Abstract

Purpose

The purpose of the paper is to identify store format attributes that impact on store format choice when consumers conduct fill‐in or major trips to buy groceries. By doing so, we take into consideration that consumers patronise multiple (store based) formats depending on the shopping situation operationalised by the type of shopping trip.

Design/methodology/approach

The paper adopts the conceptual framework of random utility theory via application of a multinomial logit modelling framework. The analysis is based on a survey of 408 consumers representing households in a clearly defined central European retail area.

Findings

The results reveal a considerable moderating effect of the shopping situation on the relationship between perceived store format attributes and store format choice. Consumers' utilities are significantly higher for discount stores and hypermarkets when conducting major trips. To the contrary, supermarkets are preferred for fill‐in trips in the focussed retail market. Merchandise‐related attributes of store formats have a higher impact on the utility formation regarding major‐trips, whereas service‐ and convenience‐related attributes do so with regards to fill‐in trips.

Research limitations/implications

The findings can only be generalised to retail markets with similar characteristics to the one under study. It is highly concentrated, contains a considerable share of small size retail stores, it is urban and has clear cut boundaries due to its geographical location.

Originality/value

This paper considers the fact that consumers patronise multiple store formats and investigates the moderating effect of the shopping situation – operationalised by different types of shopping trips – on store format choice.

Abstract

Purpose

Despite retail digitisation and research efforts focussed on online and omnichannel shopping, there is insufficient knowledge regarding retail patronage formation in the grocery category, where in-store sales dominate. This study analyses the retail patronage formation in grocery in-store fill-in shopping.

Design/methodology/approach

The authors designed a questionnaire to measure retail patronage behaviour, consumer satisfaction (CS), store attributes evaluation and e-retail usage. Then, the authors analysed the path structure for retail patronage behaviour formation using structural equation modelling. Additionally, they performed a mediation analysis using the bootstrap method and a moderation analysis based on a chi-square difference test.

Findings

This study provides three main findings. First, the authors' model has two ways to increase Share-of-Wallet (SOW). One is to increase Share-of-Visits (SOV) and another is to increase CS amongst non-users of e-retailing. Second, the results of the moderation analysis suggest the influence of customers' use or non-use of e-retailing on SOW formation. Third, service evaluation plays an interesting role in the overall model: the lower the assessment of service, the higher the SOV; the higher the evaluation of service, the greater the CS; the greater the CS, the higher the SOV.

Originality/value

The authors proposed the framework for the relative retail patronage formation in grocery fill-in shopping to examine the relationship between two relative patronage indicators (SOW and SOV) in the path structure and the mediating effect of CS and the moderating effect of e-retailing usage on retail patronage formation.

Abstract

Purpose

Grounded on approach/avoidance behaviour theory, the purpose of this paper is to develop a typology of grocery shoppers based on the concomitant perceived advantages and disadvantages of shopping online and in store for a single cohort of consumers who buy groceries in both channels.

Design/methodology/approach

A survey design was employed using a sample of 871 UK shoppers who had purchased groceries online and offline. The survey instrument contained items that measured the perceived advantages and disadvantages of grocery shopping online, and items relating to the perceived advantages and disadvantages of grocery shopping in traditional supermarkets. Items were selected from the extant literature and subjected to content and face validity checks. Cluster analysis was used to develop typologies of online and offline grocery shoppers. The inter-relation between the two typology sets was then examined.

Findings

The results of the research provide several insights into the characteristics, perceptions and channel patronage preferences of grocery shoppers. In particular, profiling e-grocery shoppers on the basis of their concomitant perceptions of shopping online and in store suggests that the choice of whether to shop online or in store may be driven not by the perceived advantages of one channel vs the other, but by the desire to avoid the greater disadvantages of the alternative. These perceptions differ somewhat between different consumer groups.

Originality/value

This study makes a noteworthy contribution to the internet and general shopping literature by providing a profile of grocery shoppers based on their concomitant and often conflicting perceived advantages and disadvantages of shopping online and their perceived advantages and disadvantages of shopping in traditional supermarkets. The use of a single cohort of consumers overcomes the bias in previous studies that employ separate cohorts of online and offline shoppers and reveal important insights into the complex perceptions and behaviours of multichannel grocery shoppers.

