Abstract

Purpose

The purpose of this study is to unearth antecedents of regrettable dining experiences related to the information source, action and inaction perspectives, dining companion influence and interactions among information source, the focal customer’s valence and the dining companion’s valence on regret, leading to sequential behavioral outcomes.

Design/methodology/approach

Using a scenario-based experimental study, 344 qualified questionnaires were collected. Univariate ANOVA and multiple linear regression analyses were implemented.

Findings

The results of this study reveal that action regret is more intense than inaction regret during the choice-making phase; dining companion negative feedback intensifies focal customer’s regret. The significance of the information source on regret disappeared when only one party reported negative feedback; conversely, when two parties in the co-consumption experience revealed negative feedback, the relationship between information source of choice and regret was sustained.

Research limitations/implications

The nature of scenario-based design may lack realism. Thus, more field experiments are encouraged to test the propositions further. This research enhances our understanding of gastronomic experiences in a negative disconfirmation context, drawing upon action/inaction regret theory, attribution theory and the expectancy disconfirmation model.

Practical implications

From a triad relationship perspective, this study provides valuable input on who or what will be attributed to the issues when encountering a food and wine sensory failure. Additionally, insightful recommendations are supplied on avoiding the possibility of inducing the experience of regret and how practitioners can increase the potential for a memorable dining experience.

Originality/value

To the best of the authors’ knowledge, this is the first study that enriched the existing knowledge of regrettable dining experiences relating to information sources and social influence.

Abstract

Purpose

With the growing popularity of social media, it has become common practice for consumers to write online reviews to share their opinion and experience as well as consider others' reviews to inform purchase decision-making. This study investigated how online review sentiments towards four key aspects (food, service, ambience and price) change after a restaurant is awarded a Michelin Star to shed light on how the award of a Michelin Star affects online reviews as well as what factors contribute to positive online restaurant reviews.

Design/methodology/approach

The authors conducted a sentiment analysis of online restaurant reviews on TripAdvisor. A total of 8,871 English-written reviews from 87 restaurants located in Europe were extracted using a web crawler developed by Beautiful Soup, and data were then processed using Semantria.

Findings

The study findings revealed that overall sentiments decreased after restaurants were awarded a Michelin Star, in which service sentiment was the most affected aspect, followed by food and ambience. Yet, price sentiment showed a prominent increase. This provides valuable insights for Michelin-starred restaurant operators and owners to create a unique and compelling gastronomic experience that triggers positive online reviews.

Practical implications

The results of this study argue that consumers tend to hold higher expectations for this type of upscale restaurants given its recognition and quality assurance, so they are more likely to have negative feelings when their expectations are disconfirmed. Therefore, restaurants should continuously improve their food and service while paying attention to small details such as ambience, through creativity and innovation. Also, high-end restaurants, especially Michelin-starred restaurants, usually have the edge in premium pricing, yet competitive pricing may backfire considering its perceived luxurious values.

Originality/value

This study analyzed changes in customer sentiments when a restaurant is awarded a Michelin Star through text analytics. Through the lens of online restaurant reviews, the study findings contribute to identifying aspects that are most or least affected by the award of a Michelin Star as well as highlight the role of ambience in customer satisfaction which might have been overlooked in previous studies.

隨著社交媒體日趨普及,消費者出現一種常見的做法,就是在網上書寫評論,分享他們的意見和體驗,他們也會參考其他消費者的評論,以在購物時能作出知情決定。本研究擬探討當餐館獲得米其林星級時,消費者對它們在四個主要方面 (即食物、服務、情調和價格) 的網上評價會如何改變。我們藉此能更容易了解、餐館獲得米其林星級會如何影響其網上評論,以及是哪些因素、會為這些餐館帶來正面的網上評價。

研究設計/方法/理念

我們對貓途鷹平台上的網上餐館評論進行情感分析。透過BeautifulSoup 研發的網絡爬蟲,我們取出位於歐洲87間餐館、共8,871個以英文書寫的評論,並把這些數據以Semantria加以處理。

