Abstract

Purpose

This paper focuses on the quality characteristics of steamed and boiled blue whiting fish (Micromesistius poutassou) cracker, with the aim of encouraging and promoting the use of this small pelagic inexpensive, readily available fish in food production and reducing post-harvest losses of the fish.

Design/methodology/approach

The blue whiting fish cracker was developed using boiling and steaming methods. Minced blue whiting fish meat was mixed with cassava starch in the ratio of 50:50, and other ingredients were incorporated. The dough obtained was divided into two and stuffed into two different muslin cloths. One of the stuffed dough was steamed (100°C for 15 min), whereas the other was boiled in water for 90 min. The boiled and steamed doughs were cooled at 4°C for 12 h, sliced at 2 mm thickness and oven dried at 50°C for 12 h to obtain non-expanded blue whiting fish crackers. The non-expanded blue whiting fish crackers were fried in vegetable oil to obtain expanded blue whiting fish crackers. The quality characteristics of the expanded crackers were determined using standard methods, and data obtained were subjected to analysis of variance; the mean scores were compared using Turkey’s (HSD) test. The sensory evaluation was done using 25 untrained panellists, and results were analysed statistically.

Findings

The study revealed the steamed fish cracker has significantly higher nutritional composition in terms of the proximate, mineral, fatty acid and amino acid compositions. Potassium was the most predominant mineral in the crackers, and copper was the least predominant mineral. The saturated fatty acid contents were 43.2 per cent (steamed) and 48.6 per cent (boiled), whereas the unsaturated fatty acid contents were 55.5 (steamed) and 48.5 per cent (boiled). The n6/n3 ratio obtained for steamed and boiled fish cracker was 4.0. The steamed fish cracker had a higher L* value, whereas the Brown index (100 − L*) of the steamed fish cracker was lower (33.4) than that of the boiled fish cracker. The linear expansion was higher for the boiled blue whiting fish crackers (41.8 per cent). The boiled blue whiting fish cracker had higher expanded starch structure than the steamed blue whiting fish cracker. The aroma and taste were highly correlated with overall acceptability.

Originality/value

The paper reports the quality characteristics and overall acceptability of steamed and boiled blue whiting fish crackers.

Abstract

Purpose

The purpose of this study is to utilise market-oriented methodologies to determine key attributes driving consumers' preferences for novel sustainably sourced seafood concepts, derived from a species of wild-caught fish unfamiliar to consumers and to explore new product concepts for various consumer clusters.

Design/methodology/approach

This study applied a mixed-method approach including five focus groups with 40 consumers and a single conjoint-based questionnaire administered to 300 seafood consumers in Ireland. The focus groups explored in-depth consumers' expectations, requirements and preferences and identified the key attributes that would influence acceptance of new seafood products. Full-profile conjoint analysis was used to model consumers' preferences for novel seafood product concepts that utilised a sustainably sourced species unfamiliar to the consumer.

Findings

Focus groups revealed that the most important attributes were brand, price, format, packaging, supplementary information and accompaniment. The conjoint simulation identified three consumer clusters. Product concepts containing a sustainably sourced fish species were identified according to the preferences of each consumer cluster.

Originality/value

This research highlighted a sustainability angle in new product development and identified a competitive advantage and market potential for boarfish (Capros aper), which is an underutilised Irish fish species. It used a market-oriented approach to explore the development of novel sustainably sourced value-added seafood product concepts. The study results provide small and medium seafood companies with original and unique insights for developing novel sustainably sourced fish products that increase consumer acceptance.

Abstract

Purpose

Gadoid fish and hake are the species of fishes most frequently imported to the Czech Republic. The purpose of this paper, cross-country hygiene study, is to determine sea fish fraud labelling on the Czech market and catering.

Design/methodology/approach

In total, 57 samples of commercial Gadoid fish product from different manufacturers, distributors and catering facilities were gathered. Gadidae family, hake (Merluccius spp. Raf.), saithe (Pollachius virens L.), Atlantic cod (Gadus morhua L.), Alaska pollock (Theragra chalcogramma Pall.), were detected in fish meat, fish products and fish meals by the qualitative PCR method.

Findings

In total, 47 samples were labelled as a Gadoid fish, which were confirmed in 43 cases. Six samples were labelled as a hake and were confirmed in five samples. Four samples were labelled as a fish fillets. Three samples of fish fillets were identified as a hake and one sample was detected as a mixture of Alaska pollock and Atlantic cod.

Social implications

In recent years, due to increasing interest from consumers in the sea fish meat market, accurate Identification of fish species has become more important. The mislabelling of sea fish species, whether intentional or not, was on observed on the Czech market and in catering facilities. Economic factors influence the accuracy of labelling of fish meat, which is a concern as mislabelling can threaten public health.

Originality/value

The study was concentrated on the monitoring of hygiene and quality of food products and catering facilities. This study provides greater awareness of the condition and quality of food on the market and to the extent of fraudulent practices amongst dealers and producers.

Abstract

Purpose

This paper aims to investigate the satiety properties of a fish protein hydrolysate (blue whiting muscle hydrolysate, BWMH). Protein consumption is associated with higher satiety, protein being considered as the more satiating macronutrient. This property is extensively investigated in regard to weight management.

Design/methodology/approach

Fifteen overweight women were included in a crossover design study. Subjects consumed 1 g of BWMH or placebo twice daily and sensations associated with satiety were recorded every day.

Findings

Significant differences, in favour of BWMH, were highlighted on the desire to eat something sweet at T90 min (p < 0.05) and on plasma glucose at T270 min (p < 0.05).

