Abstract

This study employs a sample survey to determine and analyse the corporate finance practices of South African listed companies in relation to cost of capital, capital structure and capital budgeting decisions.The results of the survey are mostly in line with financial theory and are generally consistent with a number of other studies. This study finds that companies always or almost always employ DCF methods such as NPV and IRR to evaluate projects. Companies almost always use CAPM to determine the cost of equity and most companies employ either a strict or flexible target debt‐equity ratio. Furthermore, most practices of the South African corporate sector are in line with practices employed by US companies. This reflects the relatively highly developed state of the South African economy which belies its status as an emerging market. However, the survey has also brought to the fore a number of puzzling results which may indicate some gaps in the application of finance theory. There is limited use of relatively new developments such as real options, APV, EVA and Monte Carlo simulation. Furthermore, the low target debt‐equity ratios reflected the exceptionally low use of debt by South African companies.

Abstract

Purpose

Thistle flower (Cynara cardunculus) aqueous extracts, as rich source of milk-clotting peptidases, have been widely used for cheeses marketed under the Registry of the Protected Designation of Origin, as it is the case of Serra da Estrela cheese, manufactured from raw ewes’ milk and without addition of any commercial starter culture. This paper aims at studying the influence of six different ecotypes of thistle flowers in cheese properties during the ripening and of final products.

Design/methodology/approach

Cheeses were produced with different thistle flower extracts and then the clotting time, weight and colour of cheeses, as well as texture properties and sensorial characteristics, were evaluated.

Findings

The clotting time varied from 47 to 66 min, and the weight loss along ripening varied between 32 and 40 per cent. There was some influence of thistle flower ecotype on the colour during ripening and in the final product. The results of texture analysis revealed significant differences between the thistle ecotypes: crust firmness varying from 2.4 to 5.6 N; inner firmness from 0.82 to 1.82 N; stickiness from −0.5 to −1.60 N; adhesiveness from −3.0 to −11.3 N.s; and Ecotype C was particularly distinguishable. Sensorial evaluation revealed differences among the cheeses, with Ecotype C receiving the highest score for global appreciation.

Originality/value

The usage of different extracts of thistle flower to produce Serra da Estrela cheese with different properties is a novelty, and it allows the possibility of manipulating this parameter in the future so as to produce cheeses with specific characteristics, addressed to different consumer targets.

Abstract

Purpose

The concept of smart city has recently become more topical in academic and policy discussions. This idea is considered a complex, non-consensual subject since its definition has not yet been agreed upon by most authors in the relevant fields. The need to identify and measure smart city indicators has also given rise to many different evaluation procedures. However, the available frameworks have yet to overcome challenges in structuring and measuring all the evaluation parameters of the cities in question. Thus, methods still need to be developed and applied that can structure criteria used to assess smart city success.

Design/methodology/approach

This study sought to show cognitive mapping's tangible usefulness as an expedient tool for strategic analysis, using smart cities as a complex object of study. To this end, various cognitive maps were constructed and compared using the Strategic Options Development and Analysis (SODA) approach.

Findings

Cognitive mapping's advantages and limitations in the strategic visualization research context are analyzed and discussed.

Originality/value

The authors know of no prior work reporting comparative analysis of this methodological approach in the same research context.

Purpose

In the last decades, the demand and use of renewable energies have been increasing. The increase in renewable energies, particularly wind energy, leads to the development and innovation of powerful wind energy converters as well as increased production requirements. Hence, a higher supporting structure is required to achieve higher wind speed with less turbulence. To date, the onshore wind towers with tubular connections are the most used. The maximum diameter of this type of tower is limited by transportation logistics. The purpose of this paper is to propose an alternative wind turbine lattice structure based on half-pipe steel connections.

Design/methodology/approach

In this study, a new concept of steel hybrid tower has been proposed. The focus of this work is the development of a lattice structure. Therefore, the geometry of the lattice part of the tower is assessed to decrease the number of joints and bolts. The sections used in the lattice structure are constructed in a polygonal shape. The elements are obtained by cold forming and bolted along the length. The members are connected by gusset plates and preloaded bolts. A numerical investigation of joints is carried out using the finite element (FE) software ABAQUS.

Findings

Based on the proposed study, the six “legs” solution with K braces under 45° angle and height/spread ratio of 4/1 and 5/1 provides the most suitable balance between the weight of the supporting structure, number of bolts in joints and reaction forces in the foundations, when compared with four “legs” solution.

Originality/value

In this investigation, the failure modes of elements and joints of an alternative wind turbine lattice structures, as well as the rotation stiffness of the joints, are determined. The FE results show good agreement with the analytical calculation proposed by EC3-1-8 standard.

