Abstract

Purpose

This study aims to evaluate the nutrient profile, carbon footprint and water footprint of one-month menus presented in five hospitals in Turkey and compare their environmental impacts with that of the Mediterranean diet.

Design/methodology/approach

The energy and nutrient content of menus were compared with recommendations of the Turkey Dietary Guidelines (TUBER) 2022. Nutrient profiles of hospital menus were evaluated using Nutrient Rich Food 9.3 (NRF 9.3) and SAIN-LIM models. The carbon and water footprints of the menus were calculated and compared with those of the Mediterranean diet.

Findings

Menus’ energy and nutrient content did not conform with TUBER 2022. The SAIN-LIM score of Hospital A (5.7 ± 1.1) was significantly higher than that of Hospitals C (4.8 ± 0.7, p = 0.001) and E (5.1 ± 0.7, p = 0.025). The carbon footprint of Hospital A was significantly lower (2.6 ± 0.3 kg CO2 eq/person/day) and that of Hospital D (4 ± 0.9 kg CO2 eq/person/day) was significantly higher than those of others (p < 0.001). While other menus were similar (p > 0.05), the water footprint of Hospital A was significantly lower (3.5 ± 0.7 L/kg, p < 0.001). In addition, if the menus were suitable for the Mediterranean diet, a reduction of 2.2–23.4% in the carbon footprint and 37.5–58.6% in the water footprint could be achieved. Moreover, menus’ carbon and water footprints were negatively correlated with NRF 9.3 and SAIN-LIM scores.

Research limitations/implications

The primary aim should be to ensure that the planned menus follow the dietary guidelines. In addition, it is an undeniable fact that sustainable nutrition is a complex process with many dimensions. However, it seems possible to improve the nutrient profiles of the menus and reduce their environmental footprint with minor changes to be made in food services.

Practical implications

It seems possible to improve the nutrient profiles of the menus and reduce their environmental footprint with minor changes. For both health and environmental impacts, food services should switch to menus suitable for the Mediterranean diet.

Originality/value

The findings provide new insights into hospital menus’ quality and environmental impact.

Abstract

Purpose

The purpose of this study is to assess the impact of rising food prices on food demand and nutrient intake among rural–urban migrants and whether such impact varies across income classes.

Design/methodology/approach

Using data from the China Health and Nutrition Survey (CHNS), this study adopts a quadratic almost ideal demand system (QUAIDS) for food demand elasticity and an indirect estimation method for nutrient elasticity to investigate the effects of rising food prices on food demand and nutrient intake among rural–urban migrants.

Findings

The estimated results indicate that an increase in the price of pork alone would lead to a larger reduction in most nutrients among rural–urban migrants than other single targeted food group, and a simultaneous rise in the price of all food groups would have a remarkably adverse effect on the nutritional status of rural–urban migrants in comparison to the nutritional effects of a rise in one targeted food group. In addition, the nutritional effects of food prices across income classes show that the nutritional status is particularly vulnerable to rising food prices among low-income rural–urban migrants.

Originality/value

This paper focuses on analyzing the impact of rising food prices on the nutritional status of rural–urban migrants, a topic that is very limited in the literature. This study provides a fresh look at the effect of volatile food prices on food demand and nutrient intake among rural–urban migrants. The results indicate that income growth would have a remarkable positive effect on nutrient intake for rural–urban migrants, especially for low-income rural–urban migrants. However, an increment in nutrients due to a growth in income would not be far from enough to cover the reduction in nutrients as a result of a simultaneous rise in price of all the studied food categories at the same rate.

Abstract

Purpose

The purpose of this paper is to evaluate the effects of price and income changes on food and nutrient demand of rural households by including own-produced food and production-side effects in the demand estimation to correct potential measurement bias in the income and price elasticities for rural households in underdeveloped areas. Simulation results of income and grain price changes on food and nutrition security are provided for economic nutrition security policy applications.

Design/methodology/approach

This study analyzes survey data of 1,555 households from underdeveloped rural areas of China to find out how price and income changes affect food and nutrition insecurity of rural households. The authors employ the quadratic almost ideal demand system (QUAIDS) in a two-stage budgeting framework, using quality adjusted prices that were retrieved with regressions of the difference between the unit value surveyed at household level and its village average on household characteristics. The bias correction is implemented by using an augmented IV (instrumental variable) method, in which each market price is instrumented with farm-specific variables. Important macro- and micronutrient elasticities are computed for (a) households with agriculture as main income and (b) other households (of which still many have agriculture as a side business). Finally, the authors use these elasticities to simulate how changes in income or grain prices affect the food and nutrition security in the studied areas.

Findings

In general, food income elasticities of agricultural households are at a higher level than those for other households, and so are the food price elasticities. Income changes also have a greater nutritional effect on agricultural households than on other households. Nutrient income elasticities ranged from 0.22 (energy) to 0.27 (Vitamin A) for agricultural households and from 0.19 (energy) to 0.23 (Vitamin A) for other households. Grain price increases have greater effect on nutritional status of non-agricultural households, while a grain price reduction is not clearly favoring the nutritional situation of a particular household group.

