Abstract

During the 1994 spring semester, twelve students, enrolled in Columbia University′s graduate program in public policy and administration and explored the new phenomenon of civic networking for a workshop in applied public policy analysis. Each workshop is required to be sponsored by a governmental client, which in this case was the US National Commission on Libraries and Information Science. The commission was interested in ascertaining the range of activities sponsored by the networks and in determining their involvement or lack of involvement with local public libraries. Participating in this project were representatives of twenty‐four civic networks, who answered telephone queries covering a range of topics dealing with network services, users, goals, funding, governance, technical design, social benefits, government information provision, evaluation, and definition. This paper summarizes the findings of the students′ investigation.

Abstract

A growing movement toward public access to the federal government via the Internet has created increased interest in establishing network communications and information services, especially among national officeholders. However, little empirical study of the use and users of such services exists to guide their efforts This paper reports results of a two‐part study of the use and users of US Representative Sam Coppersmith′s (D – Arizona 1) Gopher and distribution list services during the first quarter of 1994. The first part analyzes Gopher usage data gathered during the study period. The second part detials with a user survey distributed to fifty‐seven Gopher server guest registrants and eighty listserv subscribers just after the end of the study period. The research shows that (1) use of the Gopher subdirectory dwarfs that of the listserv, (2) services like Coppersmith′s should provide basic information, as well as unique and timely information and issue position statements, (3) assessment of such services is methodologically challenging, and (4) Coppersmith′s services are effective information media that promote observability of distant officeholders, a function that helps promote increased participation in government.

Abstract

Purpose

Staling, the progressive non‐microbial deterioration of quality, is influenced by baked product fat, sugar and moisture levels. Although 50 percent sugar replacement with an acesulfame‐K‐dextrose blend, and/or 50 percent fat replacement with dried plum puree, produces acceptable oatmeal and chocolate chip cookies within one day of baking, flavor and texture changes with continued storage are unknown. The purpose of this paper is to profile three oatmeal and chocolate chip cookie formulations.

Design/methodology/approach

Three oatmeal and chocolate chip cookie formulations (control, reduced‐in‐fat (50 percent) and reduced‐in‐fat and sugar (50 percent)) were profiled 1, 3, 5 and 7 days post‐bake by a trained sensory panel (n=8) using the Spectrum®‐approach on 0‐15 point linescales; three replicates were obtained. Water activity was determined on six replicates. Data were analyzed with PROC Mixed and PDIFF (p<0.05).

Findings

Water activity increased with modification; increases (aW<0.60) do not support microbial growth. Day 1 flavor and texture reformulation effects mirror those previously reported. Storage effects across all formulations (p<0.05) on oatmeal and chocolate chip cookie sensory attributes are within one linescale unit. Different significant (p<0.05) formulation×storage interactions suggest staling patterns differ with cookie type. Water activity increased during storage for chocolate chip cookies only; practical significance is questionable. Panelists' comments suggesting oxidative effects for both controls by day 5 are consistent with water activity.

Originality/value

Consumption of products with improved nutritional profiles can assist consumers in bringing their diets in‐line with dietary recommendations. Maximizing benefits requires continued selection of modified rather than non‐modified products. Technical issues (sensory characteristics, nutritional profile and storage convenience) do not appear to limit consumer selection of these reformulated cookies.

Abstract

Purpose

The purpose of this paper is to provide a comprehensive overview of multiple functions of sunflower seeds including their nutritional and nutraceutical benefits.

Design/methodology/approach

The literature review is of the chemical composition of sunflower seeds, their health benefits and their utilization in different products.

Findings

“We are what we eat.” All living creatures need to take in nutrients to live. Nutrients provide energy for processes in the body and can promote growth, maintenance and repair. The classes of nutrients are carbohydrates, proteins, fats, vitamins, and minerals. Sunflower seeds are a good source of all these nutrients. Plant foods such as fruits, vegetables, oil crops and whole grains contain many components that are beneficial to human health. Research supports that some of these foods, as part of an overall healthful diet, have the potential to delay the onset of many age‐related diseases.

Research limitations/implications

Currently available information on sunflower seeds is insufficient. These observations have led to continuing research aimed at identifying specific bioactive components in foods, such as antioxidants, which may be responsible for improving and maintaining health. Antioxidants are present in foods as vitamins, minerals, carotenoids, and polyphenols.

Originality/value

This review is unique in its comprehensive nature. This article will reflect the role of sunflower seeds as nutritional and nutraceutical package.
