Abstract

Purpose

The purpose of this paper is to analyse the characteristics and the performance of the Catalan pork supply chain, with the objective to assess whether this operates according to the parameters of a lean chain. Moreover there is a tentative lean supply chain model contribution.

Design/methodology/approach

To test lean approaches in the Catalan pork supply chain we have used case research methodology. The research strategy started with a conceptual model proposal as a tool to carry out the assessment. The research went on a multiple case studies in a large‐scale sample of the population and developed a semi‐structured interview as a basic instrument to apply it.

Findings

The article shows the pork sector has actively adopted the productive techniques associated with lean management. The structure of the specific chain in the Catalan pork sector is suitable to implement lean supply chain strategies according to the presented model.

Research limitations/implications

This paper should be of value to researchers in this area as it contributes in a tentative generic lean model for the pork sector. Further research to affirm the cultural support for lean collaboration is recommended as a precursor to the application of the five lean principles.

Practical implications

It provides empirical evidence from a significant pork producing region indicating that the model proposed has applicability. These findings support industry wide business associations' efforts to initiate actions which will reinforce these techniques and improve the competitiveness of the sector.

Originality/value

A review of this literature ascertained that there were no existing published works centred on the study of the pork supply chain development in Spain and particularly nothing focussed on the applicability of the “lean” discipline in this area. This gap in research along with the importance of the pork sector at national and regional levels demonstrates the necessity and importance of the study.

Abstract

Purpose

The aim of this paper is to highlight and summarize the main factors found along the pork supply chain, which affect the quality of pork products, taking into consideration the product attributes demanded by consumers.

Design/methodology/approach

The paper is a review of the pork supply chain literature, and the main objective is to describe and analyze the complexity of the pork production industry from a holistic perspective. An extensive review of the relevant literature was done together with discussions and reflexions carried out with pork sector researchers.

Findings

The paper highlights the complexity involved in the pork supply chain in order to obtain quality products and demonstrates that, by looking at pork production as a chain instead of as individual steps made by different companies, the meat sector can more easily meet the challenge of accurately responding to changing customer demands.

Research limitations/implications

The contribution describes the main factors and attributes found along the pork supply chain, which are relevant to the quality of the final product as perceived by the consumer. Further research could be done on the effects of the interactions between the factors on pork chain analysis and consumer satisfaction.

Practical implications

The main lesson to be learned from this work is the opportunity supplychain agents get from collaboration, which allows them to become more competitive than if they stay isolated and without a global perspective of the whole chain. The findings contribute to further research on the pork sector from a supply chain perspective.

Originality/value

The paper provides a holistic perspective of the pork supply chain and can be useful for researchers and practitioners involved in the management of pork product quality and new product development.

Abstract

Purpose

This research examines the impact of governance structures within the Brazilian pork supply chain on the necessary controls for exportation. Specifically, the goal is to unravel the intricacies of this supply chain and decode its complexity.

Design/methodology/approach

Using transaction cost economics as a theoretical lens, we surveyed the main bodies responsible for the export and quality assurance sectors of Brazilian organizations that trade and export pork. Our sample comprises 53.5% of the country’s pork exporting companies during the period analyzed.

Findings

The presence of vertical and horizontal governance structures in the pork export chain stands out. While the vertical structure enables greater control due to command relations, there are trust and cooperation relations in the horizontal structure. This makes it possible to establish mechanisms to control health, quality, safety and traceability in both structures. We also identified each company’s characteristics: formation configuration (if the cooperative, publicly traded company, or other modality), capital stock, location, the average daily slaughter of pigs for export and sows per producer. We conclude that the organizations have concerns related to the food safety programs, as there are programs that seek transparency throughout the process in many supply chain stages.

Research limitations/implications

Studies that relate the level of orientation to the export market with the occurrence or risk of corrupt and opportunistic behavior and the coordination mechanisms adopted may represent an interesting and important opportunity for studies.

