Abstract

Purpose

The purpose of this paper is to develop a straightforward method to quantify volume and value of postharvest losses in the tomato postharvest value chain in Nepal and estimate the monetary loss shouldered by value chain actors.

Design/methodology/approach

The study combines interview data to quantify volume and prices with produce sampling to quantify quality losses, and does this at four nodes of the tomato value chain in Nepal: farmers, collectors, wholesalers, and retailers to estimate volume and value of postharvest losses.

Findings

Almost one-fourth of the total tomato harvest weight that enters the value chain is lost before it reaches consumers, and other one-fifth is traded by the value chain actors at reduced price due to quality damage. The total volume of postharvest loss (weight and quality loss) is not the same for all value chain actors and the average monetary loss ranges from 4 percent of gross revenues for farmers to 12 percent for wholesalers.

Practical implications

A standard method to account for both physical weight losses and quality losses of horticultural produce is lacking in estimates of the monetary value of postharvest losses for horticultural crops. Knowing such losses is essential for postharvest technology generation, promotion, and adoption. This study provides a framework that can be adopted and improved in future loss assessment studies for estimating the volume and value of postharvest losses in a horticultural value chain.

Originality/value

The uniqueness of the method used in this study is that it combines interview data to estimate price and volume with produce sampling to quantify quality losses, and does this at four nodes of the value chain: farmers, collectors, wholesalers, and retailers. This method could become a standard approach for assessment of postharvest weight and quality losses and to estimate the monetary value of total postharvest losses in the value chain for horticultural crops.

Abstract

Purpose

The purpose of this paper is to evaluate the banana industry in Zimbabwe focusing on postharvest losses along the value chain (VC).

Design/methodology/approach

The study evaluated the banana industry in Zimbabwe focusing on postharvest losses along the VC.

Findings

Total postharvest losses for 2011-2012 were estimated to be 24-27 per cent of total production with a minimum economic loss of USD69,983/annum/firm, and a total loss of more than USD500,000/annum between the VCs analysed. The bulk of the losses occurred at farm level during handling and transportation. The major factors contributing to banana postharvest losses were: unreliable transport, poor communication and coordination between producers and processors; lack of or inefficient temperature management and poor sanitation.

Practical implications

The study identified production capacity, quality and branding as opportunities and challenges in the banana industry. Currently, there is a 40 per cent unmet local demand for bananas and hence there are no exports. If modern banana handling systems are employed and more research and development is carried out along the VC, postharvest losses can be reduced significantly, resulting in increased income and potential expansion of the industry.

Originality/value

This is the first known attempt to analyse the banana VC in southern Africa and quantify postharvest losses.

Abstract

Purpose

The purpose of this paper is to quantify the incidence of postharvest losses of cabbage at retail purchase and during consumer simulated storage.

Design/methodology/approach

Physical losses, changes in quality and nutritional value were determined using produce from three different retail outlets in South Africa. Economic losses and the environment impact associated with postharvest losses of cabbage were estimated.

Findings

After seven days in storage, high incidence of postharvest losses occurred, ranging from 12 per cent under cold storage to 46 per cent under ambient conditions. These losses were equivalent to over R10 million (∼US$1 million) per annum, while the equivalent wasted fresh water was estimated to be sufficient to meet the needs of over 217,000 per annum.

Research limitations/implications

Study was only conducted in one town and to get the real impact of the losses the research should cover a wider coverage area.

Originality/value

Cabbage is one of the most widely consumed vegetables globally and this is the first research effort to quantify the magnitude of postharvest losses. A multi-parameter approach was applied to estimate the socio-economic and environmental impacts of losses.

Abstract

Purpose

The literature review of post-harvest supply chain (PHSC) losses is carried out and analyzed in this paper followed by bibliometric analysis of the literature.

Design/methodology/approach

The literature survey is performed across various dimensions such as PHSC losses, PHSC risks and PHSC sustainability (waste management and waste reduction). One hundred thirty research articles during the period of 1989–2020 were considered for the review.

Findings

The PHSC losses have been identified in this literature survey. The calculation and mitigation strategies stated by various researchers in the literature are addressed. The important loss mitigation dynamics are also presented to reduce the PHSC losses and to improve food availability.

Research limitations/implications

The major focus is given on the PHSC of agriculture produces. However, research articles from fish and meat supply chain are excluded as they follow a different perishability curve.

Practical implications

The current work will add value to the agriculture supply chain literature, provide a platform for PHSC losses and provide assistance/guideline toward loss calculation, loss mitigation, improved rural employability, improved rural entrepreneurship and improved revenue generation.

Social implications

The performed research will assist the researchers, entrepreneurs and farmers to understand the current scenario of food wastage at different stages of the supply chain better. It will provide the guidelines for calculation and mitigation of various stated PHSC losses. This study will be helpful to enhance food availability and food security in post-coronavirus crisis.

Originality/value

The paper explores and highlights PHSC loss calculations and mitigation strategies to identify the postharvest loss situation and better utilization of fresh produces.