Abstract

Purpose

The purpose of this paper is to develop a comprehensive set of grocery store attributes that can be standardized and used in empirical research aiming at increasing retailers’ understanding of determinants of grocery store choice, and assessing how the relative importance of the attributes is affected by consumer socio-demographic characteristics and shopping behaviour.

Design/methodology/approach

An internet survey of 1,575 Swedish consumers was conducted. A large set of attributes was rated by the participants on seven-point scales with respect to their importance for choice of grocery store. Principal component analysis (PCA) resulted in a reduced set of reliably measured aggregated attributes. This set included the attractiveness attributes price level, supply range, supply quality, service quality, storescape quality, facilities for childcare, and closeness to other stores, and the accessibility attributes easy access by car, easy access by other travel modes, and availability (closeness to store and opening hours).

Findings

The results showed that accessibility by car is the most important grocery store attribute, storescape quality and availability the next most important and facilities for childcare the least important. It was also found that socio-demographic factors and shopping behaviour have an impact on the importance of the store attributes.

Originality/value

A comprehensive set of attractiveness and accessibility attributes of grocery stores that can be standardized and used in empirical research is established. The results are valid for the Swedish-European conditions that differ from the conditions in North America where most previous research has been conducted. The results reveal the relative importance grocery-shopping consumers place on controllable attractiveness attributes compared to uncontrollable accessibility attributes as well as the relative importance of the attributes within each category.

Abstract

Purpose

Although the movement of goods by consumers represents a large proportion of the economic and environmental impact of the distribution chain, this topic has been insufficiently explored in the retailing literature. The purpose of this paper is to contribute to the understanding of shopping travel-mode choice in the context of grocery shopping.

Design/methodology/approach

The paper presents findings from a Swedish national survey of 1,694 respondents that included questions regarding travel-mode choices and consumer characteristics, mobility conditions, shopping behaviours and environmental interests and engagements.

Findings

This paper shows how travel modes interrelate and how various consumer characteristics, shopping behaviours, mobility conditions and environmental interests and engagements relate to and affect travel-mode choice in grocery shopping. General travel patterns and distance to store are shown to be the most important factors in explaining the mode of transport for grocery shopping.

Originality/value

This paper presents data from a national representative survey and provides novel analyses of travel-mode choices in grocery shopping and the interrelationships among those choices, in addition to the interrelationship between travel-mode choice and the use of home delivery. This paper contributes to a further understanding of consumer mobility in the context of grocery shopping.

Abstract

“Scripted behaviour” underpins many repetitive and routine tasks, such as grocery shopping, where it is observed that some shoppers take a list and others do not. The notion of “scripts” is used to examine the underlying reasons for the presence and absence of grocery shopping lists on major weekly or two‐weekly shopping trips to supermarkets. Little if any current information exists in marketing literature to fully explain the reasons for the presence or absence of lists, though it is known that such behaviour affects purchase activity in supermarkets. Set in New Zealand, this exploratory and preliminary study examines the shopping list being a moderator of purchase behaviour. It confirms previous research into the differences between list and non‐list grocery shoppers and suggests that far more planning occurs amongst all grocery shoppers than might be expected. The study reveals that some grocery shoppers, regardless of the presence or absence of a written shopping list, have a flexible approach to grocery shopping that is part of their overall shopping script. It is suggested that supermarket retailing planners could act on this intelligence in such a way as to support shoppers' pre‐planning, and thereby protect or increase their share of custom.