Purpose

The purpose of this study is to assess motivational factors in the internationalisation of Portuguese hotel firms.

Design/methodology/approach

The epistemological approach that supports the development of this study is based on a deductive strategy. A comprehensive multi-case study was performed in which theoretical propositions were tested prior to further development.

Findings

The results of this study reveal that the internationalisation process of Portuguese hotel companies was triggered by managers’ entrepreneurial attitudes and international vision that in themselves embraced a combination of particular resources and competencies.

Research limitations/implications

Noteworthy are study’s contributions to international entrepreneurship as an individual act within existing social networks established by managers and the management team as a result of previous business experiences. The impact of this overall entrepreneurial profile on firms’ behaviour is also of interest. Limitations of the study relate to its cross-sectional nature and the number of interviewees.

Originality/value

The integration of economic paradigms with behaviour theories and the resource-based view to understand how and why Portuguese hotel companies engage in international endeavours is a major contribution of this study.

Abstract

Purpose

A healthy diet has been recognized as one of the most important factors associated with maintaining human health and helping in preventing the development of some chronic diseases. Therefore, this paper aims to study the perceptions of a sample of university people regarding a healthy diet.

Design/methodology/approach

It was undertaken a descriptive cross-sectional study on a non-probabilistic sample of 382 participants. The data were collected among a sample of Portuguese university people and measured whether people’s perceptions were compliant with a healthy diet.

Findings

The results revealed that the participants’ perceptions were, in general, compliant with a healthy diet (scores between 0.5 and 1.5, on a scale from −2 to +2). However, significant differences were found between age groups (p = 0.004), with a higher average score for young adults, and also between groups with different levels of education (p = 0.025), with a higher score for university degree. The variable chronic diseases also showed significant differences (p = 0.017), so that people who did not have any chronic diseases obtained a higher score.

Originality/value

This study is considered important because it provides evidences about the relation between nutrition knowledge and the perceptions towards a healthy diet. The study allowed concluding that the participants were aware about some nutritional aspects of their diets and, therefore, their perceptions were compliant with a healthy diet. This finding is very relevant because it could be a support for health policy initiatives directed at promoting healthy eating behaviours.

Abstract

Purpose

This study aims to determine the physicochemical and fatty acids composition of Serra da Estrela cheese (SEC), as well as health-related lipid indices, like the atherogenic and thrombogenic indices, and to evaluate the influence of producer, geographical origin and production date.

Design/methodology/approach

All 24 SEC produced between November 2017 and March 2018 were collected at selected certified producers and analyzed by NIR spectrophotometer and by GC. Data were statistically evaluated by chemometric tools.

Findings

In all evaluated SEC, 23 fatty acids were quantified. Cheese origin influenced nutritional and health-related lipid indices). The cheeses were characterized by a relative high abundance of saturated fatty acids (67-76%), followed by a medium content of monounsaturated fatty acids (17-25%) and by low level of polyunsaturated fatty acids (5-7%). A putative positive association between cheese consumption and healthy lipid indices could be reached.

Practical implications

The contents of some medium and long chain fatty acids as well as of nutritional and health indices were influenced by cheese producer, geographical origin and production date pointing out the need for standardizing production procedures.

Social implications

The SEC plays a key role in the local economy, being an endogenous product with unique sensory characteristics and nutritional potential, for which the knowledge of the lipids profile and health indices is of utmost relevance.

Originality/value

SEC is an iconic Portuguese cheese with Protected Designation of Origin. Based on the results, like health-related lipid indices, evaluated for the first time, a positive association between cheese consumption and healthy lipid indices could be envisaged.

Generation Z comprises the newest cohort to enter the workforce, and they not content to be the Millennials’ younger sibling. Born between 1997 and 2012, Gen Z’s identity is shaped by being the first generation to come into a post-9/11 world, by the effects of the Great Recession on their parents’ and families’ economic well-being, by the proliferation of technology and social media, by the specter of school shootings and violence, and by the current period of reckoning with past and present racial injustice. The defining moment for this generation, however, is entering adulthood during or in the wake of a global pandemic that significantly changed both education and industry. The confluence of this new generation of career entrants, the dramatically shifting job forms and careers (e.g., contingent work and the gig economy), and the post-COVID landscape of work provides a rich and compelling research agenda for management and human resource management as Gen Z enters workplace and progresses through their careers. Little academic research has examined this generation and its complexity, but the business community is very interested in preparing for the influx of Gen Z into their organizations and as consumers. Gen Z is diverse, global, and mobile. They are defined by their almost symbiotic relationship with technology, but surprisingly desire in-person connection. This generation was hard hit by the COVID-19 pandemic, in their education, finances, relationships, and well-being. They are a generation in flux. Future research directions are explored and presented.
