Abstract

Purpose

China has experienced a fast economic growth and shown a significant rise in income inequality in the past decades. During the same period, fluid milk consumption in urban areas has rapidly expanded. The objective of this paper is to analyze and simulate the influence of income distribution changes on fluid milk consumption of households in urban China.

Design/methodology/approach

This study applies an inverse hyperbolic sine (IHS) double-hurdle model to modeling at-home fluid milk consumption of households across different income strata based on a sample of 11,861 urban households in five provinces in China, and simulating the impact of changing income distribution, including five income growth patterns, on fluid milk consumption of total households as well as specific household groups.

Findings

The fluid milk consumption in urban China will continue to increase, with the unconditional income elasticity being 0.334 for the full sample and 0.347, 0.335 and 0.162 for the low-, middle-, and high-income groups, respectively. The simulation results show an evidence that, compared with distribution-neutral and disparity-enlarging income growth patterns, a rising income equality would lead to a more significant increase in fluid milk consumption. And the inequality-reducing income growth pattern has a larger impact on fluid milk consumption of households with seniors and no children, as well as households having no local urban household registration (hukou).

Practical implications

The government should strengthen the supply measures of fluid milk in urban areas, enlarge domestic dairy production, and diversify the sources of milk imports. It is also necessary to subsidize low-income families, especially households with seniors or households migrated from other areas without getting local urban hukou, which could simultaneously improve nutritional benefits and alleviate financial pressures.

Originality/value

A simulation considering the evolution of income distribution as well as different household groups is conducted. Widely distributed data with a large sample size and detailed demographic information are used. The problems of zero consumption and non-normal distribution are addressed by the IHS double-hurdle model.

Abstract

Purpose

This paper aims to show that a simplified surface fitting model can be efficient in determining the energy consumption during milk cooling by an on-farm direct expansion bulk milk cooler (DXBMC). The study reveals that milk volume and the temperature gradient between the room and the final milk temperature can effectively be used for predicting the energy consumption within 95% confidence bounds.

Design/methodology/approach

A data acquisition system comprised a Landis and Gyr E650 power meter, TMC6-HE temperature sensors, and HOBO UX120-006M 4-channel analog data logger was designed and built for monitoring of the DXBMC. The room temperature where the DXBMC is housed was measured using a TMC6-HE temperature sensor, connected to a Hobo UX120-006M four-channel analog data logger which was configured to log at one-minute intervals. The electrical energy consumed by the DXBMC was measured using a Landis and Gyr E650 meter while the volume of milk was extracted from on the farm records.

Findings

The results showed that the developed model can predict the electrical energy consumption of the DXBMC within an acceptable accuracy since 80% of the variation in the electrical energy consumption by the DXBMC was explained by the mathematical model. Also, milk volume and the temperature gradient between the room and final milk temperature in the BMC are primary and secondary contributors, respectively, to electrical energy consumption by the DXBMC. Based on the system that has been monitored the findings reveal that the DXBMC was operating within the expected efficiency level as evidenced by the optimized electrical energy consumption (EEC) closely mirroring the modelled EEC with a determination coefficient of 0.95.

Research limitations/implications

Only one system was monitored due to unavailability of funding to deploy several data acquisition systems across the country. The milk blending temperatures, effects of the insulation of the DXBMC, were not taken into account in this study.

Practical implications

The developed model is simple to use, cost effective and can be applied in real-time on the dairy farm which will enable the farmer to quickly identify an increase in the cooling energy per unit of milk cooled.

Social implications

The developed easy to use model can be used by dairy farmers on similar on-farm DXBMC; hence, they can devise ways to manage their energy consumption on the farm during the cooling of milk and foster some energy efficiency initiatives.

Originality/value

The implementation of the developed model can be useful to dairy farmers in South Africa. Through energy optimization, the maintenance of the DXBMC can be determined and scheduled accordingly.

Abstract

Purpose

People living in rural and urban areas experience different socioeconomic conditions, which should affect their consumer behaviour. The purpose of this study is to examine the effects of these socio-economic differences on the consumption of milk, yoghurt, and cheese.

