Abstract

This chapter combines a global value chain methodology with the case of the development of the farmed Atlantic salmon industry in Chile to inform discussions regarding the globalization of economy and society. The research documents the shifting structure of the value chain from the north to the south as Chile replaced northern Europe as the locus of production and the major world supplier of farmed Atlantic salmon. Farmed salmon was supported by the Chilean state as part of its export-oriented industrialization model that attracted foreign direct investment (FDI) from northern TNCs. Chile's low costs of production combined with growing environmental problems in the north and global retailers' demand for large quantities of low-cost product resulted in the restructuring of the farmed Atlantic-salmon value chain as northern capital sourced the south as a lucrative production platform to service northern consumers. A detailed investigation of the rise in dominance of the firm Marine Harvest is provided to illustrate the process of industry concentration the Chilean farmed-salmon industry. This model has generated a legitimation crisis related to environmental degradation and labor abuses resulting in social movement organization both nationally and internationally. The chapter concludes with a discussion of the implications of the Wal-Mart Effect on the agrifood industry in particular and in the farmed-salmon industry in particular.

Abstract

This chapter describes a service learning (SL) project implemented in an upper-level undergraduate Cost Accounting course to enhance the coverage of costing concepts. Employing a variation of Lafond, Leauby, and Wentzel (2017) SL task, students actively gather cost data for a business venture by preparing peanut butter and jelly sandwiches which are then donated to a local soup kitchen. Comparison of scores on pre- and post-tests suggests that the SL assignment enhances students’ understanding of key cost accounting concepts. More specifically, improvements in mean post-test scores proved significantly greater in the experimental group after completion of the SL activity than in the control group. Feedback further suggests that students appreciated the opportunity to engage in SL by helping others less fortunate. Active SL tied to course objectives meets The Association to Advance Collegiate Schools of Business (AACSB, 2013) suggestions for honing students’ critical thinking skills, while also helping to instill SL values in future business leaders.

Abstract

A shift is underway in the licensed trade from drink-led to food-led establishments. The current literature emphasises two underpinning reasons: (i) the need for pubs, bars and craft venues to diversify their income streams in an increasingly competitive sector, and (ii) changes in consumer demand and preferences for the availability of food, especially in ‘craft’ establishments. This chapter argues that a third reason has been neglected: the long-standing regulatory pressure for establishments to provide food alongside alcohol. Drawing on archival research and local authority licensing data, this chapter argues that the shift to food-led provision in licensed establishments must be understood as part of an enduring regulatory concern to foster a more ‘civilised’ drinking culture – namely, a seated, café-style, ‘more European’ approach to consumption – in which patrons drink alcohol alongside food.

Abstract

The nutritive properties of various dietary components and their effects on health are regularly debated in the scientific literature and popular media. The study of the regular consumption of cake in relation to the risk of developing metabolic disorders is however an exciting new development in the field. This chapter suggests that cake consumption is amongst a number of factors that may explain The Ambridge Paradox: the extremely low incidence of metabolic disorders such as obesity and Type 2 diabetes observed in a small Borsetshire village. The chapter identifies 10 dietary and lifestyle habits observed in this population that may be beneficial for cardiovascular health, acting through a variety of mechanisms. Key amongst these may be the synergic properties of several biochemical components of cake, especially the phenolic compounds in varieties with a fruit-based element, such as lemon drizzle. The chapter concludes that the dietary and lifestyle habits of the Ambridge cohort show promise as a model for improving the metabolic health of wider populations. In particular, it suggests that cake consumption may be a promising therapeutic supplement to prevent and even treat metabolic disorders.

Abstract

Photographs are primary source documents that, like manuscripts and printed documents, carry layers of embedded information. As an example of a research strategy that can be used to study the time, place, and context of the development of early photographic businesses in America, a project to research and geo-reference the early photographic studios in New York City using information culled from imprints, census records, city directories, and other period sources is described. This case study example will focus on analyzing photographs and photographers operating in New York City and Brooklyn from the birth of popular photography in the 1840s to ca 1870s, and what researchers can learn about the development of the urban environments during this era. The study will provide an example of a research trajectory, brief background on the processes and early photographic business development, and note some of the research challenges that arise using historic photographs to study urban environments.

Abstract

Purpose — The purpose of this chapter is to give a framework to the issues that need to be addressed with the advent of the global economy and the realisation that the only lasting competitive advantage is an organisation's ability to effectively exploit intellectual capital. Excellent companies build learning organisations systematically, but in their haste, many firms underestimate the importance of cultural, technological, executive and learning imperatives that permeate dynamic, knowledge-based environments. Learning is a dynamic process between the needs of the individual, its leader, operational environment and the demands of the organisation.

Methodology — An initial quantitative study of 101 successful multinational companies with manufacturing facilities in Ireland the findings from which were reinforced by five case studies randomly selected from the ten firms identified from the quantitative research actively developing towards becoming learning organisations.

Findings — The findings of the quantitative and qualitative research are undertaken in the development of the learning imperatives presented in the body of the chapter under: Host Location, Culture Shock, Cross-Cultural Understanding, New Technology, Intellectual Capital, Dissatisfaction with the Traditional Management Paradigm, Nature of Global Business, Executive Challenge of Multinational Assignments, Learning Imperatives in Dynamic Multinational Environments.

Research implications — The research spanned 18 years and has relevance for all organisations irrespective of size operating in culturally diverse environments or simply planning to expand their operations.

Social implications — Are many and varied; however, this chapter, due to word constraints, only examines nine key attributes from the 35 identified. Nevertheless, every one of them will resonate to a greater or lesser extent with leaders from every walk of life.

Originality — The research work outlined in this chapter constituted an important element of the author's doctoral thesis, and its primary value is in the manner in which it simplifies complex issues that consciously or unconsciously affect groups or individuals in their respective working environments.
