Abstract

Purpose

This study aims to investigate the nutrient composition and cholesterol content of most popular fast foods sold in Qena city, Egypt with reference to their trans fatty acids contents.

Design/methodology/approach

Total 80 samples of fast foods were collected from various fast food restaurants in Qena city, Egypt. The samples were investigated for their nutritive quality by measuring moisture, protein, fat, ash, carbohydrate and energy content as described by the association of analytical chemists. The cholesterol content was determined using a spectrophotometer, while trans fatty acids were analyzed by gas chromatography using standard methods.

Findings

The study revealed a wide variation in the composition and nutritive value. On a fresh weight basis, moisture, protein, fat, carbohydrate and ash ranged from 45.9-55.0 (P < 0.001), 15.0-22.3 (P < 0.001), 13.1-15.7 (P = 0.034), 6.0-16.2 (P < 0.001) and 2.2-3.5 (P < 0.001), %w/w, respectively. The fast foods were very energy dense with calorie content varying from 236.5-281.1 (P < 0.001), Kcal/100 g. The mean values of cholesterol were between 15-17 mg/100 g (P = 0.398). The findings showed that fast foods had high total trans fatty acids content exceeding the Danish legal limit of 2 g/100 g of fat being in the range of 3.5 to 11.3 g per 100 g fat (P = 0.379). Elaidic acid is the predominant trans-isomer in industrially produced trans fatty acids. The concentrations of elaidic acid were high in all samples examined (P = 0.942).

Originality/value

This study has established the fact that fast foods are associated with high total energy intake, high intake of fat, trans fat and a higher proportion of calories being derived from total fat and trans-fat. Therefore, it is recommended to limit the intake of fast food.

Abstract

Purpose

Due to the high prevalence of malnutrition and iron-deficiency anaemia in children and women, the purpose of this paper is the development and nutritional evaluation of food products supplemented with niger seeds.

Design/methodology/approach

Three products, namely, atta ladoo, mathi and salty biscuits, were developed using standardized recipes with different levels of niger seeds. These products were organoleptically evaluated by a trained panel of 12 judges using an eight-point hedonic rating scale. Nutritional evaluation was also carried out to draw comparison between the developed product and its control counterpart. Proximate composition, in vitro protein digestibility and iron estimation were carried out using standard methods.

Findings

The findings revealed that the products supplemented with niger seeds at a level of 20 per cent were acceptable. The supplemented products were found to have higher protein (13-15 per cent), fat (20-31 per cent), fibre (4.5-5.7 per cent) and iron (11.8-16.1 mg/100 g) content as compared to their control (0 per cent supplementation) counterparts. Along with that, addition of niger seeds resulted in significant (p < 0.05) increase in the in vitro protein digestibility of the supplemented products.

Research limitations/implications

Further, the feeding trials can be conducted by using formulated products so as to check the nutrient bioavailability of these products.

Originality/value

Keeping in view the economic and nutritional benefits of niger seeds, the products supplemented with them can be incorporated in daily diet so as to enhance the nutritional status of an individual. While niger seeds have been used in the animal’s and bird’s feed, limited research has focused on their use in food products used for human consumption in daily diet. Further, their nutritional role in the human diet has not been explored much.

Abstract

Purpose

This paper aims to examine and assess the sodium content in various pre-packed bread products marketed in three cities, Muscat, Morgantown (West Virginia) and Stockholm, and in combination with spread products. It also aims to investigate the pattern of public consumption of bread in Muscat.

Design/methodology/approach

A random cross-sectional investigation was followed. This study used the nutrition panel of selected bread and spread products to record sodium content and a close-ended questionnaire.

Findings

The mean sodium content in 100 g of bread marketed in Muscat was significantly lower than that in Morgantown (p < 0.001) and Stockholm (p < 0.022). The intake of 100 g of any bread type with 40 g of cheese spread will offer more than 20 per cent of the recommended daily intake of sodium, which poses a health risk upon frequent consumption. Results from the survey conducted in Muscat showed that most of the people consume bread in breakfast and the average amount of bread consumed per day was reported to be 100 g. Only 74.9 per cent of the participants knew that salt is added in the making of bread.

