Abstract

Purpose

This study identifies new factors influencing the adoption of two recently promoted messages in Canada's updated food guide (FG): enhancing pleasure of eating healthy foods (PEHFs) and shifting food choices towards plant protein foods. Currently, limited and contradictory evidence is available regarding associations between environmental values, nutrition literacy, PEHFs, and plant/animal protein food consumption.

Design/methodology/approach

An online survey measuring environmental values; nutrition literacy, distinctively based on previous (2007) and most recent (2019) FG messages; PEHFs; and annual changes in the consumption of protein foods was sent to Quebec residents (N = 128).

Findings

Greater nutrition literacy of both 2007 and 2019 FGs and greater environmental values were associated with greater PEHFs (ß = 0.248, p < 0.01; ß = 0.209, p < 0.05; ß = 0.423, p < 0.001, respectively). Greater PEHFs was associated with greater consumption of plant protein foods (ß = 0.405, p < 0.001). Greater nutrition literacy of the 2007 FG was associated with greater consumption of animal protein foods (ß = 0.409, p < 0.001), whereas greater nutrition literacy of the 2019 FG was linked to lower consumption of animal protein foods (ß = −0.225, p < 0.05).

Practical implications

Enhancing PEHFs may require increasing general FG nutrition literacy and strengthening environmental values. To encourage plant protein food consumption and decrease animal protein food consumption, the authors recommend promoting PEHFs and increasing nutrition literacy based on newest FG recommendations.

Originality/value

This new evidence may help develop strategies promoting PEHFs and plant protein food consumption, thus increasing uptake of new FG recommendations.

Abstract

Purpose

Studies on developed economies showed that imposing taxes on animal-based foods could effectively reduce agricultural greenhouse gas emissions (AGHGEs), while this taxation may not be appropriate in developing countries due to the complex nutritional status across income classes. Hence, this study aims to explore optimal tax rate levels considering both emission reduction and nutrient intake, and examine the heterogenous effects of taxation across various income classes in urban and rural China.

Design/methodology/approach

The authors estimated the Quadratic Almost Ideal Demand System model to calculate the price elasticities for eight food groups, and performed three simulations to explore the relative optimal tax regions via the relationships between effective animal protein intake loss and AGHGE reduction by taxes.

Findings

The results showed that the optimal tax rate bands can be found, depending on the reference levels of animal protein intake. Designing taxes on beef, mutton and pork could be a preliminary option for reducing AGHGEs in China, but subsidy policy should be designed for low-income populations at the same time. Generally, urban residents have more potential to reduce AGHGEs than rural residents, and higher income classes reduce more AGHGEs than lower income classes.

Originality/value

This study fills the gap in the literature by developing the methods to design taxes on animal-based foods from the perspectives of both nutrient intake and emission reduction. This methodology can also be applied to analyze food taxes and GHGE issues in other developing countries.

Abstract

Purpose

The aim of this study is in twofolds. First, to take a critical look at nutrient consumed and its trends and second, to examine the relationship between share of nutrient consumed across selected food groups and per capita income in Nigeria.

Design/methodology/approach

The author uses seemingly unrelated regressions.

Findings

The result of the first objective reveals that the average calorie, protein and fat intakes were still below the recommended daily allowance since the 1960s as diets in Nigeria remained very much cereal-based over the years. Also, the results of objective two show that calorie, protein, and fat share of animal products respond positively but inelastic to the per capita income growth in Nigeria over the years.

Originality/value

Contrary to previous studies, the present study is designed not to fit aggregated nutrient demand from various food items as a function of income, but to relate the nutrient share of each homogenous and heterogeneous food product categories to the aggregated nutrient intake from these food groups and per capita income in Nigeria.

Abstract

Purpose

The purpose of this paper is to nutritionally evaluate the potency of complementary food produced by mixing different sources of vegetable and animal protein together.

