  2. The majority of DS networks feature content that is generic and is rarely tailored to the audience passing by the screens. As a result, digital displays are often ignored.

Abstract

In this chapter, the authors investigate the experiences of air passengers in the airside setting of commercial airports. Whilst the concept of liminality has found increased interest in tourism studies, only few studies have contextualized the airside experience as a liminal one. We investigate the role of food and beverage (F&B) consumption in this context as well as factors influencing F&B outlet patronage intentions. Using a European non-hub commercial airport as practical unit, we applied a mixed methods single case-study methodology to investigate F&B outlet choice in the airside setting. It becomes evident that perceptions of liminality play an important role in this context. Findings support the claim that the airport environment constitutes a special context, an encapsuled or protected space; not only for passengers, but also for employees alike. Whilst airports have a certain uniformity to regular travelers, infrequent travelers perceive air travel as an extraordinary activity, often paired with a certain uncertainty about related procedures. Evidence suggests that passengers’ emotional states play a key role in consumption decisions. Depending on travel purpose and direction, passengers showed differing consumption behaviors.

Understanding the airport airside area as a liminoid space and using the concept of boundary work for the transition between home and work realms (and back again) thus serves as a suitable frame of reference to help understand the phenomena that were observed and analyzed in this study. F&B consumption can then be understood to support the mental transition between home and work realms. Our findings thus allow linking the passenger clusters’ different consumption behavior to prevailing emotional states in their transgressions between work and home realm in the liminoid airside context.

Abstract

Purpose

The scope of this chapter is to present in a simple and synoptic way the main components of tourism as a consumer-driven business field. The main purpose of this chapter is to discuss the tourism system and tourism value chain as the analytical frameworks for tourism businesses.

Methodology/approach

A literature review was conducted on conceptual issues and managerial aspects of tourism system and value chain.

Findings

This chapter highlights the fact that tourism is not a science or a scientific discipline; it is just a body of knowledge. It presents, in a synoptic and clear way, the building blocks of the tourism, that is, the approaches of tourism system and tourism value chain, as well as the concept of tourism experience.

Research limitations/implications

This chapter is explorative in nature, because the discussion is mostly based on a literature review.

Practical implications

Tourism is a multifaceted activity, which touches upon many different economic activities that are connected as a system. Thus, tourism must be understood as a system that includes interrelated elements working together. The model of a value chain can be applied in tourism, both at business and destination levels. Tourists are the focal point of the global value chain in international tourism.

Originality/value

This chapter analyses analytical frameworks, models and concepts in an integrated way. This analysis is very useful in creating a better understanding of the tourism industries and the business ventures in this field.

Abstract

Comparing two different descriptions of the atmosphere of one and the same city allows for interesting insights regarding the production, duration and perception of urban atmospheres. Aspects of time are very important in this context as they form typical atmospheres here and always, ensure that the patina of the city and the people is based on experience, and generate expectations prior to actually felt-bodily perceptions by means of narration. Changes in environmental qualities or modes of perception can provide clues to both typologies of places and the people present. Moreover, this chapter introduces the Atmospheric Portfolio, which illustrates how research on personal atmospheric perception as well as site-specific atmospheres of a location becomes possible. In the sense of further heuristic starting points, methods employed by other research projects will supplement the study.

This chapter explains the role and potential of colour and lighting as two important elements of the service atmosphere in tourism and hospitality service encounters. The chapter first explains the importance of colour and lighting in services from the perspective of customers’ sensory perceptions. Then, the chapter provides examples to demonstrate how psychological/neuro-marketing tools of Eye Tracker and Facial Recognition, Galvanic Skin Response (GSR) and Heart Rate (HR) can be used to understand the role of colour and lighting in customer satisfaction in tourism and hospitality service encounters. Based on this perspective, the study offers recommendations to design service environments in terms of colour and lighting.

The atmospheric turn can be understood as a departure from the occidental dominant thing and event ontologies and opens the way to a situation ontology, in which subjective-bodily felt being-in is at the centre. The focus shifts from objective things or events to subjectively experienceable facts of being within situations and atmospheres. Atmospheres have an affective content, a peculiar non-dimensional spatiality and a hybrid status beyond the typical occidental dualisms, such as subject and object or inner and outer world. If the philosophical potential of the atmospheric turn is highlighted and taken seriously, then fundamental new perspectives in thought and action can reveal themselves.

Abstract

This chapter investigates the antecedents of individuals’ emotional outcomes from their dining-away-from-home experiences and conceptualizes how food and emotions are related and how travel and emotions are associated. The study applies the stimulus-response theory to set up the premise that emotions that individuals experience while dining out comprise a pivotal part of their emotional well-being and their emotions can be triggered by stimuli encountered on trips and in other away-from-home situations. Cognitive appraisal, arousal, and other causes that are responsible for awakening affective responses are utilized in developing six propositions regarding individuals’ emotional outcomes in travel and dining contexts. Theoretical and practical implications are suggested following the discussions on these propositions.
