Abstract

Beans have been a staple in man's diet dating back to the Bronze Age. Many varieties are native to America. Domesticated possibly by the Incas of Peru, beans were grown by Indians in South and North America. The native Americans soon came to believe that beans could be cultivated in poorer soil than corn, could be dried for storage, and contained a high energy content. The early settlers gained their knowledge of bean cultivation from the Indians — knowledge that held the settlers in good stead throughout the long, cold winters. The ancient Greeks consumed large amounts of pulses and even had a God of Beans and held a ‘bean feast’ in honour of Apollo. A similar tradition was followed by New England housewives in the nineteenth century, who had ‘bean festivals’ every Saturday night.

Abstract

Purpose

The purpose of this paper is to evaluate the effect of dehulling/soaking on the chemical, functional and anti‐nutritional contents of three varieties of beans. This research work involved comparative study of the underutilized bean species with the commonly consumed beans in Nigeria.

Design/methodology/approach

Three species of legumes were used for this study. The cowpea seeds were divided into two parts. One part was milled and packaged for raw flour while the other part was dehulled and soaked for 30 min, dried in the oven, milled and packed. For the pigeon pea and African yam beans, the raw beans were milled and packaged while part of the seeds was steamed for 5 min and the coats were removed. The dehulled beans were soaked for 30 min, dried in the oven, milled and packaged. Chemical, functional and anti‐nutritional content were determined on the samples.

Findings

Fat content ranged from 0.95 to 1.98 per cent. Ash and crude fibre ranged from 1.98 to 6.13 and 2.41 to 7.90 per cent, respectively. Raw cowpea had the highest calcium content (3.86 per cent) while pigeon pea had higher value in magnesium content (2.01 per cent). Raw African yam beans had the highest iron content (23.44 per cent). Bulk density, swelling index and water‐absorption capacity ranged from 0.53 to 0.92 g/cm3, 2.3 to 5.9 and 0.9 to 2.8 ml H2O/g, respectively. African yam bean had higher values in oxalate, phytate and tannin contents while cowpea had higher saponin content. Raw flour of pigeon pea had higher value in trypsin inhibitor.

Originality/value

This work enables us to make use of the underutilized beans. These beans were higher in nutrients than the cowpea used. Processing of these beans will make them useful for human nutrition without imposing any health problem to the consumer. They could also be converted to flour and used in formulating food such as weaning food.

Abstract

Purpose

Lack of good post‐harvest storage of cocoa pods has been responsible for the low commercial quality of cocoa beans. This study aims to evaluate the effect of modified packaging and storage time of cocoa pods on the corresponding commercial qualities of cocoa beans.

Design/methodology/approach

Preweighed cocoa pods obtained from the experimental station of the Cocoa Research Institute of Nigeria, Ibadan, Nigeria were stored under three modified packaging conditions, namely: black non transparent polythene film (BNTPEF), transparent polythene film (TPEF) and NA (normal atmosphere environment).

Findings

The study found that there was a rise in the mean temperatures of samples in all the storage environments up to the 12th day of storage, after which the mean temperature declined until the end of the storage period. Cocoa butter fat, bean weights, severity of decay and mould growths depended on the type of packaging and storage time.

Originality/value

At p<0.05 the use of modified packaging of cocoa pods significantly affects the commercial values of the beans. The best of these qualities was conserved in the TPEF.

Purpose

The bioavailability of iron from faba bean is low because it is present as an insoluble complex with food components such as phytate, fiber and tannin. The purpose of this paper is to try to identify the nature of the complexes between anti‐nutritional factors and iron in faba bean and legume fractions by using simulations of gastro‐intestinal digestion.

Design/methodology/approach

To this aim, the authors evaluated the effect of the action of fiber‐ and/or phytate‐degrading enzymes on solubilization of iron from insoluble residues obtained after gastro‐intestinal digestion of faba bean flour and fractions.

Findings

In insoluble residues of raw faba bean flour, simultaneous action of cellulase and phytases made it possible to release about 28 percent units more iron than that released with the treatment without enzymes. About 49.8 percent of iron in raw faba bean flour was solubilized after in vitro digestion and simultaneous action of cellulase and phytase. In the residues of the hull fraction, a significant increase in iron solubility has not been seen (p>0.05) after action of cellulase or phytases. Simultaneous action of cellulase and phytase led to the release of more than 60 and 18 percent units of additional iron for residues of dehulled faba bean and hull fractions, respectively.

Originality/value

In dehulled faba bean, iron was chelated by phytates and fibers. In the hull of faba bean, a high proportion of iron was chelated by iron‐tannins, while the rest of iron was chelated in complexes between phytates and fibers.

