Abstract

Purpose

Today's environment imposes traceability compliance on food firms. Power within the interorganisational relationships in the food supply chain may hinder the integration necessary for that traceability to be effective. The purpose of the present study is to define the configuration of power in food industry‐distribution relationships from the food industry perspective.

Design/methodology/approach

The variables of power configuration considered in this study have been classified as mediated and non‐mediated power sources, in accordance with the criteria used by French and Raven. The Rasch model employed in the treatment of the values given by the food industries to the construct perceived power (mediated and non‐mediated power sources) permit a unidimensional measurement of that construct. Thus, the model estimated using this methodology explains power‐shaping in the food industry‐distribution relationships in the Canary Islands.

Findings

The results obtained are mostly based on the distributors' use of mediated power sources; they describe a situation that does not contribute to a high level of commitment in such relationships, since the negative effects of this type of power do not favour the climate required for the implementation of active traceability.

Research limitations/implications

The data applied in this study were gathered prior to the implementation of traceability as a legal requirement, and consequently it would be advisable and useful to conduct a post‐implementation.

Originality/value

The paper adopts a business management approach, aimed at improving relations in the food supply chain. The methodology employed allows food firms to establish suitable chain integration strategies, facilitating the effective implementation of traceability. The paper presents a conceptual framework and analytical methodology which sustain the present study and subsequent work.

Abstract

Purpose

The purpose of this study is to map current knowledge on big data analytics (BDA) for supply chain risk management (SCRM) while providing future research needs.

Design/methodology/approach

The research team systematically reviewed 53 articles published between 2015 and 2021 and further contrasted the synthesis of these articles with four in-depth interviews with BDA startups that provider solutions for SCRM.

Findings

The analysis is framed in three perspectives. First, supply chain visibility – i.e. the number of tiers in the solutions; second, BDA analytical approach – descriptive, prescriptive or predictive approaches; third, the SCRM processes from risk monitoring to risk optimization. The study underlines that the forefront of innovation lies in multi-tiered, multi-directional solutions based on prescriptive BDA to support risk response and optimization (SCRM). In addition, we show that research on these innovations is scant, thus offering an important avenue for future studies.

Originality/value

This study makes relevant contributions to the field. We offer a theoretical framework that highlights the key relationships between supply chain visibility, BDA approaches and SCRM processes. Despite being at forefront of the innovation frontier, startups are still an under-explored agent. In times of major disruptions such as COVID-19 and the emergence of a plethora of new technologies that reshape businesses dynamically, future studies should map the key role of such actors to the advancement of SCRM.

Abstract

Purpose

Intermediate short food supply chains (SFSC) have been presented as a possible solution to unsustainable global food supply chains. There is currently a knowledge gap about intermediate SFSC. Thus, this review synthesizes the available literature to identify prominent themes and their main considerations.

Design/methodology/approach

This research is based on a systematic literature review including peer-reviewed journal articles until December 2021. Inductive data coding resulted in the identification of four themes related to intermediate SFSC.

Findings

The identified themes illustrate the complex landscape intermediate SFSCs operate in and focus on the key relationships within these supply chains. The established relationships have implications for the governance of intermediate SFSCs. The organization of intermediate SFSCs affects numerous sustainability indicators.

Research limitations/implications

Future research should focus on the position intermediate SFSCs have in food systems and the roles intermediaries have in intermediate SFSCs. There is furthermore an opportunity for researchers to investigate different types of intermediaries and explore the factors influencing them.

Originality/value

Creating sustainable food supply chains is one of the major societal challenges of today. The current state of the art suggests that intermediate SFSCs could play an important role in achieving this. So far, this area is underdeveloped and this review highlights knowledge gaps in the literature and suggestions for a future research agenda are proposed.

Abstract

Purpose

While big data (BD), a transformative emerging phenomenon on its youth, plays a growing role in organizations in improving marketing decision-making, few academic works examine the mechanism through which BD can be applied to guide future competitive advantage strategies. The purpose of this paper is to examine if BD’s predictive power helps business to business (B2B) firms selecting their intended generic (differentiation, focus, and cost leadership) strategies.

