Abstract

Purpose

The purpose of this study is to determine whether reported nutritional knowledge and the acceptance of benefit claims for a fresh produce item is related to changes in preference in order to provide food marketers insight and guidance into giving consumers more information to change beliefs and preferences, using health‐benefit claims to position their brands as offering ingredients, e.g. Lycopene which may prevent serious illnesses such as heart disease and cancer.

Design/methodology/approach

The sample was drawn from an internet panel maintained by Markettools, Inc, a respected market research company in the USA. A total of 594 respondents were surveyed. Besides demographic questions, respondents were asked about their knowledge of nine nutrients. Basic nutrient knowledge was estimated through a one‐sample t‐test tested against a value of two on a 1‐4 scale. Respondents evaluated eight benefit statements regarding the health benefits of mushrooms. After reading each statement, respondents indicated their likelihood of purchasing fresh mushrooms and were asked about the believability, favorability, and uniqueness of each statement.

Findings

The results indicate that health‐related food benefit claims are better accepted by female respondents who claim to be nutritionally knowledgeable and who are older. Three hypotheses related to nutritional knowledge and beliefs showed that knowledge and beliefs have an effect but the effect varied by nutrient and nutrient cluster. In particular, knowledge of esoteric nutrients such as Pantothenic Acid was associated with acceptance of health‐related claims.

Practical implications

Food marketers are spending millions of dollars/pounds/euros on informing people of the nutrient content and health benefits of their foods. However, this money can be better spent if one first understands the existing levels of nutritional knowledge and the specific nutrients that motivate change in preference or buying intention.

Originality/value

This paper builds on the existing body of knowledge using additional statistical techniques to cluster nutrients and to provide a demonstration on a fresh produce food group not currently investigated in the literature. It suggests that food marketers need to gather more information on their consumers to target their health and nutrition message to the proper (more receptive) audience.

Abstract

Purpose

This study aims to examine the various effects of two licensing factors – health claims and “FoSHU seal”, which can be appeared on packages only with permission. In the Food for specified health uses (FoSHU) system, Japanese Government controls all health claims on packages of food products for the first time in the world.

Design/methodology/approach

In Study 1, the authors investigate the signaling effects of the two licensing factors with a 2 (health claims: yes/no) × 2 (FoSHU seal: yes/no) factorial design. Then, in Study 2, the authors investigate the external effects on alternative brands with a 2 (package of the non-FoSHU brand: similar/dissimilar to the FoSHU brand) × 2 (presentation of the FoSHU brand: yes/no) design.

Findings

The results show that food evaluations are affected by the FoSHU seal, indicating that, with the symbolic mark, FoSHU foods can be successfully differentiated from non-FoSHU foods. In contrast, food evaluations are not affected by health claims – health claims have external effects on evaluations of non-FoSHU products in the category if both FoSHU and non-FOSHU products have a similar package.

Originality/value

Although there are many studies regarding the impacts of health claims on food evaluations, they have assumed only US regulatory system and, therefore, have not examined the effects of licensing marks. Also, because Japanese approval system is dissimilar to US regulatory system, the effects of health claims in Japan are different from those in the USA. By analyzing various effects of Japanese system on consumer evaluation of food healthiness, this study contributes to a better understanding of the impacts of the public policy and food marketing on consumer behavior.

Abstract

Purpose

The purpose of this paper is to report the results of a study using photoelicitation interviews to investigate the relationship between the habitualised and unconscious aspects of consumers' food choices, the front‐of‐pack nutrition labelling schemes on food products and the healthiness of their diets.

Design/methodology/approach

To this end, photographs of ten German middle‐class families at different stages of the family lifecycle were taken at the point of purchase (during a shopping trip made by the main person responsible for meal planning) and at the point of consumption (during a family meal at home). The paper used selected photographs as stimuli for photoelicitation. The interviews were recorded and analysed using a holistic approach.