Design/methodology/approach

Face-to-face interviews are conducted with 191 households in the city of Van (Eastern Turkey). The collected data are evaluated using SPSS – Multiple Correspondence Analysis.

Findings

Results of the evaluations show that there are socio-economical differences between urban and rural populations in terms of age, education, occupation, and income, which affects their consumption behaviour. The rural consumers generally consume raw (unpasteurized, unpackaged) milk. These consumers tend to have low income and be illiterate. The urban consumers, on the other hand, consume pasteurized milk and have higher incomes compared with the rural consumers and have a mid-level to university education. In the rural areas, consumers usually make their own yoghurt but those who purchase their yoghurt pay attention to its packaging the most. In the rural areas, consumers who make their own cheese have mid-level income and primary school education.

Originality/value

The paper analyses the current effects of socio-economic differences in rural and urban areas on the consumption behaviour of milk, yoghurt, and cheese using the Multiple Correspondence Analysis (MCA). MCA analysis has rarely been used in this area.

Abstract

These are the days of falling standards and sagging morale, nowhere more apparent than in the one‐time efficient public service. The division between management and workers in the field in the large public enterprises has grown wider and wider and we tend to blame the lower strata of the structure for most of the ills which beset us, mainly because its failures are more obvious; here, the falling standards of work and care speak for themselves. The massive reorganization of the National Health Service and local authorities has made evident, especially in the first, that the upper strata of the colossi which dominate our everyday lives have their ills too. Local authorities have been told “The party is over!” and the National Health Service has been told of the urgent need for the strictest economy in administration; that the taking over of personal health services from local authorities was wrongly attributed to “managerial growth” instead of a mere “transfer of functions”, but, nonetheless, new authorities were created, each with fast‐growing administrative organs operating services—doctors, nurses and patients—which had remained unchanged. Very large local authorities, with many functions lost to others, one would have expected to have resulted in economy of administration, has all‐too‐often been the opposite. Hardly surprising that those who pay for it all, distinct from those who receive of its largesse, are being stirred to rebellion, when they have been overtaxed, ill‐used and what is more important, ignored for so long.

Abstract

Purpose

The purpose of this paper is to examine how individual’s health beliefs, nutrition knowledge (NK) and attitudes towards food technologies play a role in the anti-consumption of dairy products or the consumption of dairy alternatives.

Design/methodology/approach

Self-reported data concerning the consumption of milk, yogurt and dairy products in general were collected online among 1,705 adults in Canada. Also included in the survey instrument were measures of NK and health beliefs as well as questions from the food technology neophobia scale. Anti-consumption of milk, yogurt and dairy as well as alternative dairy consumption as a function of these characteristics, in addition to demographic characteristics, is analysed using probit models.

Findings

Individuals who demonstrate resistance to innovations in food technology, those with lower levels of dairy-specific NK, and people who have less belief that dairy avoidance will have negative impacts on their health are more likely to be anti-consumers of milk and/or yogurt. The same is true for dairy products in general with the exception that people with higher levels of dairy-specific NK are more likely to be anti-consumers of dairy products in general.

Originality/value

Inadequate intake of calcium and vitamin D has negative consequences for long-term health. Given that dairy products are the primary source of these nutrients in the Canadian diet, it is important to understand the reasons behind dairy anti-consumption so that appropriate policy measures can be taken to address potential public health issues.

Abstract

Purpose

The purpose of this paper is to report a survey in random-selected supermarkets in Italy in order to identify the attitudes and perceptions of consumers toward milk and in particular toward donkey milk.

Design/methodology/approach

The analysis was conducted through Google Forms platform of docs.google interviews with a sample of 705 consumers who were given a questionnaire to collect information about their economic status and their attitudes toward milk and special milk consumption.

Findings

The results were analyzed in order to identify the socio-economic and behavioral characteristics of homogeneous groups of consumers. They consume milk mainly because it is not expensive and it is possible to easily buy it in the supermarket. They consume special milk mainly because of food allergies or intolerances. They would like to buy special milk at large-scale retail trade outlets; they underline difficulties in finding and purchasing it. They think that the price of special milk is very high.

