Abstract
It has been 50 years since the publication of Studs Terkel’s groundbreaking book, Working, which consists of a compilation of interviews carried out with over 130 workers in the United States. In this chapter, the author revisits this masterpiece, which offers a penetrating analysis of the dehumanization and degradation of work. The author argues that Working is an ode to, and guide for, ethnographic scholarship on work and that it remains as powerful and relevant today as when it was originally published a half of a century ago.

Abstract
Purpose
This research aimed to fill several gaps in the tipping literature which has overlooked the server's perspective in identifying and understanding variables that influence a tip amount and therefore where they concentrate their efforts during the service encounter. Furthermore, the extant literature has theorized how or why certain variables influence the tip amount, but these studies fail to capture insight from server's which would supplement the theory and provide a more in-depth understanding of the mechanisms at play.
Design/methodology/approach
This study adopts a grounded theory approach using semi-structured one-on-one interviews with tipped restaurant employees who were identified and selected using snowball sampling. Content analysis is employed to code and categorize the data.
Findings
The content analysis revealed five categories where servers focus their time and effort to earn tips: service quality, connection, personal factors, expertise and food quality. The server's personality was identified as a variable the tipping literature has largely ignored as a determinant of the tip amount. Server's shift their style of service for groups of eight or more people, and for regular customers, who must dine in the restaurant at least once per week. Lastly, despite the many drawbacks associated with working for tips, servers would not want to replace it with any other method of compensation.
Originality/value
This is the first qualitative study focused on understanding the server's role in the service exchange relationship since McCarty et al. (1990) study. The results provide new insights on the often-studied variables from the tipping literature.

Abstract
Purpose
Equitable risk allocation is important for the effective management of inevitable risks in International Construction Joint Venture (ICJV) projects. Previous studies have documented risks facing ICJV projects. However, there is a dearth of studies on the risk allocation preferences that take into consideration the opinions of both the local and foreign partners. This study aims to fill this gap by ascertaining the risk allocation preferences of the partners of ICJV projects for effective risk management.
Design/methodology/approach
Through a survey, data on risk allocation preferences were collected from both local and foreign partners of ICJV projects using a comprehensive register of 74 risks.
Findings
Following analysis, six risks were allocated to the local partner, 11 were allocated to the foreign partner, 51 risks were shared, four were allocated to a third party and two were to be negotiated based on the specific circumstances of the project. Practically, the study’s findings will help ICJV partners in drafting their ICJV contracts to adequately allocate risks and reduce contract negotiation time considerably.
Practical implications
The findings from this study will help partners in drafting their joint venture contract agreement and also reduce the period for contract negotiation. Knowledge of the preferred risk allocation is important in allocating risks in the contract agreement to the relevant partner for effective management.
Originality/value
This study, to the best knowledge of the authors, is one of the early studies to ascertain the risk allocation preferences of ICJV project partners in the Ghanaian construction industry – a departure from previous studies which focused on the identification and evaluation of risks. This study is also different from previous studies by considering the allocation preferences of both partners of the ICJV. The collection of data from both partners of the ICJV helped to consider their perceptions on risk allocation and evaluation, essentially leading to cross-cultural and optimal risk allocation preferences.

Abstract
Purpose
This paper aims to investigate the utilisation of street food to redefine place management in public spaces in Egypt. The study examines the spatiotemporal effects of this approach, considering the preferences of both vendors and consumers alongside contextual design factors.
Design/methodology/approach
In this study, conducted in Cairo, Egypt, a spatial ethnographic approach was used to delve into the process of place management in areas hosting street food activities. Focus group interviews were conducted with a random sample of street food vendors and consumers.
Findings
The results of this case study confirm the significant impact of street food on its surroundings, emphasising the importance of the people–place relationship. Insights from group interviews shed light on essential questions regarding the timing, location and drivers of spatiotemporal effects around food activity areas, as well as the entities controlling these effects and their mechanisms. The findings underscore the necessity of harmoniously balancing the needs of vendors and consumers without detrimentally affecting the context.
Practical implications
The proactive insights gleaned from this study hold potential for replication in other cities, offering valuable insights into the roles and specialisations of actors involved in managing street food places. However, achieving a more comprehensive understanding of stereotypes and underlying themes is imperative.
Originality/value
This study contributes to filling a research gap by exploring strategies to integrate vendors’ and consumers’ preferences and designs into specific contexts. It provides proactive and preventive solutions to mitigate adverse spatiotemporal effects of street food activities within the studied context.

