Abstract

Purpose

The countryside population has always been depended on the revenues earned from agricultural yields. These yields often suffer losses in the absence of coordination guidelines in the post-yield supply chains (PYSC). This study aims to identify, address and mitigate the post-yield supply chain impediments (PYSCIs) that lead to enormous amounts of waste and revenue losses. These are the parameters that require government and stakeholders’ attention for alleviation from losses.

Design/methodology/approach

Structural equation modelling (SEM) was performed to categorise the identified PYSCIs as “standard measures”. The motive for SEM results is to attract the stakeholders’ attention toward PYSCIs for business sustainability. The PYSCIs were clustered into three “standard measures” (i.e. strategic, tactical and operational measures) for revenue generation and reduced fresh produce spoilage in the countryside.

Findings

The SEM results suggest that the focus should be on revising minimum support prices and government support for initiatives, subsidy schemes and incentives at the strategic level. Tactical initiatives focus on linking markets including exports, research and development, attitude towards certification, value addition process adoption and reduced number of stages in the supply chain. The operational initiatives are attitudes towards agriculture and entrepreneurship, transportation infrastructure, supply chain coordination, information visibility, scientific design for packaging and handling and storage space availability for both long and short term at the village level.

Research limitations/implications

This study was performed in India; thus, the research outcomes of this study are restricted to adaption into the developing sub-continents with sub-tropical climates.

Practical implications

The existing level of losses in the PYSC demands introspection and policy changes at the farm level. In the era of cold chains, the Internet of Things, and other advanced mechanisms, a few elementary parameters must be worked upon to reduce PYSC losses. These parameters were identified as impediments to PYSC, requiring public, government and stakeholders’ attention. There is an urgent need for guidelines to be issued to mitigate losses. SEM was performed to attract the public, government and stakeholders’ attention toward impediments to fresh produce spoilage, opportunity generation and business sustainability.

Originality/value

This study uses a novel SEM approach where the PYSCIs were identified and empirically validated in an Indian context. The SEM approach will help in effective decision-making. Similar studies to manage the PYSCIs to reduce fresh produce spoilage with standard measures have not been reported in the literature.

Abstract

Purpose

We introduce decision support tools aimed at optimizing perishable food supply chain management, effectively balancing conflicting objectives such as the exporter’s product collection cost and the importer’s profit. This involves considering factors like perishability, selling price, discount rate, and order quantity to achieve optimal outcomes.

Design/methodology/approach

This study considered a three-echelon supply chain comprising farmers, a single exporter, and a single importer providing a single, random-lifetime, perishable product under deterministic customer demand. The proposed mathematical model derived the optimal order quantity, selling price, and discount rate for the entire supply chain. This integrated optimization model treats both demand and supply sides as a multi-objective problem, employing a nonlinear program and a two-stage capacitated vehicle routing problem formulation. Numerical examples and a case study focusing on Thailand durian supply chain were conducted to illustrate the approach of the proposed model.

Findings

Taking into account both the importer’s profit and the exporter’s product collection cost, the proposed integrated supply chain model and tools maximize profitability, minimizes waste, and meets demand by optimizing perishable product collection costs and proposing a discount system for selling prices.

Research limitations/implications

Limited to a single perishable product in a three-echelon international food supply chain. Future research can explore different products and supply chain contexts.

Practical implications

The tools enhance decision-making for supply chain managers, improving efficiency, reducing costs, and enhancing customer satisfaction in the perishable food industry.

Social implications

The proposed model aids in local workforce management by forecasting required manpower for upcoming seasons. By factoring in product quality and pricing, it ensures customers receive fresh products at fair prices. Furthermore, the near-zero waste concept enhances storage conditions at importers' facilities, contributing to improved environmental hygiene.

Originality/value

The integrated model and decision support tools offer a novel approach to address complexities and conflicting objectives in perishable food supply chains, providing practical insights for researchers and practitioners.

The indigenous and sustainable knowledge possessed by the tribal people and communities plays an extremely important role in the conservation of the climate. As per the United Nations Sustainable Development Goals (UN SDGs), tribal communities play an important role in preserving traditional knowledge, culture, food practices and textiles. The remains of the Indus Valley civilisation highlight the importance of the culture and religion. Animism and the worship of nature to achieve success in routines and tasks have been practised by these tribes for centuries. India is a mosaic of more than 705 different colourful tribes, and each of these tribes has their own identity that differentiates it from the other tribes. With increasing ecological complexities, the knowledge owned by the tribes is extremely useful in the preservation of the climate. This chapter seeks to explore the various hues and colours that constitute the mosaic of Indian tribal culture.

Abstract

Purpose

This article aims to evaluate published food cold chain (FCC) literature against risk management and supply chain sustainability concepts.