Originality/value

This study helps to understand the complexity of the Brazilian pork supply chain.

Abstract

Purpose

To show how value chain analysis techniques have highlighted opportunities for strategic change in a UK agri‐food supply chain and to present an initial model of an integrated supply chain based on the application of lean principles.

Design/methodology/approach

The paper reports on action research carried in two red meat industry supply chains, each of which spanned the whole chain from farm to consumer. Both of these case studies involved teams of managers from the companies in the chains together with facilitation by the researcher.

Findings

The paper builds on existing theoretical work to show that value chain analysis methods combined with lean principles can provide a powerful framework for the analysis and improvement of supply chain activity.

Research limitations/implications

The research is based on case studies of only two supply chains both of which were related to pork products. It would be beneficial if further studies could be undertaken of other agri‐food chains in meat and in other sectors, to further validate the findings and recommendations.

Practical implications

A tentative model is proposed as the basis for the development of an integrated red meat supply chain Obstacles to the achievement of more efficient, integrated supply chains are highlighted and possible approaches to overcome these obstacles are suggested.

Originality/value

The paper provides detailed suggestions as to the strategic implications and potential commercial benefits of adopting an integrated approach to the management of UK agri‐food supply chains The paper should be of value both to researchers in this area and to senior managers who are responsible for the strategic development of agri‐food supply chains.

Abstract

Purpose

Supply chain integration (SCI) is one of the most distinctive dimensions in achieving long‐term competitive advantage in the business world. Although considerable state‐of‐the‐art studies regarding the SCI concept and its dimensions have been conducted, empirical research by using the data from agri‐food firms in China to examine the relationship between SCI and firm performance attract little attention. The purpose of this paper is to investigate the effects of SCI on firm performance in pork supply chains in China.

Design/methodology/approach

The study follows a causal research approach and survey methodology to collect data from 229 pork processors. The SCI‐firm performance link is examined in two relationships: the pork processors with their upstream pig (meat) suppliers and with their downstream customers. Partial least squares method was used to test the causal relationships.

Findings

The results suggest that internal integration and buyer‐supplier relationship coordination are significantly related to firm performance in both relationships. Information technology integration is not significantly related to both upstream and downstream relationships. Logistics integration significantly contributes to pork processors' performance in relationships with downstream customers.

Originality/value

The extension of the SCI construct contributes to supply chain management theory in the context of China.

Abstract

Claims that by most conventional input cost measures, the Danish pork industry looks very uncompetitive when compared to its rivals in international markets, yet Danish exports account for between 20 and 30 per cent of global pork trade. Explores the reasons for this success, finding answers in the organisation of the Danish pork supply chain. Four farmer‐owned co‐operatives account for virtually all pig slaughtering and processing in Denmark which is highly technologically advanced. The pivotal role of the umbrella organisation, Danske Slagterier, in co‐ordinating market research, genetic and meat processing research is explored. Finally, an assessment is made of the competitive strengths, weaknesses, opportunities and threats facing the Danish pork supply chain.

Purpose

The purpose of this paper is to investigate the responsibility that should be taken by different pork supply chain participants to ensure pork quality and safety, with the aim of providing some guidance for strengthening the supervision of pork quality and safety.

Design/methodology/approach

The pig farmer survey and the pork consumer survey were conducted in Funing County, Jiangsu Province, using the best-worst scaling (BWS) and a mixed logit model.

Findings

The results showed that the designation of responsibility for ensuring pork quality and safety was of, in descending order, feed producers and suppliers, backyard farmers and farms of designated size, pork processing workshops and companies of and above designated size, slaughterhouses, supermarkets, farmer’s markets, pig transporters, and consumers. Both pig farmers and pork consumers believed that those involved in the initial pork supply chain should take greater responsibility for pork quality and safety.

