Abstract

All methods of egg preservation aim to prevent the entry and growth of spoilage or pathogenic micro‐organisms which would make the egg unpalatable or dangerous to health. Although the contents of chickens' eggs are sterile on laying, the shell surface may be contaminated with many micro‐organisms — on average there may be 130,000 bacteria on the shell of an egg. Most of these organisms, which come from the nest litter or the bird's excreta, will spoil the egg but are not harmful to health, for example Pseudomonas fluorescens which causes ‘green rot’ and off‐odours if allowed to penetrate the egg and grow. Some of the contaminating organisms may be pathogenic, food‐poisoning bacteria such as Salmonella species, which are sometimes present in chicken droppings, but pathogens are very rare in chickens' eggs. Similar salmonellae have been implicated in numerous food‐poisoning outbreaks associated with duck eggs, as the aquatic environment of the duck encourages their growth and on no account should duck eggs be preserved.

Abstract

Contemporary literature reveals that, to date, the poultry livestock sector has not received sufficient research attention. This particular industry suffers from unstructured supply chain practices, lack of awareness of the implications of the sustainability concept and failure to recycle poultry wastes. The current research thus attempts to develop an integrated supply chain model in the context of poultry industry in Bangladesh. The study considers both sustainability and supply chain issues in order to incorporate them in the poultry supply chain. By placing the forward and reverse supply chains in a single framework, existing problems can be resolved to gain economic, social and environmental benefits, which will be more sustainable than the present practices.

The theoretical underpinning of this research is ‘sustainability’ and the ‘supply chain processes’ in order to examine possible improvements in the poultry production process along with waste management. The research adopts the positivist paradigm and ‘design science’ methods with the support of system dynamics (SD) and the case study methods. Initially, a mental model is developed followed by the causal loop diagram based on in-depth interviews, focus group discussions and observation techniques. The causal model helps to understand the linkages between the associated variables for each issue. Finally, the causal loop diagram is transformed into a stock and flow (quantitative) model, which is a prerequisite for SD-based simulation modelling. A decision support system (DSS) is then developed to analyse the complex decision-making process along the supply chains.

The findings reveal that integration of the supply chain can bring economic, social and environmental sustainability along with a structured production process. It is also observed that the poultry industry can apply the model outcomes in the real-life practices with minor adjustments. This present research has both theoretical and practical implications. The proposed model’s unique characteristics in mitigating the existing problems are supported by the sustainability and supply chain theories. As for practical implications, the poultry industry in Bangladesh can follow the proposed supply chain structure (as par the research model) and test various policies via simulation prior to its application. Positive outcomes of the simulation study may provide enough confidence to implement the desired changes within the industry and their supply chain networks.

Abstract

Purpose

This paper empirically investigates the demand for pastured eggs in the United States and evaluates the welfare consequences of Japan's egg import tariff reductions for the US consumers.

Design/methodology/approach

Using household-level Nielsen Homescan panel data, a fixed-effects Heckman two-stage sample selection model is estimated.

Findings

The estimation results ascertain the importance of a set of household socioeconomic characteristics, which are found to influence both the purchase probabilities and the consumption amounts associated with pastured eggs. In addition, demand for pastured eggs is estimated to be inelastic, and pastured eggs are found to be a normal good, more specifically a luxury.

Research limitations/implications

The dataset used in this study reflect purchases only for at-home consumption, lacking information on away-from-home purchases.

Originality/value

Building upon previous research, this study makes the following distinct contributions to the current literature. To the best of our knowledge, it constitutes the first study to empirically examine the demand for pastured eggs, using household-level panel data and an estimation model that not only allows for left-censoring but also controls for regional and time fixed effects. Second, the present study reflects a unique effort in analyzing the adverse welfare consequences of the increased egg prices in the United States brought by a reduction of Japanese import tariffs on US-supplied eggs, focusing specifically on pastured eggs.

Abstract

Purpose

The purpose of this paper is to evaluate changes in selected quality traits of chicken table eggs during their storage under standard storage conditions and in refrigeration.

Design/methodology/approach

The sample consisted of 570 eggs from Hy-Line hens. The eggs were placed on trays of 30 pieces each, and then group C (control) eggs were stored at 14°C temperature and 70 per cent humidity and group F (experimental) eggs were refrigerated at 5°C and 30 per cent humidity. Changes in egg mass and air cell depth were measured on the laying day and, then, after every 7 days for 5 weeks for group C and for up to 24 weeks for group F. Initially for every week and then after every four weeks, the quality of 30 eggs from each group was evaluated. The following traits were analysed: whole egg (mass, specific gravity), shell (conductivity, strength, mass, thickness, and density) and content (proportions, pH, albumen quality and yolk colour).

