Abstract

Purpose

The present study was carried out to standardize the method for preparation of naturally carbonated fermented paneer whey beverage by incorporating pineapple and strawberry fruit juice and to check their suitability in the beverage by evaluating the organoleptic characteristics and shelf life of product.

Design/methodology/approach

Beverage was inoculated with yeast culture Clavispora lucitaniae at 0.5 per cent v/v and fermented at 35 ± 1°C for 36 h aerobically. Standardization of total soluble solids (TSS) (16, 15, 14, 13 and 12oBrix) and juice concentration (15, 20, 25 and 30 per cent) of beverage was done on the basis of organoleptic evaluation, and the beverage with TSS 12oB and 30 per cent juice was selected best for further storage study. Two types of beverages were prepared: paneer whey beverage blended with pineapple juice and paneer whey beverage blended with strawberry juice, and were stored at refrigerated (4 ± 1oC) and ambient (25 ± 5oC) conditions. Effect of storage on physico-chemical, microbiological and sensory attributes were studied periodically after every 15 days for 90 days of storage period.

Findings

There was significant decrease in brix:acid ratio (p = 0.0008) from 12.0 to 9.3, total sugar (p = 0.017) from 10.8 to 6.8, ascorbic acid (p = 0.002) from 17.8 to 9.3 mg/100 mL and lactose (p = 0.037) from 3.1 to 0.6 per cent content over 90 days of ambient storage period. Total yeast count increased during the initial stages of fermentation and started declining after 60 days of storage. The alcohol production started after 15 days and reached 0.7 per cent after 90 days for paneer whey beverages blended with strawberry juice. The more variations were found in the physico-chemical and microbiological properties of the beverage at ambient storage than refrigeration storage. Highest score for color, flavor, mouthfeel and overall acceptability was found on third days, which decreased further during the storage. The comparative study of the paneer whey beverage blended with strawberry juice stored at ambient and refrigeration temperature showed that maximum decrease was found for score of appearance/color, flavor, mouthfeel and overall acceptability at ambient temperature as compared to refrigeration temperature. Beverage stored at refrigeration temperature was found more acceptable than the beverage which was stored at ambient temperature irrespective of all types of beverages.

Originality/value

The refrigerated beverage was found more acceptable up to 90 days, whereas beverage stored under ambient conditions was found acceptable up to 60 days. The products so obtained had naturally produced CO2, and little alcohol content added effervescence, sparkle, tangy taste and flavoring characteristics.

Abstract

Purpose

This paper aims to study the importance of polyphenols in human health and, based on recommendations on the replacement of carbonated drinks with nutritious beverages, like fruit juices, seeks to compare the polyphenol contents of natural and commercial juices.

Design/methodology/approach

The total polypheol content of 39 fresh and 159 commercial (100 percent and less than 50 percent) fruit juices was analyzed by the terbium sensitized fluorescence method. The ANOVA with Tukey post hoc test, and also an independent t‐test, were used for statistical analyses.

Findings

The mean polyphenol contents of fresh juices were significantly (p<0.001) higher than those of 100 percent commercials (5.34±2.7 vs 3.28±0.86 mg/l). In fresh juices the concentration ranged from 1.06±0.08 (pineapple) to 10.14±0.07 (sour cherry) mg QE/100 ml, while in 100 percent commercial juices the range was from 2.37±0.05 (orange) to 5.34±0.4 (pomegranate) mg QE/100 ml, and in <50 percent commercial juices they ranged from 1.04±0.7 (red grape) to 2.21±0.07 (white grape) mg QE/100 ml. The polyphenol contents of dark juices, in both fresh and commercial products, were significantly higher than others (p<0.001) and most fresh fruit juices possessed higher amounts of polyphenol than commercial ones. Although various juices differed in the quantity of total polyphenol, they can be considered as a good source of functional beverage.

Originality/value

This paper provides information about the polyphenol content of fresh and commercial (100 percent and <50 percent) fruit juices. To the best of the authors' knowledge, there have been no articles which aim to compare the polyphenol content of Iranian fresh and commercial fruit juices. For analysing the polyphenol contents, the newly developed terbium sensitized fluorescence method was used, and also the applicability of this new method was compared with the commonly used Folin‐Ciocalteau method.

COCO TANG India is an innovation-driven company. It takes inspiration from the humble coconut water that all of us are very familiar with and have drunk right from our childhood. The founders of the company, Dr Neelima, a dentist by profession and her husband Chaitanya who is a pharmacist have hit upon the idea of a coconut-based drink quite by accident.