Originality/value

Allocation of responsibilities across the entire pork industry chain was investigated from the perspective of pig farmers and pork consumers using the BWS and a mixed logit model. The results of this study might explain the unique problems that occur in pork supply chain management in large developing countries like China.

Abstract

Purpose

With the development of global food markets, the structural properties of supply chain networks have become key factors affecting the ability to evaluate and control infectious diseases and food contamination. The purpose of this paper is to describe and characterize the nationwide pork supply chain networks (PSCNs) in China and to demonstrate the potential of using social network analysis (SNA) methods for accessing outbreaks of diseases and contaminations.

Design/methodology/approach

A large-scale PSCN with 17,582 nodes and 49,554 edges is constructed, using the pork trade data collected by the National Important Products Traceability System (NIPTS) in China. A network analysis is applied to investigate the static and dynamic characteristics of the annual network and monthly networks. Then, the metric maximum spreading capacity (MSC) is proposed to quantify the spreading capacity of farms and estimate the potential maximum epidemic size. The structure of the network with the spatio-temporal pattern of the African swine fever (ASF) outbreak in China in 2018 was also analysed.

Findings

The results indicate that the out-degree distribution of farms approximately followed a power law. The pork supply market in China was active during April to July and December to January. The MSC is capable of estimating the potential maximum epidemic size of an outbreak, and the spreading of ASF was positively correlated with the effective distance from the origin city infected by ASF, rather than the geographical distance.

Originality/value

Empirical research on PSCNs in China is scarce due to the lack of comprehensive supply chain data. This study fills this gap by systematically examining the nationwide PSCN of China with large-scale reliable empirical data. The usage of MSC and effective distance can inform the implementation of risk-based control programmes for diseases and contaminations on PSCNs.

Purpose

The purpose of this paper is to investigate market power in the Chinese pork supply chain. The authors aim to explain why a steady rise in prices is observed in the sector, apart from existing evidence on incomplete/asymmetric cost pass-through and concerns of growing concentration and consolidation in the sector.

Design/methodology/approach

This study uses a new empirical industrial organization model for both oligopoly and oligopsony power to measure the degree of market power exerted on consumers and hog farmers simultaneously.

Findings

By examining annual panel data across provinces in China, the authors find that both oligopoly and oligopsony powers exist in the pork supply chain. In particular, the authors determine that a higher degree of market power is found to influence prices paid to hog farmers than prices paid by pork consumers. Estimates of key elasticities in the Chinese pork supply chain are also updated based on the structural model estimation and the latest data.

Research limitations/implications

Due to the lack of data at a more granular level of geography, the authors are only able to estimate market power by three major economic regions.

Practical implications

The findings provide useful information for future policy analyses of Chinese food markets. First, the pork-packing industry should be of great concern in terms of market power and its influence on consumers’ and farmers’ welfare. It is essential to take into consideration market power in the pork supply chain before making any public policy regarding the pork market. Furthermore, following economic theory and experience from developed countries, large meat packers will eventually vertically control hog farmers given their stronger oligopsony power over the upstream. Vertical integration may be the next important issue in terms of food market competition. Finally, the results may also draw the government’s attention to investigating market competition in all major food markets.

Originality/value

The empirical evidence draws attention to the issue of food market competition in one of the largest and most important meat-packing markets in China. The authors hope to encourage further discussions on pork and hog market regulations and related public policies.

Abstract

Examines the hog marketing system in Canada and the development of single‐desk hog marketing agencies, acting as central selling agencies, which have made an important contribution in enhancing the pork supply chain. Reports the results of a 1995 survey, soliciting opinions from representatives of meat packers, provincial marketing agencies and producers across Canada, from which a framework was developed to evaluate the efficiency of five main areas: production and distribution; equitable distribution of rewards; growth in pork processing; investment opportunities; and degree of competition. Emphasizes the vulnerability of the Canadian pork sector to increased competition from producers in other countries, and stresses the need for Canada to develop an effective supply chain in order to maximize its potential in this sector.