Findings

Four themes concerning food characteristics, participants' food choices and their healthiness emerged from the data: perceived time pressure at the point of purchase; the relevance of nutrition information for making inferences with regard to the healthiness and tastiness of products; consumers' trust in nutrition information; and their use of this information at the point of purchase or point of consumption.

Research limitations/implications

Photoelicitation interviews allowed us to bridge the gap between researchers and respondents and to study what happens in real‐life situations when consumers go shopping and prepare family meals.

Practical implications

By putting nutrition information on food packaging, especially on the front of the pack, manufacturers and retailers enable consumers to make faster and healthier decisions at the point of purchase – i.e. as long as the consumers notice, understand, trust and like the labelling and use it in making their final decision. Front‐of‐pack labels are of less relevance at the point of consumption.

Originality/value

The paper provides a number of insights into the processes involved in making healthy (or unhealthy) food decisions. It also provides directions for future studies in visual research and in the fields of consumer behaviour, marketing and public policy.

Abstract

Builds on past studies in the USA and assesses the market potential for functional goods through investigating consumer needs and attitudes. Aims to add to past research through: assessing consumer knowledge and beliefs on nutrition and diet‐health relationships; analysing the influence of such knowledge and beliefs of information and sources of information; and evaluating the effectiveness and implications of government preventative health campaigns on purchase behaviour. Concludes that issues regarding personal and national health are extremely important because of the financial costs and human suffering that could be involved; and that functional goods, as a relatively new phenomenon, still need to be examined further with regard to their influence on trust and legitimacy in buyer behaviour.

Abstract

Purpose

With multiple theoretical traditions, diverse topical landscape and rapid regulatory advancements galvanising the ongoing discourse, the emergent marketing scholarship on healthy and unhealthy food and beverages (F&B) has become exhaustive, fragmented and almost non-navigable. Accordingly, this study aims to synthesise and trace two decades of research focused on healthy and unhealthy F&B marketing.

Design/methodology/approach

This study conducts a bibliometric analysis of papers published between 2000 and 2020. The data was retrieved from Web of Science (WoS) and Scopus, yielding 338 papers for final analysis. Using VOSviewer software and the Biblioshiny package, the authors performed a detailed bibliometric analysis comprising performance analysis and science mapping.

Findings

The study delineated the contribution, theoretical and thematic structure of healthy and unhealthy F&B marketing scholarship. The authors also mapped the evolution trajectory of the thematic structure, which helped us contemplate the research gaps.

Research limitations/implications

By delving deeper into the “who”, “where”, “how”, “what” and “when” of healthy and unhealthy F&B marketing, the study enhances the current understandings and future developments for both theorists and practitioners. However, the selection of literature is confined to peer-reviewed papers available in WoS and Scopus.

Practical implications

The findings delineate the existing scholarship which could guide F&B marketers and policymakers towards designing consumer-centric marketing/policy interventions.

Originality/value

To the best of the authors’ knowledge, this study is the first to perform a bibliometric analysis of healthy and unhealthy F&B marketing, likely to provide valuable guidelines for future scholars, policymakers and practitioners.

Abstract

Purpose

The purpose of this paper is to review and compare the scientific and regulatory environments for nutrition and health claims on foodstuffs in the USA, Japan and the European Union.

Design/methodology/approach

A review of the literature and the relevant legislation in the three different countries is conducted. Regulations are reviewed and scientific evidence requirements are outlined in each country.

Findings

Full regulatory approval for claims across all three countries requires the support of robust scientific evidence. To obtain this, companies must submit comprehensive dossiers and detailed applications to the regulators with full descriptions of the tests and studies completed during product development. However in the USA and Japan, an alternative process exists. A health claim that is suggested but not supported by scientific evidence is known as a qualified health claim and is permitted in the USA and Japan, but not in the EU.

Practical implications

The paper demonstrates the difference in regulatory requirements in different countries which leads to different claims being permitted in different countries. It also leads to different levels of scientific support for similar claims which causes consumer confusion and develops an uneven playing pitch for the industry. Given that the industry operates in a global market place, it is imperative that a consensus is reached as to the level of scientific evidence required to approve a health claim. In that way, consumers can be safeguarded from being misled, consumer confusion will not be a concern and products can be globally distributed in line with the increasing liberalisation of trade.

