Abstract

Purpose

Milk is often referred to as the ultimate food because it meets the nutritional needs of infants, children and adults alike. It is a rich source of protein, fat, sweetness, vitamins and minerals. Because of its widespread usage as a healthy dairy product, the issue of milk adulteration is of global significance. The increasing frequency of fraudulent methods in the dairy business raises concerns about its purity and quality.

Design/methodology/approach

A study was conducted and reviewed that looked at several approaches for detecting milk adulteration during the past 15 years. This study examines the current state of research and analyzes recent advances in development.

Findings

There are ways and technology available that can effectively put an end to the abhorrent practice of milk adulteration.

Originality/value

This research takes a unique approach, focusing on the application of milk adulteration. It provides an overview of milk adulteration detection and investigates the effectiveness of biosensors in identifying common milk adulterants.

Abstract

Purpose

The new technology aspects of Industry 4.0 (I4.0), such as digital technologies including artificial intelligence (AI), block chain, big data analysis and the internet of things (IoT) as a digital cosmos, have the potential to fundamentally transform the future of business and supply chain management. By augmenting the functional components of the food supply chain (FSC), these technologies can transform it into an intelligent food supply chain (iFSC). The purpose of this study is to identify the I4.0 utilization for FSC to become an iFSC. Additionally, it suggests future research agendas to bridge the academic knowledge gaps.

Design/methodology/approach

This study utilizes the bibliometric analysis methodology to investigate the techno-functional components of iFSC in the context of I4.0. The study followed steps of bibliometric analysis to assess existing components’ knowledge in the area of intelligent food supply chain management. It further reviews the selected articles to explore the need for I4.0 technologies’ adoption as well as its barriers and challenges for iFSC.

Findings

This study examines the integration of emerging technologies in FSC and concludes that the main emphasis is on the adoption of blockchain and internet of things technology. To convert it into iFSC, it should be integrated with I4.0 and AI-driven FSC systems. In addition to traditional responsibilities, emerging technologies are acknowledged that are relatively uncommon but possess significant potential for implementation in FSC. This study further outlines the challenges and barriers to the adoption of new technologies and presents a comprehensive research plan or collection of topics for future investigations on the transition from FSC to iFSC. Utilizing artificial intelligence techniques to enhance performance, decision-making, risk evaluation, real-time safety, and quality analysis, and prioritizing the elimination of barriers for new technologies.

Originality/value

The uniqueness of this study lies in the provision of an up-to-date review of the food supply chain. In doing so, the authors have expanded the current knowledge base on the utilization of all I4.0 technologies in FSC. The review of designated publications yield a distinctive contribution by highlighting hurdles and challenges for iFSC. This information is valuable for operations managers and policymakers to consider.

Abstract

Purpose

This study aims to examine the role relational dynamics, grounded in the theories of social exchange and social capital, play within the context of geographic indication (GI) food supply chain network (FSCN) performance.

Design/methodology/approach

A total of 30 qualitative interviews were undertaken with key informant stakeholders across a variety of organizations within Turkish GI FSCNs. An open, axial and selective grounded theory coding process was used for the analysis, teasing out critical themes that underpinned the conceptual framework.

Findings

The findings identify the formal and informal mechanisms which govern GI FSCNs. These two forms of governance mechanisms influence network performance, which was found to comprise logistics, production, business and socio-economic performance dimensions. Transparency, GI traceability, trust and psychological contract violations were found to mediate the link between governance and network performance outcomes.

Originality/value

To the best of the authors’ knowledge, this study is the first to explore GI FSCNs from the perspective of relationship marketing and through the lens of social exchange and social capital theory. Accordingly, both academics and practitioners can benefit from the study, as it unveils relevant relational factors underpinning such networks.

Abstract

Purpose

This study aims to develop a system dynamics (SD) simulation model to forecast the performance of the Indonesian halal industry to verify whether decision-making has been properly executed to increase the contribution of the success factors.

Design/methodology/approach

This study establishes a SD-based model using three subsystems, namely, the halal assurance and certification process, the government and the export–import subsystem.

Findings

The best scenario is the third scenario or the combined scenario of providing facilities to accelerate the micro-, small- and medium-sized enterprises (MSMEs), carrying out halal certification, reducing the time for the certification process, increasing the number of the halal auditor and increasing the awareness from enterprises (both MSMEs and large enterprises) to carry out halal certification because of the internal and external motivations.

Research limitations/implications

First, the demand for certification of the type of food product is acquired using the number of SMEs and large companies. Second, the model does not include the government budget as a constraint.

