Abstract

Purpose

Nature and occurrence of food-borne pathogens in raw and processed food products evolved greatly in the past few years due to new modes of transmission and resistance build-up against sundry micro-/macro-environmental conditions. Assurance of food health and safety thus gained immense importance, for which bio-sensing technology proved very promising in the detection and quantification of food-borne pathogens. Considering the importance, different studies have been performed, and different biosensors have been developed. This study aims to summarize the different biosensors used for the deduction of food-borne pathogens.

Design/methodology/approach

The present review highlights different biosensors developed apropos to food matrices, factors governing their selection, their potential and applicability. The paper discusses some related key challenges and constraints and also focuses on the needs and future research prospects in this field.

Findings

The shift in consumers’ and industries’ perceptions directed the further approach to achieve portable, user and environmental friendly biosensing techniques. Despite of these developments, it was still observed that the comparison among the different biosensors and their categories proved tedious on a single platform; since the food matrices tested, pathogen detected or diagnosed, time of detection, etc., varied greatly and very few products have been commercially launched. Conclusively, a challenge lies in front of food scientists and researchers to maintain pace and develop techniques for efficiently catering to the needs of the food industry.

Research limitations/implications

Biosensors deduction limit varied with the food matrix, type of organism, material of biosensors’ surface, etc. The food matrix itself consists of complex substances, and various types of food are available in nature. Considering the diversity of food there is a need to develop a universal biosensor that can be used for all the food matrices for a pathogen. Further research is needed to develop a pathogen-specific biosensor that can be used for all the food products that may have accuracy to eliminate the traditional method of deduction.

Originality/value

The present paper summarized and categorized the different types of biosensors developed for food-borne pathogens.

Abstract

Purpose

The purpose of this research is to identify and investigate some natural dyes with halochromic properties for potential use as food spoilage indicators to reduce waste and curve the negative effects of food borne diseases.

Design/methodology/approach

Exactly 10 potential dye-yielding plants were selected based on their colour (mostly purple, red, maroon and pink). Solvent extraction was used to extract the dyes and pH differential method was used to determine the concentrations of anthocyanin in the extracted dyes. Different concentrations of hydrochloric acid and sodium hydroxide (0.1 M, 1 M and 2 M) in drops and in excess as acidic and basic solution, respectively, were used to test the halochromicity of the extracted dyes. Methyl red (a synthetic dye) was used as a reference standard/control. The pH of the dyes was recorded before and after addition of both NaOH and HCl solutions.

Findings

Five out of the 10 dyes extracted (labelled as dye A–E for Ti plant (green Cordyline fruticosa), coleus (Coleus blumei), paper flower (Bougainvillea glabra), painted nettle (Palisandra coleus) and purple heart (Setcresea purpurea), respectively, were found to be halochromic (even at low doses) by changing its colour when exposed to both acidic and basic solutions. While other dyes labelled F–J for red acalypha (Acalypha wilkesiana), golden shower (Cassia fistula), golden dew drop (Duranta repens), wild sage (Lantana camara var Aculeata) and pink oleander (Apocynaceae Nerium oleander), respectively, were either completely insensitive to the solutions in drops, slightly sensitive at high doses or the colour change is insignificant. Although some dyes were found to be more sensitive than others but in most cases, the colour changes in halochromic dyes were more stable in acidic conditions than in basic making it more sensitive to the basic than the acidic solution with the exception of dye A and E (to some extent) which was sensitive to both acidic and basic solution. The anthocyanin contents of dye A–J were found to be between the range of 2.28–10.35 mg/l with dye E having the lowest and dye J with the highest anthocyanin concentration, respectively. The initial pH of all the dyes falls within the range of 4.8–7.3 with most found within the acidic range.

Originality/value

Halochromic dye research studies are still at the infancy stage in developing world despite the vast available and abundant potential natural halochromic dye-yielding plants. The study explored this area of research and gives an opportunity for the development of smart packaging for pH-sensitive foods using natural dyes as an alternative to conventional synthetic dyes to reduce cost and also curve the negative effect of synthetic dyes as well as food borne diseases.

