Abstract

Purpose

Amidst compounding crises and increasing global population’s nutritional needs, food supply chains are called to address the “diet–environment–health” trilemma in a sustainable and resilient manner. However, food system stakeholders are reluctant to act upon established protein sources such as meat to avoid potential public and industry-driven repercussions. To this effect, this study aims to understand the meat supply chain (SC) through systems thinking and propose innovative interventions to break this “cycle of inertia”.

Design/methodology/approach

This research uses an interdisciplinary approach to investigate the meat supply network system. Data was gathered through a critical literature synthesis, domain-expert interviews and a focus group engagement to understand the system’s underlying structure and inspire innovative interventions for sustainability.

Findings

The analysis revealed that six main sub-systems dictate the “cycle of inertia” in the meat food SC system, namely: (i) cultural, (ii) social, (iii) institutional, (iv) economic, (v) value chain and (vi) environmental. The Internet of Things and innovative strategies help promote sustainability and resilience across all the sub-systems.

Research limitations/implications

The study findings demystify the structure of the meat food SC system and unveil the root causes of the “cycle of inertia” to suggest pertinent, innovative intervention strategies.

Originality/value

This research contributes to the SC management field by capitalising on interdisciplinary scientific evidence to address a food system challenge with significant socioeconomic and environmental implications.

Abstract

Purpose

Limiting the use of antibiotics in food animals is a cornerstone of contemporary EU policy. Despite that marketing of antibiotics for growth promotion and nutrition has been banned since 2006, the use is still high and varied. This paper aims to investigate the forces behind the different usage patterns in Italy, with one of the EU’s most extensive use of antibiotics in animals, versus Sweden, with the union’s most restricted use, including how these usage patterns are related to EU and national policies.

Design/methodology/approach

The industrial network approach/the 4R resources interaction model is adopted to investigate the major forces behind the different antibiotic usage patterns. Furthermore, the study relies on the notion of three main characteristics related to the use of a resource activated in several user settings (Håkansson and Waluszewski, 2008, pp. 20–22). The paper investigates the Swedish and the Italian using settings, with a minimised, respectively, extensive usage of antibiotics. The study is exploratory in nature and based on qualitative data collected through a combination of primary and secondary sources.

Findings

The paper underlines the importance of integrating forces for policy to succeed in attempts to reduce the use of a particular resource. It reveals that Sweden’s radically reduced use was based on great awareness, close interactions between animal-based food producers and policy – and that integrating forces were supported by an era of state-protected food production, with promising ability to distribute the cost of change. The Italian characteristics hindering the integration of forces mounting for reduced use were restricted awareness, top-down business and policy interactions – and a great awareness about the difficulties of distributing the cost of change.

Originality/value

The study deals with the analysis of forces affecting the different usage of antibiotics within two EU settings. The investigation, based on the industrial network approach’s notion of connectivity of economic resources, that is, of exchange having a content and substance beyond discrete transactions, reveals how indirect related contextual forces, neglected by policy, have an important influence on the ability to achieve change, in this case of antibiotics usage patterns.

Abstract

Purpose

This paper aims to prompt ideas amongst readers (especially librarians) about how they can become active partners in knowledge dissemination amongst concerned user groups by implementing 3D printing technology under the “Makerspace.”

Design/methodology/approach

The paper provides a brief account of various tools and techniques used by veterinary and animal sciences institutions for information dissemination amongst the stakeholders and associated challenges with a focus on the use of 3D printing technology to overcome the bottlenecks. An overview of the 3D printing technology has been provided following the instances of use of this novel technology in veterinary and animal sciences. An initiative of the University Library, Guru Angad Dev Veterinary and Animal Sciences University, Ludhiana, to harness the potential of this technology in disseminating information amongst livestock stakeholders has been discussed.

Findings

3D printing has the potential to enhance learning in veterinary and animal sciences by providing hands-on exposure to various anatomical structures, such as bones, organs and blood vessels, without the need for a cadaver. This approach enhances students’ spatial understanding and helps them better understand anatomical concepts. Libraries can enhance their visibility and can contribute actively to knowledge dissemination beyond traditional library services.

Originality/value

The ideas about how to harness the potential of 3D printing in knowledge dissemination amongst livestock sector stakeholders have been elaborated. This promotes creativity amongst librarians enabling them to think how they can engage in knowledge dissemination thinking out of the box.