Practical implications

This study provides essential insights into implementing the best policies that can increase the performance of the halal industry.

Social implications

This study revealed that relevant policy scenarios could be built after simulating and analyzing each scenario’s effect on the halal industry’s performance.

Originality/value

This study will enrich the scientific insight related to institutional theory and resource-based view, as those theories identify success factors associated with the performance of the halal food industry. This study will also enrich the scientific insight related to system dynamic methodology, as it is used to model the performance of the halal industry.

Abstract

Purpose

We introduce decision support tools aimed at optimizing perishable food supply chain management, effectively balancing conflicting objectives such as the exporter’s product collection cost and the importer’s profit. This involves considering factors like perishability, selling price, discount rate, and order quantity to achieve optimal outcomes.

Design/methodology/approach

This study considered a three-echelon supply chain comprising farmers, a single exporter, and a single importer providing a single, random-lifetime, perishable product under deterministic customer demand. The proposed mathematical model derived the optimal order quantity, selling price, and discount rate for the entire supply chain. This integrated optimization model treats both demand and supply sides as a multi-objective problem, employing a nonlinear program and a two-stage capacitated vehicle routing problem formulation. Numerical examples and a case study focusing on Thailand durian supply chain were conducted to illustrate the approach of the proposed model.

Findings

Taking into account both the importer’s profit and the exporter’s product collection cost, the proposed integrated supply chain model and tools maximize profitability, minimizes waste, and meets demand by optimizing perishable product collection costs and proposing a discount system for selling prices.

Research limitations/implications

Limited to a single perishable product in a three-echelon international food supply chain. Future research can explore different products and supply chain contexts.

Practical implications

The tools enhance decision-making for supply chain managers, improving efficiency, reducing costs, and enhancing customer satisfaction in the perishable food industry.

Social implications

The proposed model aids in local workforce management by forecasting required manpower for upcoming seasons. By factoring in product quality and pricing, it ensures customers receive fresh products at fair prices. Furthermore, the near-zero waste concept enhances storage conditions at importers' facilities, contributing to improved environmental hygiene.

Originality/value

The integrated model and decision support tools offer a novel approach to address complexities and conflicting objectives in perishable food supply chains, providing practical insights for researchers and practitioners.

Abstract

Purpose

This study aims to evaluate the nutrient content and acceptable qualities of plant-based burger patties (PBBP) formulated with chickpea flour, defatted sesame cake (DSC) flour, coffee silver skin and pomegranate juice as colorant.

Design/methodology/approach

The chemical composition, energy value, cholesterol content, amino acid composition, cooking loss, pH, color characteristics and sensory attributes of PBBP were analyzed using official procedures and compared to beef burger. 

Findings

PBBP had a protein value of 16.0 g/100g, which is nearly close to the protein content of the beef burger (18.1 g/100g). The fat content of the PBBP was approximately three times lower than that of the beef burger. The fiber content in PBBP was approximately 23 times as high as that in beef burgers samples (p = 0.05). The raw PBBP samples supplies 178 Kcal/100g, whereas beef burger possessed 259 Kcal/100g. Neither the raw nor the cooked PBBP samples contained any cholesterol. Both the beef and PBBP displayed acceptability scores higher than 7.0, which suggests that PBBP was well accepted.

Originality/value

It is concluded that the PBBP sample exhibited a protein value of 16.0 g/100g, which is comparable to the protein level of beef burgers (18.1 g/100g). The fat level of the PBBP samples was significantly lower than that of the beef burger samples. Uncooked PBBP samples contained significantly higher fiber content compared to beef burger samples. No cholesterol was found in raw or cooked PBBP samples. Overall acceptance scores for both beef and PBBP samples exceeded 7.0, suggesting that the proposed product (PBBP) was received favorably.

Abstract

Purpose

This study aims to propose a framework for Halal Food Sustainable Traceability, with the purpose of investigating the implementation of traceability and sustainability within organizations operating in the halal food industry as well as exploring the impact of these practices on organizational performance. This study examines the meat processing sector in Indonesia, focusing on medium to large-scale industrial operations. The rationale for this investigation stems from Indonesia’s substantial potential in the competitive worldwide halal food industry.

Design/methodology/approach

The research framework has been developed by an extensive review of relevant literature, with a specific emphasis on the cycle of the halal food sustainable traceability framework. This cycle encompasses four key stages, including the roles played by authorities, the process of standardization, the implementation phase and the importance of collaboration. The study analyses and validates data using partial least square-structural equation modeling and empirically tests the theoretical framework using 109 Indonesian halal food industry data.