Abstract

Purpose

Despite its health benefits, vegetable consumption is low in urban Nigeria. Interventions have been successful in increasing urban Nigerians' vegetable intake in the home environment, but interventions doing so for popular out-of-home consumption are lacking. This study aimed to design, implement and assess an intervention to increase the vegetable intake of urban Nigerians through street foods.

Design/methodology/approach

A quasi-experimental design was applied in Lagos, Nigeria. During the intervention, 12 trained street food vendors (SFVs) actively promoted the health benefits of vegetables to their customers (using marketing statements and posters) and provided the option to buy an additional green leafy vegetables (GLVs) side dish to their meal. Purchases were observed, and a survey was conducted before and during the intervention to measure perceived meal quality and satisfaction. Six to eight weeks after the intervention, a mystery shopper visited the vendor to assess if they were still selling additional GLVs.

Findings

Almost half (46%) of the 1,506 observed customers bought additional GLVs during the intervention. Both at baseline (N = 452) and during intervention (N = 564), meal satisfaction was high. Users were on average more educated and older than non-users. Most vendors did not perceive the sale of additional GLVs as additional work. Six to eight weeks after the intervention, nine vendors (75%) were still selling additional GLVs.

Originality/value

This study showed that SFVs informing consumers on the potential health benefits of vegetables and offering these vegetables in street food dishes at a commercially viable price is an interesting option to increase vegetable intake.

Abstract

Purpose

The growing awareness of climate risks associated with food safety issues has drawn the attention of stakeholders urging the food industry to carry out a sustainable food safety management system (FSMS). This study aims to investigate whether the critical success factors (CSFs) of sustainable FSMS can contribute to achieving climate neutrality, and how the adoption of FSMS 4.0 supported by the Industry Revolution 4.0 (IR 4.0) technologies moderates the impact of the CSFs on achieving climate neutrality.

Design/methodology/approach

Survey data from 255 food production firms in China and Vietnam were utilised for the empirical analysis. The research hypotheses were examined using structural equations modelling (SEM) with route analysis and bootstrapping techniques.

Findings

The results show that top management support, human resource management, infrastructure and integration appear as the significant CSFs that directly impact food production firms in achieving climate neutrality. Moreover, the results demonstrate that the adoption of FSMS 4.0 integrated with the three components (ecosystems, quality standards and robustness) significantly moderates the impact of the CSFs on achieving climate neutrality with lower inputs in human resources, infrastructure investment, integration and external assistance, and higher inputs in strengthening food safety administration.

Originality/value

This study provides empirical findings that fill the research gap in understanding the relationship between climate neutrality and the CSFs of sustainable FSMS while considering the moderating effects of the FSMS 4.0 components. The results provide theoretical and practical insights into how the food production sector can utilise IR 4.0 to attain sustainable FSMS for achieving climate neutrality.

Abstract

Purpose

The hygiene factor is always imperative when customers consider a certain restaurant, and the information contained in customer reviews can be an efficient approach to gauge a restaurant's hygiene during gaps in the official inspection. Therefore, the purpose of this study was to investigate whether information obtained from online reviews could predict the upcoming hygiene rating, specifically, evaluating the impact of both qualitative and quantitative content of reviews on the restaurant hygiene rating.

Design/methodology/approach

The quantitative research method with big data analytic techniques was applied in this study. In total, 127,656 pieces of data collected from 1,710 restaurants in four major cities in the USA were used in the analysis. Both quantitative factors (i.e. reviewer's numerical rating, days to review, readability, useful/funny/cool) and qualitative factors (i.e. eight emotional dimensions of textual reviews) were analyzed from the online customer reviews and considered in predicting the restaurant's hygiene rating.

Findings

Six out of eight emotional dimensions including anger, disgust, fear, sadness, surprise and trust were identified as having significant influences on the restaurant hygiene ratings. While three quantitative variables including days to review, readability and usefulness were identified with significant impacts on the dependent variable of restaurant hygiene rating.