Abstract

The author presents the meat of the most common species consumed in Europe and their role in nutrition. The work focuses on the meat of mammals and birds; it does not deal with the importance of protein sources from other taxonomic categories. European meat consumption habits and consumer preferences are presented, taking into account religious, cultural and geographical differences. It examines the possibility of influencing and changing consumer behavior based on consumer opinions. It separately examines the reasons for the less preference of meat or the complete rejection of meat consumption among consumers. This chapter also points out the demographic effects, lifestyle changes and the economic effects of income conditions. It presents examples of the role of government propaganda and the marketing activities of producers or processors in encouraging consumption.

Abstract

Purpose

The purpose of this paper is to design and manufacture an intelligent 3D printed sensor to monitor the re-occurrence of diaphragmatic hernia (DH; after surgery) in bovines as an Internet of Things (IOT)-based solution.

Design/methodology/approach

The approach used in this study is based on a bibliographic analysis for the re-occurrence of DH in the bovine after surgery. Using SolidWorks and ANSYS, the computer-aided design model of the implant was 3D printed based on literature and discussions on surgical techniques with a veterinarian. To ensure the error-proof design, load test and strain–stress rate analyses with boundary distortion have been carried out for the implant sub-assembly.

Findings

An innovative IOT-based additive manufacturing solution has been presented for the construction of a mesh-type sensor (for the health monitoring of bovine after surgery).

Originality/value

An innovative mesh-type sensor has been fabricated by integration of metal and polymer 3D printing (comprising 17–4 precipitate hardened stainless steel and polyvinylidene fluoride-hydroxyapatite-chitosan) without sacrificing strength and specific absorption ratio value.

Abstract

Purpose

The purpose of this paper, applying concepts in the plant-based food sector, is a focus on the competitive rival trap for startup firms, with their initial advantage for under-served market segments, only to be overtaken by scale, speed, and brands of incumbent brand firms. As a case study of industry transformation, the food production sector illustrates how organizational innovation brings new forms of rivalry, from the farm gate to the kitchen plate. As a result, startups face a rivalry trap, if unable to scale quickly, as incumbents reframe their strategic response with startup acquisitions, corporate incubators or alliance partnerships consumer demand.

Design/methodology/approach

This paper outlines the features of precision agriculture, a new paradigm for agriculture and food production, requiring new competences and skillsets in the protein revolution, including issues like virus, bacteria and the molecular structure of food groups, animal breeding and veterinary medicine. Plant-based foods is used as a case study for startups and the rivalry trap.

Findings

The emergence of plant-based foods is a case study of market opportunity and creative destruction, where the potential market varies from $25bn to $72bn, and growing faster in the dairy sector. However, food incumbents bring new strategic responses and a rivalry trap, where startups must gain scale quickly in capabilities, talent and marketing prowess, often exploiting demand in market niches unimpeded by incumbent rivals.

Research limitations/implications

Startups in biological sciences face massive challenges to increase scale and scope, even with unique intellectual property.

Practical implications

Startup firms need multidisciplinary management teams with a global outlook.

Social implications

Plant-based foods form part of the protein revolution but face challenges of scale, cost competitiveness and taste, despite advantages for climate mitigation.

Originality/value

The impact of technological and science applications has blurred the traditional concept of industry boundary, with huge variations in the intangible knowledge component in their core activities and capabilities. Underlying variations imply that not all industries have similar supply demand conditions, with variations in input costs, capital intensity and innovation needs, with strategic implications for the rivalry trap.

Abstract

Purpose

The present research work is carried out for determining haemoprotozoan diseases in cattle and breast cancer diseases in humans at early stage. The combination of LeNet and bidirectional long short-term memory (Bi-LSTM) model is used for the classification of heamoprotazoan samples into three classes such as theileriosis, babesiosis and anaplasmosis. Also, BreaKHis dataset image samples are classified into two major classes as malignant and benign. The hyperparameter optimization is used for selecting the prominent features. The main objective of this approach is to overcome the manual identification and classification of samples into different haemoprotozoan diseases in cattle. The traditional laboratory approach of identification is time-consuming and requires human expertise. The proposed methodology will help to identify and classify the heamoprotozoan disease in early stage without much of human involvement.

