Abstract
Purpose
A food security indicator for technology impact assessment is needed that can be constructed with available data, is comparable over time and space, and represents the multiple dimensions of food security.
Methodology/approach
In this chapter, we review some commonly used food security indicators, analyze the extent to which these indicators satisfy key criteria, and introduce a food security indicator constructed for use in an economic impact assessment and that exhibits a number of desirable properties.
Findings
This income-based indicator is similar to a consumption-based poverty indicator, utilizing an estimate of the income required to purchase a food “basket” that meets nutritional requirements and comparing the food security income requirement to a household’s per capita income.
Social implications
The applicability of the indicator is illustrated with an analysis of the impacts of legume inoculation technology developed for smallholder farms in Tanzania and other parts of Africa. We conclude with a discussion of suggested improvements for food security indicators used for technology impact assessment.

Abstract
Purpose
We examine the joint demand for components of a household’s diet diversity and its relationship with household and regional characteristics that embody diverse food access and utilization constraints within the framework of the dietary patterns of rice producers in Peru.
Methodology/approach
We use multivariate probit regression to account for the simultaneous nature of the choice of different dietary group components.
Findings
There are diverse food intake patterns for households, depending on their wealth, education, demographic structure, market access and geographic location, as well as past shocks. There are also several obesogenic foods that are complements to consumption, with milk being a strong substitute for some of them. Of particular concern is the high vulnerability of female-headed households to low consumption of micronutrient-rich foods as well as the high vulnerability of households with children to high consumption of beverages with added sugars. Climate shocks are also highly associated with poor diet quality.
Practical implications
Results show the important influence of trade on household nutrition and food security. They indicate that policy and program recommendations should focus on nutrition information (such as labeling requirements) and education so that consumers can make informed decisions. They also suggest that policy makers should focus on how to make healthy foods available during crises to prevent health issues after economic and climatic shocks.

Abstract
In this chapter we discuss the dynamics of convergence-divergence between organic and non-organic farming systems. We are specifically interested in how and in what ways organic systems emerge into a new system that synthesizes the diverse qualities of competing systems. Or, will these systems continue to diverge because of their path dependencies and contradictory, unresolvable logics? Alternatively, are we confronted with conversion? Following a discussion of the origin of organic agriculture and the IFOAM Principles, we explore differentiation of two agricultural paradigms that was developed more than 20 years ago before the rise of GMOs. This comparison identifies the key features of both systems and a first interpretation on the potential of convergence-divergence. Third, we take a macro-look at agro-food chain that offers insights on the convergence-divergence potential in the context of global, economic, market, political, and societal dynamics. Fourth, we discuss convergence-divergence at the production level comparing the four agricultural systems. Finally, we reflect and assess on the explanatory potential of our study for the future development of organic and non-organic agriculture/farming. We conclude that there is more evidence for conversion than for convergence.

Abstract
Malnutrition is widespread and affects about one-third of humanity. Increasing production and consumption of vegetables is an obvious pathway to improve dietary diversity, nutrition and health. This chapter analyses how climate change is affecting vegetable production, with a special focus on the spread of insect pests and diseases. A thorough literature review was undertaken to assess current global vegetable production, the factors that affect the spread of diseases and insect pests, the implications caused by climate change, and how some of these constraints can be overcome. This study found that climate change combined with globalization, increased human mobility, and pathogen and vector evolution has increased the spread of invasive plant pathogens and other species with high fertility and dispersal. The ability to transfer genes from wild relatives into cultivated elite varieties accelerates the development of novel vegetable varieties. World Vegetable Center breeders have embarked on breeding for multiple disease resistance against a few important pathogens of global relevance and with large evolutionary potential, such as chili anthracnose and tomato bacterial wilt. The practical implications of this are that agronomic practices that enhance microbial diversity may suppress emerging plant pathogens through biological control. Grafting can effectively control soil-borne diseases and overcome abiotic stress. Biopesticides and natural enemies either alone or in combination can play a significant role in sustainable pathogen and insect pest management in vegetable production system. This chapter highlights the importance of integrated disease and pest management and the use of diverse production systems for enhanced resilience and sustainability of highly vulnerable, uniform cropping systems.