Originality/value

This research is of a value to food policymakers in relation to the use of salt (sodium) in bread. Sodium content in bread products varied significantly in the selected markets. Daily consumption of bread with cheese spreads should be either reduced or avoided by children because of high sodium content. Average intake of 100 g bread per day by participants in the survey is an indicator of a reduced exposure to sodium.

Abstract

Purpose

The aim of the this study is to develop a new class of composites which would be more commercially viable and environmentally sustainable via reduced resource depletion, as there has been global interest in utilization of natural resources. The dry sliding wear behavior of glass-epoxy (G-E)-based composites filled with tamarind kernel powder (TKP) in different volume fractions of fillers (0 per cent, 3 per cent and 6 per cent) was studied as per standards.

Design/methodology/approach

In the present study, the analysis and optimization of the wear process has been studied. The Taguchi approach to experimental design was used to identify the effect of wear parameters such as applied load, sliding velocity and sliding distance. Taguchi tools such as analysis of variance and multiple linear regression models have been used to analyze, obtain the significant parameters and evaluate the optimum combination levels of wear process parameters. The results of Taguchi analysis indicate that sliding distance was found to be the prominent parameter affecting wear volume loss compared to other wear parameters.

Findings

The G-E composites with 3 and 6 vol.% of TKP had the lowest wear volume loss. Multiple linear regression models for all the tested composites’ results well match with experimental results. Confirmation tests were conducted to validate the analysis. There was a close relationship between the experimental results and the statistical model.

Originality/value

However, to the best of author’s knowledge, these literature reports related to natural organic filler materials are limited to analysis of polymer matrix composite. Further, the addition of TKP particle as a potential filler has not been addressed. An attempt has been made to clarify the technical viability of TKP as a potential filler for G-E composite.

This new measure of consumer law of some forty‐odd sections, a short Act by present standards but as far‐reaching as any legislation since the war, establishes a code of conduct in commerce and trade which few will be able to ignore, from the manufacturer down to the counter‐hand. Operative from November 30th of this year, traders will require to urgently consider their sales practices, advertising, labelling and their trade descriptions; sales staff will need to be instructed in their new responsibilities. The new law is not just for consumer‐retailer transactions, but extends to trade between different branches of all trades, so that a retailer will be protected against misleading descriptions and misrepresentations by a manufacturer and the latter against misdescriptions of ingredients or components.

Abstract

Evaluates changes in the welfare system in Sweden, the UK and the USA over a decade, basing arguments on the divergence of economic globalization and domestic forces. Presents brief economic snapshots of each country, stating quite categorically that the welfare state is an impediment to capitalist profit‐making, hence all three nations have retrenched welfare systems in the hope of remaining globally economically competitive. Lays the responsibility for retrenchment firmly at the door of conservative political parties. Takes into account public opinion, national institutional structures, multiculturalism and class issues. Explores domestic structures of accumulation (DSA) and refers to changes in the international economy, particularly the Bretton Woods system (Pax Americana), and notes how the economic health of nations mirrors that of the US. Investigates the roles of multinationals and direct foreign investment in the global economy, returning to how economic policy affects the welfare state. Points out the changes made to the welfare state through privatization, decentralization and modification of public sector financing. Concludes that the main result has been an increase in earnings inequality and poverty.

Abstract

The environmental consequences of international trade and transport have gained importance as a result of the current climate debate. Products are increasingly being produced in one part of the world, transported to another country and then redistributed to their final country of consumption. Since more than 80% of world trade tonnage measured in metric tons is carried by seagoing vessels, maritime transport will continue to be a core part of most supply chains while rail and road mainly are used for hinterland transport and to and from ports. This chapter presents a methodology for assessing the environmental impact of maritime transport and transport in general, with a specific focus on greenhouse gas emissions. The first section gives an introduction to why Green Maritime Logistics and Sustainability are important topics, while the second offers a framework for measuring greenhouse gas emissions (GHG) for transport systems. The third section presents a model for measuring seaborne transport and its greenhouse gas emissions, and in the fourth section we compare greenhouse gas emissions from different modes of transportation.

