Abstract

Purpose

This study aims to evaluate the relationship between the estimated levels of diet advanced glycation end products (dAGEs) intake and obesity in university students.

Design/methodology/approach

This cross-sectional study included 301 university students aged 18–30 years. dAGEs was estimated using a food frequency questionnaire, for 549 routinely consumed food items and were reported by dividing total energy intake. Dietary intake and sociodemographic data were collected using validated questionnaires, and the anthropometric characteristics were measured. The relationship between anthropometric measurements and dAGEs intake was examined by binary logistic regression.

Findings

A total of 43.2% of the participants had high levels of dAGEs. A significant decreasing trend was found in the percentage of carbohydrate intake compared to the increasing trend in dAGEs consumption (p = 0.005). The percentage of fat intake and meat consumption were significantly higher in participants with the highest consumption, compared with the lowest consumption of dAGEs (p = 0.006). According to the dAGEs classification of participants, body mass index, waist circumference and energy intake were found to be significantly related in all model groups. Accordingly, the increase in body mass index, waist circumference and energy intake were determined as a risk factor in those with high dAGEs intakes.

Originality/value

The findings of this study emphasized that higher intake of dAGEs was associated with an increased risk of obesity parameters in college students.

Abstract

Purpose

The purpose of this study is to nutritionally evaluate dams exposed to caloric restriction or cafeteria diets during the lactation period.

Design/methodology/approach

Twenty-four female Wistar rats (n = 8/group) and their respective litters received during lactation: Control (CTRL) – received standard chow; Caloric restriction (CR) – received 50% of the ratio of the CTRL group; Cafeteria diet (CAF) – received cafeteria diet. Weighing of the mother rats and their respective litters occurred weekly and the diets were daily. At weaning, levels of glucose, total cholesterol, high-density lipoprotein, low-density lipoprotein (LDL) and triglycerides were evaluated. Abdominal adipose tissue was removed and weighed. Liver tissue was removed to determine the lipid profile.

Findings

CR dams showed lower food (p < 0.01), caloric (p < 0.01) and all macronutrients (p < 0.01) intake. This group also observed intense weight loss (p < 0.01), in addition to low litter weight (p < 0.01). CAF dams had higher caloric intake (p < 0.05) and increased consumption of lipids (p < 0.01). The CAF group also reported greater accumulation of abdominal adipose tissue (p = 0.01), elevated levels of LDL (p < 0.01) and hepatic lipids (p < 0.01), as well as a litter with higher weaning weight (p < 0.01).

Originality/value

Few studies have evaluated the effects of different models of malnutrition focusing on dams. CR dams showed severe weight loss, which may have caused their pups to be underweight. On the other hand, the CAF diet during lactation led to a higher consumption of lipids and accumulation of adipose tissue, which generated a high weight of the litter.

Abstract

Purpose

Malaysia transitions from a pandemic to an endemic state, beginning on April 1, 2022. The dietary intake and physical activity of university students were altered during the COVID-19 pandemic confinement period, but there is limited information on this topic in the post-COVID-19 period. This cross-sectional study aims to understand gender differences in dietary intake and physical activity among university students and investigate the factors influencing their body mass index (BMI) in the post-COVID-19 period.

Design/methodology/approach

The questionnaire used in this study comprised three main segments: sociodemographic information, a semiquantitative food frequency questionnaire and the International Physical Activity Questionnaire.

Findings

Results indicated that males exhibited significantly higher (p < 0.05) mean intakes of total dietary energy and macronutrients compared to females. Compared to the Malaysian Recommended Nutrient Intakes 2017, 76.4% of males and 68.8% of females had a sufficient daily energy intake. The majority of males (52.7%) and females (46.4%) were moderately physically active. Regression analysis revealed that male university students with lower fiber intake (ß = −0.309, p = 0.002) were significantly associated with higher BMI reading after confounding adjustment. However, a similar trend was not observed in female university students.

Practical implications

Understanding the gender differences in dietary intake and physical activity can provide insights into the development of effective gender-specific health promotion strategies and the formulation of policies aimed at promoting healthier lifestyles among university students in the post-COVID-19 pandemic era.

Originality/value

This study provides insights into the gender differences in the dietary and physical activity habits of university students, as well as the factors influencing their BMI in the post-COVID-19 pandemic era.

