Abstract

Purpose

This chapter examines the role of stakeholders, cocreation, and pro-environmental behaviors in Google’s efforts to reduce the environmental impact of their food waste. It describes several different strategies that the company undertook and the outcomes of those efforts. These efforts ranged from working with suppliers and employees to use food that was normally wasted to implementing a waste measuring and feedback system. The case highlights the challenges, current impact, and risks of the different strategies.

Methodology/approach

The chapter covers the theories and models of stakeholder influence on sustainability, new product development through cocreation, and pro-environmental behaviors; it applies these concepts to Google’s food waste program.

Findings

The results of the study contribute to the frameworks on cocreation and stakeholder management to include ideas for encouraging pro-environmental behavior through various social practices (measuring and monitoring waste, building supply chain partnerships, and cocreating new products with stakeholders).

Originality/value

The findings of this chapter will help other companies with ideas for successfully reducing food waste and its environmental impact by illustrating new ideas for engaging stakeholders in the supply chain.

Abstract

Purpose

This chapter highlights factors, such as stakeholder engagement and changes in operating processes, which can enable retailers to implement an alternative approach to recovering and redistributing fresh surplus food.

Methodology/approach

A successful fresh surplus food redistribution program was identified as part of a larger research project on food waste and redistribution. The “Buon Fine” program of a large Italian retailer (Coop Lombardia) was described by two senior executives who were interviewed for four hours using a semi-structured questionnaire. Collected information was triangulated with corporate reports and other publications.

Findings

Coop Lombardia implemented an expanded supply chain by cooperating with municipalities and food aid organizations. Such a process differed in important ways from the traditional “food bank” model. The latter organizations collected and distributed surplus food to disfavored populations.

Originality/value

The findings of this chapter will help senior executives of retail trade companies to improve the sustainability of their supply chain and help policymakers address food poverty to improve food security in their territory.

Abstract

Purpose

This chapter introduces the volume’s theme by describing the challenges of sustainability in the agri-food industry and the critical role of agri-food supply chains. Following a description of traditional and sustainable supply chain management practices, we discuss the likely characteristics of sustainability-oriented innovations and how organizations pursuing higher levels of economic, social, and environmental performance will need to adapt their capabilities.

Methodology/approach

Drawing on the emerging concepts and practices from sustainable supply chain management as well as traditional and emerging concepts from innovation, we develop general propositions and expectations about how organizations might address sustainable effectiveness in their supply chains. The importance of the agri-food industry to all three pillars of sustainable effectiveness and predictions about the inability to feed future populations gives the discussion a certain urgency.

Findings

Sustainability-oriented innovations in the agri-food supply chain are different from traditional innovations. We develop propositions regarding the driving motivations, their nature and scope (i.e., more radical and systemic than incremental and focused), and the importance of a multi-stakeholder approach. The 10 cases presented in the volume are summarized.

Supply of food from the early stages of societies was one of the most important needs of humans. Sustainable supply of food is a demand in modern societies. The agri-food market grows as the population rises every year. The increase in the demand side of the market is more than the growth of the supply side. The rate of using technology in the supply side is increasing rapidly. By using technology in some parts, the efficiency of production improved and caused more production while resources are the same. Availability of resources in different areas causes different ways of production and nurturing innovative technologies to maintain food security. Water, soil, climate change, and growth of population are drivers of using technology in food security. To depict the role of different technologies in the food industry, the authors have reviewed the role of the most important technologies in this field. Knowing the trends of changes in the industry will help to focus on the most important questions and solutions. Having a share in the global food market requires the major use of technology in production processes. In this chapter, the authors will review the most important trends of technology absorption in the food industry.

Abstract

The Internet of Things (IoT) is a cloud system that saves energy by being involved in the decision-making process of machines. By this means, machines create an environment of direct interaction without the need for explicit instructions. In this chapter, answers have been sought to the questions of what kind of research has been done on IoT-based technological devices, and how IoT-based technologies are effective in sustainable food production. The systematic literature review examined the scientific research on IoT and Food in the range of 2010–2022 in Scopus. The general framework of the research has been carried out in the context of 6Ws (who, when, where, what, why, and how), which is one of the systematic literature reviews. The results obtained have been analyzed and interpreted in the MAXQDA 2020 qualitative data analysis program. In the findings obtained, it has been determined that IoT and food have gained importance worldwide, especially in England, India, and China. Furthermore, it has been determined that most of the studies on IoT are based on case studies, and all the articles examined are collected in three main focus points. Subcodes have been created under the main codes ‘Food Supply Chain, Smart and Sustainable Agriculture ve Waste Management’, and problem points have been tried to be customized.

Food-borne illnesses are common worries for tourists. In-flight food safety issues reflect the interrelated factors arising from an expanding airline industry, with its increased passenger loads, extended flight times, and multiple service activities. Adapting to these new challenges, and especially the global spread of food-borne diseases, requires an understanding of the cabin crew role as food handlers and the risks associated with this task. This chapter outlines the key factors that determine the safe delivery of in-flight food services, highlights the benefits of best practice to airline operators, passengers, and tourism boards, and addresses the policy implications for airline regulators and national health authorities.

Abstract

While rapid increase in demand for foods but limited availability of croplands has forced to adopt input-intensive farming practices to increase yield, there are serious long-term ecological implications including degradation of biodiversity. It is increasingly recognised that ensuring agricultural sustainability under the changing climatic conditions requires a change in the production system along with necessary policies and institutional arrangements. In this context, this chapter examines if climate-smart agriculture (CSA) can facilitate adaptation and mitigation practices by improving resource utilisation efficiency in India. Such an attempt has special significance as the existing studies have very limited discussions on three main aspects, viz., resource productivity, adaptation practices and mitigation strategies in a comprehensive manner. Based on insights from the existing studies, this chapter points out that CSA can potentially make significant contribution to enhancing resource productivity, adaptation practices, mitigation strategies and food security, especially among the land-constrained farmers who are highly prone to environmental shocks. In this connection, staggered trench irrigation structure has facilitated rainwater harvesting, local irrigation and livelihood generation in West Bengal. However, it is necessary to revisit the existing approaches to promotion of CSA and dissemination of information on the design of local adaptation strategies. This chapter also proposes a change in the food system from climate-sensitive to CSA through integration of technologies, institutions and policies.

Recently, sustainability took a greater emphasis, and this chapter seeks to describe the main sustainability initiatives generated in international markets. Through a qualitative study made of secondary sources, strategies aligned to different sustainability initiatives are shown. Interestingly, adopting technology, digital transformation, and blockchain can enhance sustainable development.

Abstract

Purpose

This chapter explores two business and innovation strategies to increase sustainability in a small-medium enterprise. The two strategies, one addressing the improved sustainability of an existing product line and the other addressing the development and implementation of a new product line, employ different supply chain sustainable practices and utilize different dynamic capabilities.

Methodology/approach

The chapter describes how sustainable supply chain management practices, sustainable new product development processes, and theories of dynamic capabilities interact to support a sustainable and differentiated strategy in the Alcass organization.

Findings

The models of sustainable supply chain management and sustainable new product development are applied to “more sustainable” products and “new sustainable” products, by raising different relevant practices as well as different supporting dynamic capabilities.