Abstract

Purpose

Due to the importance of quality to customers, this study considers criteria of quality and profit and optimizes both in a multi-echelon cold chain of perishable agricultural products whose quality immediately begins to deteriorate after harvest. The two objectives of the proposed cold chain are to maximize profit and quality. Since postharvest quality loss in the supply chain depends on various decisions and factors, in addition to strategic decisions, the authors consider the temperature setting in refrigerated facilities and transportation vehicles due to the unfixed shelf life of the products which is related to the temperature found by Arrhenius formula.

Design/methodology/approach

The authors use bi-objective mixed-integer nonlinear programming to design a four-echelon supply chain. The authors integrate the supply chain echelons to detect the sources and factors of quality loss. The four echelons include supply, processing, storage and customer. The decisions, including facility location, assigning nodes of each echelon to corresponding nodes from the adjacent echelon, allocation of vehicles to transport the products from farms to wholesalers, processing selection, and temperature setting in refrigerated facilities, are made in an integrated way. Model verification and validation in the case study are done based on three perishable herbal plants.

Findings

The model obtains a 29% profit against a total cost of 71 and 93% of original quality of the crops is maintained, indicating a 7% quality loss. The final quality of 93% is the result of making a US$6m investment in the supply chain, including the procurement of high-quality raw materials; facility establishment; high-speed, high-capacity vehicles; location assignment; processing selection and refrigeration equipment in the storage and transportation systems, helping to maximize both the final quality of the products and the total profit.

Research limitations/implications

The proposed supply chain model should help managers with modeling decisions, especially when it comes to cold chains for agricultural products. The model yields these results – optimal location-allocation decisions for the facilities to minimize distances between the network nodes, which save time and maintain the majority of the products’ original quality; choosing the most appropriate processing method, which reduces the perishability rate; providing high-capacity, high-speed vehicles in the logistics system, which minimizes transportation costs and maximizes the quality; and setting the right temperature in the refrigerated facilities, which mitigates the postharvest decay reaction rate of the products.

Practical implications

Comparison of the results of the present research with those of the traditional chain (obtained through experts) shows that since the designed chain increases the profit as well as the final quality, it has benefits for the main chain stakeholders, which are customers of agricultural products. This study model is expected to have a positive impact on the environment by placing strong emphasis on quality and preventing excessive waste generation and air pollution by imposing a financial penalty on extra demand production.

Social implications

Since profit and quality of the final product are two important factors in all cultures and communities, the proposed supply chain model can be used in any food industry around the world. Applying the proposed model induces growth in local industries and promotes the culture of prioritizing quality in societies.

Originality/value

To the best of the authors’ knowledge, this is the first research on a bi-objective four-echelon (supply, processing, storage and customer) postharvest supply chain for agricultural products including that integrates transportation logistics and considers the deterioration rate of products as a time-dependent variable at different levels of decision-making.

Abstract

Purpose

Information and communication technology (ICT) implementation has demonstrated usefulness in supply chain coordination and efficiency optimization in various industries and sectors. This study investigates the extent of ICT deployment in fruits and vegetable supply chains (FVSC) from “farm-to-fork” to ensure food security.

Design/methodology/approach

This paper employs a systematic literature review (SLR) methodology and identified a total of 99 journal articles ranging from 2001 to April 2023 for analysis. The reviewed articles have been classified based on the framework proposed from the perspective of food security. Bibliometric and content analysis is carried out with the final list of articles to extract useful insights.

Findings

The findings reveal that ICT implementation in FVSC is a relatively new research area; researchers have started investigating several aspects of ICT in FVSC through varied research methodologies. Experimental research aimed at addressing food safety and condition monitoring of fruits and vegetables (FV) has started to gain traction while theory building is yet to gain traction in the literature reviewed. Findings indicate further research is required on technologies like blockchain (BCT), artificial intelligence (AI) and machine learning (ML), especially on key objectives such as food security, and the triple-bottom-line approach of sustainability. It also indicates that implementing relevant ICTs in FVSC can help delay, if not avert, the food crisis predicted by Malthusian theory.

Research limitations/implications

This study used only well-established databases to ensure quality of the studies examined. There is a possibility of missing out on articles from other sources not considered. As a result, future SLR studies may employ additional databases, such as Springer Link, Taylor and Francis, Emerald Insight and Google Scholar. Other methodologies such as expert interviews and extra empirical methodologies may also be employed to give a more balanced picture and insights into ICTs implementation in FVSC.

Practical implications

This study offers a summative detail of the status of ICT implementation in FVSC and can serve as a reference guide for stakeholders in developing strategies for efficient FVSC management. This research work highlights the impact of ICT implementation in FVSC on the four pillars of food security which include improved availability, accessibility, utilization and stability.

Originality/value

This study focuses on ICT implementation for food security in FVSC. The SLR highlights the gaps and proffers potential solutions that enhance global efforts on food security through ICT-enabled reduction in food waste and food loss in FVSC.