Originality/value

This demand study contributes to the literature by taking into account differences in consumption of own production between households and the potential endogeneity of prices resulting thereof. The authors also demonstrate that merely reporting nutrient elasticities might not be sufficient for policy recommendations, and simulations should be reported as a valuable addition.

Abstract

Purpose

This study estimates the income elasticities of calorie, macronutrients (carbohydrate, protein and fat) and key micronutrients including cholesterol, vitamin A, vitamin C, sodium, potassium, calcium, iron, zinc and insoluble fiber separately for urban and rural adults aged 18–60, using China Health and Nutrition Survey data set from 2004 to 2011.

Design/methodology/approach

A semiparametric model, a two-way fixed-effects model and a quantile regression approach are employed to estimate nutrient–income elasticities.

Findings

The income elasticities of calorie, protein, fat, cholesterol and calcium are in the range of 0.059–0.076, 0.059–0.076, 0.090–0.112, 0.134–0.230, 0.183–0.344 and 0.058–0.105, respectively. The income elasticity of each of the other nutrients is less than 0.1. The income elasticities of calorie and the majority of nutrients included are larger for rural residents than for urban residents and for low-income groups than for medium- and high-income groups. Overall, in spite of having a relatively small impact, income growth is shown to still have an impact on improving the nutritional status of Chinese adults.

Originality/value

This study estimates nutrient–income elasticities separately for urban and rural adults, expanding the scope of the study regarding the impact of income on the nutritional status in China. Moreover, this study uses a pooled sample generated from the personal food consumption records covering foods consumed at home and away from home during 2004–2011, which is thus likely to more comprehensively reveal the causal relationship between income growth and changes in the nutritional status in China.

Abstract

Purpose

The aim of this study is in twofolds. First, to take a critical look at nutrient consumed and its trends and second, to examine the relationship between share of nutrient consumed across selected food groups and per capita income in Nigeria.

Design/methodology/approach

The author uses seemingly unrelated regressions.

Findings

The result of the first objective reveals that the average calorie, protein and fat intakes were still below the recommended daily allowance since the 1960s as diets in Nigeria remained very much cereal-based over the years. Also, the results of objective two show that calorie, protein, and fat share of animal products respond positively but inelastic to the per capita income growth in Nigeria over the years.

Originality/value

Contrary to previous studies, the present study is designed not to fit aggregated nutrient demand from various food items as a function of income, but to relate the nutrient share of each homogenous and heterogeneous food product categories to the aggregated nutrient intake from these food groups and per capita income in Nigeria.

Abstract

Purpose

The purpose of this study is to determine whether reported nutritional knowledge and the acceptance of benefit claims for a fresh produce item is related to changes in preference in order to provide food marketers insight and guidance into giving consumers more information to change beliefs and preferences, using health‐benefit claims to position their brands as offering ingredients, e.g. Lycopene which may prevent serious illnesses such as heart disease and cancer.

Design/methodology/approach

The sample was drawn from an internet panel maintained by Markettools, Inc, a respected market research company in the USA. A total of 594 respondents were surveyed. Besides demographic questions, respondents were asked about their knowledge of nine nutrients. Basic nutrient knowledge was estimated through a one‐sample t‐test tested against a value of two on a 1‐4 scale. Respondents evaluated eight benefit statements regarding the health benefits of mushrooms. After reading each statement, respondents indicated their likelihood of purchasing fresh mushrooms and were asked about the believability, favorability, and uniqueness of each statement.

Findings

The results indicate that health‐related food benefit claims are better accepted by female respondents who claim to be nutritionally knowledgeable and who are older. Three hypotheses related to nutritional knowledge and beliefs showed that knowledge and beliefs have an effect but the effect varied by nutrient and nutrient cluster. In particular, knowledge of esoteric nutrients such as Pantothenic Acid was associated with acceptance of health‐related claims.

Practical implications

Food marketers are spending millions of dollars/pounds/euros on informing people of the nutrient content and health benefits of their foods. However, this money can be better spent if one first understands the existing levels of nutritional knowledge and the specific nutrients that motivate change in preference or buying intention.

Originality/value

This paper builds on the existing body of knowledge using additional statistical techniques to cluster nutrients and to provide a demonstration on a fresh produce food group not currently investigated in the literature. It suggests that food marketers need to gather more information on their consumers to target their health and nutrition message to the proper (more receptive) audience.

Abstract

Purpose

The purpose of this paper is to optimize manure allocation through nutrient budgeting strategy to meet crop nutrient requirements under maximizing economic returns and environmental constraints, and then to evaluate the economic and environmental effects of different nutrient budgeting strategies in animal excreta treatment.

Design/methodology/approach

In this study, a holistic integrated “ecological-economic” model is developed. It incorporates the systems of animal-crop production and waste treatment is developed for a pilot pig farm in China in order to simulate the economic and environmental effects of several nutrient budgeting strategies in excreta treatment for resource use.

