Abstract

Purpose

This study aims to analyze lean wastes for the poultry sector in Turkey and link lean tools to this study, focusing on identifying each lean waste that affects poultry production and proposing solutions for preventing these lean wastes in the sector. The proposed solutions aim to improve processes by suggesting different lean tools and their applications for the poultry sector.

Design/methodology/approach

The study consists of two different applications. First, the waste relationship matrix (WRM) was created to reveal the relationship between seven lean wastes and their importance order. Then, after determining lean tools for eliminating lean wastes, the optimum weight ranking and consistency ratio of the most suitable lean tools were calculated for these wastes and ranked with the best-worst method (BWM).

Findings

Results showed that overproduction is the most critical waste that impacts other wastes, followed by defect waste. Due to the nature of the sector, these wastes not only result in economic loss for the company but also in food waste and loss and issues related to animal welfare. Furthermore, the Kaizen approach and 5S implementation are the methods to eliminate these wastes. Detailed discussion on the link between lean tools and lean wastes is provided for the poultry sector.

Originality/value

This is the first study that theoretically and empirically identifies the potential lean waste affecting the poultry sector and provides lean tools for eliminating these wastes. Sector-specific explanations and discussions are presented in the study to show the applicability of lean approaches in the poultry sector to eliminate waste. In addition, this study is the first to integrate the WRM and BWM.

Abstract

Purpose

The purpose of this paper is to examine the poultry farmer's willingness to pay for agricultural tax in the Dormaa Municipality of Ghana. Besides, the study analysed the mean agricultural tax and constraints impeding the payment of the agricultural tax.

Design/methodology/approach

One hundred (100) poultry farmers were selected for the study. The logit and Kendall’s coefficient of concordance were used to examine the factors that influence payment of agricultural tax and the constraints impeding the payment of the agricultural tax, respectively.

Findings

Instructively, 83% of the respondents were interested in the regressive taxation model relative to 12 and 5% who were interested in the proportional and progressive taxation model, respectively. The empirical results of the logit model revealed that tax awareness, probability of being audited and public service provision of roads influenced the poultry farmer's decision to pay for the agricultural tax. Perception of corruption and high tax rates were the primary constraints impeding the payment of the agricultural tax. The results further revealed that the farmers are willing to pay an average maximum amount of Ghc 152.00 (US 26 dollars) agricultural tax per month.

Originality/value

Despite the increasing relevance of agricultural tax, studies on poultry farmer's willingness to pay agricultural tax have been scarce in West Africa, particularly, Ghana. As a consequence, this paper broadens the frontiers of the existing literature on agricultural tax as well as the constraints impeding the poultry farmers to pay agricultural tax.

Case overview

Keggfarms Private Ltd was a private company started by Mr Vinod Kapur, a social entrepreneur who wanted to create a scalable social impact with his endeavor, which was the first of its kind outside the developed world. Keggfarms was established in 1967 with the aim of creating a business model which could benefit the rural sector by generating income and also enabling nutritional self-sufficiency. The case study aims to explore the sustainable model which had survived for 48 years without a push strategy and without a sole focus on profit. The business had spread to around 19 states in India, and the enterprise had decided to replicate a similar business model in the African continent. The social enterprise had aimed to touch the lives of millions of people in poverty by providing them with a low cost chicken – Kuroiler, which could survive the harsh weather and environmental conditions of rural India.

Expected learning outcomes

The study will help students to understand how social enterprises are born and built from the vision of the founder; how social capital is generated in the economy and how a blue ocean strategy was applied in this case to build a sustainable and financially viable social entrepreneurship model.

This paper reviews the criteria and dimensions of performance measures, and discusses six core performance indicators in agribusiness operations with particular reference to the poultry/broiler farms. Abstract

Technical progress and its adoption are recognized as probably the most important source of improvement in the productivity and competitiveness of firms in any industry. While progress is an essential prerequisite for the transfer of technology, focuses on the process of transfer itself prompted by a lack of research in this area within the Northern Ireland food‐processing industry. The analysis investigated innovation and identified a diffusion pattern for the uptake of innovations. It also obtained a measure for the rate of technology transfer and identified the principal factors influencing the process. The results indicated factors that could be used to accelerate the diffusion of new technologies as being the education levels of managers; R&D expenditure; and the profitability of the innovation. There was also a suggestion that the poultry and dairy sectors were more progressive than the others in their approach to business.

Abstract

Purpose

The global outbreak of COVID-19 and its subsequent varied impacts on different economic activities necessitate to examine its disruptions and impacts on livestock sector in India due to its recently surging potential as an unrivaled alternative to boost farmer’s income.

Design/methodology/approach

The studies for review were identified through search in different databases using relevant keywords. Only full text papers written in English language were reviewed. The review was organized and streamlined using Covidence software.

Findings

Analysis of the literature reveals adverse effects of COVID-19 on functioning of input and output stages of livestock supply chains. This has resulted in upstream and downstream economic losses that affect livelihoods of the producers.