Abstract

Purpose

As one of the world's most valuable traded commodities, the market for coffee beans has grown enormously in recent years. The paper aims on analyzing the nonlinear exchange rate pass-through in Turkish coffee bean imports from two important sources in South America: Brazil and Colombia.

Design/methodology/approach

Data collected in this paper through reliable channels include nominal import value, exchange rate, production of total industry, etc. Independent and dependent variables are obtained through conversion. Since the nonlinearly adjusted exchange rate differs significantly from the linearly adjusted one for the export trade of Brazilian coffee beans, this paper develops the autoregressive distributed lag (ARDL) and nonlinear ARDL frameworks and demonstrates their application through asymmetric cointegration and error correction models.

Findings

The results of this paper show that imports of Brazilian coffee bean exhibit a more dramatic asymmetry compared to Colombia's coffee bean imports. The results of this study contribute to the import trade of non-oil commodities in developing countries, particularly Brazil, and enrich the existing literature on nonlinear exchange rate adjustments.

Research limitations/implications

The export of Colombian coffee beans is not as old as Brazil, and it was not until much later that Colombia began to export coffee beans to the rest of the world.

Originality/value

The present study is an addition to the literature of agricultural trade. The authors analyze the nonlinear exchange rate pass-through in Turkish coffee bean imports from two important sources in South America: Brazil and Colombia. Different from the current mainstream research on oil commodity trade, this paper focuses on international trade from the perspective of coffee beans, which can enlighten the practice in this field.

Abstract

Purpose

The purpose of this paper is to address malnourishment in developing countries by a food-based approach in which locally produced and consumed foods are improved by applying food processing techniques that benefit the amount and availability of desirable nutrients.

Design/methodology/approach

To facilitate this approach, this paper reports on the composition and in vitro micronutrient accessibility of 14 traditional mung bean foods from India in relation to their preparation methods.

Findings

Proximate composition, in vitro mineral accessibility, phytic acid and polyphenol contents varied among the range of products. Products requiring either fermentation or germination, had higher in vitro iron, zinc and calcium accessibility. Average in vitro iron, zinc and calcium accessibility of the mung bean products were 16, 9 and 418 mg kg−1 dry weight. Phytic acid and polyphenols averaged 2.1 and 1.8 g kg−1 dry weight, respectively, and were negatively correlated with in vitro mineral accessibility.

Practical implications

Different mung bean products (100 g) cover 12.0-59.5, 5.2-45.6, 4.2-28.6 and 1.1-7.1 per cent of the recommended dietary allowance for protein, iron, zinc and calcium, respectively, for seven- to nine-year-old Indian children.

Originality/value

This study demonstrated the wide range of traditional mung bean foods in India and presents options to tackle malnourishment by a food-based approach.

Abstract

Purpose

The purpose of this paper was to analyse the present status of the information available on rice bean [Vigna umbellata (Thunb.)] cultivars with respect to its nutritional and functional characteristics. It is one of the non-conventional and under-utilized beans of South and Southeast Asia. In northeastern regions of India, it is an important crop for shifting cultivation or kitchen garden which is consumed as vegetable (tender pod) and pulse. The information gaps filling could be useful for several work proposals and for consumers and cultivators to know the nutritional strength and varied usability of the grain which in-turn can help in its commercialization.

Design/methodology/approach

The approach to information collection was emphasized on nutritional strength of the grain compared to other beans of Vigna family and the varied usability among the rice bean varieties of the Himalayan Belt.

Findings

The average carbohydrate, protein, fat, crude fibre and ash content of 75 genotypes of rice bean was found 59.96 ± 2.81, 20.78 ± 2.65, 1.74 ± 1.42, 5.07 ± 1.17 and 4.44 ± 1.03 per cent, respectively. It has high quality protein with all essential amino acid in balance manner. Among the minerals, it contains calcium, iron, zinc and potassium with high bio-availability of calcium (59.8 ± 0.3 per cent). The factors such as flatulence producing saccharides, trypsin inhibitors, polyphenols, phytic acid, saponin and tannins of rice bean were reported to be in the range of 3.28-5.87 per cent, 55.12-163.98 TIU/g, 0.58-1.82 1.88-8.17, 1.2-3.1 and 0.24-1.55 per cent, respectively. The toxic compounds such as hydrogen cyanide (0.09 mg/100 g) and L-3, 4-dihydroxyphenylalanine (0.36 mg/100 g) is lowest in rice bean. The nutritional advantages of rice bean over the other beans of Vigna family were required to emphasize to induce interest among the researchers, producers and consumers.

Research limitations/implications

In view of the recommended daily requirements with respect of amino acids, vitamin-B and minerals, rice bean could be a major component of the diet to fulfill them. However, the scanty information available on nutritional and functional components of rice bean varieties grown in northeastern India calls for the gap filing research to explore full potential of the bean.