Design/methodology/approach

Maize (carbohydrate), peanut (groundnut) and crayfish (Euastacus spp) were the sole energy and protein sources, respectively. Diet 1 (Basal); diet 2 (groundnut‐fermented‐maize (ogi) 1:9); diet 3 (crayfish‐ground‐nut‐ogi, 1:1:9); diet 4 (crayfish‐ogi, 1:9); diet 5 control (Nutrend). The formulated complementary diets were fed to 30 albino rats. A commercial product (Nutrend) manufactured by nestle plc was obtained at a local supermarket, Ile‐Ife, Nigeria and was used as standard diet.

Findings

The result showed the growth rate (non‐protein diet) decreased from 37.962‐36.910; and the growth rate (protein diet) increased from 37.270‐54.544, 37.770‐82.662, 37.900‐78.570, and 37.636‐80.521 for diets 1 2, 3, 4 and 5, respectively. Protein efficiency ratio (PER), for diets 1 2, 3, 4 and 5 were nil, 1.45, 3.30, 3.15, and 2.94, respectively. Net protein ratio (NPR), for diets 1 2, 3, 4 and 5 were nil, 0.85, 2.78, 2.59, and 2.45, respectively. The average nitrogen retained in various organs of experimental animals, such as liver, kidney and muscle of the diets 1 2, 3 4 and 5 were 35.52, 33.55, 33.58: 48.32, 48.40 48.68: 55.70, 53.20, 56.08: 52.30, 50.48, 54.65: and 56.76, 44.63, 56.80, respectively. The formulations compared to control were found superior in terms of growth rate, PER, NPR and ensure optimum nitrogen content in the liver, kidney and tissues.

Originality/value

The paper's findings show that the complementary food formulations which are not expensive, locally available, and affordable, could be produced from plant and animal sources and may be suitable to eradicate protein energy malnutrition (PEM).

For generations, Britain has had a household delivery of fresh milk; from the days before the Great War when it was delivered by a horse‐drawn milk float, with the roundsman often bringing the housewife to the door with his cries of “Milk‐O!”. The float had a churn and milk was delivered in a small can, served out by a dipper. This was the start of the distributive trade, organised between the Wars, from which the present industry has emerged. The trade gave universal acceptance to the glass bottle, returnable for household delivery, only the method of sealing has changed. There have been many demands for its abandonment in favour of the carton, of which recent years has seen a rise in its use in the increasing sales of milk by supermarkets and stores. Despite the problems with returnable vessels, the glass bottle has a number of advantages. The milk, including the cream line, is clearly visible, and short measure is most unlikely, which is a growing problem with carton‐filled milk. The number of prosecutions for short measure with cartons must be causing concern to trading standards departments. There is nothing to indicate the offence until the carton is opened.

Three events of significance to this country took place in 1899 – the British Food Journal was launched, Australia retained the Ashes, and the Boer War hostilities commenced. If challenged on the order of their importance, cricketers and Empire‐builders may be excused their preference. However, looking at it purely from the standpoint of pro bono publico, the dispassionate observer must surely opt for the birth of a certain publication as being ultimately the most beneficial of the three.

Abstract

World shortages of certain raw materials leading to appreciable price increases is currently a regular feature of our daily lives— and is likely to be so, unfortunately, for the next few years. Meat has been increasing in price owing to various shortages in animal feeding stuffs. The fact that the populations of developing countries rightly demand that home produced meat is made available for their home consumption rather than for export is also adding to the problem as far as developed nations are concerned. The obtaining of sufficient protein for everyone's dietary needs is as basic and important as the need to have sufficient supplies of energy to meet world requirements. The amount of protein to be found on this earth is in excess of our projected needs, but there could well be severe shortages of protein foods for humans in an acceptable or usable state, especially if we continue to rely so heavily upon animal protein. There is, therefore, a real and urgent need for scientists to develop ways and means of transforming basic protein raw materials into acceptable products.