Research limitations/implications

Scale of unprecedented crisis due to COVID-19 pandemic requires creative policy decisions to make livestock production systems robust, resilient and sustainable. Organized production systems are required to integrate with livestock-tech startups to modernize their supply chains, whereas local supply chains are required to reorient with government’s intervention in terms of developing on-farm production and postproduction processing facilities.

Originality/value

Although there exist some evidence on COVID-19-related impacts on livestock sector of India, but an integrated review of evidence on COVID-19 related disruptions at all the stages (from input supply to marketing) of livestock supply chains was missing.

Abstract

Purpose

The study aims to determine the resource access mechanism in inter-firm networks that aids SME survival in Ghana.

Design/methodology/approach

The authors collect census data on a poultry cluster in Ghana and construct a directed network. The network is used to extract direct and indirect ties both incoming and outgoing, as well as estimate the structural holes of the actors. These variables are used to estimate for survival of SMEs after a one-year period using a binary logit model.

Findings

The study finds that out-indirect ties and structural hole have a significant influence on SME survival. This works through the global influence and the vision advantage that these positions and ties offer the SMEs.

Originality/value

The study offers SMEs a choice of whom to collaborate with for information (resources) in the form of outgoing and incoming ties at both the global and local level.

Abstract

Purpose

This paper aims to investigate the competitiveness of two enterprise chicken regimes (upgraded and indigenous) in Eastern Uganda for poverty reduction in small farm enterprises.

Design/methodology/approach

The paper utilizes primary data collected using a structured questionnaire from a randomly selected sample of 108 chicken farmers (54 crossbred and 54 indigenous). Econometric methods are employed to analyze the data. Competitiveness is measured using unit cost ratio while the determinant factors are identified by the use of regression analysis.

Findings

The econometric results show that the most critical factors in increasing the competitiveness of the chicken enterprise are: proportion of birds weaned to the total flock, number of chickens reared and farmer's rearing experience. The main conclusion is that in order to increase performance of chicken enterprise and improve income of the rural population, upgrading of indigenous chickens through crossbreeding should be pursued. This approach should put emphasis on improving the management systems which will involve offering an enabling environment for farmers to access credit and markets.

Originality/value

Given the importance of poultry rearing in every household in Uganda, the sub‐sector provides a good entry point for poverty alleviation in this part of Uganda. However, limited information on economic analysis exists and hence the value of this study. The paper identifies a number of variables that must be addressed, if the sector is to play its rightful role in poverty reduction.

Abstract

Purpose

This study aims to analyse consumers' preferences for domestic chicken cut parts and the premium they are willing to pay for the various parts using data from a contingent valuation survey of individual chicken meat consumers in the Kumasi Metropolitan Area of Ghana.

Design/methodology/approach

The willingness to pay premiums are obtained using the double-bounded dichotomous choice approach. Determinants of the consumers' willingness to pay amounts are identified through a multivariate Tobit regression analysis.

Findings

The study finds that the wing is the most preferred chicken part by the consumers followed by the thighs. All consumers who express interest in a particular domestic chicken cut part are willing to pay a premium. Age, sex, years of formal education, household size and income level of the consumers as well as convenience, product availability and perceived wholesomeness of the product are identified as the key factors that influence the willingness to pay amounts.

Research limitations/implications

The findings and recommendations of this study could serve as a guide to domestic poultry meat producers and investors in Ghana and other developing countries on how to process or package the meat for the market or consumers. This could further contribute to policy formulation regarding the development of the domestic poultry meat industry.

Originality/value

The uniqueness of this study is seen in the contributions it makes to the literature on consumer preferences and willingness to pay for chicken cut parts from a developing country perspective where the market for these products is virtually non-existent.

Abstract

Purpose

The purpose of this paper is to study the behaviour of a food supply chain possessing two originalities, i.e. a singular structure (40‐day upstream push and 24‐hour downstream pull) and one that suffers from simultaneous fluctuations in raw material supply capacities (due to epizooty) and customer demand (due to customer anxieties and fears) caused by a sanitary crisis.

Design/methodology/approach

A simulation model based on the system dynamics principles of Forrester is developed and applied to the French chicken meat supply chain suffering an Avian Influenza crisis.

Findings

This model first enables one us to study the regulation mechanisms of the chain that will improve understanding of the supply chain behaviour under environmental perturbations. A what‐if analysis is then implemented to examine the supply chain stability and the influence of flexibility adjustment times, inventory coverage time, slaughtered chicken buffer size and smoothing policies on the supply chain performance in different crisis fluctuation rate scenarios in order to propose necessary logistic policy enhancements.

Research limitations/implications

This work will improve one's knowledge about the buffer inventory problem and the global stability of this multi‐echelon push‐pull supply chain.

Practical implications

The model can be used as a decision system support which aims to minimise the additional costs due to stock level increases as demand decreases as well as exceptional external purchasing sparked by the lack of available products when there is a sudden hike in demand. The research can help decision‐makers of fresh food push‐pull supply chains when they are facing such crises by using both cybernetic representation and computer simulation.

Originality/value

This study deals with a specific food supply chain within the context of a sanitary crisis. A system dynamics model is presented for studying the behaviour of the entire food supply chain threatened by high uncertainties in the supply capacity as well as in customer demand.