Findings

The research identifies potential obstacles and difficulties that may arise during different phases of the halal food sustainable traceability framework. Concerns regarding authority, standardization, implementation and collaboration are among these. In addition, strategies for overcoming these obstacles are deliberated upon, including knowledge sharing, transparency, ongoing reporting and strategic collaboration.

Originality/value

The present study introduces a Halal Sustainable Traceability Framework that incorporates the principles of halal, traceability, sustainability and their effects on organizational performance. This study offers significant perspectives on the difficulties and resolutions pertaining to the traceability and sustainability of halal food in Indonesia.

Abstract

Purpose

Just transition is a fundamental concept for supply chain management but neither discipline pays attention to the other and little is known about how supply chains can be orchestrated as socioecological systems to manage these transitions. Building from a wide range of just transition examples, this paper explores just transition to understand how to move beyond instrumental supply chain practices to supply chains functioning in harmony with the planet and its people.

Design/methodology/approach

Building from a systematic review of 72 papers, the paper identifies just transition examples while interpreting them through the theoretical lens of supply chain management, providing valuable insights to help research and practice understand how to achieve low-carbon economies through supply chain management in environmentally and socially just ways.

Findings

The paper defines, elaborates, and extends the just transition construct by developing a transition taxonomy with two key dimensions. The purpose dimension (profit or shared outcomes) and the governance dimension (government-/industry-led versus civil society-involved), generating four transition archetypes. Most transitions projects are framed around the Euro- and US-centric, capitalist standards of development, leading to coloniality as well as economic and cultural depletion of communities. Framing just transition in accordance with context-specific plural values, the paper provides an alternative perspective to the extractive transition concept. This can guide supply chain management to decarbonise economies and societies by considering the rights of nature, communities and individuals.

Originality/value

Introducing just transition into the supply chain management domain, this paper unifies the various conceptualisations of just transition into a holistic understanding, providing a new foundation for supply chain management research.

Abstract

Purpose

To examine the impact of using work-related information and communication technology (ICT) during off-job hours on employees' emotional exhaustion and to elucidate the role of psychological detachment (PD) and positive work reflection (PWR). Additionally, the study investigated the influence of the frequency of remote work on this relationship.

Design/methodology/approach

Structural equation modeling was conducted using a three-wave online survey with 507 full-time employees consisting of 170 non-remote workers, 75, 77, 63, 61, and 61 remote workers for one to five days weekly, respectively.

Findings

Work-related ICT use during off-job hours inhibited PD and encouraged PWR, exacerbating emotional exhaustion. Furthermore, remote work frequency promotes boundary crossing and moderates the relationship between PWR and emotional exhaustion.

Originality/value

This study contributes to the literature by highlighting the complex interplay between boundary crossing, coping strategies, and emotional exhaustion in remote work. It highlights the importance of fostering PD and minimizing boundary crossing to promote employees’ well-being in increasingly flexible work environments.

Abstract

Purpose

This study aims to find how trade development and digitalization affect smart-green production. Four factors are investigated in these effects (certification, technology innovation, natural resource management, low pesticides).

Design/methodology/approach

The mix-method approach was employed from validating the measurement scale to test the proposed hypotheses. At first, the grounded theory is the most authoritative and standard research method in qualitative research. Secondly, quantitative analysis was employed to draw conclusions about the impact of digitalization and trade development on smart-green agricultural production.

Findings

The results found that digitalization and trade development impact the development of smart-green agricultural production through certification employment, technology innovation, and a decrease in pesticide usage. Moreover, digitalization and trade development also indirectly affect the development of intelligent green agricultural production. Meanwhile, digitalization has a higher impact than trade development.

Research limitations/implications

This research is based on the premise that digitalization and trade development can drive smart green agricultural production. Still, some studies have found a deviation between trade development and environmental protection. Hence, future research can explore the incentive effect of trade development and digitalization on other industries. Second, the measurement of the dependent variables in this study is based on the premise that smart-green agricultural production has not been widely promoted, so the changes in production before and after the whole public participation in smart-green output have yet to be reflected.

Originality/value

Smart green production in agriculture is essential for a transition economy and the world to meet food security and protect the environment. However, the effects of certification, technology innovation, natural resource management, and low pesticides on smart-green agriculture production have yet to be identified. Insights from this study can help governments, policy-makers, and farmers in emerging economies by adapting their strategies within their local contexts.