Abstract

Purpose

Millets are underused crops that have the potential to withstand harsh environmental conditions. Recent research has proved immense nutritional benefits associated with millets which have increased their utilization to some extent but yet their sole potential is left to be exploited. Different millet varieties have exceptional nutritional and nutraceutical properties which can ameliorate even the deadly conditions of cancers. They have significant protein composition ranging from 10% to 12% which possess effective bioactive potential. Protein hydrolysates containing bioactive peptides have been evaluated for their therapeutic effects against a variety of diseases. This review aims to discuss the bioactive potential of different millet protein hydrolysates to encourage research for development of effective natural therapeutics.

Design/methodology/approach

The present article elaborates on effective studies on the therapeutic effects of millet protein hydrolysates.

Findings

Several effective millet peptides have been reported for their therapeutic effect against different diseases and their antioxidant, anti-inflammatory, anticancer, antimicrobial and antidiabetic effects have been investigated.

Originality/value

This review focuses on millet bioactive peptides and their significance in treating variety of diseases. Thus, will further encourage research to explore the novel therapeutic effects of millet proteins hydrolysates which can eventually result in the development of natural and safe therapeutics.

Abstract

Purpose

This study aims to explore the link between prevalent risk factors for early childhood diarrhea, including hygiene, feeding, weaning practices and maternal education and the occurrence and severity of early childhood diarrhea in Saudi Arabia.

Design/methodology/approach

A case-control study was conducted, involving 98 mothers from the Eastern Region of Saudi Arabia (51 cases and 47 controls). Data were collected from both hospital and community sources. The collected data were statistically analyzed and depicted using descriptive statistics and frequency tables.

Findings

Demographic data revealed that 60% of mothers were housewives, 75% had normal deliveries and all babies were full term. In the study cohort, 44% of children aged one to two years. Four domains were compared: diarrheal management, hygiene, weaning and feeding practices. Diarrheal management was suboptimal in some cases: 29% increased fluid intake, 10% maintained adequate food intake, 50% sought medical advice, 58% were familiar with oral rehydration solutions and only 37% used them. Hygiene practices were deficient, with 35% using wipes or sanitizers, 64% handwashing before feeding and 52% adhering to the recommended 10-s duration. Controls exhibited better hygiene practices. Weaning practices were generally similar, with no significant differences between the two groups.

Originality/value

To the best of the authors’ knowledge, this is the first study to collectively report on the risk factors linked to early childhood diarrhea in Saudi Arabia. This study yields significant insights, highlighting the crucial role of managing diarrhea, educating mothers and implementing proper household practices in impacting the occurrence and severity of this perilous ailment.

Abstract

Purpose

The use of polysaccharides increases solubility and consistency and causes functions such as viscosity? Moisture and food emulsifier stabilizer. This study aims to enrich the formulation of low-fat mozzarella cheese using microcoated vitamin D3 (VD3).

Design/methodology/approach

This study investigates the addition of hydrocolloids to low-fat mozzarella cheese to enhance its properties and nutritional value. Tests were conducted on cheese samples with 0.05% and 0.25% hydrocolloid concentrations at various stages: before production and at three and six months’ postproduction. The samples were evaluated for elasticity, pH and solubility to select the best one, which was then fortified with VD3. The vitamin was microencapsulated using alginate and whey protein to shield it from light and oxygen, optimizing the formula using the response surface method. The fortified cheese was tested for VD3 content over its shelf life.

Findings

Results indicated that all hydrocolloids tested improved moisture and meltability of the cheese while higher protein levels increased stretchability two to threefold. Rice starch hydrocolloid at 0.05% concentration was chosen due to superior sensory scores and minimal oil separation. This study concluded that VD3 levels remained stable during the cheese’s shelf life, suggesting that this approach could enhance the nutritional value of low-fat cheese without compromising its quality. Therefore, after examining the obtained results and comparing the regression models, the results indicated that the Quadratic model was chosen to investigate the effect of independent variables on the response rate, which had a statistically significant difference with other models (p = 0.0019). Also the results of the area under the curve and using the encapsulation efficiency equation, the percentage of microencapsulated vitamin was obtained, and according to the simulation results, the encapsulation efficiency was reported as 89.02%.

Originality/value

Developing innovative functional dairy products fortified with VD3 could improve the vitamin D status in deficient populations. Therefore, these designs can be applied at industrial scales for functional cheese production.

Abstract

Purpose

This study aims to identify comfort food (CF) consumption and its associated factors during the pandemic period. The study also involves an online survey conducted five months after the quarantine started in Brazil.

Design/methodology/approach

Data on lifestyle, eating habits and anthropometric data were collected before and during the pandemic, and the differences in these habits were analyzed. Univariate and multivariate logistic regression models were performed to identify predictors of CF consumption by gender.