Findings

It was shown that due to a significant limitation of qualitative changes (lower water loss, higher specific mass, lower shell conductivity, better albumen quality, lower pH content, more favourable proportions of morphological elements) in eggs stored in refrigeration despite prolonged time, reduced temperature should be considered as a factor allowing for a significant prolongation of egg shelf life during storage.

Originality/value

The unusually elongated time of the experiment allows for a practical implementation of the results, especially in the case of eggs intended for processing.

Abstract

Purpose

The purpose of this paper is to investigate consumer preference of and willingness to pay for eco-labelled eggs using cross-sectional data collected from Chongqing Municipality in China.

Design/methodology/approach

This study employs both conditional logistic model and mixed logistic model to conduct the empirical analysis.

Findings

The empirical results show that individual heterogeneous preference and attributes of eco-labelled eggs significantly influence consumer choices. More specifically, higher per capita income, families with pregnant women or children, higher level of trust in and knowledge of eco-labels contribute positively to choosing eco-labelled eggs, and attributes of eco-labelled eggs such as certification labels, free-range husbandry, and nutrition enrichment significantly increase consumer utility. Generally, the price premium that consumers are willing to pay for eggs containing “organic”, “free-range husbandry”, and “nutrition enrichment” labels is 375.0% more, equivalent to 42.8 Yuan/kg.

Originality/value

This study used first-hand survey data to reveal consumers’ heterogeneous preference of and willingness to pay for eco-labelled eggs based on the random utility theory.

Abstract

Purpose

The purpose of this paper is to understand consumer attitudes toward organic eggs by identifying their profiles and estimating the degree of their willingness to pay (WTP) for eggs with different attributes in order to evaluate the position of organic eggs.

Design/methodology/approach

Empirical data were collected from a face-to-face cross-sectional market survey, which involved a choice experiment design and a series of questions related to respondents’ attitudes and preferences in terms of organic egg consumption. A total of 552 consumers who are responsible for their household purchases were sampled, while the survey was performed in the major cities of seven regions of Turkey. The gathered data from the questions on consumer attitudes and preferences were analyzed using ordered probit, while the choice experiment data were analyzed through the use of conditional logit and mixed logit models.

Findings

Consumers perceive organic eggs to be healthy, nutritious and delicious food. In the study, we obtained three consumer groups (collectivist consumers, individualist consumers and reluctant consumers) with different characteristics in relation to organic egg consumption. When the motivations for organic egg consumption were analyzed, it was found that individual benefits have a greater impact than collectivist benefits on consumers’ choice to purchase organic eggs. According to the results of the regression analysis, consumers are willing to pay ₺0.76 more per egg for organic eggs compared to conventional eggs. Overall, consumers are reluctant to pay a premium in view of the functionality aspect of eggs.

Research limitations/implications

The results will help the actors within the egg industry to develop production and market-planning processes for differentiated egg markets according to consumer preferences and in terms of having the opportunity to select their ideal customer segments.

Originality/value

The research is the first study that analyses the motivations and the willingness of Turkish consumers to purchase organic eggs through using a choice experiment design and regression models. Original findings include the segmentation of consumers according to personal beliefs and norms. The research is also important in terms of comparing two regression model results in methodical terms. The similarity among the obtained results from the regression analysis increased the reliability of the study.

Abstract

Purpose

Little is known about the external stimuli, which trigger a change in a consumer's cognitive and affective state and lead to a consumer's willingness to pay a premium price (WTPPP) behavioural response. This study aims to close this knowledge gap by providing insight into how a unique combination of antecedents affects consumer attitude toward purchasing free-range eggs and leads to a behavioural response, which is measured by consumer WTPPP for free-range eggs.

Design/methodology/approach

An online questionnaire was developed, with data collected from 392 Australian consumers. This study employs confirmatory factor analysis (CFA) to examine the measurement model before testing the hypothesised relationships using covariance-based structural equation modelling (CB-SEM).

Findings

The study reveals that the tested customer perceived value (CPV) dimensions, animal welfare and source credibility are positive stimuli of consumer attitude towards purchasing free-range eggs, which subsequently promotes consumer WTPPP for free-range eggs.

Research limitations/implications

Findings drawn from Australian consumers may not be generalisable to consumers from disparate contexts, and stimuli beyond those tested may influence consumer attitude and WTPPP.

Originality/value

This is one of the first studies to use the stimulus–organism–response (SOR) theory to investigate and contribute to extant knowledge and understanding of consumer behaviour relating to free-range eggs and specifically of consumer attitude towards purchasing and WTPPP for free-range eggs. This study offers practical implications for free-range egg farmers, retailers and policymakers.