Originality/value

This study opens an avenue for innovative research that establishes a connection between customers' reviews and restaurants' inspection systems. The results allow restaurants to predict an impending hygiene inspection rating upon dynamic assessment of review content and aid in adjusting hygiene measures accordingly.

Abstract

Purpose

The global food industry is faced with the dilemma of finding a balance between food wastage and food shortage. Approximately one-third of food produced globally goes to waste, while about 800 million people suffer from undernourishment. Given this context, the purpose of this study is to investigate the unresolved challenges related to enhancing transparency associated with products of high perishability and low shelf life.

Design/methodology/approach

The authors conducted 25 interviews with global agri-food supply chains (AFSCs) experts to ask what impedes the progress of the current technologies, such as blockchain, to enable transparency and traceability (T&T) in AFSCs.

Findings

The findings indicate barriers at the individual, firm and supply chain levels. Based on these barriers, the authors propose an interconnected framework to explain technologically-driven T&T and guide on barrier removal from AFSCs. The authors conclude that by applying technology (i.e. blockchain) the authors can resolve the tension of supporting T&T in AFSCs. This can enable the efficient and transparent tracking of goods, reduction of food waste and loss, as well as promotion of the use of recyclable packaging and further sustainable practices and materials, all of which are aligned with a range of UN Sustainable Development Goals (2, 8, 10 and 12). Moreover, the authors see that some factors are interrelated. Based on these factors, the authors build an interconnected framework to guide on barrier removal from AFSCs. Managers in AFSC would find the findings especially relevant.

Originality/value

Drawing on industrial network theory and signalling theory, the authors propose an interconnected framework for explaining barriers (challenges) and potential solutions (opportunities) to T&T in AFSCs. This framework is developed by examining the interconnections of barriers at micro, meso and macro levels and applying signalling theory to explain how solutions address these barriers. The specific contributions of this study are: the list of barriers that impede the implementation of technological solutions for T&T in AFSCs; and a three-stage framework that explains how to remove the barriers for T&T. The study is limited by the focus on blockchain, which calls for future research once the next decentralised technology becomes available.

Abstract

Purpose

Policy coherence is a complex and tough task for many developing nations because their capacity to examine and deliver evidence-based inputs to policymaking is limited, and policy dialogue platforms need to be effectively used. Resolving these difficulties is a critical requirement for policy consistency. As a result, the study focuses on the level of policy coherence for climate change adaptation (CCA), disaster risk reduction (DRR) and sustainable development goals (SDG) in Sri Lanka and suggests routes for policy coherence for Resilience. This study aims to investigate the coherent approach of CCA, DRR and SDG; to identify concerns in policy documents addressing the coherence of CCA, DRR and SDG in local context; and to propose policy coherence suggestions for resilience in Sri Lanka.

Design/methodology/approach

Methodology comprises a review and content analysis of 17 policy and legal documents in Sri Lanka and a qualitative study. The qualitative approach consists of semistructured interviews that obtained deep and broad expertise knowledge with ten government representatives and stakeholders. Both content analysis and interview data were analyzed by using NVivo.

Findings

It was discovered that there are several issues with the coherence of policies in Sri Lanka, including the fragmented approach, lack of integration, inadequate coordination, limited resources and lack of monitoring and evaluation. The policies are inspired by international frameworks, and local implementations are not focused, leading to inadequate implementation of policies. The lack of development cooperation for the use of innovative approaches, such as climate-resilient infrastructure and environmentally friendly solutions for CCA and DRR, further aggravates the situation. Another concern is the lack of land use management and responsibility for the development of physical infrastructure for DRR integration with CCA. It is found that there is a limited community involvement which is vital for the implementation of policies. Local implementations are encouraged to fill the gaps in existing policies/acts. The analytical framework of the study is based on a preliminary examination of policy documents, a review of the literature and discussions with practitioners. The framework reflects the current situation of policy integration which addresses strategic, conceptual, institutional, operational and financial coherence. The research suggests pathways for achieving policy coherence in CCA, DRR and SDG in Sri Lanka, such as enhancing the strategic coherence by improving goals to increase the coherence within CCA, DRR and SDG; improving the credibility of the unified approach for developing DRR and CCA risk assessments; intensifying institutional cooperation and stakeholder management; improving the common monitoring and evaluation; establishing implementation strategies; and increasing the community involvement.