Design/methodology/approach

LeNet-based Bi-LSTM model is used for the classification of pathology images into babesiosis, anaplasmosis, theileriosis and breast images classified into malignant or benign. An optimization-based super pixel clustering algorithm is used for segmentation once the normalization of histopathology images is conducted. The edge information in the normalized images is considered for identifying the irregular shape regions of images, which are structurally meaningful. Also, it is compared with another segmentation approach circular Hough Transform (CHT). The CHT is used to separate the nuclei from non-nuclei. The Canny edge detection and gaussian filter is used for extracting the edges before sending to CHT.

Findings

The existing methods such as artificial neural network (ANN), convolution neural network (CNN), recurrent neural network (RNN), LSTM and Bi-LSTM model have been compared with the proposed hyperparameter optimization approach with LeNET and Bi-LSTM. The results obtained by the proposed hyperparameter optimization-Bi-LSTM model showed the accuracy of 98.99% when compared to existing models like Ensemble of Deep Learning Models of 95.29% and Modified ReliefF Algorithm of 95.94%.

Originality/value

In contrast to earlier research done using Modified ReliefF, the suggested LeNet with Bi-LSTM model, there is an improvement in accuracy, precision and F-score significantly. The real time data set is used for the heamoprotozoan disease samples. Also, for anaplasmosis and babesiosis, the second set of datasets were used which are coloured datasets obtained by adding a chemical acetone and stain.

Abstract

Purpose

Observation of the animal world is an important component of nature surveys. It provides a number of different information concerning aspects such as population sizes, migration directions, feeding sites and many other data. The paper below presents the results from the flights of an unmanned aerial vehicle (UAV) aimed at detecting animals in their natural environment.

Design/methodology/approach

The drone used in the research was equipped with RGB and thermal infrared (TIR) cameras. Both cameras, which were mounted on the UAV, were used to take pictures showing the concentration of animals (deer). The overview flights were carried out in the villages of Podlaskie Voivodeship: Szerokie Laki, Bialousy and Sloja. Research flights were made in Bialousy and Sloja. A concentration of deer was photographed during research flights in Sloja. A Durango unmanned platform, equipped with a thermal imaging camera and a Canon RGB camera, was used for research flights. The pictures taken during the flights were used to create orthomaps. A multicopter, equipped with a GoPro camera, was used for overview flights to film the flight locations. A flight control station was also used, consisting of a laptop with MissionPlanner software.

Findings

Analysis of the collected images has indicated that environmental, organisational and technical factors influence the quality of the information. Sophisticated observation precision is ensured by the use of high-resolution RGB and TIR cameras. A proper platform for the cameras is an UAV provided with advanced positioning systems, which makes it possible to create high-quality orthomaps of the area. When observing animals, the time of day (temperature contrast), year season (leaf ascent) or flight parameters is important.

Originality/value

The paper introduces the conclusions of the research flights, pointing out useful information for animal observation using UAVs.

Abstract

Purpose

The purpose of this paper is to provide an overview of the antimicrobial and antioxidant properties of postbiotics and the use of postbiotics to increase the shelf life and quality of food.

Design/methodology/approach

In this review paper, all articles from five electronic databases containing Google Scholar, Web of Science, PubMed, Scopus and Science Direct were considered and selected according to the purpose of the study.

Findings

In addition to improving food safety and increasing its shelf life, natural food preservation using biological preservatives also has a positive effect on improving consumer health. As a result, protection using natural antioxidants and antimicrobial agents seems essential. Postbiotics, having favorable characteristics such as nontoxicity, long shelf life and ease of standardization and transportation, are known as suitable antioxidant and antimicrobial, and there is an interest in making antioxidant and antimicrobial active films containing postbiotics to delay spoilage, increase the shelf life of perishable foods without changing their sensory characteristics.

Originality/value

Postbiotic refers to all soluble factors that are either secreted from living probiotic cells or released after cell lysis. These compounds include enzymes, peptides, polysaccharides, organic acids, teichoic acids and cell surface proteins, and their effects have been proven to improve some human and animal diseases. Probiotic bacteria must survive unfavorable conditions such as processing, storage, distribution, preparation and the digestive system to exert their health-giving effects, whereas their metabolites (postbiotics) have overcome these adverse conditions well and may be a good substitute for probiotics.
