Abstract

Purpose

The purpose of this paper is to analyze the market of rosé wines in Italy, to outline retail strategies and to investigate to what extent the price is affected by branding these wines.

Design/methodology/approach

A survey has been carried out on retailers by collecting data about wines as intrinsic attributes (grape variety, blending, origin, alcohol content, etc.) and extrinsic attributes (brand, price, packaging, etc.) and about outlet and retail environment. The hedonic analysis required a rearrangement of data survey, while a Box-Cox transformation allowed to control the strong heteroskedasticity detected of the data.

Findings

Results provide strategies for still, semi-sparkling and sparkling rosé market segments. Still rosé wines are strongly differentiated, while the price is affected by the appellation, grape variety, blending, brand and outlet features. Two main strategies are suggested: the first focuses on appellations endorsing consumer’s brand loyalty; the second is driven by retailers while involving weaker brands. Different pictures emerged for semi-sparkling and sparkling wines, as producers and retailers tend to follow consumer’s preferences for fresh and easy drinking wines as well as to extend the product assortment.

Research limitations/implications

Results for sparkling rosé wines cannot be generalized. The high fragmentation hinders the hedonic model performance in capturing the price effects of brands, appellations, grape variety and wine blend.

Practical implications

The hedonic analysis provides suggestions for rosé wine producers that should reinforce their brand through associations among intrinsic attributes, such as appellation, and extrinsic ones, such as price, while satisfying retailer requirements.

Originality/value

The paper contributes to the knowledge base about the Italian rosé wine market, which is mostly export-oriented. Model results help to understand why the domestic consumption is stagnant with respect to other countries such as France or the USA.

Abstract

Purpose

Virtual wine experiences (VWEs) replaced in-person wine experiences during the Covid-19 pandemic and continue to be offered by some actors. This study aims to investigate the factors driving interest in VWEs and identify relevant traits of potential consumers to help assess VWEs long-term potential.

Design/methodology/approach

A representative sample of 399 Oregon and California wine consumers answered a structured online survey. The authors combine ordered logistic regression and qualitative techniques to analyze the data.

Findings

VWEs may effectively attract potential wine consumers and tourists. High interest in VWEs is associated with strong wine involvement and intentions to visit wine regions. Digitization, aversion to travel-related risk and convenience are other relevant drivers of VWE interest. The segmentation analysis revealed that consumers with a potentially higher interest in VWE have distinct traits.

Practical implications

Wineries and wine tourism destinations could leverage VWEs to attract wine tourists and consumers. The authors discuss specific characteristics of high-interest consumers.

Originality/value

Participants in VWEs interact with hosts and explore products in real time. This engagement has long-term marketing potential for attracting them as customers or visitors. The study provides strategic information for practitioners and academics on VWE interest drivers and potential demand, which is currently missing from the literature.

Abstract

Purpose

This study aims to provide a comprehensive overview on positive drivers and negative factors connected to the Covid-19 pandemic which can jointly shape wine tourism intentions.

Design/methodology/approach

The present study relies on a large sample of 399 US wine tourists. Partial least square structural equation modelling is adopted for data analysis.

Findings

Results reveal that willingness to avoid Covid risk while travelling negatively impacts wine tourism intentions and competitively mediates the effect of Covid phobia. Both situational and personal involvement with wine are key antecedents of future wine tourism intentions.

Research limitations/implications

This research contributes to understand the role of willingness to avoid travel-related risks during health crises. Furthermore, it improves existing knowledge on the effect of wine involvement on wine tourism intentions, highlighting the predictive relevance of situational involvement in explaining this relationship.

Practical implications

Results constitute critical information to practitioners and destination management operators for improving their resilience under similar circumstances. Updated information on wine tourists’ profile is also provided.

Originality/value

To the best of the authors’ knowledge, this is among the first studies exploring how positive and negative drivers act synergically in affecting wine tourism intentions after the Covid-19 outbreak.

Abstract

Purpose

The purpose of this paper is to detect market segments where consumers have a different knowledge of domestic and imported Parmesan cheese in USA and Canada. The results may be helpful in understanding to what extend North America consumers appreciate Parmesan cheese and brands, Parmesan consumption and price while recognizing market segments according to consumer awareness, involvement and covariate effects.