Originality/value

The results showed that those who occasionally consume special milk choose it because it is more nourishing or for health reasons; there is also a significant association between the judgment on prices of special milk and the frequency of purchase. The estimation of a generalized linear model allowed to highlight that only age and the presence of health problems/intolerances are significant predictors of special milk consumption.

Abstract

Purpose

This paper aims to assess the consumption of dairy products in Kuwaiti children, and develop and validate a semi-quantitative food frequency questionnaire to measure dairy product consumption.

Design/methodology/approach

This cross-sectional study was based on a sample of child–parent dyads (n = 150). A dietary assessment questionnaire on local dairy products consumed by preschool and preadolescent children was developed. Serving and portion sizes were evaluated on the basis of the guidelines of the United States Department of Agriculture and the American Academy of Pediatrics to calculate median intake levels of three age groups (3-5, 6-8 and 9-11 years).

Findings

All children met or exceeded the recommended daily servings of dairy products for their age and sex. Dairy product intake was often from processed dairy including milk-based desserts, flavored milk and cheese. Compared to boys, girls consumed more yogurt (15.5 per cent vs 14.2 per cent, p = 0.001) and milk-based desserts (15.5 vs 14.3, p = 0.001). In boys, flavored milk contributed more to the total dairy intake than in girls, especially in 6-8-year-olds (21.8 per cent vs 18.9 per cent, p = 0.021). Weight status was not associated with dairy product intake in either sex.

Originality/value

This is the first study that quantifies dairy product consumption in Kuwaiti children and provides insight into sex-specific trends in dairy product selection. The findings of this study may help in investigating relationships between dairy product consumption in children and disease risk factors, and are important for the development of local dietary guidelines for children.

Abstract

Purpose

The purpose of this paper is to review the growth and regional disparities of China's dairy market since 1980, examine urban consumer demand for three major dairy products (fluid milk, yogurt, and milk powder), analyze China's import patterns of major dairy products since 1995, and discuss China's potential roles in the world dairy market and implications for trade.

Design/methodology/approach

While the most recently available time‐series and cross‐sectional data from China are used to analyze the trends and disparities of China's milk production and dairy product consumption through graphical and regression analyses, China's custom data from 1995 to 2008 are used to examine the trends and patterns of China's dairy product imports.

Findings

China's dairy market has expanded rapidly in the past two decades but there are significant disparities across regions and income groups. The estimated income elasticities suggest that, as per capita income continues to increase, the demand for dairy products, especially yogurt and fluid milk, is expected to grow at a significant rate. The import trend and pattern analysis indicates that China's dairy imports will likely continue to grow and provide opportunities for major dairy product exporters like the USA, New Zealand, and Australia.

Originality/value

The paper contributes to the literature by examining the trends and disparities of China's dairy market using the most recently available data, presenting an estimation of demand elasticities for fluid milk, yogurt, and milk powder in urban China, and discussing the future prospects of China's dairy imports and implications for trade.

Purpose

The purpose of this study is to compare the evolution of self-reported milk allergy in children and adults within the population of Fez-Meknes region, as well as to investigate the consumption of milk and its correlation to milk allergy.

Design/methodology/approach

It is a cross-sectional study conducted in Fez-Meknes region between April 2014 and March 2015 basing on a questionnaire completed by 3,068 children and 1,281 adults.

Findings

The results showed that food allergy was more reported among children (29.4 per cent) than adults (16.9 per cent). Milk allergy was reported by 5.3 per cent of children and 4.2 per cent of adults. Children reported mostly cutaneous manifestations (64.8 per cent) while adults reported mostly gastrointestinal manifestations (68.5 per cent). The consumption of milk showed a protective effect against the development of milk allergy (p < 0.001).

Originality/value

The consumption of milk was associated significantly with a low rate of milk allergy, especially in adults. However, the pasteurization of milk seemed to be correlated to increase milk sensitivity.
