Abstract

Purpose

The sensory quality and yield of mozzarella cheese deteriorate as the fat content in milk is reduced. This study aims to evaluate the efficacy of sodium alginate as a fat replacer in low-fat buffalo mozzarella cheese on the basis of processing and storage (4 ± 1°C) quality.

Design/methodology/approach

Five treatments of buffalo mozzarella cheese, viz., control full-fat cheese (6.0 per cent milk fat; CFFC), control low-fat cheese (<0.5 per cent milk fat) without sodium alginate (CLFC), low-fat cheese with 0.1 per cent sodium alginate (LFC-1), 0.2 per cent sodium alginate (LFC-2) and 0.3 per cent sodium alginate (LFC-3), were comparatively evaluated.

Findings

Increase in the level of sodium alginate increased the percent yield of treated low-fat cheese than CLFC. Addition of sodium alginate to low-fat cheese resulted in decrease in hardness (p = 0.023) and chewiness than CLFC. Meltability was significantly decreased (p = 0.03) in low-fat cheese than CFFC. It was recorded as 1.5 ± 0.14 cm for CFFC to 0.2 ± 0.08 cm in LFC-3. Sensory panellists awarded LFC-3 highest and lowest to LFC-1; however, treated products at all selected levels were superior to CLFC. Oxidative stability and microbial stability were improved in LFC-3 than CFFC during storage.

Practical implications

Results concluded that 0.3 per cent sodium alginate is optimum for the development of extended shelf-life functional/low-fat/low-calorie buffalo mozzarella cheese.

Originality/value

Processing interventions can be successfully used to develop low-fat/low-calorie mozzarella cheese with acceptable sensory attributes and longer storage life.

Abstract

Purpose

This study aims to utilize DMAIC methodology along with value stream mapping and other Lean Six Sigma tools in a major automobile light manufacturing industry to reduce defect rates and increase production capacity in their manufacturing line. The study also proposes a modified framework based on lean principles and FlexSim to identify and reduce waste in the selected industry.

Design/methodology/approach

A Lean Six Sigma modified framework has been deployed with DMAIC to reduce the defect rate and increase the production rate. Various tools like value stream mapping, brainstorming, Pareto charts, 5S, kanban, etc. have been used at different phases of DMAIC targeting wastes and inventory in the production line. Also, a simulation model has been utilized for the automobile light manufacturing industry to improve the machine utilization time with varying batch sizes.

Findings

The results of the study indicated a 53% reduction in defect rates. Thus, there would be an expected improvement in sigma value from 3.78 to 3.89 and a reduction in defects per million opportunities (DPMO) from 11,244 to 8,493. Additionally, simulation model using FlexSim was developed, and the optimum ordering batch size of raw material was obtained. It was also analyzed that idle time for various stations could be reduced by up to 30%.

Practical implications

The utilized framework helps identify defects for managers to increase production efficiency. The workers, operators and supervisors on the production line also need to be trained regularly for identifying the areas of improvement.

Originality/value

The modified Lean Six Sigma framework used in this study includes FlexSim simulation to make the framework robust, which has not been used with LSS tools in the literature studied. Also, the LSS finds very less application in the manufacturing domain, considering which this study tends to add value in existing literature taking a case of an automobile light manufacturing industry.

Abstract

Purpose

Reference price is a key input in deciding product/service prices by organizations and has a significant influence on consumer purchase decisions. This study aims to provide a deeper understanding of reference pricing literature using bibliometric analysis and offers specific research questions for future research in this domain.

Design/methodology/approach

Using a sample of 309 articles published between 1977 and 2021, the study conducts bibliographic coupling, citation analysis, cluster analysis, content analysis, keyword analysis and a three-field plot to map the intellectual structure of reference price.

Findings

The content analysis gave seven research clusters: (1) modeling reference price, (2) consumer perceptions of price (un)fairness, (3) price framing, (4) comparative price-based promotion, (5) reference price formulation, (6) pay-what-you-want (PWYW) pricing and (7) range theory and price perceptions. The study also delineates reference price literature across several parameters like authorship, highest cited paper, most popular journal, institutions, region-wise publication trend and author-networks. The emerging research themes for future scholars working in this domain have also been highlighted.

Originality/value

This is the first comprehensive study to explore reference price from a bibliometric lens. The study highlights and discusses the recent themes on reference price, from both academic and managerial perspectives.

Abstract

Purpose

There is a need to promote socially responsible consumption which would accelerate the efforts of economic upliftment and sustainable development initiated by the government and corporates through corporate social responsibility initiatives. This study aims to explore the factors that contribute to socially responsible consumption across demographic factors.

