effectively reduce agricultural greenhouse gas emissions (AGHGEs), while this taxation may not be appropriate in developing countries due to the complex nutritional status across income classes. Hence, this study aims to explore optimal tax rate levels considering both emission reduction and nutrient intake, and examine the heterogenous effects of taxation across various income classes in urban and rural China.
Design/methodology/approach
The authors estimated the Quadratic Almost Ideal Demand System model to calculate the price elasticities for eight food groups, and performed three simulations to explore the relative optimal tax regions via the relationships between effective animal protein intake loss and AGHGE reduction by taxes.
Findings
The results showed that the optimal tax rate bands can be found, depending on the reference levels of animal protein intake. Designing taxes on beef, mutton and pork could be a preliminary option for reducing AGHGEs in China, but subsidy policy should be designed for low-income populations at the same time. Generally, urban residents have more potential to reduce AGHGEs than rural residents, and higher income classes reduce more AGHGEs than lower income classes.
Originality/value
This study fills the gap in the literature by developing the methods to design taxes on animal-based foods from the perspectives of both nutrient intake and emission reduction. This methodology can also be applied to analyze food taxes and GHGE issues in other developing countries.

Purpose
Changes in eating habits and food preferences caused by circadian rhythm disruptions in shift workers increase the risk for chronic diseases. Several studies demonstrated that shift work exerts adverse effects on various risk factors for cardiometabolic disease and cancer. Moreover, shift work leads to altered eating patterns, including diets low in alkaline foods (such as vegetables, fruit and legumes) and high in acidogenic foods (such as meat, fish and cheese). Previously not examined, this imbalance could result in a high dietary acid load (DAL). DAL has been linked to low-grade metabolic acidosis, tissue inflammation and other metabolic alterations. The aim of this study was to investigate the hypothesis that shift work is positively associated with an increased DAL.
Design/methodology/approach
The authors used cross-sectional data from the National Health and Nutrition Examination Surveys (2007–2010). The sample for this analysis was drawn from a representative multistage-probability sample of US civilians. DAL estimations included potential renal acid load (PRAL) and net endogenous acid production (NEAP). Acid load scores and nutrient intake were compared between regular day workers (n = 3,814; mean age, 43.7 ± 0.3; mean body mass index (BMI), 28.6 ± 0.1; females 46.9%) and shift workers (n = 881; age, 37.4 ± 0.6; BMI, 28.4 ± 0.3; females 48.1%). Evening/night shift workers combined with rotating shift workers were contrasted to participants on a regular daytime schedule.
Findings
Potassium and magnesium intake were significantly lower in shift workers, whereas no significant differences with regard to total energy intake were found. The authors found significantly higher crude NEAPF scores in shift workers (mean: 61.8 ± 1.2 mEq/day) compared to regular day workers (mean: 58.7 ± 0.5 mEq/day, P = 0.023). After adjustment for confounders, however, this association remained no longer significant. There were no significant intergroup differences regarding NEAPR and PRALR.
Research limitations/implications
This study revealed significant differences in crude NEAPF scores between shift workers and day workers. After adjustment for confounders, this association was no longer significant. Such discrepancy is probably because of the scarce homogeneity in the analyzed sample which represents the main limitation of this study. Thus, the results did not confirm the hypothesis that shift work is associated with elevated DAL scores. Importantly, the data suggest significant intergroup differences in nutrient intakes without confirming our initial hypothesis with regard to DAL.
Originality/value
In light of the detrimental health outcomes associated with an increased DAL, this study reinforces the call for evidence-based dietary guidelines in shift workers. Studies in other shift working populations are thus warranted.

Purpose
Malaysia transitions from a pandemic to an endemic state, beginning on April 1, 2022. The dietary intake and physical activity of university students were altered during the COVID-19 pandemic confinement period, but there is limited information on this topic in the post-COVID-19 period. This cross-sectional study aims to understand gender differences in dietary intake and physical activity among university students and investigate the factors influencing their body mass index (BMI) in the post-COVID-19 period.
Design/methodology/approach
The questionnaire used in this study comprised three main segments: sociodemographic information, a semiquantitative food frequency questionnaire and the International Physical Activity Questionnaire.
Findings
Results indicated that males exhibited significantly higher (p < 0.05) mean intakes of total dietary energy and macronutrients compared to females. Compared to the Malaysian Recommended Nutrient Intakes 2017, 76.4% of males and 68.8% of females had a sufficient daily energy intake. The majority of males (52.7%) and females (46.4%) were moderately physically active. Regression analysis revealed that male university students with lower fiber intake (ß = −0.309, p = 0.002) were significantly associated with higher BMI reading after confounding adjustment. However, a similar trend was not observed in female university students.
Practical implications
Understanding the gender differences in dietary intake and physical activity can provide insights into the development of effective gender-specific health promotion strategies and the formulation of policies aimed at promoting healthier lifestyles among university students in the post-COVID-19 pandemic era.
Originality/value
This study provides insights into the gender differences in the dietary and physical activity habits of university students, as well as the factors influencing their BMI in the post-COVID-19 pandemic era.

Abstract
Purpose
This study aims to evaluate the nutrient profile, carbon footprint and water footprint of one-month menus presented in five hospitals in Turkey and compare their environmental impacts with that of the Mediterranean diet.
Design/methodology/approach
The energy and nutrient content of menus were compared with recommendations of the Turkey Dietary Guidelines (TUBER) 2022. Nutrient profiles of hospital menus were evaluated using Nutrient Rich Food 9.3 (NRF 9.3) and SAIN-LIM models. The carbon and water footprints of the menus were calculated and compared with those of the Mediterranean diet.
Findings
Menus’ energy and nutrient content did not conform with TUBER 2022. The SAIN-LIM score of Hospital A (5.7 ± 1.1) was significantly higher than that of Hospitals C (4.8 ± 0.7, p = 0.001) and E (5.1 ± 0.7, p = 0.025). The carbon footprint of Hospital A was significantly lower (2.6 ± 0.3 kg CO2 eq/person/day) and that of Hospital D (4 ± 0.9 kg CO2 eq/person/day) was significantly higher than those of others (p < 0.001). While other menus were similar (p > 0.05), the water footprint of Hospital A was significantly lower (3.5 ± 0.7 L/kg, p < 0.001). In addition, if the menus were suitable for the Mediterranean diet, a reduction of 2.2–23.4% in the carbon footprint and 37.5–58.6% in the water footprint could be achieved. Moreover, menus’ carbon and water footprints were negatively correlated with NRF 9.3 and SAIN-LIM scores.
Research limitations/implications
The primary aim should be to ensure that the planned menus follow the dietary guidelines. In addition, it is an undeniable fact that sustainable nutrition is a complex process with many dimensions. However, it seems possible to improve the nutrient profiles of the menus and reduce their environmental footprint with minor changes to be made in food services.
Practical implications
It seems possible to improve the nutrient profiles of the menus and reduce their environmental footprint with minor changes. For both health and environmental impacts, food services should switch to menus suitable for the Mediterranean diet.
Originality/value
The findings provide new insights into hospital menus’ quality and environmental impact.
