Abstract

Purpose

Previous research shows that identity formation is a crucial bridge between higher education and future employment. The objective of this study was to improve our understanding and knowledge of food technology students' prior interests, their perceived identity formation, perceptions of food technology and the profession of food technologist.

Design/methodology/approach

A qualitative study was conducted and the data consisted of audio recordings of 10 semi structured group interviews of first-, second- and third-year students, as well as alumni, at work. The interviews were transcribed and analysed by conventional content analysis, here following an inductive approach.

Findings

Most students had previous general culinary interest, an interest in the science behind or an interest in contemporary food-related issues. Regardless of the year group and prior interest, most felt that graduation was the stage at which they could identify themselves as food technologists. They evolved from having a rather diffuse understanding of food technology and what is a food technologist before they started to have an increased awareness in their second and third years.

Originality/value

The research findings inform higher education food technology programmes aiming to promote the development of food technology students' professional identity. The study suggests that a holistic approach to teaching, as well as context-based and professional activities at an early stage might help students in their identity formation.

Abstract

Purpose

The purpose of this paper is to investigate the food system professionals’ opinions of a new senior secondary school food literacy curriculum named Victorian Certificate of Education Food Studies in Victoria, Australia.

Design/methodology/approach

A purposive sample of 34 food system professionals from different sub-sectors within the Australian food system was interviewed individually in late 2015 and early 2016. Interviews were analysed using the template analysis technique.

Findings

Most participants appreciated the extensive coverage of food literacy aspects in this new curriculum. However, many suggested amendments to the curriculum including pay less emphasis on food history-related topics and pay more focus on primary food production, nutrition awareness and promotion, and food security, food sovereignty, social justice, and food politics.

Practical implications

A well-structured, comprehensive secondary school food literacy curriculum could play a crucial role in providing food literacy education for adolescents. This will help them to establish healthy food patterns and become responsible food citizens. The findings of this study can be used to modify the new curriculum to make it a more comprehensive, logical, and feasible curriculum. Moreover, these findings could be used to inform the design of new secondary school food literacy curricula in Australia and other countries.

Originality/value

The exploration of perspectives of professionals from a broad range of food- and nutrition-related areas about school food literacy education makes this study unique. This study highlights the importance of food professionals’ opinions in secondary school food-related curricula development.

Abstract

Purpose

Investigations of food-borne outbreaks are complex and require multidisciplinary collaboration. The purpose of this paper is to help food technologists face this challenge and be competent members of a multidisciplinary team, a study module on the investigation of a “real-life” food-borne outbreak was developed.

Design/methodology/approach

The module design was based on the principles of inquiry-based learning with the purpose to motivate and activate students with challenging assignments. The didactic impact of the module was evaluated as a qualitative case study with questionnaires, reflection assignments and interviews of students and lecturers.

Findings

A teaching module developed by an external professional taking part in the academic environment provides a learning environment well adapted to the curriculum, as well as bringing first-hand realism and enthusiasm into the classroom. The external lecturer’s dedication to the subject was appreciated by the students. A majority of the students believed that the outbreak investigation simulation play gave a better understanding of how food-borne outbreaks are investigated. A majority of the students 68 per cent (2011) and 82 per cent (2012) believed that what they learned in this module would be useful in a future work situation.

Research limitations/implications

There are some limitations to the study, the most important one being the small sample size, and as the classes rarely exceeds 30 students, the use of a control group was not logistically feasible.

Originality/value

Teaching food technologists to become knowledgeable professionals in this field will constitute a valuable contribution to the multidisciplinary food-borne outbreak investigation team. In turn, this may increase confidence among the general public in the food industry.

Abstract

Purpose

The purpose of this paper is to provide a snapshot of secondary school food policy (SSFP) across the devolved nations (England, Scotland, Wales and Northern Ireland) to offer insights into a growing area of policy concern. The selected context of research is school food policy (SFP), an area of research which has received little attention in terms of policy approaches. The review is focused on 2010 to 2022.