Design/methodology/approach

Drawing on the learning theory, the study proposes the use of BD as a key driver of intended strategies. Based on data from a cross-industry sample of executives, a conceptual model is tested using path and robustness analyses.

Findings

The use of BD plays a prominent role in the selection of intended future strategies in industrial markets. Additional tests demonstrate conditions of competitive intensity and strategic flexibility where BD is more and less beneficial.

Research limitations/implications

The study furthers the understanding of traditional learning and intelligence use frameworks and of contemporary future strategies drivers.

Practical implications

BD availability enables managers leveraging knowledge embedded in data-rich systems to gain predictive insights that help in guiding new strategic directions to maintain competitive advantage.

Originality/value

The study reinforces the continued applicability of Porter’s generic positioning strategies in the digital era. It addresses the paucity of research on BD in B2B context and is the first to provide theoretical and practical reflections on how BD utilization influences industrial intended strategies. The study strengthens contemporary managerial views defending that data drive strategies rather than the opposite.

Abstract

Purpose

The purpose of this paper is to contribute to the understanding of the relationship between information sharing and performance of perishable product supply chains (PPSC). Building on transaction cost economics (TCE), organisational information processing theory (OIPT), and contingency theory (CT), this study proposes a theoretical framework to guide future research into information sharing in perishable product supply chains (IS-PPSC).

Design/methodology/approach

Using the systematic literature review methodology, 48 peer-reviewed articles are carefully selected, mapped, and assessed. Template analysis is performed to unravel the relationship mechanisms between information sharing and PPSC performance.

Findings

The authors find that the relationship between information sharing and PPSC performance is currently unclear, and there is inconsistency in the positioning of information sharing among constructs and variables in the IS-PPSC literature. This implies a requirement to refine the relationship between information sharing and PPSC performance. The review also revealed that the role of perishable product characteristics has largely been ignored in existing research.

Originality/value

This study applies relevant multiple theoretical perspectives to overcome the ambiguity of the IS-PPSC literature and contributes nine propositions to guide future research. Accordingly, this study contributes to the refined roles of relationship uncertainty, environmental uncertainty, information sharing capabilities, and perishable product characteristics in shaping the relationship between information sharing and PPSC performance.

Abstract

Purpose

The purpose of this paper is to understand whether an experiential perspective can be usefully adopted in the context of traditional-local foods (TLFs) by assuming a consumer perspective that analyses attitudes and behaviours of young people towards truffles. In particular, it examines which values drive the consumption of truffles and whether they are perceived as an experiential-based food or simply a nutritional-based one.

Design/methodology/approach

The research was carried out through a survey conducted on a sample of 720 Italian university students from January to May 2016. The data were processed using analysis of variance, principal component analysis and a two-step cluster analysis.

Findings

The results show that the search for pleasure and gratification can be very important for young consumers and that gratification plays a critical role in the consumption of fresh truffles along with convenience. This confirms that TLFs, like truffles, can be highly appreciated by young consumers for their emotional content, which allows them to have a personal experience when buying and consuming them.

Originality/value

The study contributes to the literature by enriching the overall understanding of young people’s food behaviour and by deepening the adoption of the experiential perspective within the TLF business. Moreover, it has practical and useful implications for promoting the consumption of TLFs among the young and for managing TLFs as well as the rural areas from where they originate.

Abstract

Purpose

The purpose of this paper is to examine the impact of packaging design on purchasing decisions in hospitals and to identify inefficiencies in the US hospital supply chain. Recognition of inefficiencies helped to directly relate to the effects on critical factors of operation such as environment, traceability, and logistical ease which significantly add to the cost of health care.