Abstract

Purpose

The purpose of this paper is to provide a big picture of the current context of Chinese economy, the government policies on agriculture, and the role of agricultural risks and risk management against this background.

Design/methodology/approach

The new Chinese economic challenges are laid out upfront. Relevant agricultural issues are then provided, with statistics; next, risks and risk management topics are introduced and controversial issues in agriculture are discussed. Relevant policies reflected in the State Council's No. 1 documents in both 2012 and 2013 are introduced and filled in each section.

Findings

The Chinese economy may slow down after decades of fast development. Food security is still a top priority, even with the income rise. Increased labor cost may transform Chinese agriculture from the traditional labor intensive field management into a modern agriculture characterized by high input use and larger scale.

Research limitations/implications

The research implication is directing economists focusing on Chinese agricultural risks to grasp the opportunity of the Chinese government investing in agricultural research and development, to look more broadly, to involve multidisciplinary research with the natural sciences, and to refer to the situation of modern agriculture.

Practical implications

There are some policy implications. Further liberalization of land ownership is called for, as is the development of infrastructure.

Originality/value

This paper addresses the objectives in putting agricultural risks and risk management into the overall big picture of the Chinese economy and government policies.

Abstract

Purpose

This study aims to examine the role of hunger, environmental, economic, landfill and water shortage concerns as significant dimensions of consumer social awareness marketing in socially responsible plate food consumption.

Design/methodology/approach

To carry out their purpose, the authors validate the hypothesized model empirically through data from 1,536 households using structural equation modeling (SEM). In particular, the construct measures of the structural model have been tested by confirmatory factor analysis (CFA).

Findings

The outcome the authors came up with is coherent with the hypothesized model, and it proves a positive relationship of the five dimensions identified on consumer awareness. Moreover, the study results show the crucial role of landfill and water shortage concerns in measuring consumer awareness.

Practical implications

These findings may be of interest to practitioners, academics and policymakers for socially responsible food consumption guidance and training for planning consumer awareness programs. More in detail, this study offers the indication that the dimensions of the social consumer awareness construct are differing from commercial consumer awareness.

Originality/value

Even though several previous studies have addressed the concept of consumer awareness concerning product and service purchase decisions, this is one of the first research studies on consumer awareness as a multidimensional construct in social marketing studies domain.

Abstract

Purpose

This study estimates the land footprint, nutrients and monetary value of persimmon loss in Brazil, and also consolidated the methodological approach for assessing resources related to food loss.

Design/methodology/approach

It uses data on the harvested area, production, production loss and production value of persimmon in Brazil from 2014 to 2019. The persimmon loss in Brazil was converted into macro- and micronutrients, land use and monetary value.

Findings

The average annual production loss, loss production value and land footprint of persimmon are 35,100 tons, US$12m  and 1,673 hectares, respectively. Persimmon loss represents the average loss per year of 6.6bn grams of carbohydrates, 1.6bn grams of food fibers, 7.2bn milligrams of vitamin C, 41.8bn micrograms of vitamin A, 4.5bn milligrams of calcium and 54.8bn milligrams of potassium. These nutrients have the potential to meet the nutritional daily needs of approximately 135,000, 176,000 people, 270,000, 164,000, 12,000 and 32m, respectively.

Practical implications

Through (1) research and innovation; (2) infrastructure development; (3) training and education; (4) collaboration and networking; and (5) market diversification and value addition, people can increase persimmon shelf life, reduce postharvest losses and create a resilient environment for small persimmon farmers. This approach promotes sustainability in the agri-food system and empowers stakeholders.

Originality/value

This investigation helps to understand the value of food loss, considering the use of natural resources, as well as the loss of nutrients and monetary value.

Abstract

Purpose

The paper aims to analyse the postharvest Supply Chain (SC) of tomatoes to maximise profit by restructuring the modes of operation.

Design/methodology/approach

System Dynamics-based simulation of four scenarios depicting different operational modes of postharvest food SC was employed. Real-time of Tamil Nadu state, India was used to enact the scenarios using Vensim.

Findings

Results indicated that cold storage improved the profit of wholesalers by prolonging the shelf-life of commodities. Retailers and farmers gained more profit in the absence of wholesalers. Though the absence of middlemen reduces the transit time and prevents deterioration, the role of wholesalers, i.e. transporting the commodities to farther customers’ needs to be shouldered by other agents effectively to minimise losses.

Research limitations/implications

The accuracy of the results depend on the exactness of the data collected. The simulation findings, on the other hand, could be helpful in decision-making as these models portray the actual operational modes of postharvest SC. The suitability of each network structure depends on the capabilities of the agents, market scenario and demography. Implications based on discussions with stakeholders and in terms of establishing dedicated societies (cooperatives) have been provided.

Originality/value

Postharvest losses incurred for horticultural crops like tomatoes are significantly high. It is of much importance to India as agriculture contributes to 17% of the Gross Domestic Product (GDP) and India is the second-largest producer of tomatoes globally. The study would shed light on restructuring the network appropriately.