Design/methodology/approach

This work combines interdisciplinary perspectives spanning across food policy, public health, psychology, education and sociology. This combination has merit as it offers different perspectives in terms of understanding SFP. The study was conducted between August 2021 and March 2022, using a desk-based review, analysing policies on food in secondary schools. Data collection was conducted through the Web using key search terms. The READ (Read, Extract, Analyse, Distil) approach was used as a systematic procedure to analyse policy and evaluation documents.

Findings

To all levels of government, it is recommended that a coherent policymaking approach be used to tackle SSFP improvements, to progress a whole school approach to food, supported by long-term dedicated resources while engaging children in SSFP development. For education departments, it is recommended that a food curriculum review, connected to school meals alongside a refocus on school food standards monitoring and reporting is crucial in serving the future generations. The current economic crisis has had an impact on public spending. Universal Free School Meals has been said to make an enormous difference to well-being.

Originality/value

The current findings suggest that researching SFP across nations has merit. There is a relative lack of focus on secondary schools, in light of England’s focus on the National Food Strategy (focus on children), post-pandemic, economic crisis – together this makes school food and food policy a topic of real urgency and importance. Lessons can both be learned, particularly in promoting healthier and more educationally inclusive school food practices. Research in this area can inform curriculum design and school food environment and system changes from the perspective of learnings around taking a whole school food approach to education.

Abstract

Purpose

The purpose of this study is to evaluate the perceived knowledge of the general concept of halal food and actual knowledge of halal food principles with emphasis on alcohol (alcoholic drinks and ethanol).

Design/methodology/approach

A cross-sectional descriptive survey, using quantitative research methods, was utilized. A self-administered survey was distributed to 188 undergraduate students of the food technology programme at Universiti Sains Malaysia, and a total of 114 responses were obtained.

Findings

Results indicate that respondents believed that they have above average competence regarding the concept, sources, ingredients, processing and the overall production of halal foods (score: 3.75-4.18). In addition, all of the 114 respondents also agreed that alcoholic drinks are fundamentally prohibited in Islam. However, the survey also revealed that the respondents were less certain about the application of alcohol in halal food production. Respondents’ actual knowledge on these issues was low to average.

Research limitations/implications

This study is limited by its cross-sectional nature. In addition, the research was only conducted on undergraduate-level students of the food technology programme, and therefore, results derived might not be generalized to the other segments of the population. The overall uncertainty and misconception about the application of alcohol in halal food highlights the need to improve the knowledge of these undergraduate students to more than a mere theory of the concepts of halal and haram.

Originality/value

No previous study has been conducted to explore the issue pertaining to alcohol in halal food, and this paper categorically strives to fill this gap.

Abstract

Purpose

The present study addresses acceptance of in vitro meat (IVM) among a predominantly student sample in Germany. It is investigated to which extent food technology neophobia, the currently followed diet and information treatments impact acceptance of IVM measured via the construct willingness to buy (WTB).

Design/methodology/approach

A quantitative online-survey was conducted in August 2020 using a between-subject design with three different information treatments and one control group. Moreover, the Food Technology Neophobia (FTN) scale was employed, For the statistical analysis, the χ2 and Kruskal–Wallis test were used. Additionally, a binary logit model was specified and estimated in order to investigate the determinants of willingness to buy IVM accounting for the effects of gender, age, vegetarianism/veganism, FTN, prior knowledge, information treatments and potential interaction effects.

Findings

Participants following a vegan or vegetarian diet exhibit a lower likelihood of IVM acceptance in comparison to participants following an omnivore diet. However, a considerable share of vegan and vegetarian participants expressed a positive WTB. Moreover, an increasing FTN score (i.e. an increase in food technology neophobia) goes along with a reduced likelihood of acceptance, while all three information treatments increase acceptance in comparison to the control group. The largest effect on acceptance could be found for the environmental benefit treatment.

Practical implications

The findings show that especially among a young and highly educated sample the stressing of environmental benefits of IVM has a substantial impact on acceptance. This might be taken up in information and marketing campaigns once the product becomes available on the European market.

Originality/value

So far the empirical evidence on German consumers' acceptance of IVM is scarce. The present study addressed this research gap by focusing on a young sample with a high percentage of vegetarians and vegans and analyzing the role of food technology neophobia and different information treatments in a between-subject design.