研究結果

研究結果顯示、當餐館獲得米其林星級時,顧客的整體情緒會下降,而其中最受影響的是服務情懷,其次是食物和情調; 但價格情緒卻有明顯的上升。這研究結果給獲得米其林星級餐館的經營者及其東主提供寶貴的啟示,讓他們了解如何為顧客創造一個可帶來正面網上評價的獨特而難忘的美食體驗。

研究的原創性/價值

本研究透過文本挖掘、去分析當餐館獲得米其林星級時,顧客情緒會如何改變; 透過網上餐館評論這面透視鏡子,本研究得到的結果、幫助我們確定米其林星級的聲譽所影響最大和最小的是哪些方面,以及讓我們更深入了解餐館的情調在顧客滿意程度上所扮演的角色,而這個角色在過去的研究中似被忽視。

管理上的啟示

本研究的結果提供了論據、證明由於消費者對擁有相關的認可和品質保證的這類高檔餐館一般予以較高的期望,故當他們發現期望與現實不符時,他們更容易產生負面的情緒; 因此,餐館在關注如情調方面的細節的同時,也應透過創造力和新觀念、去不斷改善他們提供的食物素質和服務水平; 而且,高檔餐館,尤其是獲得米其林星級的餐館,通常在溢價定價方面享有優勢,但當考慮到感知的奢華價值時,具競爭力的價格或會為餐館帶來反效果。

Purpose

This article explores consumers' attitudes to the trend of gourmet burgers, notably the gourmet burgers' combination of highbrow food (gourmet) and lowbrow food (fast food). The authors use the case of the NOMA cheeseburger from the iconic New Nordic restaurant NOMA.

Design/methodology/approach

The data set consists of interviews (n = 20) with urban Danish consumers attending the NOMA burger pop-up.

Findings

The analysis highlights an acceptance among informants of “gourmetfied” burgers. This signals a change in the culinary status of burgers in Danish food culture. The authors also discovered some ambivalence in relation to the highbrow-lowbrow negotiations: while all informants celebrate the casualization of NOMA during the burger pop-up, half of the informants found the burger underwhelming: it did not live up to the edginess of the NOMA brand.

Practical implications

The authors believe this research can inform people working with culinary highbrow-lowbrow mix in their food designs, notably in relation to developing and matching the relation between symbolic and material aspects of the food design.

Originality/value

The authors argue that the concept of transgression can help us theorize how consumers accept, refuse, and negotiate boundaries in relation to gourmet burgers, and more generally between food consumption mixing highbrow and lowbrow elements. More particularly, the authors propose to distinguish between symbolic, social, and material transgressions. This perspective might also be interesting for practitioners in the field.

Abstract

Purpose

This paper aims to investigate the diners’ preference and perception on six acoustic classifications in eatery places during their casual dining. These classifications’ relationship with diners’ experience and significant impacts on diners’ preferences and perceptions during casual dining will be analyzed.

Design/methodology/approach

The data was collected quantitatively with randomly distributed self-administrated questionnaires during the restaurants' operating hours; 449 respondents who dined in at two casual dining restaurants in Melaka city area participated.

Findings

Analysis of Variance (ANOVA) tests revealed that the majority of the diners were not adversely affected by the noise level, and they did not have difficulties with their conversations. The results also indicated that the respondents felt that the noise did not stop them from returning to the restaurants. This study's findings may lay the groundwork for future studies to provide the acoustic comfort classification in eatery places, which can also be integrated and synthesized to be used as a reference for acoustic design and practice.

Research limitations/implications

The number of participants used simple random sampling method. Therefore, the sample cannot be typical for the target population, and there is a limited possibility of generalizing the present findings. The data collection was only gathered from two eatery places with similar typologies at the similar demographic background of customers because it was collected at Melaka city. Thus, the impacts of customers may differ at other typologies and locate in different regions, and the physical environment and the quality offered are also different in other places. The measured determinant factors only focus on the diners’ characteristics; thus, future research should be done to investigate other determinant factors impacting the preference and perceived acoustical comfort in eatery places.

Practical implications

The findings in this study would provide a basis reference to assess and evaluate the acoustic classification in eatery places that suits the customers’ perceived satisfaction.

