Abstract
Purpose
The paper explores whether consumers' environmentally sustainable attitudes and behaviors (e.g. saving water, energy, etc.) are associated with high frequency of local food purchases. The study uses a large sample of individual data collected across all Italian regions as well as accounts for the respondents' socioeconomic characteristics.
Design/methodology/approach
The analysis uses a large sample of individual-level data (n = 21,081) collected by the Italian National Bureau of Statistics in the annual Italian Multipurpose Households Survey (MHS). Data contain individual information on the frequency of local food purchases as well as socioeconomic characteristics and environmentally friendly attitudes and behaviors. Data were analyzed using a multivariate ordered logit regression.
Findings
Results indicate that individuals sensitive to environmental issues and adopting sustainable behaviors are more likely to purchase local food products than others. Also, age, education and occupational status positively are associated with a high frequency of local food purchases. Reading food nutrition labels, living in small communities as well as buying organic products are strong predictors of a higher frequency of local food choices.
Originality/value
The role of individual sustainable attitudes and behaviors in local food purchases has been marginally investigated in the literature. We addressed the issue by jointly accounting for several individual-related characteristics potentially shaping such relation. To the best of authors’ knowledge, the authors use the largest sample ever used to explore the individual's local food purchases in Italy.

Purpose
The purpose of this paper is to frame innovation as a process of co‐creation according to a practice‐based view.
Design/methodology/approach
The paper focuses on the innovation practices that occurred within the web contexts of ten companies. In accordance with netnography research, data include preliminary studies of the web‐based context, naturalistic observations of the community and the activities of its members, and direct interactions with the members of the innovating community.
Findings
This work proposes the integration of innovation, practice and the emerging co‐creation research. The paper develops the five “Co‐s” model including: co‐ideation, co‐valuation, co‐design, co‐test and co‐launch. Each “Co‐“ represents a phase of the innovation process resulting from dynamic and on‐going interactions among resources, actions, and a group of actors who are interrelated via a dense network. Within each “Co‐“, the authors identify practices and elements of practices.
Practical implications
A firm's managers should influence co‐creation opportunities by contributing to script practices. These managers should be able to consider more clearly the full options of co‐creation activities and be involved in designing and responding to co‐creation initiatives. They should also understand that each phase could provide an opportunity for collaboration that enhances the value of co‐creation. In this manner, managers could orchestrate multiple resources (e.g., actors, actions tools and output language).
Originality/value
This work brings innovation into the realm of practice by moving the focus from the outcome to the process –, i.e. from innovation as a new artefact to the act of innovating. In this context, innovating is the system of on‐going co‐creation practices performed by people who merge knowledge, actions, tools, languages and artefacts to create something new and better. In this view, innovators are carriers of practices.

Abstract
Purpose
The purpose of this study is to describe the design and validation of a three-dimensional (3D)-printed phantom of a uterus to support the development of uterine balloon tamponade devices conceived to stop post-partum haemorrhages (PPHs).
Design/methodology/approach
The phantom 3D model is generated by analysing the main requirements for validating uterine balloon tamponade devices. A modular approach is implemented to guarantee that the phantom allows testing these devices under multiple working conditions. Once finalised the design, the phantom effectiveness is validated experimentally.
Findings
The modular phantom allows performing the required measurements for testing the performance of devices designed to stop PPH.
Social implications
PPH is the leading obstetric cause of maternal death worldwide, mainly in low- and middle-income countries. The proposed phantom could speed up and optimise the design and validation of devices for PPH treatment, reducing the maternal mortality ratio.
Originality/value
To the best of the authors’ knowledge, the 3D-printed phantom represents the first example of a modular, flexible and transparent uterus model. It can be used to validate and perform usability tests of medical devices.

Abstract
Purpose
The paper offers a comprehensive understanding of how digital transformation affects business models and how firms operate and compete effectively and successfully in a digital economy.
Design/methodology/approach
The research adopted an abductive approach (Dubois and Gadde, 2002) through constant movement between theory and empirical evidence. A systematic literature review led the first conceptual development and examples of practices from cultural heritage sectors were used in the theorizing process.
Findings
This paper depicts a digital model framework through a set of assumptions about how an organization creates and delivers value in an interconnected way by orchestrating new interactive processes, and providing experience propositions to customers, and about how value is framed in terms of economic, social and cultural outcomes.
Originality/value
The study contributes to the scientific debate by discussing the role of digital business models as enhancements more rather than replacements of traditional business models; it frames a digital business model as consisting of three main pillars: value orchestration, experience propositions and value sharing.

Abstract
Purpose
The purpose of this paper is to contribute to the interdisciplinary debate promoted by service research community by establishing the conceptual frame within which different perspectives addressing systemic and multifaceted approaches to innovation are framed. Growing research interest in innovation has led to different definitions, which are referred to here as “innovation system(s)”, “innovation network(s)” and “innovation ecosystem(s)”. The paper examines the theoretical foundations, outcomes, and patterns of contributions to which each innovation perspectives is tied and proposed a subject and the framework allowing an exploration of an interdisciplinary dialogue between the different research positions.
Design/methodology/approach
A literature review was conducted to discern differences in concepts and their meanings. An overview obtained using Web of Knowledge leads to a focus on studies, followed by a content analysis using NVivo, which enables identification of key concepts and their definitions. By highlighting relationships among terms, the paper establishes a framework of the ontological assumptions of different innovation discourses and explores their contribution to the interdisciplinary dialogue promoted by service research perspective on innovation.
Findings
A comparison among the three innovation perspectives leads us to focus on innovation itself, alongside context, actors, enablers, and governance, which are useful to mark the commonalities and differences among the three research approaches. The framework is helpful to break down the fragmented and sometimes overlapping points of view of innovation and provides a more integrative stance from which to address the emergence of the service ecosystems approach on innovation.
Research limitations/implications
The investigation focuses on three innovation perspectives and on top-cited articles alone; hence, it can be complemented with a full analysis through a bibliometric approach to test whether the features highlighted are linked to other elements. Moreover, the different approaches grouped on “innovation ecosystems” perspective suggest the possibility to enhance service ecosystems discourse on innovation by looking at different knowledge and contributions that are rapidly growing in this area.
Social implications
The central idea this work puts forward is that after some decades of separation, there is a need to move towards an increasing convergence of economics, business and service based on the milestones of innovation systems, innovation networks, and innovation ecosystems thoughts.
Originality/value
This research sheds light on the different ways innovation, in multi-actor and the interconnected setting, is theoretically framed and described. By capturing established thinking in different innovation perspectives, the paper provides an integrated framework to making sense of the full picture of economies and societies seen as complex networks and systems of service systems.