Abstract

Purpose

Despite the recognised importance of food safety, a large number of consumers do not practice adequate food safety in the home. Many studies have recommended that education is a key step in preventing food‐borne illness in the domestic environment. However, few educational or psychosocial interventions have been designed and implemented to improve food safety knowledge, attitudes and behaviours. Even fewer of these studies have been subject to rigorous appraisal. The purpose of this paper is to conduct a systematic review of studies that described and evaluated a food safety intervention in a non‐clinical adult sample.

Design/methodology/approach

A total of ten studies met the criteria for inclusion in the systematic review. Outcomes of interest included food safety behaviour, behavioural intention, attitudes, knowledge, microbial transfer and the use of social cognition models.

Findings

The evidence regarding the effectiveness of the reviewed interventions on these food safety outcomes was somewhat positive; however, many gaps remained. For example, of the five self‐report behaviour change studies, all reported some significant improvement post‐intervention. However, the percentage of specific behaviours that significantly changed within each study varied between 0.04 and 100 per cent. There were methodological flaws in many of the studies which complicated the interpretation of these results and indicate a need for more research.

Research limitations/implications

Future research should include better defined outcomes, longer follow‐up, more rigorous reporting of results and intervention design, the use of randomised controlled trial protocols and utilising health models to have a greater theoretical underpinning to the studies.

Originality/value

This paper is the first systematic review examining the effect of psychosocial food safety interventions on behaviour, attitudes and knowledge.

Abstract

Purpose

The purpose of this paper is to observe young adults preparing two recipes in a controlled laboratory setting to identify food‐handling errors. Few studies have investigated actual consumer food safety and food‐handling practices.

Design/methodology/approach

The paper shows that one of four trained observers used a check‐list to directly observe and record food‐handling practices; observation data were later analyzed to assess how closely participants followed recommended practices. The observation check‐list had four criterion‐referenced scales based on Fight Bac! food safety recommendations (e.g. clean, cook, separate, chill). Each recommended behaviour performed earned one point. Scale scores were calculated by summing points earned and could range from zero to the maximum observed behaviours on the scale. Means, standard deviations, and comparison of mean scores using analysis of variance were calculated.

Findings

Participants (n=154, mean age 20.73+1.30SD) were from a major US university. Overall, participants were observed performing only 50 percent of the recommended behaviours. Scores ranged from a low of 29 percent on the cook scale to a high of 67 percent on the separate scale. Females scored significantly higher on the clean scale (e.g. hands, produce, work surfaces) than males. No other significant gender differences were noted in the scales, despite a trend for higher scores for females in all scales. Young adults, particularly males, engage in unsafe food‐handling practices, putting them at increased risk for food‐borne disease.

Originality/value

The paper shows that innovative education and training opportunities for young adults are needed to assist them in developing and practising safe food‐handling practices.

Abstract

Purpose

This study empirically explores the factors that influence consumers’ readiness toward engagement in circular food consumption.

Design/methodology/approach

A conceptual model based on the motivation–opportunity–ability (MOA) framework was developed. In addition to all the classical relationships in this theoretical framework, respondents' age and education were added to the model. An online survey was conducted, resulting in an overall sample of 411 Italian participants. Data were statistically analyzed by using partial least squares structural equation modeling (PLS-SEM).

Findings

The results indicated that motivation, opportunity and ability had positive effects on consumers’ readiness toward engagement in circular food consumption (CFC). Of all the constructs, intrinsic motivation had the most significant impact on consumers’ readiness toward engagement in CFC. The results also showed that sociodemographic traits—particularly age and gender—significantly influenced consumer readiness toward engagement in CFC. Practical and policy implications are proposed based on the study findings.

Originality/value

The study analyzes factors influencing consumers' readiness to engage in CFC. While great attention has been paid toward circular economy (CE) implementation in food consumption, empirical evidences on how to prompt the consumers' readiness toward CFC are still lacking. More specifically, the authors explore for the first time, sociopsychological factors affecting consumers' readiness to reduce, reuse and recycle technical components of food products, using the MOA theory as conceptual model.