Social implications

This study identified that demographic characteristic, gender and age are not the prominent determinant factors influencing the diners’ preference and perceived acoustical comfort in eatery places. Moreover, the days and dining hours were also found to be the determinants that will influence the preferences.

Originality/value

This paper has developed determining factors on acoustics classification that can be applied upon designing eatery places as well as a fundamental approach in developing rating for acoustics comfort index as reference for the diners to choose where to dine based on their preference and activities.

Purpose

The intense competition among restaurant brands made it difficult to retain and engage customers. Service innovation can play a vital role to serve this purpose, however, restaurant brands' efforts to bringing innovativeness may not yield desired results unless customers perceive them innovative. Therefore, the present study aims to investigate the role of customer perceived innovativeness (CPRI) in enhancing brand love and evangelism among customers. This study compares these effects between fast-food and continental restaurants to offer deeper insights.

Design/methodology/approach

Data were collected from 303 customers of fast-food and continental restaurants through self-administered structured questionnaire. The reliability and validity were established through confirmatory factor analysis. The hypotheses were tested using structural equation modeling and multi-group SEM with MPlus.

Findings

The findings of this study reveal that menu, experiential and promotional innovativeness dimensions of CPRI positively influence brand love. The effects of CPRI dimensions transcend to brand evangelism dimensions, i.e. brand purchase intension, positive brand referrals and oppositional brand referrals via brand love. The multi-group analysis showed that continental restaurants' menu innovativeness strongly impacts brand love and evangelism while promotional innovativeness matters more in the context of fast-food restaurants.

Practical implications

This study helps restaurant managers in devising tailor made strategies for fast-food and continental restaurants by focusing on the relevant attributes to bring innovation.

Originality/value

This research is one of the pioneering studies to investigate the relationship of CPRI with brand evangelism through the mediating role of brand love. This study also marks an initial attempt to compare fast-food and continental restaurants in the context of CPRI.

Abstract

Purpose

The purpose of this paper is to detect predefined service attributes and their sentiments from online restaurant reviews, and then to measure the effects of customer sentiments toward service attributes on customer satisfaction (CS) and revisit intention (RVI) simultaneously.

Design/methodology/approach

This study proposed a supervised framework to model CS and RVI simultaneously from restaurant reviews. Specifically, the authors detected the predefined service dimensions from online reviews based on random forest. Then, the sentiment polarities of the reviews toward each predefined dimension were identified using light-gradient boosting machine (LightGBM). Finally, the effects of attribute-specific sentiments on CS and RVI were evaluated by a bagged neural network-based model. The proposed framework was evaluated by 305,000 restaurant comments collected from DianPing.com, a Yelp-like website in China.

Findings

The authors obtained a hierarchal importance order of the investigated service themes (i.e. location, service, environment, price and food). The authors found that food played the most important role in affecting both CS and RVI. The most salient attribute with respect to each service theme was also identified.

Originality/value

Unlike prior work relying on the data collected from surveys, this study is among the first to model the relationship among service attributes, CS and RVI simultaneously from real-world data. The authors established a hierarchal structure of eighteen attributes within five service themes and estimated their effects on both CS and RVI, which will broaden our understanding of customer perception and behavioral intention during service consumption.

Abstract

Purpose

This study aims to examine the perceived values of the metaverse when adopting it in the luxury hospitality business. Based on the cost–benefit perspective, this research provides solid theoretical contributions and actionable managerial recommendations.

Design/methodology/approach

An exploratory sequential mixed-method design was used. For the qualitative phase, 21 hotel managers and 24 hotel guests (who often stay in four-star and five-star hotels and resorts) were interviewed after showing them a series of videos about using the metaverse in the hotel business. Based on the results of the qualitative phase, the analytic hierarchy process method was used, and 476 valid questionnaires were analyzed.

Findings

The results highlight the perceived benefits (personalized services, immersive experience and positive brand image) and costs (lack of human touch, time and effort and security and privacy) of metaverse adoption for hotel managers and their guests. In addition, the study determines the weight of each value attribute of metaverse adoption for each travel stage (pre-travel, during travel and post-travel).

