Abstract
Purpose
This is a conceptual study to analyze the potential of enset-based culinary tourism for sustainable rural development and to obtain a place as a niche tourism market in South-Western Ethiopia. It assumed enset agro-biodiversity as the effect of ages of environment, genetic resources and cultural interaction as a distinctive regional image.
Design/methodology/approach
This an exploratory paper based on an in-depth interview, field observation and content analysis of documents. By means of in-depth interviews, the researchers managed to gather extended information from community elders and experts in culture and tourism offices selected based on a snowball technique. Besides, it has gone through systematic reviews of about 180 empirical and conceptual articles, books and conference papers with a critical reading of the content, identification of categories, examination and interpretation of ideas, to supplement the in-depth-interview. The thematic analysis applied to identify various ideas, concepts, categories and relationships to produce themes presented under discussion and results.
Findings
The study found enset-based culinary tourism not only improve the local economy and regional image, but also it would enhance conservation of traditional farming system, biodiversity, food heritages, genetic varieties and livestock. It also identified 18 enset food varieties compatible with the principle of balanced diets. Finally, the study advised rural development planners to consider enset-based culinary tourism so that it would revive lost food traditions and consumption patterns, enhance the regional heritage and destination branding.
Research limitations/implications
The research is a conceptual study that lacked empirical investigation concerning the livelihood impact, gender implication and actual tourist data. Therefore, future research needs to focus on the aforementioned limitations.
Practical implications
This study addressed SW Ethiopia, which is the primary center of Ensete ventricosum, and argued that enset-based culinary tourism would help to build regional image and obtain a place as a niche rural tourism destination. It would also contribute to the conservation of food heritages, environmentally sustainable farming system, soil conservation, crop diversities and livestock population in addition to producing tourist experience. Moreover, it would encourage the revival of traditional consumption, reinvent lost food traditions and identities.
Social implications
It was hoped that rural tourism would eventually improve the livelihood and enhance the capability of resilience. It is also expected to maintain the traditional social-economic structure based on the enset farm while fostering cultural development.
Originality/value
To the knowledge of the researchers there is no previous work on enset based-culinary tourism in Ethiopia and probably there is no published culinary tourism paper elsewhere.

Abstract
Purpose
This paper is a systemic review on enset plant’s role in Ethiopian people’s life as the source of food. This paper aims to summarize the traditional processing and preparation methods of enset-based foods and their nutritional composition.
Design/methodology/approach
Available scientific articles were collected and reviewed for enset plant evaluation, description, enset plant’s role in Ethiopian people’s food security, post harvesting and traditional processing of enset plants, microbiology of the fermented enset foods, different foods reported from enset, nutritional profile of the three food from enset base (kocho, bulla and amicho) and other non-food applications of enset plant.
Findings
Enset plant has a predominant role in people living in the southern part of Ethiopia. This plant is drought-tolerant and provides many non-food applications. Harvesting of the enset plant, preparing for fermentation and food preparations follow the traditional route by using the indigenous knowledge and practices. Limited studies have been reported on the microbiology of the enset fermentation, but various types of microbes have been reported. In case of nutritional composition, foods from enset are reported to contain high carbohydrate and minerals content, such as calcium, potassium and zinc, but limited protein content; they are also the best source of the essential amino acids such as lysine and leucine. Limited data are available on vitamins, anti-oxidant and fatty acids profiles of enset-based foods. The existing data indicate variations, and the reasons for variability are discussed in this paper.
Originality/value
Scientific reviews on enset food nutrition profile and related issues are scarce; this paper will compile information about enset plant-based foods for researchers for their future research.

Purpose
Traditionally prepared enset-based products like bulla are characterised by low protein and vitamin contents and are highly viscous; this causes protein-energy malnutrition especially in infants and young children. This paper aims to improve the nutritional and sensory qualities of enset-based food with pumpkin and amaranth.
Design/methodology/approach
Sixteen formulations of composite flour were generated using a D-optimal constrained mixture design with a range of 50-80 per cent bulla, 10-25 per cent pumpkin and 10-40 per cent amaranth flour. Nutritional and sensory qualities of the formulations were investigated using standard methods.
Findings
Ash, fat and protein contents increased from 1.1-2.8 g/100 g (p < 0.001), 1.7-3.9 g/100 g (p < 0.001) and 6.1-9.0 g/100 g (p < 0.001) respectively with the increased amaranth flour. Crude fibre content increased with increasing percentage of the amaranth and pumpkin flours. On the other hand, carbohydrate content increased from 78.2 to 84.3 per cent (p < 0.001) with an increase of bulla flour. A significant increase in Fe, Zn and Ca from 6.8-10.5 (p < 0.01), 1.5-3.0 (p = 0.022) and 1.8-148.5 mg/g (p < 0.001) respectively was achieved with an increase in amaranth ratio in flour. The total carotenoid content increased with increase in the percentage of pumpkin flour. The best sensory attributes of the developed product were around the centre point of the three ingredients.
Originality/value
The study showed that a product with good nutritional value and sensory acceptability could be prepared from enset-based ingredients and the optimal product was obtained by blending 57.8 per cent bulla, 18.9 per cent pumpkin and 23.3 per cent amaranth flour. The enriched flour can have application for snack food preparation.