Purpose

This paper aims to evaluate the impact of garden cress supplemented biscuits on the nutritional status of malnourished children.

Design/methodology/approach

For the present study, 60 underweight and anemic seven-nine-year-old school children were selected according to the World Health Organization (WHO) classification and divided into two groups, i.e. experimental (30) and control (30). Biscuits (60 g) developed using roasted garden cress seeds were supplemented to the experimental group, while biscuits without garden cress seeds were provided to control group for a period of three months and impact was observed in terms of improvement in nutritional status of subjects before and after the supplementation.

Findings

The food and nutrient intake increased with increased percent nutrient adequacy and sharp increase (p ≤ 0.05) was noticed in cereal, fat and sugar after supplementation. Average height, weight, body mass index and mid-upper arm circumference increased, with 3.56 and 0.87 per cent gain in weight and height (p ≤ 0.05) respectively. Hemoglobin levels increased from 10.6 to 11g/dl with little improvement (p ≤ 0.05) in proteins, albumin and other indices of blood profile and nine subjects fell in non-anemic category.

Research limitations/implications

The diets of both groups were not controlled, which might have varied the results.

Practical implications

Garden cress-seed-enriched biscuits were able to have a positive impact on the nutritional profile of malnourished and anemic school children.

Social/implications

The duration of supplementation was short, which may have affected these results. Therefore, researchers are encouraged to perform long-duration supplementation study for more accurate results.

Originality/value

This paper identifies the need for promoting garden cress seeds in supplementary foods to reduce malnutrition.

Abstract

Purpose

The purpose of this paper is to establish the research impact of the National Research Foundation (NRF)-rated researchers’ output at the North-West University (NWU), South Africa, from 2006 to 2017.

Design/methodology/approach

The study used bibliometrics and altmetrics methods to determine the production of research outputs and the impact of NWU’s NRF-rated researchers’ publications. Various tools including Google Scholar (GS), Web of Science (WoS), Scopus, ResearchGate (RG) and Mendeley were used to collect data. The citations in the three bibliographic databases were used as proxy for academic impact, while reads and readerships in RG and Mendeley were used to determine societal impact of the researchers. The Statistical Package for the Social Sciences (SPSS) was used to test the relationship between citations in the three bibliographic databases and reads and readerships in RG and Mendeley.

Findings

The main findings were that the majority of NWU’s NRF-rated researchers’ publications emanated from GS, followed by Scopus and then WoS. GS output also had more citations. There were 6,026 research outputs in RG which were read for 676,919 times and 5,850 in Mendeley with 142,621 readerships. Correlations between RG and all three bibliographic databases’ citations were scant. Strong relationships between the three bibliographic databases’ citations and Mendeley readerships were found.

Practical implications

Academic librarians who interact with researchers who would like to predict future academic impact of their documents can be advised to consider Mendeley readerships with some level of confidence compared to RG reads. These results point to the importance of constant self-evaluation by researchers to ensure that they have balanced profiles across the three main bibliographic databases that are also considered for ratings. These results point to the relevancy of GS to evaluate research beyond the academy.

Social implications

The fact that researchers are contributing research that seeks to improve the general welfare of the population (beyond the academy) is a positive sign as society look up to researchers and research to solve their socio-economic problems. Social media play an important role as they serve as indicators that indicators point to wider research impacts and wider access by many different groups of people including the members of society at large. They point to research that is accessible to not only researchers and those who have access to their research but also the society at large.

Originality/value

Although the practice of rating researchers is common in different research ecosystems, the researchers could not find any evidence of studies conducted using a combination of bibliometrics and altmetrics to asses rated researchers’ output. This study covers and compares social impact based on data obtained from two academic social media sites and three main bibliographic databases (GS, Scopus and WoS).