Findings

A total of 1,363 individuals were included in the sample, with a median age of 31 years old, of whom 80.3% were women. Since individuals were free to respond about the food consumed without predetermined categories, it was possible to carry out a faithful assessment of the occurrence of this behavior. At the same time, allowing the subjectivity and symbolism inherent to the concept of CF to be embraced. CF consumption was present for 54%, with “sweets” being the most mentioned group by both genders. The factors associated with CF consumption in women during the pandemic were increased snacking, increased bread, candies and alcoholic beverage intake, increased time spent at work, worsened sleep quality, reduced meals, perceived stress (PS), emotional eating (EE), age and increased frequency of meat intake. In men, the predictors for CF consumption were remote full-time work/study, PS, EE and early waking time. For both genders, CF consumption during the pandemic period was associated with PS and EE.

Originality/value

This study provides an important overview of the possible contributions of the pandemic on behaviors and food choices related to the consumption of CF in Brazilians. This information is valuable to support further studies to investigate and treat the impacts of the pandemic on lifestyle, eating habits and behavior, mental health and other factors in the postpandemic period.

Abstract

Purpose

The objective of the research is to evaluate the carbon footprint of the green asparagus (Asparagus officinalis L.) supply chain, encompassing the agricultural production to the packaging stage in Italy, as it is the sixth largest producer and the second largest in Europe. It provides an assessment in the province of Foggia and highlights the global perspective of the carbon footprint application in agro-food systems.

Design/methodology/approach

The carbon footprint (ISO 14067:2018) considers 1 t of packaged fresh asparagus as a functional unit in the agricultural production and packaging stage and is based on primary data collected in one of the leading companies of asparagus production in the province of Foggia, which markets about 0.21 kt of asparagus per year produced in about 31 ha. Data were integrated with face-to-face in-depth interviews and pre-filled checklists.

Findings

Findings show that the carbon footprint of 1 t of packaged fresh asparagus is equivalent to 335.31 kgCO2eq, of which 61% in the agricultural stage and 39% in the packaging one. The majority of the emissions are associated with the fertigation and the diesel consumption for the transportation of workers. Farmers should adopt green electricity so as to reduce the emissions associated with the electric pump for the extraction of water from artesian wells. Moreover, it would be desirable to replace mineral urea phosphate with organic fertilizers.

Originality/value

To the best of the authors’ knowledge, scholars have not yet investigated the environmental impacts of the green asparagus supply chain, even if it represents one of the most cultivated vegetables worldwide, with a global production that amounts to 8.5 Mt per year.

Abstract

Purpose

Research indicated that dietary antioxidants could improve immune system performance. This study aims to investigate the association of COVID-19 symptoms, total antioxidant capacity and serum inflammatory markers, with dietary antioxidants intake among angina patients.

Design/methodology/approach

A food frequency questionnaire was used in a cross-sectional study among 135 angina patients with COVID-19, to assess dietary antioxidants consumption. Serum levels of tumor necrosis factor, interleukin 1ß, malondialdehyde, high-sensitivity C-reactive protein and total antioxidant capacity were measured by enzyme-linked immunosorbent assay methods.

Findings

Among study angina patients, 76.67% followed unhealthy food patterns and 23.33% followed anti-inflammatory dietary patterns before hospitalization. The angina patients with anti-inflammatory food pattern had less fever (p = 0.021), cough (p = 0.018), dyspnea (p = 0.024), diarrhea (p = 0.014) and pneumonia severity index (p = 0.014) compared to patients with unhealthy food pattern. The serum levels of tumor necrosis factor, interleukin 1ß, high-sensitivity C-reactive protein and malondialdehyde, had a significantly negative association with dietary antioxidants intake (p < 0.05).

Originality/value

There are significant association between antioxidant intake with serum inflammation markers in COVID-19 patients. There is a need for more clinical trial studies for approval of these results.

Abstract

Purpose

Three-dimensional (3D) food printing is an innovative technology used to customize food products through the integration of digital technology and food ingredients. The purpose of this study is to assess the current state of research in the field of 3D food printing, identify trending topics and identify promising future research directions.

Design/methodology/approach

This bibliometric review systematically evaluates the field of 3D food printing using data from published literature in the Web of Science database. After reference screening, 812 articles were included in the analysis.

Findings

The result reveals that research in 3D food printing primarily focuses on the optimization and characterization of mechanical and rheological properties of food inks and that post-printing processing, such as laser treatment, has emerged recently as an important consideration in 3D food printing. However, extant works lack animal and human studies that demonstrate the functionality of 3D-printed food.

Originality/value

This sophisticated bibliometric analysis uncovered the most studied current research topics and the leading figures in the area of 3D food printing, providing promising future research directions.