Originality/value

The information about differences among the northeastern varieties of rice bean available on nutritional functional components essentially required the updating of research data to explore full potential and utility of the bean.

Abstract

Purpose

Considering Brazil as a food producer with global prominence and the urgency for food security in some developing countries, the purpose of this paper is to investigate the exports of Brazilian dry-beans against food security of its buyers.

Design/methodology/approach

The investigation was conducted through analysis of data from official databases as FAO and WHO. This study elaborated dispersion maps crossing characteristics of the international buyers of Brazilian dry-beans considering their food security situations.

Findings

Brazil has a high domestic consumption of dry-beans, and exports are seen as a secondary activity. However, its production is superior to their domestic needs. Exports of Brazilian dry-beans are generally volatile and unstable. Evidence suggests that countries with serious problems of child and population’s malnutrition (e.g. India and Angola) buy more Brazilian dry-beans. However, their domestic consumptions are still low.

Research limitations/implications

This research based only on exports of dry-bean is faced as a significant limitation. Future studies adding other staple foods commonly consumed by economically disadvantaged populations may contribute to the investigation of the role of Brazil against the need for food security in developing countries and emerging economies.

Social implications

Social implications are focussed in the pursuit of malnutrition decrease in the populations of developing countries through the consumption of nutritionally rich and economically viable food, such as dry-beans.

Originality/value

The original value is based on the analysis of Brazilian dry-beans production and trades and its potential to contribute to nutritional safety and food security in developing countries.

Case overview

At midnight on Thursday, 26 March 2020, the South African government ordered a three-week lockdown in response to the COVID-19 pandemic and subsequently extended this lockdown for a further two weeks until the end of April 2020. Among other measures, businesses not classed as “essential” had to cease operation. This meant that Jonathan Robinson, founder of the Bean There Coffee Company had to close his trendy Cape Town and Milpark coffee shops, as well as the company’s hospitality and corporate business. At the same time, Bean There’s costs increased by 25%, as the rand: dollar exchange rate worsened substantially. A glimmer of hope was that the company was able to continue roasting coffee and supplying its retail clients. Unlike most captains of industry, Robinson was not driven by the bottom line and clamouring shareholders. His corporate strategy was driven by a single, simple purpose: to achieve ethical sustainability aspirations while still running a profitable business. The question for him now, however, was how to ensure that his company could survive in the short term, so that it could achieve these goals in the longer term, and whether he could take this opportunity to think about whether his business was best positioned to achieve these goals when things returned to normal.

Purpose

Black turtle bean has nutritional potentials in the human diet and could provide a significant amount of food in developing countries. Low consumption of black beans has been attributed partly to the hard-to-cook phenomenon which requires a long time of cooking. Germination improves nutritional, functional, bioactive compounds, reduces anti-nutrients and cooking time. Germinated black turtle bean can contribute to efforts geared towards the production of functional foods and the fight against protein malnutrition. This study aims to investigate the changes in the nutritional, antioxidants and functional properties of black turtle bean due to different epigeal germination times to increase its utilization in food systems.

Design/methodology/approach

Black turtle bean seeds (Phaseolus vulgaris) were cleaned, winnowed, washed, soaked for 16 h, drained and subjected to epigeal germinated at ambient temperature for 0, 24, 48, 72 and 96 h, respectively. The germinated seeds were dried, dehulled, milled and sieved. Proximate, antioxidant properties and activity, anti-nutrients, mineral (calcium, phosphorus, iron, sodium, manganese, copper, potassium, zinc and magnesium) and functional properties (water absorption capacity, oil absorption, bulk density, swelling index, water solubility index and gelling concentration) of the germinated black turtle bean (GTB) flour (0GTB, 24GTB, 48GTB, 72GTB and 96GTB) were determined using standard procedures.

Findings

The ash, protein, fat and fibre contents of the black turtle bean were significantly increased through germination. Germination resulted in changes in the antioxidant activity of the black turtle bean samples. The mineral content of the black bean samples was improved significantly by germination and as well altered the functional properties (p < 0.01). Oxalate and phytate were significantly reduced with increased germination time (p < 0.01). In total, 96 h germination (96GTB) had better antioxidant activity, mineral and proximate composition with lower anti-nutrients.

Originality/value

Germination for 96 h proved to be the optimum time for improved mineral content, increased protein, ash, fibre, antioxidant activity and property with reduced antinutrients. Germination represents an attractive, inexpensive means of improving the nutritional profile and enhancing the bio-functionality of the black turtle bean. The epigeal germinated turtle bean could find applied as a functional ingredient in food formulation.