The COVID-19 wave spread all over the global market, affecting all industries. This paper aims to develop the understanding of how service systems can enhance their viability when facing rapid systemic changes.
Design/methodology/approach
The authors use data from Reddit, and particularly the subreddit r/coronavirus, to identify posts that discuss the impact of coronavirus on business. The authors use an algorithm to scrape the data with business-related search terms and elaborate relevant posts.
Findings
The findings show key topics and related sentiments on the impact of COVID-19 on business. Service systems can enhance viability by identifying alternative paths for emerging opportunities (by being creative), seize opportunities offered by the changing environment (by being opportunistic), not compromise conditions for internal balance (by being resilient), focus attention on critical purposes (by being essential) and perform nonharmful actions (by being responsible).
Originality/value
This paper proposes a framework depicting five possible key enhancers of viability to face a systemic crisis. In brief, companies need to ensure that they are creative, opportunistic, resilient, essential and responsible.

Purpose
The purpose of this paper is to offer a fresh framing of innovation, as service innovation/value innovation.
Design/methodology/approach
By examining the visions, patterns and outcomes of three different research approaches to understanding innovation – goods-dominant (G-D) logic, the resource-based approach and service-dominant (S-D) logic – the authors strive to outline the contribution of each to the debate on innovation. This investigation involves a comprehensive literature review. Scrutiny of a case company provides a means of identifying and illustrating how these approaches play out in a real business context.
Findings
A framework for innovation builds on the comparison of the three research approaches. G-D logic, when analysed in terms of new product development and new service development, positions innovation as an output (a new good or service) of a business's internal processes, with the firm as the main actor. The resource-based approach establishes the drivers of innovation as knowledge, capabilities and relationships, but the firm is still the main innovator. S-D logic addresses “open” innovation processes in which all actors in the network can mobilize and integrate their resources to become value co-innovators.
Research limitations/implications
This study builds on the literature review by offering a more systematic way of dealing with the different research traditions in innovation debate.
Practical implications
This study spurs managers to question the validity of dominant logic and how it affects the decision-making process. The conceptualization of innovation within S-D logic provides new avenues for decision makers and practitioners to tackle topical challenges of global competition.
Originality/value
The value of this paper lies in defending the premise that S-D logic is better suited than the other two research traditions to frame current innovation within the context of global competition because it moves innovation beyond mainstream conceptualization: from “products and services” to “service and value”, from “buyer-seller dyads” to “ecosystem relationships”, and from “closed/linear process” to “open/co-created process”.

Abstract
Purpose
The aim of this paper is to determine chemical and sensory differences of between craft and industrial/or commercial beers. Beer market is nowadays booming and consumers are in the search of new and healthier products.
Design/smethodology/approach
Here, commercial and craft beers were chemically analyzed and sensory evaluated. Chemical analysis included pH, bitterness, color, total polyphenol content and antioxidant activity. Likewise, 40 sensory descriptors were evaluated by trained panelists, including visual, olfactory and gustatory attributes. In addition, an electronic nose (e-nose) was tested to determine its suitability to discriminate beer type and/or style according to their volatiles profile.
Findings
Craft beers presented higher values of color, bitterness and antioxidant activity when compared to commercial beers. Sensory descriptors showed craft beers to be associated with the highest scores in visual, olfactory and gustatory descriptors. Data from e-nose explained 97% of the total variability of the volatile compounds in the analyzed beers, indicating the suitability of this device to discriminate beer types.
Originality/value
Results are of interest for design of marketing and selling techniques for craft brewery managers. In addition, cheap and easy-managing device as e-nose resulted in a valuable tool to monitoring beer quality.

Purpose
This study aims to analyze how, under the stakeholder theory, corporate social responsibility (CSR) might favor the emergence of circular economy (CE) in the Agri-food sector, which is a relevant context, as it is technologically dynamic and requires paying attention to all the stakeholders.
Design/methodology/approach
An exploratory, qualitative research design has been adopted to study the phenomenon in detail, as it facilitates the understanding of complex phenomena such those under investigation and helps enrich existing theory with new insights from real-world cases to add theoretical generalizations to the existing body of research in the field.
Findings
The results of this study highlight that companies adopting CSR models are oriented toward circularity.
Practical implications
This study provides useful indications to managers and policymakers as to how to favor the two approaches (CSR and CE) and benefit all the stakeholders.
Originality/value
While there is wide scholarly and managerial interest toward CSR and CE, previous research has mainly analyzed CE and CSR as two independent phenomena. Therefore, there is a lack of understanding about how the two areas are linked. Following previous studies that have started to theoretically argue an interconnection between CSR and CE, in this research, it has been empirically investigated, and further explored theoretically, whether CSR can implicitly encourage the emergence of CE approaches.