Findings

The results reveal nutrient management deficiencies cause some serious environmental problems. The operations including biogas and composting are economically and environmentally efficient methods for manure management through nutrient budgeting strategy in an intensive animal farming with limited access to cropland. The nutrient budgeting strategy of constrained phosphorus, however, creates better environmental effects and brings more income from the waste treatment than the strategy of constrained nitrogen. The current standard of manure application in cropland which emphasizes on crop requirements for nitrogen should be reconsidered.

Originality/value

The paper is an original work and its methodology makes a meaningful contribution to understanding the relations between different nutrient budgeting strategies and their economic and environmental effects.

Purpose

China's remarkable income growth has changed the food landscape in recent years. Chinese consumers are demanding greater food quantity and quality and changing the nutrient content of their diets. Most food demand studies are based on data from earlier time periods before these structural changes had taken hold. The purpose of this paper is to show how the rapid change in food markets and surprisingly slow growth of food imports warrants a new assessment of food demand in China.

Design/methodology/approach

Engel equations measuring elasticities of food quantity and quality purchases with respect to household income are estimated. These estimates are then converted to nutrient elasticities to show how the availability of nutrients varies with income based on the Engel demand relationship.

Findings

The income elasticities diminish as income rises. Households in the top tier of the income distribution appear to have reached a saturation point in the consumption of most food items. As income rises, most additional spending is on foods with higher unit values that may reflect better cuts of meat or branded items. The pattern of food purchases for households at different income levels suggests that protein, saturated fat, and cholesterol intake rises with increased income. The change in diets prompted by rising income is most pronounced for low‐income households.

Originality/value

This paper applies a unique approach to measure income, quality, and nutrient elasticities within the same framework of Engel relationship. The finding has important implications for opening new market opportunities of imported foods and understanding dietary change in China.

Abstract

Purpose

Rice landraces are essential for supplying beneficial traits for developing improved rice varieties with better nutritional quality. Nevertheless, in a yield-driven environment, grain nutritional quality has been ignored especially that of rice landraces. Given this, the purpose of this study is to evaluate the content and nutritional variability of rice landraces from Manipur.

Design/methodology/approach

Thirty-three most popular rice landraces were collected as dry paddy samples from Manipur and transported to the National Institute of Nutrition, Hyderabad, by air. All the paddy samples were processed and analyzed for 35 nutrient parameters using standard methodologies.

Findings

The mean nutrient content of Nagaland brown rice was: protein 7.5 ± 0.8, fat 3.0 ± 0.3, TDF 5.5 ± 0.4 and ash 1.2 ± 0.2 g/100g. The range of water soluble-vitamin content in mg/100g, was 0.1–0.43 for Thiamine and for Niacin 2.1–3.5, while the content in µg/100g was 40–64 for Riboflavin, 0.5–3.9 for Pantothenic acid and 20–118 for Pyridoxine. A relatively large coefficient of variation was observed for iron (25%), manganese (28%), copper (32%), calcium (13%) and phosphorus (11%). Manipur rice landraces have significantly higher total dietary fiber and lower phytate contents than modern varieties. Milling led to steep losses of nutrients, and limiting to 5% milling substantially improves nutrient retention in milled rice.

Research limitations/implications

Future nutrition interventions should use rice with superior nutrient quality to improve nutrient intakes. Manipur rice landraces conserved over generations can broaden the genetic base of breeding stocks especially in the face of climate change.

Originality/value

The paper presents comprehensive nutritional data of 33 rice landraces from the state of Manipur, India. The results indicate large nutrient variability even within these 33 rice landraces with important traits such as high total dietary fiber and low phytate contents. The study highlights the importance of conserving the existing rich genetic material of Manipur rice landraces to develop varieties that combine higher yields with stress tolerance and superior grain nutritional value to improve the food and nutrient security.

Abstract

Purpose

The purpose of this paper is to use cross-country data to investigate whether convergence process exists in per capital nutrient supply and also identify the determinants of change in per capita nutrient supply in sub-Saharan Africa (SSA).

Design/methodology/approach

Annual time series data for 43 countries covering 1975-2009 that yields balanced panel were employed for the analysis. The convergence hypothesis is examined based on the neoclassical growth model using feasible generalized least square approach that is robust to autocorrelation and cross-sectional dependence.

Findings

The empirical results lend support to existence of convergence process in nutrient supply in SSA. Evidence of convergence in nutrient supply may have contributed to observed reduction in incidence of food-poverty in the region, which aligns with the argument in literature that recent Africa food security gains are due to food imports. The results of the determinants of change in nutrient supply showed that, global food trade represented by trade openness consistently increased growth in nutrient supply across countries in SSA significantly. Meanwhile, the speed of convergence of per capita nutrient supply, which measures how quickly growth in nutrient supply increases over time is very low, as this calls for urgent policy attention in the region.

Originality/value

The very first study to investigate convergence in food consumption and nutritional supply in SSA.