Design/methodology/approach

The article uses the theory refinement logic proposed by Seuring et al. (2021) to analyze the contents of FCC management-related literature published over the past 20 years. A sample of 116 articles was gathered using Web of Science and subsequently analyzed. The respective articles were then systematically coded against the frameworks of Beske and Seuring (2014) and Vlajic et al. (2012), which focused on building sustainable and robust supply chains, respectively.

Findings

The literature review revealed that debates around managing contemporary sources of disruptions/vulnerability and making FCCs more sustainable and resilient are gradually developing. However, an overarching risk management perspective along with incorporating social and environmental dimensions in managing FCCs still needs the adequate attention of the respective research community.

Research limitations/implications

The deductive internal logic of theory refinement approach used in this paper could have been further strengthened by using additional frameworks. This limitation, however, opens avenues for further research. The findings of the paper will stimulate the interest of future researchers to work on expanding our understanding related to sustainability and risk management in FCCs.

Originality/value

The paper is the first attempt to organize published FCC literature along dimensions of supply chain sustainability and risk management. The paper thus provides the respective researchers with a foundation that will help them adopt a focused approach to addressing the research gaps.

Abstract

Purpose

Food supply chains (FSCs) are fast becoming more and more complex. Sustainability is a necessary strategy in FSCs to meet the environmental, economic and societal requirements. Industry 4.0 (I4.0) applications for a circular economy (CE) will play a significant role in sustainable food supply chains (SFSCs). I4.0 applications can be used in for traceability, tracking, inspection and quality monitoring, environmental monitoring, precision agriculture, farm input optimization, process automation, etc. to improve circularity and sustainability of FSCs. However, the factors integrating I4.0 and CE adoption in SFSC are not yet very well understood. Furthermore, despite such high potential I4.0 adoption is also met with several barriers. The present study identifies and analyzes twelve barriers for the adoption of I4.0 in SFSC from an CE context.

Design/methodology/approach

A cause-effect analysis and prominence ranking of the barriers are done using Rough-DEMATEL technique. DEMATEL is a widely used technique that is applied for a structured analysis of a complex problems. The rough variant of DEMATEL helps include the uncertainty and vagueness of decision maker related to the I4.0 technologies.

Findings

“Technological immaturity,” “High investment,” “Lack of awareness and customer acceptance” and “technological limitations and lack of eco-innovation” are identified as the most prominent barriers for adoption of I4.0 in SFSC.

Originality/value

Successful mitigation of these barriers will improve the sustainability of FSCs through accelerated adoption of I4.0 solutions. The findings of the study will help managers, practitioners and planners to understand and successfully mitigate these barriers.

Abstract

Purpose

This research aims to investigate the feasibility of imperfect produce use in the on-site foodservice management industry.

Design/methodology/approach

Study 1 explored experts’ perspectives via expert interviews on the use of imperfect produce in on-site foodservice operations, acceptability, and willingness to choose imperfect produce. Study 2, a sensory discrimination test, was performed with 100 consumers.

Findings

Study 1 yielded seven themes with managerial recommendations: appearance perception, customer value perception, operational difficulties, concerns for the world, food safety concerns, corporate advantages, and implementation. Study 2 found that participants were willing to choose menu items prepared with imperfect produce over those prepared with perfect produce. The ability to taste differences depended on the type of produce; participants could not taste differences between tangerines but could taste differences between apples and pears.

Research limitations/implications

The findings of this study suggested that the psychological barriers of imperfect produce impact managers’ perceptions and decision-making processes. It is recommended that operators communicate with consumers about imperfect produce, its waste reduction benefits, and its quality.

Originality/value

This study shows that taste perception could be influenced by how imperfectness is described. Thus, appropriate marketing strategies could improve consumer acceptance of imperfect produce.

Abstract

Purpose

Higher productivity in the potato value chain in Rwanda requires good quality seed potatoes. The article analyzes how innovations were introduced in the framework of a development project resulting in a partnership between a firm and two educational institutions to produce better seed potatoes, using the Triple Helix approach.

Design/methodology/approach

In the Triple Helix model government, academia and the private sector work together to develop and introduce innovations. This led to producing and introducing improved seed potatoes at an affordable price through a public private partnership (PPP). Interviews with experts and a survey of local producers were carried out to identify factors influencing the success of the partnership.

Findings

A Service, Training and Innovation Center (STIC) has been created to produce the first clean potato seeds in Africa on a commercial scale, based on cultivation of in vitro potato plantlets and aeroponics to produce mini-tubers. It is called Seed Potato Advancement Centre, an education–enterprise partnership, using these plantlets to produce mini-tubers through aeroponics. Seed multipliers are responsible for the next three stages of seed multiplication. The final product is the certified potato, sold to ware potato farmers. The availability of disease-free seed potatoes in Rwanda gives a boost to the potato value chains and contributes to food security. The partnership was successful because of the support from the government and donors, with the private sector and the extension services helping to implement the innovations effectively.