The initial shock of devaluing the currency, after so many promises that it would not take place, has passed; only the uncertainty and apprehension remain. It seems an idle exercise to compare the present state of the country's economy with other periods in recent history, such as when in the first Labour Government, we went off the gold standard; at that time, shock was indeed profound and again, the French were cock‐a‐hoop, but the position was complicated by the huge inter‐indebtedness of the Allies in the First War. Or the first devaluation after the Second World War, but both periods were also characterized by public waste and profligate spending. Now, we have to obtain foreign loans and financial backing to keep going, and it is this aspect of the present devaluation which will probably far outweigh any positive advantages. The country's massive external debts were increased by approximately one‐seventh overnight, probably wiping out completely all the repayments made at such great effort since the War. Devaluation of the currency cannot be seen as anything but a grievous blow to the country, presaging hard times ahead for everyone. When promises were being made that devaluation would not take place, there can be little doubt that these were honestly made and, at the time, believed in, for no Government of a country with imports always exceeding exports, would impose such a burden on its people willingly. It must then have been forced upon them.

Purpose

The menopausal transition (MT) is a period when there may be an increase in visceral fat mass and a worsening of cardiometabolic risk factors. Few studies have evaluated the efficacy of plant-based low-calorie diets on groups of women at different stages of MT. The purpose of this study is to compare the effectiveness of a high plant-to-animal protein ratio diet in women of similar age but with different fertility statuses.

Design/methodology/approach

Subjects were divided into three groups according to their fertility status at the baseline: “premenopausal” (n = 11), “perimenopause” (n = 14) and “postmenopause” (n = 18). Body composition (BC) was measured at the beginning and after eight months of treatment. Individualised lifestyle treatment included a strong component of plant-based foods.

Findings

Forty-three overweight or obese Caucasian women (age 52.3 ± 4.5 years, body mass index 30.6 ± 5.4 kg/m2, fat mass 33.1 ± 9.3 kg data presented as means ± SD) were included in the study. Mean physical activity was 8.4 ± 7.6 metabolic equivalent of tasks/week. Subjects had an improvement in BC (fat mass −5.6 ± 4.0 kg, p < 0.001 protein −0.3 ± 0.5 kg, p < 0.001), HDL-C and systolic blood pressure values. Waist circumference and hip circumference decreased by 4.1 ± 3.1 cm and −6.0 ± 4.3 cm, respectively. Weight loss resulted in a significant improvement in some blood lipid values, such as total and high-density lipoprotein cholesterol. Adherence to a high plant protein diet helps adult women with different fertility statuses to improve BC and reduce cardiovascular risk factors. Long-term studies with larger sample sizes are needed to confirm these findings.

Originality/value

In pre-peri- and post-menopausal adult women, a diet high in plant proteins improves body composition and reduces cardiovascular risk factors.

Abstract

Purpose

The purpose of this paper is to investigate the stability of chicken flavored textured soy protein (TSP) substitution for chicken meat in pizza toppings.

Design/methodology/approach

TSP obtained from defatted soy flour was used to replace chicken at 25, 50 and 100 percent level in the pizza toppings. Patent grade wheat flour, TSP, boiled chicken, cheese, pizza shell and whole pizza were subjected to chemical analysis. Rheological properties of patent grade wheat flour were assessed by mixograph and farinograph. A panel of judges assessed sensory characteristics of pizza topping and whole pizza.

Findings

Moisture, ash and protein contents of the whole pizza showed a rise when the amount of TSP was increased, while fat content decreased slightly with increase in TSP content. Mixographic studies showed 6 min mixing time and 44 percent peak height. The farinographic studies revealed water absorption, arrival time, dough development time, departure time and dough stability as 63.6 percent, 1.5, 8.5, 13.3 and 11.8 min, respectively. The pizza that contained 25 percent TSP in the topping formulation possessed improved aroma, color, flavor and after taste characteristics. Whole pizza containing 25 percent soy protein and the standard pizza having 100 percent chicken in the topping were ranked similar in sensory qualities. Best sensory quality of topping was also for 25 percent TSP incorporation. Statistical analysis showed that pizza prepared with 25 percent TSP were highly acceptable.

Practical implications

The steadily increasing costs of animal proteins have compelled the food industry to focus attention on the low cost vegetable sources of protein. Soybeans are so versatile that they can be processed into flour, lecithin, oil, protein concentrates, isolated proteins, hydrolyzed proteins and textured protein and can be incorporated in meat and meat products as a relatively cheap protein source compared to expensive protein of animal origin.

Originality/value

The paper's findings may used by the pizza industry to replace the chicken in topping with TSP for vegetarians.