Research limitations/implications

The study on policy coherence in Sri Lanka recommends increasing community and professional involvement, conducting more research, developing a national strategy, increasing capacity building, strengthening international collaboration and fostering multisectoral collaboration. These recommendations can help improve policy coherence between CCA, DRR and SDGs, align policies with national goals and priorities and improve implementation effectiveness. By implementing these recommendations, Sri Lanka can address the challenges of climate change and natural disasters and achieve SDGs.

Practical implications

The study on policy coherence for resilience in Sri Lanka has practical implications, including improved coordination and resource allocation, increased capacity building, improved reputation and sustainability. By integrating CCA, DRR and SDGs, this study can help Sri Lanka become more resilient to climate change and natural disasters, achieve SDGs and become a responsible actor in the international community. These implications can contribute to a more sustainable future and ensure that development goals are achieved in a way that is resilient to climate change and natural disasters.

Social implications

Increased community participation: the study emphasizes the importance of community involvement in the policy development process. This can help build trust between communities and government agencies, improve transparency and ensure that policies are developed in a way that is responsive to local needs and priorities.

Originality/value

Based on the identified existing loopholes in the policies and pathways to policy coherence, the issues in policymaking could be overcome. It could be used to establish strong linkages between policies based on CCA, DRR and SDGs to achieve long-term resilience.

Abstract

Purpose

Food supply chains (FSCs) are fast becoming more and more complex. Sustainability is a necessary strategy in FSCs to meet the environmental, economic and societal requirements. Industry 4.0 (I4.0) applications for a circular economy (CE) will play a significant role in sustainable food supply chains (SFSCs). I4.0 applications can be used in for traceability, tracking, inspection and quality monitoring, environmental monitoring, precision agriculture, farm input optimization, process automation, etc. to improve circularity and sustainability of FSCs. However, the factors integrating I4.0 and CE adoption in SFSC are not yet very well understood. Furthermore, despite such high potential I4.0 adoption is also met with several barriers. The present study identifies and analyzes twelve barriers for the adoption of I4.0 in SFSC from an CE context.

Design/methodology/approach

A cause-effect analysis and prominence ranking of the barriers are done using Rough-DEMATEL technique. DEMATEL is a widely used technique that is applied for a structured analysis of a complex problems. The rough variant of DEMATEL helps include the uncertainty and vagueness of decision maker related to the I4.0 technologies.

Findings

“Technological immaturity,” “High investment,” “Lack of awareness and customer acceptance” and “technological limitations and lack of eco-innovation” are identified as the most prominent barriers for adoption of I4.0 in SFSC.

Originality/value

Successful mitigation of these barriers will improve the sustainability of FSCs through accelerated adoption of I4.0 solutions. The findings of the study will help managers, practitioners and planners to understand and successfully mitigate these barriers.

Abstract

Purpose

This paper aims to highlight the localised shelter solutions to fulfil adequate and disaster resilient housing needs of urban informal settlers of Honiara, the capital city of Solomon Islands, in a way that is sensitive to their unique challenges, values and aspirations, is gender- and disability-inclusive, and considers housing from the complete lifecycle of a disaster (pre-, during- and post-).

Design/methodology/approach

Qualitative data was gathered through empirical research through five community workshops at five hotspot settlements, two stakeholder workshops and a stakeholder interview. Semi-structured questions as well as photographs of housing and settlement were used for data collection. With an emphasis on self-recovery, the identified shelter needs were then matched with the roles and responsibilities of the Government to support a process of “assisted” self-preparedness and recovery.