Abstract

Shopper marketing describes the planning and execution of all marketing activities that influence a shopper along – and beyond – the path-to-purchase, from shopping trigger to purchase, consumption, repurchase, and recommendation stages. Shopper marketing practices at manufacturers and retailers are growing at a tremendous pace and a rising portion of marketing budgets are now devoted to shopper marketing. The first phase of shopper marketing research and practice, Shopper Marketing 1.0, addressed interesting issues, primarily relating to in-store marketing. In the next phase, Shopper Marketing 2.0, will significantly extend to out-of-store marketing, including online and mobile marketing, resulting in an integrated practice. In this new environment, to formulate and execute effective shopper marketing strategies, managers need to better understand the complete picture of how online, offline, mobile and in-store marketing influence shoppers in the path-to-purchase-and-beyond cycle. In this chapter, we present the evolution of shopper marketing, summarize key learnings, outline important issues, and discuss the opportunities and challenges of Shopper Marketing 2.0.

Abstract

The purpose of this research was to study the nature and extent of differences, if any, between male and female grocery shoppers in terms of grocery shopping behavior and attitudes and with respect to those store criteria that are important in selecting a food store. The results suggest that the underlying constructs influencing grocery shopping behavior and attitudes are basically the same for the male and female shoppers; however, the findings indicated that the degree to which some of these behavior/attitude factors impact resulted in a difference in grocery shopping patterns between the sexes. Further, even though some differences were observed in the relative importance rankings of 22 store‐selection criteria, the overriding pattern was one of congruence between the two groups of respondents. The paper concludes with a discussion of the strategic implications of the findings for the food retailer.

Abstract

Purpose

This study aims to analyse grocery retail entrepreneurs' perceptions of the effectiveness of both informal and formal surveillance in reducing vandalism, disturbance, and shoplifting in their stores.

Design/methodology/approach

The present study utilizes elements of CPTED in its theoretical approach. The population for the study consisted of 946 Finnish grocery store K‐retail entrepreneurs. The data collection was carried out through an internet survey in February and March 2009. A total of 161 grocery store retailers filled in the questionnaire, yielding a response rate of 17 percent.

Findings

This study shows that, of different types of security problems, grocery store retailers view shoplifting as the most severe. To reduce this and other security problems, retailers have invested in several forms of formal and informal surveillance. Among these investments CCTV systems seem to be the most prominent. However, respondents did not view high‐tech surveillance as the most effective. Instead, this study shows that retailers view security guards and activity of the personnel as the most effective ways for reducing vandalism, disturbance, and shoplifting in their stores. Furthermore, the results emphasize the importance of store environment, e.g. clean and well‐lit premises, as an important way of reducing crime.

Research limitations/implications

Qualitative studies could reveal issues that would enable more thorough operationalization of the concepts linked to surveillance and security in the store environment.

Practical implications

The paper sensitizes retail entrepreneurs to think where informal and formal surveillance work best in the store environment.

Originality/value

Very little empirical research has evaluated the effectiveness of surveillance in store environment. The present study fills this research gap, at least to some extent.

Abstract

Purpose

The purpose of this paper is to identify, and explore the importance of, ethical and socially responsible (ESR) factors in Australian consumers' choices of grocery products and stores.

Design/methodology/approach

Following an earlier study in the UK, an initial qualitative investigation, then a survey of grocery shoppers in New South Wales, was conducted. Factor analysis explored the structure of the choice factors for grocery products and stores in “main” and “top‐up” shopping situations. Finally, four multiple regression equations measured the effects of these factors.

Findings

This paper finds that, when “top‐up” shopping, ESR consumers are less discriminating than when “main” shopping. The provision of ethically farmed produce has most influence on store choice when “main” shopping, while retailers' fair trading and environmentally responsible policies have the greatest influence when “topping‐up”. The ethical provenance of goods is the most important factor in product choice.

Research limitations/implications

The constructs developed need to be validated internationally.

Practical implications

The two large Australian retail grocers may benefit by developing roles as “choice editors” on behalf of their ESR customers; whilst smaller retailers may gain advantage by concentrating on community‐based, environmentally friendly and fair trading policies. Manufacturers of grocery products may benefit by emphasizing their products' ESR provenance and their organisations' ethical policies.

Originality/value

This is the first study of its kind in Australia. It contributes to the development of an internationally relevant set of ESR shopping choice factors.