Design/methodology/approach

A class of mixture models, known as combination uniform binomial (CUB), is applied to survey data collected in USA and Canada. A questionnaire, filled out by 540 restaurant customers, collects opinions about consumption, purchase features and price. The CUB model estimates the two latent variables, known as feeling and uncertainty, explaining the respondent’s behavior as awareness and involvement variability while the CUB clustering procedure detects market segments.

Findings

CUB results show that the Parmesan is a well-known cheese but also that a small share of consumers look for the place of origin. The model detects market segments where consumers express better awareness on taste, price and origin while the knowledge of imported Parmesan brands is lacking. Most of consumers, not paying attention to the origin, would hardly switch to the imported Parmesan because of higher price or because they are already satisfied of the domestic cheese.

Research limitations/implications

The results suffer some restrictions in the sample representativeness. A further analysis, where the survey is done at retail and advances in CUB models, may improve the market segmentation procedure allowing a better generalization of results.

Practical implications

The survey results highlights the appreciation and consumption of Parmesan cheese, especially for its taste, as well as a low perception of Italian brands. Consequently, trade companies should focussed their communication strategy on activities encouraging North American consumers to taste Italian Parmesan brands (e.g. tasting sessions, price promotions) instead of costly and less effective advertising campaigns.

Social implications

Parmesan brand misunderstandings are often associated with market information asymmetry. The paper results show a market segmentation where purchases are mainly driven by Parmesan taste regardless of domestic or imported brands. Likely, the consumption of domestic Parmesan is well consolidated and it is not a consequence of brand information asymmetry.

Originality/value

The CUB model is an innovative and flexible no parametric approach for evaluating consumer behavior and for segmenting the market while dealing with complex problems of food knowledge.

Abstract

Purpose

The European Union (EU) has strongly rearranged the management of EU wine policy by introducing actions for promoting wine in third countries. The purpose of this paper is to evaluate factors affecting the knowledge of Italian wines in foreign consumers, i.e., to what extend wine promotion actions can improve the consumer’s awareness or the reputation of Italian wines. As a consequence, these activities may increase the wine consumption as well as wine exports in emerging markets.

Design/methodology/approach

Data have been collected through survey questionnaires where information about wine tasting, sensory satisfaction and preferences about Italian wines have been collected. The sample survey collects preferences of wine market operators in both EU and third countries. The survey, carried out from 2009 to 2011, includes 3,579 interviews classified according to four promotion actions: press conference, wine tasting, tasting course, knowledge of Italian wines. Data have been analyzed through a nonparametric combination (NPC) of dependent permutation tests to evaluate differences between and within country groups and to assess the consumer perception about Italian wines through the Keller’s model.

Findings

So far, Italian wine promotion activities, supported by EU wine policy, are fragmented among in many small and sometimes low effective actions. Research results may be helpful in designing more effective promotional strategies on third countries. In particular, promotional activities which should be focussed on consumer’s appreciation of Italian wines as a brand instead of promoting specific wines or wineries.

Research limitations/implications

The NPC method is a nonparametric tool which does not measure the structure of consumer’s preferences, i.e, it does give any measure of relationships among consumer’s utility and factors affecting it as it happens when a modeling approach is applied.

Practical implications

Targeted promotion and information actions strongly focussed internal and external wine attributes can increase the level of knowledge in foreign consumers. It can make more efficient the marketing activity oriented to the export market.

Originality/value

The NPC method offers an innovative, flexible and well-tested approach for the analysis of multivariate hypothesis when we are dealing with complex problems in wine market.

Abstract

We present a critical literature review debating Brazilian research on social and environmental accounting (SEA). The aim of this study is to understand the role of politics in the construction of hegemonies in SEA research in Brazil. In particular, we examine the role of hegemony in relation to the co-option of SEA literature and sustainability in the Brazilian context by the logic of development for economic growth in emerging economies. The methodological approach adopts a post-structural perspective that reflects Laclau and Mouffe’s discourse theory. The study employs a hermeneutical, rhetorical approach to understand and classify 352 Brazilian research articles on SEA. We employ Brown and Fraser’s (2006) categorizations of SEA literature to help in our analysis: the business case, the stakeholder–accountability approach, and the critical case. We argue that the business case is prominent in Brazilian studies. Second-stage analysis suggests that the major themes under discussion include measurement, consulting, and descriptive approach. We argue that these themes illustrate the degree of influence of the hegemonic politics relevant to emerging economics, as these themes predominantly concern economic growth and a capitalist context. This paper discusses trends and practices in the Brazilian literature on SEA and argues that the focus means that SEA avoids critical debates of the role of capitalist logics in an emerging economy concerning sustainability. We urge the Brazilian academy to understand the implications of its reifying agenda and engage, counter-hegemonically, in a social and political agenda beyond the hegemonic support of a particular set of capitalist interests.