Design/methodology/approach

The socially responsible consumption behaviour (SRCB) scale developed by Antil and Bennet was used to gather responses on a five-point Likert scale along with information on demographic profile from the residents of Delhi National Capital Region.

Findings

The factor analysis revealed a striking finding that personal contribution is the most important factor that governs socially responsible consumption, and this factor also emerges across demographic variables to have significant contribution for the consumption. Gender wise, there is no significant difference, while education bears an inverse relationship with SRCB. People in the middle-income group with lower incomes and younger in age are more likely to exhibit SRCB.

Research limitations/implications

The implications for marketers is to use the results of this study in their promotion for targeting consumers by focusing on the joy/pride of personal contribution in being socially responsible while they fulfil their product purchase needs that could create a loyal segment of consumers who would buy such products and further spread a positive word of mouth to convert non-consumers into buyers, leading to sustainable economic development. Policymakers and the Government need to promote SRCB by subsidizing goods that are generated from such sources to enhance their usage. Younger Indians, in the early years of their career and people in middle-income groups, are promising customers with higher inclination to be socially responsible in their purchase behaviour. This paper presents a practical dimension of personal contribution that could be used to develop promotion strategies to motivate consumers towards socially responsible consumption.

Practical implications

These incorporate usage of the results of this study to promote cause-related marketing, wherein a company donates a portion of each purchase made by its customers during a specific period to a socially responsible cause. Marketers can enhance the purchase of socially responsible products by creating awareness among their target consumers about the consequences of their purchase and their personal contribution in community development. Creating confidence among customers and goodwill by providing awareness of the contribution made by firms in the social development of the country will encourage customers to patronize products of such firms, as they would feel a sense of personal contribution in nation development by supporting buying from such firms.

Social implications

The adoption of socially responsible consumption by the vast majority of population shall uplift the economically backward sections of society, thereby creating employment opportunities and incomes at the bottom of the pyramid, ultimately, leading to sustainable economic development and attainment of millennium development goals.

Originality/value

This is a maiden attempt to gain an insight into the Indian SCRB. This can be a base for further studies in the area of socially responsible consumption which is relatively unexplored in the Indian context.

Abstract

Purpose

New product development (NPD) is necessary for business sustenance and customer satisfaction. Six Sigma and Design for Lean Six Sigma (DLSS) efficiently employ the repetitive stages for NPD, leading to quality performance and profitability. This study aims to map the quality performance through NPD attributes through the Lean methodology.

Design/methodology/approach

The data on NPD were collected from 267 respondents from manufacturing companies to map the relationship between Six Sigma and DLSS for NPD. Confirmatory factor analysis was employed to confirm model fit, while structural equation modeling was employed to analyze the empirical data for framework testing. The study included nine variables and fourteen hypotheses identified from the literature.

Findings

The statistical results of this study show that NPD attributes such as innovation, marketing, organization, customer, product and technology positively influence the Lean Six Sigma structured improvement process (LSSSIP) and DLSS. Moreover, integrating these attributes in Lean planning enhance quality performance. This empirical investigation's findings indicate that ten of the 14 hypotheses were supported, giving the study a strong foundation.

Research limitations/implications

The data collection was limited to northern India; therefore, the results may not be generalizable to other areas of the world.

Practical implications

NPD involves handling technical issues and factors such as cost, operational bottlenecks, economic changes, competitors' strategy and company policy. This study helps understand the various NPD parameters and their relationship to Lean, which enables an effective NPD implementation strategy.

Originality/value

The current philosophy of NPD calls for a concurrent engineering approach; therefore, the entire organization must be part of this process. This study uses the holistic framework by optimizing NPD with Lean Six Sigma (LSS) principles. The study is unique in that, to date, research does not integrate NPD attributes with the objectives of LSS to develop an efficient NPD implementation strategy.

OGQ was founded by Geet Sethi and Prakash Padukone with the mission to support potential Olympic medal winners, in achieving their dream, with the help of all the stakeholders; and the vision to scout for potential talent and identify their needs. It had eminent personalities from sports who understood the problems with Indian sports and from industry who had a passion for sports and supported it. OGQ supported its athletes for the 2012 London Olympics through voluntary contributions and its athletes won four medals. For the 2016 Olympics, OGQ had a target of eight Olympic medals and was scaling up its support to athletes. Viren Rasquinha, the CEO of OGQ, knew that he had to focus on getting more contributions as he needed more resources to support the athletes. For this OGQ needed to review its communication strategy to the current and potential donors.