Research limitations/implications

This study demonstrates effect of BWMH on appetite. Indeed promising data were reported in favour of the test product, in particular on the desire to eat something sweet and on glucose levels. Some additional investigations will be necessary to support these data and those observed in in vitro and in vivo models.

Originality/value

After promising pre-clinical data, this study is a first investigation of health benefits of BWMH supplementation in humans.

Abstract

The liability of a master for the acts of his servant or agent is a well‐established principle of many branches of English Law. It is in fact as old as the Common Law itself and is considered to have originated in the responsibility of a master for hired menials who had no legal capacity and were part of the household for which the master had to answer in every way. In the law of tort, especially the tort of negligence, it is still firmly entrenched and the rule is that a master is liable for any tort which the servant commits in the course of his employment (Winfield). The servant is also liable and a servant, for the purpose of vicarious liability, is one whose work is under the control of another and “in the course of employment” includes any act committed as an incident to something the servant is employed to do. Apart from statutory modifications, the rule has been perceptibly changing in its applications through the years, even in both directions. Originally, hospital authorities held no responsibility for acts committed by their medical staff; the responsibility was entirely the doctor's, a legal relationship, however, which was always regarded as something of an anachronism as between employer and employed. Perhaps this conception was an error stemming from an early High Court decision, but gradually the position has changed, quite apart from the National Health Service Act, 1946, towards the hospital authority's responsibility to the injured patient just as much as that borne by the officer whose failure caused the injury.

Abstract

Some months ago a national organisation established to keep a watchful eye on the Nation's diet expressed concern over the eating trends of people in what to them appeared to be developing inbalances of necessary nutrient factors and the inadeuacy not so much of calories and energy values but in the nature and quality of main food factors. It was recommended that the national diet should be improved, but the authorities pointed to the National Food Survey results to show that the diet was not deficient; that the average daily intake of protein, vitamins, minerals and overall energy requirements were satisfied; all of which is true for the not‐too‐generous levels set. Even the pensioner households included in the Survey sample appear well‐fed. What causes concern is the year‐by‐year decrease in staple foods consumed—milk, red meat, bread, fresh vegetables—and the heavy reliance on refined, processed foods. In its annual reports on NFS reviews, the BFJ has almost monotonously referred to this downward trend. Individual NFS Reports do not reveal any serious deficiencies, as yet, but in the trend over the years—and herein lies the real value of the Survey and its data—few if any of the changes have been for the better; movements in food groups have tended to be downwards. If these trends continue, the time must surely come when there will be real deficiencies; that substitution within a food group cannot make good essential foods severely rationed by high prices.

Abstract

The long interval between the last abortive attempt to negotiate entry to the European Economic Community and the present time, when, if we read the signs aright, the atmosphere is more favourable, seems to have been a period of reflection for great numbers of people. Nothing has changed politically; “getting into Europe” is the official policy of both Government and Opposition, but many of the so‐called Marketeers are now ready to admit to there being problems. What has emerged, however, in the last year or two is that to the British people, the Common Market is not a political question; there are probably as many against it in both camps; big business remains for it, but the spate of letters in the correspondence columns of newspapers from people who, having had time to think, expressing misgivings, cannot have escaped observation by the policy‐makers. A few politicians confess to having second thoughts, mainly from concern at the price the British public may be called upon to pay.

Abstract

Purpose

The purpose of this paper is to evaluate the proximate composition, amino acid and mineral profiles of seafood for human consumption.

Design/methodology/approach

A total of 21 seafood species (eight seawater, one fresh water fish, six crustacean and six mollusc species) of commercial importance were chosen and purchased from the Istanbul local fish market. The sample to amino acids analyze was prepared in accordance with the hydrolysis technique described by Waters AccQ.Tag Chemistry Package Method (HPLC). Determination of iron (Fe), sodium (Na), potassium (K), magnesium (Mg), calcium (Ca), selenium (Se), phosphorus (P) and iodine (I) was performed with thermo electron X7 inductively coupled plasma mass spectrometry (ICP‐MS).

Findings

The lipid contents of species were found to be very low and considered as lean. The highest total amino acid values of fishes, crustaceans and molluscs were determined in John Dory, hake, red scorpion fish, spiny lobster, Norway lobster, sea snail and pecten. The mineral content of seafood species were found to be 9.3‐157.11 mg/kg Fe, 558.13‐6095.89 mg/kg Na, 253.25‐1032.29 mg/kg Mg, 125.43‐17174.76 mg/kg Ca, 0.18‐7.76 mg/kg Se, 1586.45‐5811.16 mg/kg P and 0.086‐2.630 mg/kg I.

Originality/value

This paper is helpful to consumers and academics concerning the proximate, amino acid and mineral composition of 21 estimable seafood species (nine fish, six crustacean and six mollusc species).

Abstract

Purpose

Fish are considered as one of the important aquatic animals in the planet. They play a vital role in the nutrient cycle. They can be considered as one of the healthy food for human beings. They can also act as a solution for some of the human health problems. If fish are affected by several diseases, they in turn provide an adverse effect on human health. Therefore, it is very much essential to protect fish from being affected by any diseases.

Design/methodology/approach

This paper is mainly focused on the identification of the red spot diseased area in fish. In this work, a fuzzy rule based method (FRBAM) and triangular membership function (TMFN) is used to identify the red spot disease (RSD) in the fish by analyzing several red spot diseased fish (RSDF) images. The canny edge detector is used for intermediate processing of RSDF images.

Findings

The proposed method is able to identify the red pixels over the fish by marking the affected area with red color by using a standard RGB model.

Originality/value

The proposed method follows FRBAM and TMFN in order to detect the RSD and canny edge detector for processing of RSDF images. Finally, it is tested using ten different image sizes and the results show its better performance in terms of detection of RSD affected regions of fish and execution time.