Abstract
This paper investigates the intricate process of integrating historically excluded social groups into long-established routines. Drawing on a dialectical perspective, the research explores how persistence and change emerge through the interplay of opposing forces, shedding light on the dynamics of integrating new participants while ensuring stability in established routines. The empirical focus is on an Armed Forces’ ground combat training (GCT) course, examining the integration of the first female officers after the formal ban on their participation in close-combat roles was lifted. The findings reveal a nuanced evolution of routine adaptation and truce reformation, characterized by three dialectical cycles: tentative truces, experimental truces, and enactment truces. These cycles involve negotiations between continuity and reformation, accommodation and resistance, and modification and preservation, uncovering a dialectical dance where organizational actors invest intense effort in maintaining the status quo while accommodating ambiguity and settling tensions. The findings extend our understanding of routine dynamics by illuminating the performative aspect of truce-making, highlighting the effortful processes involved in accommodating new participants. This paper establishes a connection between routines and dialectics, providing novel avenues for exploring complex organizational challenges and emphasizing micro-strategies employed by routine participants to address differences in practice. It also contributes to the field of organizational inclusion by offering a dialectical understanding of integration, showcasing the intricate dynamics involved in integrating historically excluded groups into established routines.

Abstract
Purpose
Clothing fit, including garment ease and drape, impacts the volume of air between clothing layers and the body, directly affecting the amount of heat that can be transferred through a multi-layer clothing system. As most acute firefighting fatalities are caused by overexertion and heat strain, the purpose of this research was to determine the impact of ease allowances on air gaps in structural firefighting turnout suits and their subsequent effect on total heat loss (THL) when worn on a three-dimensional form.
Design/methodology/approach
Four turnout suits with chest ease allowances of 6″, 8″, 10″ and 12″ were evaluated using an ANDI dynamic sweating thermal manikin. The average predicted manikin THL of each ensemble was calculated from the thermal and evaporative resistance measurements. A three-dimensional (3D) body scanner was utilized to calculate the distance and volume of clothing air gaps between the base layer and each turnout suit.
Findings
Results demonstrate that reductions in upper body ease measurements trend towards statistically significant increases in THL, to a point, with fit limitations being reached before benefits can be significantly realized. An increase in standard chest ease measurements significantly decreased heat loss, even when forced convection from movement was considered.
Originality/value
This is the first article of its kind to explore the relationship between garment ease and predicted manikin THL, especially for fire service protective clothing. Findings indicate a valid recommendation for turnout gear designers and manufacturers to optimize clothing fit to improve breathability and potentially reduce incidents of heat strain in the fire service.

Abstract
Purpose
The low rate of exclusive breastfeeding and the early introduction of complementary feeding are among the causes of nutritional problems in children. The national coverage of exclusive breastfeeding in 2019 was 67.7%, surpassing the target of the 2019 Strategic Plan, which was 50%. However, there are still several practices of early and inappropriate complementary feeding (32.3%) that can be contributing factors to malnutrition problems in children. The purpose of this study was to determine the factors that influence mother’s self-efficacy levels regarding complementary feeding practices among toddlers in the Tengger tribe.
Design/methodology/approach
The study conducted was an observational study with a cross-sectional design. It focused on mothers with children aged 6–24 months in Wonokitri village, East Java. Data was collected using a structured questionnaire and information from the local health center. The analysis involved univariate and bivariate analysis using the chi-square test.
Findings
Most mothers were aged 20–34 years (78.9%), had a good level of knowledge (61.4%), the last education level of fathers and mothers was high school (47.4%; 54.4%), parents work as farmers (86.0%; 61.4%), Hinduism (98.2%), family income is less than the minimum wage (78.9%), and mothers receive good family support (73.7%). Most toddlers were boys (56.1%), aged 13–24 months (68.4%), and the second child (66.7%). Family support was the only factor that was significantly related to a mother’s self-efficacy in complementary breastfeeding practices (p-value = 0.042).
Research limitations/implications
It is hoped that more families and health workers will support mothers in giving food to their babies based on the guidelines.
Originality/value
This paper collects evidence from indigenous people of the Tengger tribe.
