Abstract

Purpose

The purpose of this study was to assess nutrient intakes in elderly living in Lebanese nursing homes (NHs).

Design/methodology/approach

This cross-sectional study was conducted in 36 long-term care institutions from all over Lebanon. Out of 2,094 residents, 98 (69 women and 29 men) elderly met the inclusion criteria and successfully completed the interview question. Dietary food intake was assessed using the 24-h food recall. The analysis used a Chi-square test and independent samples t-test or Mann–Whitney test, as appropriate.

Findings

A high percentage of elderly (reaching 100 per cent) had a low intake of energy, protein, linolenic acid, linoleic acid, fibers, vitamins and minerals, and the prevalence of nutrient inadequacy was significantly different between sexes for copper intake (p = 0.02). The results of this study highlight the nutrient inadequacies among the majority of elderly living in long-term care institutions and particularly in women and elderly residing in NHs located away from the capital Beirut.

Originality/value

This study is quite original; this is the first study performed nationwide in Lebanon covering not only the largest number of NHs in various locations but also elderly under custodial settings and with diverse backgrounds.

Abstract

Purpose

This study aims to identify the effect of selected agro-industrial factors associated with the olive oil phenolic composition, total phenolic content (TPC), antioxidant capacity and oxidative stability index (OSI). The study also aims to assess the relationship between the quality indices and each of the individual phenol, TPC, antioxidant capacity and OSI.

Design/methodology/approach

Olive oil samples (n=108) were collected from Lebanese northern (Akkar and Zgharta-Koura) and southern (Hasbaya and Jezzine) regions, at three harvesting times (early, intermediate, late) and using different types of mills (traditional, sinolea, two- and three-phase decanters). The samples were analyzed using official standard methods.

Findings

The highest TPC, antioxidant capacity and OSI were obtained in early harvested olive oil, using two-phase decanters for TPC and three-phase decanters for antioxidant capacity and OSI. A prediction model, including the free acidity, K232, TPC, C18:2, C18:0, tyrosol and apigenin, was obtained; it allowed to predict very highly significantly the OSI (p < 0.001). Apigenin, tyrosol and C18:2 recorded the highest standardized coefficients (ß^+= 0.35) and thus had the highest influence on OSI. As per antioxidant capacity of olive oil, another very highly statistically significant prediction model was constructed (p < 0.001). It included only two predictors, oleacein and TPC, with the latter having the most influence (ß^+= 0.37).

Originality/value

The overall results highlighted the detrimental effects of agro-industrial factors on olive oil chemical composition, and this contributes significantly to improve olive oil’s quality and characteristics, which are important for the product economical and nutritional values.

This study aims to assess the exposure of Lebanese consumers to nutrition and health claims (NHCs) on pre-packed bread.

Abstract

Purpose

This study aims to assess the exposure of Lebanese consumers to nutrition and health claims (NHCs) on pre-packed bread.

Design/methodology/approach

Bread samples (n = 354) from all the bakeries (n = 44) located in Mount Lebanon, between 2017 and 2018, were assessed. Breads with nutrition claims were analyzed using standard methods. A cross-sectional study was also conducted among 400 supermarket shoppers.

Findings

Results showed that among the collected samples of bread (n = 354), 59.6 per cent carried at least one claim, 47.2 per cent had non-nutrient claims, 32.5 per cent had nutrition claims and 15.3 per cent presented health claims. Claims related to sugar, salt and fiber content were the most commonly used (28.8 , 16.4 and 14.7 per cent, respectively). NHCs were mostly present on whole wheat bread. Breads with claims were more expensive. Half of the participants (49.8 per cent) relied on NHCs whenever purchasing bread, especially females (OR = 2.35, 95 per cent CI = 1.44-3.84, p = 0.001), those following a specific diet (OR = 4.56, 95 per cent CI = 2.02-10.25, p < 0.001) and those with the lowest household income (OR = 0.795, 95 per cent CI = 0.639-0.989, p = 0.040).

Originality/value

The overall findings showed that Lebanese consumers are highly exposed to NHCs, especially those at higher risk which could lead to serious public health issues if their use is not strictly regulated and controlled. Moreover, NHCs could be used as a tool to increase consumers’ awareness and help them make healthier choices during shopping.

Purpose

The purpose of this study is to explore the relationship between nutritional status and associated risk factors such as:, socio-economic, physical, pathological and psychological factors, among elderly residing in Lebanese nursing homes.

Design/methodology/approach

This cross-sectional study was carried out in 36 elderly care nursing homes with 2,094 residents. Of these, only 221 (11 per cent) elderly met the inclusion criteria and successfully completed the interview question. Data on socio-demographic characteristics and health conditions: oral, nutritional, depression, chronic diseases and activities of daily living, were collected. The analysis used a chi-square test and a binary logistic regression.

Findings

High levels of malnourishment were found among elderly who had no jobs (p = 0.012) and had oral health problems (p = 0.038), functional impairment (p < 0.001) and depression (p = 0.021). Comorbid illnesses, however, had no significant association with nutritional status. In addition, the first and strongest predictor entered in the regression on malnutrition was functional impairment (p = 0.002) followed by oral health problems (p = 0.030) and depression (p = 0.036).

Originality/value

The study is original in the sense that it emphasized the importance of three factors, autonomy, better oral and psychological health, in mediating nutritional outcomes for elderly residing in nursing homes.

Abstract

Purpose

The purpose of this study is to establish a set of measurable criteria for elderly nursing homes (ENHs) in Lebanon. Donabedian's model known by structure/process/outcome was used as the driving conceptual framework for the study.

Design/methodology/approach

The study reports on a panel discussion where administrators, caregivers and specialists, separately established and exchanged key information on best practice approach. The work was carried out in the summer of 2008, using the consensus panel method. A group of expert opinions (Dalkey) made up of elderly home administrators and caregivers, policy makers, and academics discussed specific key issues related to elderly health and quality of life.

Findings

A total of 40 criteria were retained along seven main dimensions: types of elderly homes; funding; health services; boarding services; activities; structures; and elderly rights.

Research limitations/implications

A major limitation in this study is that elderly were not part of the consensus making process. Thus, including elderly in the process would have substantiated and added validity to the established criteria.

Practical implications

The criteria developed in this study can be turned into key performance standards for elderly homes in Lebanon, other Mediterranean and Arab countries. These criteria would greatly benefit elderly homes if validated and used as guidelines for quality care.

Originality/value

The study is original in the sense that it seeks to establish measures for criteria, a blueprint, and benchmarks for ENH standards.

Abstract

Purpose

The purpose of this paper is to assess quality of life in relation to wellbeing among Lebanese nursing home elderly residents. The study attempts to understand the impact of structures, processes and skills on elderly health status.

Design/methodology/approach

In this paper, 220 normally functioning elderly respondents from 33 nursing homes were studied. A quasi‐experimental approach measured psychological and health‐related factors using the Geriatric Depression Scale, Activity of Daily Living, EuroQol EQ‐5D and the Mini‐Nutritional Assessment (MNA) instruments.

Findings

A relatively high level of mild depression among elderly residents and a lack of mobility were found. Generally, normally functioning elderly residents were well nourished and had moderate daily activity levels.

Originality/value

The study is original in the sense that it assesses elderly residents' psychological and physical health status in relation to institutional structures, processes, and skills.