Purpose

The purpose of this paper is to introduce the practice of service recycling. There is an end of life to every product. At this stage, recycling is one option: it is the process of converting waste materials into new products or raw materials. There is also an end of life to every service, which generally coincides with the end of service delivery. However, services are not made of materials or components that can be recovered or converted, so can they be recycled? If the concept of product recycling is something well established, then that of service recycling has not yet been sufficiently investigated.

Design/methodology/approach

This paper introduces the perspective of service recycling, analyzing the modalities in which a service can be recycled by using an analogy with natural ecosystems. Some examples are also proposed to support this new vision.

Findings

This paper purports to formalize the practice of service recycling: recycling a service means recovering all the intangibles and tangibles resulting from the provision of a service that still may have a residual value. This practice may potentially lead to an increase in profits.

Originality/value

Although there are several examples of close relationships between two (or more) different services in which one of the two benefits from the externalities of the other, the concept of service recycling has not yet been structurally defined, and the authors believe that interesting perspectives of research may follow from its formalization.

Abstract

Purpose

Service matching is defined in this paper as the process of combining a new service with one or more existing services. A recurring problem for service designer is to match new services with existing ones. This process may be seen as the fundamental action for the development of a service network. The purpose of this paper is to evaluate the consequences that may follow from service matching.

Design/methodology/approach

Through an analogy with living organisms in natural ecosystems, the service relationship deployment (SRD) allows the investigation of the possible relationships between matched services.

Findings

This paper presents a new method, named SRD, developed to support the process of service matching in the early design phases of a new service. The description of the method is supported by some practical examples.

Originality/value

The focus of the scientific community on the problem of matching new services with existing ones, is very limited. This paper proposes a new methodology to address this issue.

Abstract

Purpose

Many economic, political and socio-cultural events in the 2020s have been strong headwinds for architecture, engineering and construction (AEC). Nevertheless, technological advancements (e.g. artificial intelligence (AI), big data and robotics) provide promising avenues for the development of AEC. This study aims to map the state of the literature on automation in AEC and thereby be of value not only to those researching automation and its composition of a variety of distinct technological and system classes within AEC, but also to practitioners and policymakers in shaping the future of AEC.

Design/methodology/approach

This review adopts scientometric methods, which have been effective in the research of large intra and interdisciplinary domains in the past decades. The full dataset consists of 1,871 articles on automation in AEC.

Findings

This overarching scientometric review offers three interdisciplinary streams of research: technological frontiers, project monitoring and applied research in AEC. To support the scientometric analysis, the authors offer a critical integrative review of the literature to proffer a multilevel, multistage framework of automation in AEC, which demonstrates an abundance of technological paradigm discussions and the inherent need for a holistic managerial approach to automation in AEC.

Originality/value

The authors underline employee well-being, business sustainability and social growth outcomes of automation and provide several managerial implications, such as the strategic management approach, ethical management view and human resource management perspective. In doing so, the authors seek to respond to the Sustainable Development Goals proposed by the United Nations as this becomes more prevalent for the industry and all levels of society in general.

Abstract

Purpose

This paper aims to present phenomenological extensions and technical improvements of a recent research path on a potential operational scheme aiming at promoting an effective disasters risk reduction of built urban areas, namely, the proposal of a Certification of the Predisposition of Resistance of Edifices to Disasters.

Design/methodology/approach

The authors illustrate new steps of a multidisciplinary research conducted by merging different fields of study, such as disaster risk analysis, sustainable land use and urban planning, environmental assessment methods, different buildings safety topics and certification and auditing management systems tools.

Findings

This work is based on research developed in Italy by carrying out new tests in the coastal regions of Liguria and Tuscany to validate improvements and to confirm in different territories the assessment process of most significant natural and man-made hazards already included in the certification scheme previously developed on the basis of the continental regions of Lombardy and Piedmont.

Originality/value

Investigations and results give firmer foundations and exploitability to a certification such as the one presented here.