When Dr Neelima was pregnant with her first child, the doctor advised her to take fresh coconut water. It was then that Dr Neelima discovered that fresh coconut water was a paradox, the water from a tender coconut is supposed to be fresh but in many cases is not as fresh as it should be. Coconuts are harvested from remote farms in Andhra Pradesh and sent to Hyderabad. And to top it all, the nutrition value of the coconut past its ideal window of consumption leaves a lot to desire. The price factor too is a dampener. It costs Rs. 25 to have tender coconut water in a metropolis like Hyderabad.

Dr Neelima and her husband developed the product idea from their search for a nutritious, healthy drink. Fresh, tender coconut pulp-based shakes, packed with nutrition, taste, health and at the same time make an aspirational product for the young, bubbly and restless youth of India.

This case deals with the problems, the trials and tribulations that these young first-time entrepreneurs faced and details the marketing efforts the young company is putting into survive in the dog eat dog world of fruit drink industry.

The case details the specific marketing-related problems the company faces and examines what the promoters are doing to overcome these problems, specifically related to the four Ps, that is, product, price, place and promotion. It looks in depth at the innovative marketing practices that COCO TANG India is deploying, including the use of the social media that enabled the COCO TANG India’s founder to win Junior Chamber International – Business Excellence Award for the year 2017–2018.

Purpose

Benzene contamination has been reported in some food groups. This study aims to identify high-risk foods groups to assess exposure to benzene.

Design/methodology/approach

Benzene is a hazardous volatile organic compound commonly used in the production of chemicals, detergents, paints and plastics. In addition, benzene is present in food and beverages.

Findings

Citrus juice-based beverages are usually more contaminated with benzene than other beverages. Benzene was also detected in carbonated beverages, fruit juices, pickles, lime juices, mayonnaise and salad dressing. Smoked and canned products have higher content of benzene. Aromas that are used in food contained benzene. Food packaging is one of the sources of benzene contamination of food. One of the reasons for its formation in food staff is due to the reaction of vitamin C (or similar acid) with benzoate, which is mainly used as a preservative in various foods.

Practical implications

Foods contaminated with benzene were determined. Moreover, mechanisms of its formation and some preventive measures were discussed.

Originality/value

This review determined the amount of benzene in foods, mechanism of formation and suggestion for prevention of benzene contamination in food.

Abstract

Purpose

The purpose of this paper is to examine the stability and the parameters affecting the stability of vitamin C in beer, wine and orange juice.

Design/methodology/approach

In this study, a high performance liquid chromatography method was applied for reliable determination of ascorbic acid in these beverages. Three different types of beer, a wine and orange juice sample were spiked with ascorbic acid using different concentrations and pH values. The samples were stored at 4oC, but in some cases 20oC was also used as storage temperature. The joint effect of vitamin C and E was also examined.

Findings

The results demonstrated that vitamin C was stable only in orange juice at the original pH values. Under pH=4, beer was also a good matrix for vitamin C addition, but only at low storage temperature (4oC). Vitamin E addition increased the stability of ascorbic acid (p<0.05) even at room temperature.

Practical implications

These findings could have significant implications to the beer industry. This study shows that vitamin C can be stable in beer during the shelf life of this product using appropriate pH and storage temperature.

Originality/value

The paper shows that the addition of an antioxidant vitamin is good from the point of view of the consumer's health, and it can improve the shelf life of the food because of its antioxidant activity.