Abstract
Purpose
This chapter reviews factors responsible for climate change, impacts of the change on animal health, zoonotic diseases, and their linkage with One-Health program.
Design/methodology/approach
This chapter is based on the available literature related to climate change and its effect on animal health and production from different points. The causes and change forcers of climate change, direct and indirect effects of the change on animal health management, host–pathogen–vector interaction, and zoonotic diseases are included. Inter-linkage between climate change and One-Health program are also assessed.
Findings
Beside natural causes of climatic change, greenhouse gases are increasing due to human activities, causing global climate changes which have direct and indirect animal health and production performance impacts. The direct impacts are increased ambient temperature, floods, and droughts, while the indirect are reduced availability of water and food. The change and effect also promote diseases spread, increase survival and availability of the pathogen and its intermediate vector host, responsible for distribution and prevalence of tremendous zoonotic, infectious, and vector-borne diseases. The adverse effect on the biodiversity, distribution of animals and micro flora, genetic makeup of microbials which may lead to emerging and re-emerging disease and their outbreaks make the strong linkage between climate change and One-Health.
Practical implications
Global climate change is receiving increasing international attention where international organizations are increasing their focus on tackling the health impacts. Thus, there is a need for parallel mitigation of climate change and animal diseases in a global form.
Originality/value
Most research on climate change is limited to environmental protection, however this chapter provides a nexus between climate change, animal health, livestock production, and the One-Health program for better livelihood.

Abstract
Investments in gender training for agricultural researchers have not attained expected outcomes, bringing into question the efficacy of training approaches used. New approaches for transformative gender training need to draw on lessons learned from previous courses. This chapter analyses short gender training courses identified using a scoping methodology. Selected courses offered between 2005 and 2015 for scientists in Eastern Africa were critiqued against a theoretical framework for transformative gender training. Also shared is a training model (Gender Responsive Researchers Equipped for Agricultural Transformation course) that addresses gaps in previous courses. The chapter identifies critical lessons for facilitating transformative gender training for non-gender research practitioners which include the need for inter-disciplinary grounding in the disciplines of gender and agriculture, having a phased course delivery and the value of continuous technical support during and after training. Gender training models should also allow for the deepening of gender awareness and consciousness by providing safe spaces for personal reflections on the root causes of gender inequalities and for the questioning of the internalized norms and biases.

While there has been increased attention to emotions and institutions, the role of denial and repression of emotions has been overlooked. We argue that not only the expression and the feeling of emotions, but also their control through denial contribute to stabilize institutional orders. The role denial plays is that of avoiding the emergence of disruptive emotions that might motivate a challenge to the status quo. Reflecting on the example of the livestock industry, we propose a theoretical model that identifies seeds for change in denied emotional contradictions in an integration of the cultural-relational and issue-based conceptions of organizational fields.

Abstract
Purpose
The purpose of this analysis is to determine the impact of various factors, including population growth, income growth, and research and development on food security. This chapter also seeks to better understand the role of relative food prices in consumers’ selection of foods to meet their nutritional needs.
Methodology/approach
We utilize a welfare economic framework to provide a theoretical examination of the impact of various factors (including income growth, population growth, and research and development) on food security among the poor. A minimum nutritional diet is specified as a baseline for the evaluation of these scenarios.
Findings
Scenarios show the impacts that income, population growth, and research and development have on food security through their price and quantity impacts. Also, we highlight the difficulty in formulating an optimal diet that meets the recommended dietary requirements for only calories and protein, as different foods contain calories, proteins, and micronutrients in differing proportions. This indicates that changes in relative food prices will often alter consumers’ nutrient intake with respect to the minimum nutritional diet.
Social implications
Research and development is critical in guaranteeing food availability. Trade-based, production-based, and own-labor entitlements are key factors in determining food security. Consumption subsidies and income supplements can be used to assist those who do not have entitlements sufficient to meet their minimum nutritional diet.