Design/methodology/approach

A survey instrument was designed to be completed by purchasing agents in US hospitals and clinics. Statistical analysis was then applied to the survey data to draw inferences. In addition, existing studies of best practices of supply chain and packaging design were considered to determine what may be applied to the US hospital supply chains.

Findings

Analysis showed very little correlation between packaging requirements and hospital supply chain design. The data from the survey also supports the supply chain literature that the healthcare industry in the USA has been slow to adopt inventory efficient systems like just in time and lean development, including product tracking through bar coding and radio frequency identification devices; though most US hospitals have the capability to migrate to such a supply chain system.

Research limitations/implications

A small number of respondents were involved in the survey. Such efforts were limited by the availability of participants which were primarily supply chain procurement staff in various large community hospitals in major metropolitan areas across the USA.

Practical implications

There is a substantial opportunity for management of hospitals to educate their purchasing agents on the benefits of collaborating with their suppliers in order to take their relationships to the next level to lower costs of the US hospital supply chain. This has been shown by the responses in support of critical factors of the supply chain. Case studies have shown some hospitals are leading the way towards efficient use of their supply chain strategies.

Originality/value

Analysis of survey data revealed that packaging and environmental friendly suppliers/medical products do not currently play a role in hospital purchasing decisions. Nearly, all of the community hospitals in the USA that participated in the survey do not value packaging as providing a means to a more efficient inventory management program.

Abstract

Purpose

Packaging is a strategic tool that merits holistic management. Three managerial disciplines have the potential to significantly influence packaging strategy: marketing, logistics, and ethics. Despite the multidimensional nature of packaging, the academic literature tends to analyse these three dimensions separately. To address this shortcoming of a more integrated approach, the aim of this paper is to identify the main integration areas among marketing, logistics, and ethics in packaging innovation projects, in the retail grocery sector.

Design/methodology/approach

In total, 186 cases of packaging design were selected and the data collected were analysed by quantitative content analysis (cross‐tabulation).

Findings

The results show that simultaneous integration among marketing, logistics and ethics recurs in only one third of the cases. The main area of integration is between marketing and ethics. To a lesser extent, there is a significant degree of integration between marketing and logistics as well as between logistics and ethics. Nevertheless, the findings of this initial analysis suggest that the potential in terms of integration has yet to be exploited.

Practical implications

Taking a holistic view of innovation in packaging, the study can assist managers participating in packaging management by providing a conceptual instrument for the integrated evaluation of the multidimensional relationships among the three perspectives.

Originality/value

The paper provides the first empirical exploration in this field and an original conceptual framework that could serve as a theoretical reference point for future research and as a managerial tool, recognising the urgent need for a careful understanding of how marketing, logistics and ethics may be integrated in innovation projects.

Abstract

Purpose

The purpose of this paper is to identify various risk drivers which affect a food processing supply chain and to create a map of how those risk drivers propagate risks through the supply chain and impact important performance measures.

Design/methodology/approach

This study involves experts from food processing companies to elucidate the contextual relationships among the risk drivers and between risk drivers and performance measures. This is used to quantify the relationships and to determine the indirect and overall relationships applying Fuzzy Interpretive Structural Modeling.

Findings

Three categories of risk drivers which Indian food processing companies need to pay maximum attention to minimize risks are identified. These are supplier dependency and contracting, supplier variability, visibility and traceability and manufacturing disruptions. Analysis shows that collaborating with suppliers and logistics service providers, developing mutually beneficial contracts with them while ensuring that adequate technology investments are made can significantly mitigate risks and consequently improve margins and lead to revenue growth.

Research limitations/implications

This study has been carried out with experts from large food processing companies in India, and hence, the results cannot be generalized across other types of food processing companies.

Practical implications

The proposed methodology can help understand the interrelationships between supply chain risks and between those risks and performance measures. Thus, it can help a food processing company to create business cases for specific supply chain risk mitigation projects.

Originality/value

This study is one of the earliest to create a comprehensive risk propagation map for food processing companies which helps in quantifying the impact the risk drivers have on each other and on performance measures.