Abstract

The preliminary figures for the production of fruit in the United States of America for the year 1930 issued by the Department of Commerce, Washington, are as follows:—Apples, 163,543,000 bushel; grapes, 2,368,557 tons; peaches, 53,286,000 bushel; pears, 25,703,000 bushel; strawberries, 59,996,000 quarts; cranberries, 570,000 barrels. Assuming the bushel to be equal to fifty pounds weight (Av.), the weights of apples, peaches and pears produced are 3,650,000 tons, 1,189,000 tons, 574,000 tons respectively. The Department of Commerce has no means of intimating the proportions of fruits used for the raw, canning and preserve markets. The production of canned fruits is, however, high in the United States, a much larger proportion of the total crop of fruit being used for this purpose than is the case in this country. In the United States the fruit that is preserved is marketed either as jam, the fruit for this purpose being more or less in the form of pulp; or as preserved fruit when the fruit is whole or unbroken; or as fruit butter, which is fruit juice and fruit pulp evaporated till they form a semi‐solid homogeneous mass with or without the addition of sugar, spices, or vinegar; or as fruit jelly, which is the juice or water extract of fruit concentrated to a suitable consistency with the addition of sugar. In 1929, according to the Bureau of Census figures, the total value of the four products above named amounted to $44,073,809, or in round figures about £9,000,000. It appears that some two hundred firms are mainly engaged in the manufacture of these, a small and unknown amount being made as a kind of side line by certain wholesale grocers. It may be observed that (1) the fruit used is home grown; (2) the product, whether it be preserved fruit, jam, fruit butter or fruit jelly, has to be made in accordance with Federal or State definitions of these products; (3) the label on the pot or tin must truly describe the contents as to nature, quality and quantity; (4) that misleading statements or designs on such labels are forbidden by law. At the request of the National Preservers' Association the Bureau of Foreign and Domestic Commerce recently completed a survey of the preserving industry. The results are incomplete, as many firms did not make returns, but the figures obtained would appear to cover about 40 per cent. of those relating to the industry for the year 1929. These figures are at least useful for comparative purposes, and multiplication by 2½ is probably justifiable under the circumstances as affording some guide to the total amount. Thus the actual figures obtained by the Department for production by “major classification” are as follows:—Preserves and jams, 62,490,389 lbs.; jellies, 32,301,654 lbs.; fruit butters, 40,019,560 lbs.; citrus marmalade, 1,849,104 lbs. Total, 136,660,707 lbs. This total when multiplied by 2½ shows that something over 150,000 tons, of 2,240 lbs. to the ton, of the products mentioned above were made in 1929. If the population of the United States be 125 millions, it is certainly near that figure, the output is low compared with the output in this country; for preserves and jams very low. The deficiency in this item is offset by the high percentage compared with our figures of fruit jelly (235), and of fruit butters (30) produced. Much fruit grown in the United States is, however, absorbed by the canning industry which has been long established and has reached enormous dimensions; and also in the production of fruit juices as beverages. Again, anything but a numerical comparison, even if that be directly permissible, is to our disadvantage. For while the fruit grower in the United States finds a ready market for his crops in the markets for jam and its associated products, our fruit growers would seem to receive no such measure of encouragement from our jam makers, who purchase large quantities of cheap imported fruit pulp of questionable wholesomeness in many cases. As to the quality of the material it is safe to say that much of the jam made in the country at the present time would be refused entry into the United States. As to the kind of jam and preserve made in the United States, there are three kinds: Standard, Compound, and Imitation. In round figures 75 per cent. of the jam is of standard grade, 19 per cent. is compound, and 6 per cent. imitation. For jellies the figures are: 45·45 per cent. standard, 27 per cent. pectin and apple base, imitation 27 per cent. As to the kinds of fruit used in making jam, strawberry jam heads the list with 39 per cent. of the total; raspberry with 19 per cent. No other percentages run into double figures. The next highest is peach 8·74 per cent., the lowest is gooseberry 0·13 per cent. 78·5 per cent. by weight of the strawberry jam is of standard quality, 19 per cent. compound, 2·3 imitation; 75·5 per cent. of the raspberry jam is standard, 21 per cent. compound, 1·6 imitation. The average invoice values of these jams are as follows:—Standard strawberry jam, 17.64 cents per lb., say 9d. per lb.; compound strawberry, 7d.; imitation strawberry, 5d. The corresponding figures for raspberry being 7½d., 6½d., 5¼d. These figures being about the average invoice prices for all kinds of jams of the three qualities named. From these figures it would appear that it is possible in the United States to market strawberry and raspberry jam of a nature conforming to Dr. Johnson's definition at a fairly low price. In the United States of America there are two laws which govern the purity of the food supply. One is the Federal Law of 30th June, 1906. The Federal Law applies to the Federal District of Columbia and to Inter‐State Commerce, that is to say to goods which may be sent from one State of the Union to another State of the Union. The other laws are the State laws which have been passed by the legislatures of the various States. Before these laws were passed, manufacturers of adulterated food products were at liberty to make and sell such products in their State. These State laws are applicable only to the particular States for which they have been passed. As a general rule they are founded on the Federal Law or follow the wording of this law closely as a matter of expediency, but the various States responsible for these enactments are not bound in any way by the wording of the Federal enactments. The State Laws, however, are complementary to the Federal Law. The power of a State to protect itself against the ill‐effects of unsatisfactory food products manufactured in another and imported within its boundaries is extremely limited. This is a matter for the Federal authorities in the enforcement of the Federal Law. On the other hand the Federal Law has no power over goods manufactured in any given State for sale in that State. It is only when such goods pass from one State to another and thus become part of Inter‐State Commerce that the Federal Law has authority. Nevertheless the Federal and State officials are in close co‐operation, and a network of protective legislation covers the United States, and the laws and regulations are administered by keen and experienced legal and technical officers.