Findings

The output of the research was the Solomon Islands Shelter Guide. This paper draws from the Guide to present some of the findings. One of the key findings was an emphasis on shelter self-preparedness and self-recovery. However, in order for them to do that, they needed a combination of assistance – technical knowledge, materials and financial support – which is tailored to their settlement’s specific needs and based on hazard damage assessment. While the Guide provides one form of the assistance (i.e. technical), this paper is a call for action from the Solomon Islands Government and shelter responders to fulfil the rest of the community needs for shelter adequacy.

Research limitations/implications

The paper contributes to existing scholarship on shelter after disasters by adding “assisted” in front of self-recovery, in line with the limited access to resources by the most vulnerable to recover, despite housing being” a human right and definition of adequate housing (UN-Habitat, 2015, 2021), which includes freedom of choice, entitlements and meeting minimum adequacy criteria.

Practical implications

There are many implications of this research. Since the publication of the Shelter Guide, there is excitement among most humanitarian and development agencies, government authorities and the local communities in Honiara. The Guide forms the first step in contributing to identified needs and strengthening community capacities to self-build, self-recover or self-retrofit one’s house based on their own choice of materials, design, social and economic circumstance. However, it provides one of the three elements identified as needs by the communities, as i) technical guidance, and a kit-of parts for multi-hazard safe housing, ii) financial and economic assistance and iii) a political voice or being supported and heard by the government. The research team are working with the same five urban informal communities in 2022–2023 to develop and operationalise local disaster plans (in partnership with local non-government organisations), capacity-building activities and translation of the Shelter Guide into technical posters (for local builders) and graphic novel in local pidgin language, as part of the Climate Resilient Honiara project (funded by the United Nations framework convention on climate change (UNFCCC) Adaptation fund and administered by UN-Habitat). In the longer term it would be worth evaluating the practical implications of the Guide or to examine whether the proposed socio-technical and governance guidance will find roots in the local culture.

Originality/value

While the Guide adhered to internationally agreed concepts of self-recovery, incremental shelter and core space, it contributes to existing scholarship on shelter after disasters by adding “assisted” in front of self-recovery, in line with housing as a human right and adequate housing (UN-Habitat, 2015, 2021), including freedom of choice, entitlements and meet minimum adequacy criteria, all of which require materials and financial assistance by the relevant in-country authorities.

Abstract

Purpose

In view of the increasing trend in food policies targeting the promotion of consumer interest in locally produced foods and growing developments in willingness-to-pay (WTP) methodologies, the authors investigate consumer preference for packaged traditional drink asaana.

Design/methodology/approach

The study used a simple random sample of 336 consumers to draw on perception index and contingent valuation methods to evaluate consumers' perceptions of the attributes of packaged asaana – a traditional maize-based beverage produced in Ghana (also known as Ghana Coca-Cola). A tobit regression model was employed to analyze consumers’ WTP for the product.

Findings

Analyzing the factors that influence consumers' WTP for packaged asaana using the tobit regression model, the study established the existence of positive health and nutrition, economic benefits and purchasing decision-making perceptions for asaana. While the results further showed that consumers are willing to pay a premium for well-packaged asaana, demographics such as age, income level, labeling, price of the product and savings were found to exert significant influence on consumers’ WTP for packaged asaana. Salient recommendations for food processors and relevant government agencies and food policy implications are identified.

Research limitations/implications

Comprehending WTP provides valuable understanding regarding consumer qualms, actions and WTP for more secure traditional drinks and an examination of how the different factors that influence WTP for local beverages help boost local beverage production and guarantee employment.

Practical implications

Analyzing WTP data for traditional drinks reveals important implications for production, marketing and public health policies. Certification systems for traditional beverages may be beneficial, and the findings can be used to create public awareness campaigns about the safety of local drinks.

Originality/value

Assessing the WTP among Ghanaian consumers for traditional drinks, specifically asaana, is a ground-breaking study. The contingent evaluation (CE) and tobit regression approaches utilized in this research are strong, and the results obtained can guide decisions related to traditional drink production, marketing and the development of public health policies.