Research limitations/implications

The limitation is that the number of experts interviewed is limited and the survey did not only deal with potato-related activities. The focus is on one region only, but the most important potato growing area in Rwanda.

Social implications

STICs function as a tool for cooperation between government, private sector and the knowledge sector to achieve commercial and development goals. They function as a channel for technology transfer. They allow applied research, including agronomic research; information collection; and dissemination, networking, training, organization of outreach activities. The model can be repeated in other sectors and countries.

Originality/value

The paper looks at a PPP in agriculture with educational institutions. Second, the Triple Helix and value chain literature is used to study the introduction and implementation of appropriate innovations, while factors determining the success of the partnership were identified. This concerns the first production of clean seed potatoes in Africa on a commercial scale.

Abstract

Purpose

The purpose of this article is to investigate on changes of the microbial load and the chemical and physical properties of date fruits stored for 6 months under two different temperatures.

Design/methodology/approach

A composite sample of 100 kg date fruits from the Khalas variety, season 2019, was collected from the local market in Al Ahsa Province, Saudi Arabia, packaged in 1 kg lots, stored at room and refrigerator temperatures and the microbial contamination and the chemical and physical properties monitored over a period of six months of storage. Total bacteria, lactic acid bacteria, Enterobacteriaceae, yeasts and molds were counted and representatives of yeast and mold contaminants were identified using morphological, physiological and molecular typing techniques. Changes in the color and texture of the samples were also monitored during storage.

Findings

The yeasts detected were two strains of each of Lachancea thermotolerans and Rhodosporidiobolus fluvialis and one strain of Cystofilobasidium lacus-mascardii. For molds, one strain of each of Aspergillus niger, Aspergillus flavus, Penicillium chrysogenum and Aspergillus caespitosus have been detected. No significant growth of these microorganisms was observed, but enough load persisted during storage that makes the samples not meeting the microbiological standards. There were significant changes in the color and texture of the fruits during storage.

Originality/value

These findings add important information that can help producers and processors to improve quality and promote marketing of date fruits, especially to international markets.

Purpose

Artificial fruit ripening is hazardous to mankind. In the recent past, artificial fruit ripening is increasing gradually due to its commercial benefits. To discriminate the type of fruit ripening involved at the vendors’ side, there is a great demand for on-sight ethylene detection in a nondestructive manner. Therefore, this study aims to deal with a comparison of various laboratory and portable methods developed so far with high-performance metrics to identify the ethylene detection at fruit ripening site.

Design/methodology/approach

This paper focuses on various types of technologies proposed up to date in ethylene detection, fabrication methods and signal conditioning circuits for ethylene detection in parts per million and parts per billion levels. The authors have already developed an infrared (IR) sensor to detect ethylene and also developed a lab-based setup belonging to the electrochemical sensing methods to detect ethylene for the fruit ripening application.

Findings

The authors have developed an electrochemical sensor based on multi-walled carbon nanotubes whose performance is relatively higher than the sensors that were previously reported in terms of material, sensitivity and selectivity. For identifying the best sensing technology for optimization of ethylene detection for fruit ripening discrimination process, authors have developed an IR-based ethylene sensor and also semiconducting metal-oxide ethylene sensor which are all compared with literature-based comparable parameters. This review paper mainly focuses on the potential possibilities for developing portable ethylene sensing devices for investigation applications.

Originality/value

The authors have elaborately discussed the new chemical and physical methods of ethylene detection and quantification from their own developed methods and also the key findings of the methods proposed by fellow researchers working on this field. The authors would like to declare that the extensive analysis carried out in this technical survey could be used for developing a cost-effective and high-performance portable ethylene sensing device for fruit ripening and discrimination applications.

Abstract

Purpose

Food Loss and Waste (FLW), a result of non-sustainable consumption and production, has significant socio-environmental impacts and is addressed in the United Nation's Sustainable Development Goal (SDG) 12.3. To address current research on FLW and SDG 12.3, the authors aim to evidence the current state of knowledge on drivers and barriers to SDG 12.3 through a comprehensive literature review.

Design/methodology/approach

The authors employed a multi-step systematic literature review process and retrieved 171 studies addressing SDGs, with 83 explicitly addressing SDG 12.3. The analysis involved a qualitative content analysis of studies retrieved by analyzing key findings and relationships between drivers and barriers to FLW.

Findings

While academic research focuses on SDG 12.3 by stressing the necessity of FLW reduction, it fails to explain the drivers and barriers to minimizing FLW. The authors developed a conceptual framework to demonstrate how barriers and drivers can inhibit or stimulate the dynamics that will achieve SDG 12.3 through effective planning and management.

Research limitations/implications

This study addressed the theoretical limitations of existing studies and clarified the critical gaps in the current literature, thereby guiding future researchers in the food supply chain (FSC) context.

Originality/value

The research to date focused on high-income countries, and future empirical studies should focus on consumption patterns, the associated drivers and barriers of food waste in low-income countries and its social impact.