According to the report on the working of the Act they have proved extremely useful, and might with advantage be applied in this country in which case statements to the effect that a jam, for instance, has been “ improved ” by the addition of fruit juice other than the juice of the fruit from which the jam is presumably made would in all probability not be allowed, nor would the introduction of synthetic esters and dyes be allowed.

The case tells the story of a first generation entrepreneur, Dhirendra Singh, and his struggle for 15 years to establish a mango pulp based beverage marketing company without any external support and funding. The case highlights the travails that Dhirendra goes through in marketing an undifferentiated product, a mango drink. He survives, largely due to his grit and some lucky breaks, until an external funding agency notices him 15 years after he started his journey.

With growth and stability (in 2017, it was the fourth largest packaged beverage in India) come new issues for the enterprise to grapple with. The case leaves the reader to reflect upon these challenges that the company encounters. Can the company overcome these hurdles and thrive? How, is the question that remains unanswered.

Abstract

Purpose

The purpose of this study is to evaluate the effect of the probiotic addition (Lactobacillus paracasei ssp.) on the physicochemical characteristics and antioxidant capacity of white grape juice during refrigerated storage (4°C/28 days). This paper also aims to evaluate the survival of the probiotic culture in the product and under simulated gastrointestinal conditions.

Design/methodology/approach

Two formulations of white grape juices were evaluated, one with 2 per cent of probiotic culture addition and the other of pure juice.

Findings

The addition of probiotic culture resulted in products with a darker-reddish coloration (L* = 30.6-30.8 and a* = 0.6-0.9) and a lower content of total phenolic compounds (599-697 µg EAG mL−1) (p = 0.05). However, it improved the color stability and maintained the antioxidant activity 1,1-diphenyl-2-picrylhydrazyl (p > 0.05). The viability of the probiotic culture (>109 colony forming unit · 200 mL−1) in the juice was maintained during 21 days of storage, but in simulated gastrointestinal conditions, the functional properties could be guaranteed during the 28 days of refrigerated storage.

Practical implications

The white grape juice is a suitable medium for incorporation of Lactobacillus paracasei.

Originality/value

The survival of the probiotic cultures to the simulated gastrointestinal tract may be significant, even if the product does not have the recommended minimum counts.

Abstract

Purpose

The purpose of this study is to look at the application of ellagitannin (ET) powder in sharbet (sugar syrup-based drink) as an additive to produce a polyphenol-enriched drink. ETs are important polyphenols extracted from pomegranate peel (an underutilized juice industry waste). ETs are known for many functional properties such as antioxidative, antibacterial and coloring agent. Naturally, sharbet lacks in polyphenol content; hence, there is a large scope to enhance the functional property of sharbet by addition of ellagitannin powder (ETP) as an additive.

Design/methodology/approach

ETP at different concentrations (2, 10, 20, 30, 40 and 50 mg/100 ml sharbet) was applied in plain sharbet (EPS) and lemon-flavored sharbet (ELS). Each concentration of both types of sharbet was analyzed for physicochemical parameters and sensory attributes by sensory panel. Data were analyzed by using statistical tools (t-test, ANOVA, PCA and graphs) and finding the acceptability of ETP application in sharbet.

Findings

Each concentration of both sharbets was analyzed for chemical attributes, i.e. color (L, a, b) ranges (65.81-51.33, −0.24-0.24, −1.57-2.06, respectively), pH (6.30-3.95), titrable acidity as citric acid (0.01-0.1 per cent), total soluble solids (14.7-14.9 per cent), antioxidant activity as DPPH (12.6-71.6 per cent in EPS and 15.5-75.3 per cent in ELS) and sensory analysis (on Hedonic Scale) for sensory attributes, i.e. color, odor, taste and overall acceptability by a sensory panel (n = 24) of food technologists. Principal component analysis and sensory evaluation score have revealed that sharbet-flavored with lemon extract was liked more in comparison to plain sharbet. ELS containing 30 and 40 mg ETP per 100 ml sharbet was showed to have the highest acceptability index (92.13 and 91.67 per cent) in terms of overall acceptability by sensory panel. It is evident that the addition of ET in polyphenol-deficient beverages could be a market potential toward production of neutraceutical beverages which have antioxidative effects, good taste and are widely accepted.

Originality/value

In view of the neutraceutical food development, ETs could be a major polyphenolic component to fulfill the human health requirement. This research can be helpful for commercialization of ETs by the beverage industry.