Originality/value

This paper is of value to regulators and the food industry.

Abstract

Increasing consumer interest in nutrition has led to an increased interest in nutrition labelling. Finds that over half (58 per cent) of the sample surveyed read nutrition labels. Nutrition labelling was found to have an impact on consumer purchase decisions. Of those consumers who read nutritional labels, 81 per cent use them in their evaluation of food products. Consumers have to deduce information from nutrition labels in their current format. Survey findings reinforce previous work carried out in this area, particularly in the context of consumer categorization of food products as “good” or “bad”. For example, consumer avoidance of “negative” nutrients is apparent throughout the survey. The majority of respondents, who read labels, indicated that they search out information on nutrients they wish to avoid. In general, since time allocated to shopping for food products is limited, the format of nutritional labelling needs further consideration and improvement. The concept of nutrition should be incorporated into food companies’ marketing strategy.

Purpose

A front-of-package label is a simple and effective way to communicate nutrition information to consumers. However, the use of the label has been limited to product packages. The purpose of this study is to explore the applicability of a front-of-package label to food print advertisements and to examine how the degree of nutrient content on the label influences consumer perceptions and behavioral intention.

Design/methodology/approach

Many food product manufacturers voluntarily use a front-of-package nutrition label showing specific information per serving size for calories, saturated fat, sodium and sugar. This exploratory, experimental research evaluates the thoughts, feelings and behavioral intention changes of consumers in response to a front-of-package label on a print advertisement and a product package. Two experiments were conducted online.

Findings

The presence of a front-of-package label in the ad increases ad responses involving perceived healthfulness of the product, ad attitude, brand attitude, healthy brand image and purchase intention. In addition, the healthier nutrient content listed on the label positively affects the audience’s responses. However, the front-of-package label on the product package increases only perceived healthfulness. Information about the degree of nutrient content indirectly influences intention to purchase the advertised healthy/unhealthy product sequentially via perceived healthfulness of the product, ad attitude, brand attitude and healthy brand image.

Research limitations/implications

To generalize the results, various product categories should be tested with the same research design in future studies.

Practical implications

This study recommends that communication practitioners place a front-of-package label on their print advertisements even though the food is not healthy. However, practitioners should keep in mind that a front-of-package label does not increase sales in the long term if the product is unhealthy.

Originality/value

The major contribution of this study is its exploration of the applicability of a front-of-package label to the advertising context. The label plays a role as a message cue a consumer can use to evaluate the ad, brand and product.

Abstract

Purpose

This study aims to investigate how restaurant customers’ heuristic judgment, originating from their perceived level of congruity between restaurant brand image regarding healthfulness and healthy menu products, can affect their information processing in terms of their perceived nutritional information credibility and, furthermore, how these effects influence customers’ attitude toward the menu in terms of healthiness.

Design/methodology/approach

A Web-based survey was developed and distributed to randomly selected respondents in the USA, and in total, 320 responses were used for the data analyses. Structural equation modeling (SEM) was used to examine the relationship among three constructs: perceived brand–product congruity, perceived nutritional information credibility and nutrition attitude toward the healthy menu item being promoted. To assess the mediating role of perceived information credibility, an analytical procedure proposed by (Baron and Kenny 1986) was used. Finally, to investigate the moderating effect of the health involvement, multiple group analyses were executed.

Findings

The study results suggested that the synchronization between healthful brand image of the restaurant and the promoted menu item is important for ensuring customers’ perceptions of information credibility regarding the menu item healthiness and for eliciting customers’ positive nutrition attitudes toward the menu item. Also, positive nutrition attitudes toward a menu item can be increased by improving perceived information credibility. Depending on an individual’s level of health involvement, the relationships between the three proposed constructs vary.

Originality/value

This paper includes a theoretical model that explains customers’ heuristic evaluation of a healthy menu product by assessing the influence of brand image congruity in terms of healthy menu promotion.