Practical implications

Regarding metaverse adoption, the research offers practical suggestions for luxury hotels. For instance, the cost of equipment and the time and effort required are perceived costs of metaverse adoption. To address these challenges, hotels may offer free equipment (e.g. VR headsets) and training to their guests to stimulate the use of the metaverse.

Originality/value

This study addresses a gap in the literature by presenting a conceptual framework for examining metaverse adoption in the luxury hotel scenario. Unlike using conventional models like the technology acceptance model or the unified theory of acceptance and use of technology to investigate a technology’s adoption, this study stands out by unraveling the topic through the lens of value proposition. The latter often comes from an efficient value co-creation process, which is indeed shaped by an adequate appreciation of the congruence of perceived values (i.e. perceived benefits and costs) of metaverse from hotel manager and guest perspectives.

Abstract

Purpose

The primary objective of this study is to explore the nuanced interplay of conspicuous consumption, ethical label purchasing and the ensuing dynamics of civic virtue and cynicism within the luxury foodservice context.

Design/methodology/approach

Grounded in a theoretical understanding of solidarity within the context of product consumption, this research employs a two-pronged approach involving secondary data analysis and scenario-based experimental studies. The initial phase involves analyzing firm-level data from the Euromonitor database in 2019 and 2021. The main study employs a between-subjects experimental design with a cohort of 316 participants sourced from an online panel.

Findings

The results reveal a consistent pattern in the consumption of luxury foodservice and underscore a distinct upward trajectory in consumer demand for ethically labeled food. Notably, these findings underscore the moderating role of ethical label purchasing in the relationship between conspicuous consumption and consumers civic virtue. Additionally, ethical label purchasing moderates the impact of conspicuous consumption on consumer cynicism, both directly and indirectly through emotional solidarity related to both communal and equitable principles.

Originality/value

This study holds significance for both luxury food service researchers and market design practitioners. It provides valuable insights into how ethical labeling interacts with consumers conspicuous consumption, all facilitated by emotional solidarity.

Abstract

Purpose

The main goal of this paper is to identify the attributes of consumer experience in Michelin-starred restaurants and to estimate their effects on restaurant ratings.

Design/methodology/approach

A sample of 70,233 online reviews of 224 Spanish Michelin-starred restaurants were analysed with the latent Dirichlet allocation algorithm. A sentiment analysis and a logistic regression analysis were also employed to estimate the effect of attributes on restaurant ratings.

Findings

Customer attention, food quality, decor and ambience and value for money are frequently used to define restaurant experience. However, it is shown in this study that the experience in a Michelin-starred restaurant goes beyond the evaluation of those four attributes. Furthermore, the effect of the factors that were identified on customer satisfaction differed depending on the restaurant ratings.

Research limitations/implications

The findings are linked to the context of Spanish Michelin-starred restaurants. It is also assumed in this study that online reviews are based on truthful opinions.

Practical implications

Restaurant managers should primarily focus on customer attention and food quality to achieve customer satisfaction. In addition, those restaurants with an error-free service and a highly appreciated wine list among diners are more likely to achieve the culinary excellence that deserves a 5-star rating on TripAdvisor.

Originality/value

The attributes of the restaurant experience are frequently identified in literature reviews. Research based on text-mining analyses of customer reviews to discover a posteriori the factors that define a restaurant experience is scarce, and particularly difficult to find in the context of Michelin-starred restaurants.

Purpose

The aim of the study is to capture consumers' conceptualization of ethnic food and ethnic restaurants, focusing on what it takes for ethnic restaurants to be perceived authentic.

Design/methodology/approach

Qualitative research, based on semi-structured in-depth interviews which were transcribed and subjected to inductive thematic analysis.

Findings

The findings conceptualize what ethnic food and ethnic-authentic restaurant are, leading to formulating the criteria that authentic ethnic restaurant should meet.

Research limitations/implications

Findings have practical implications for restaurateurs interested in establishing themselves as ethnically authentic and for businesses focusing on ethnic food. This study was based on Israeli-Jewish participants; studies with other populations will contribute to the findings' trustability.

Originality/value

This study provides novel and critical insights into ethnic restaurant managements and to the customer conceptualization of the concept of ethnic authentic, demonstrating it being a multifaceted concept.