Abstract
Purpose
The potential for burn injuries arises from contact with a hot surface, flame, hot liquid and steam hazards. The purpose of this study is to develop the flame retardant acrylic and cotton blend textile finished with Enset Ventricosum pseudostem sap (EPS).
Design/methodology/approach
The two fabric was produced from (30% acrylic with 70% cotton) and (35% acrylic with 65% cotton) blend. The extracted sap was made alkaline and applied on two mordanted blend fabrics. The effect of blend ratio, the concentration of EPS and treatment time on flammability, Flame retardant properties of both the control and the treated fabrics were analyzed in terms of vertical flammability based on the design of the experiment software using central composite design. The air permeability and tensile strength of treated and controlled fabric were measured.
Findings
The blended fabrics at different blended ratios were flame retardant with an optimized result of burning time 2.902 min and 2.775 min and char length 6.442 cm and 7.332 cm in the warp and weft direction, respectively, at a concentration of 520 ml and time 33.588 min. There was a slight significant change in mechanical strengths and air permeability. The thermal degradation and the pyrolysis of the fabric samples were studied using thermogravimetric analysis and the chemical composition by Fourier-transform infrared spectroscopy abbreviated as Fourier-transform infrared spectroscopy. The wash durability of the treated fabric at different blend ratios was carried out for the optimized sample and the test result shows that the flame retardancy property is durable up to 15 washes.
Originality/value
Development of flame retardant cotton and acrylic blend textile fabric finish with ESP was studied; this work provides application of EPS for flame resistance which is optimized statically and successfully applied for a flame retardant property on cotton-acrylic blend fabric.

Abstract
Purpose
This study aims to investigate the adaptation strategies they practice and the factors that influence their use of adaptation strategies.
Design/methodology/approach
The mixed-method sequential explanatory design was used to triangulate the data collected. Multistage sampling was used to select 400 sampled households for household surveys. Eight focus groups, each with eight to ten participants, and 24 key informants, were specifically chosen based on their farming experiences. Chi-square tests, one-way ANOVA and a binary logit model were used to analyze the data.
Findings
The majority of farmers used simple and low-cost adaptation strategies like changing planting dates, selling livestock and off-farm and nonfarm work. A minority of farmers used advanced adaptation strategies like crop diversification and water harvesting for irrigation. The result further revealed that: the age of the household head, educational status of household heads, farm size, livestock ownership, farming experiences, household income, access to credit and access to climate information significantly influenced the adoption of the adaptation strategies. Public policy should provide water harvesting and irrigation technology, climate-related information and the provision of microcredit facilities to enhance the farmers’ resilience to climate change risks.
Originality/value
Although several studies on climate change adaptation strategies are available, this paper is one of the few studies focusing on a particular agro-ecological zone, an essential precursor to dealing with current and projected climate change in the area. It provides helpful insights for developing successful adaptation policies that improve adaptive capacity and agricultural sustainability in southern Ethiopia’s lowlands.

Abstract
Purpose
To improve sensorless control of induction motor using Kalman filtering family, this paper aims to introduce a new metaheuristic optimizer algorithm for online rotor speed and flux estimation.
Design/methodology/approach
The main problem with unscented Kalman filter (UKF) observer is its sensibility to the initial values of Q and R. To solve the optimal solution of these matrices, a novel alternative called ant lion optimization (ALO)-UKF is introduced. It is based on the combination of the classical UKF observer and a nature-inspired metaheuristic algorithm, ALO.
Findings
Synthesized ALO-UKF has given good results over the famous extended Kalman filter and the classical UKF observer in terms of accuracy and dynamic performance. A comparison between ALO and particle swarm optimization (PSO) was established. Simulations illustrate that ALO recovers rapidly and accurately while PSO has a slower convergence.
Originality/value
Using the proposed approach, tuning the design matrices Q and R in Kalman filtering becomes an easy task with a high degree of accuracy and the constraints of time cost are surmounted. Also, ALO-UKF is an efficient tool to improve estimation performance of states and parameters’ uncertainties of the induction motor. Related optimization technique can be extended to faults monitoring by online identification of their corresponding signatures.

Purpose
This paper aims to deal with direct torque controller when the five-phase induction motor drive in faulty operation. Precisely, open-phase fault condition is contemplated. Also, the DTC is combined with a speed-adaptive variable-structure observer based on sliding mode observer.
Design methodology/approach
Two novel features are presented. First, the concept of the virtual voltage vector is presented, which eliminates low-frequency harmonic currents and simplifies analysis. Second, speed information is introduced into the selection of the inverter states.
Findings
Direct torque control (DTC) is largely used in traditional three-phase drives as a backup to rotor-stator flux-oriented methods. The classic DTC strategy was primarily designed on the base of hysteresis controllers to control two independent variables (speed, torque and flux). Due to the additional degrees of freedom offered by multiphase machine, extensive works have been extended on the ensemble five-phase drives in healthy operation. In addition, the ability to continue the operation in faulty conditions is considering one of the main advantages of multiphase machines. One can find in the literature different approaches treating this subject. The applicability of DTC after the appearing of a fault has not been enclosed in the literature.
Originality/value
Theoretical development is presented in details followed by simulation results using Matlab/Simulink to analyze the performance of the drive, comparing with the behavior during healthy situation.

Abstract
Purpose
Although many researchers have widely studied additive manufacturing (AM) as one of the most important industrial revolutions, few have presented a bibliometric analysis of the published studies in this area. This paper aims to evaluate AM research trends based on 4607 publications most cited from year 2010 to 2020.
Design/methodology/approach
The research methodology is bibliometric indicators and network analysis, including analysis based on keywords, citation analysis, productive journal, related published papers and authors indicators. Two free available software were employed VOSviewer and Bibexcel.
Findings
Keywords analysis results indicate that among the AM processes, Selective Laser Melting and Fused Deposition Modeling techniques, are the two processes ranked on top of the techniques employed and studied with 35.76% and 20.09% respectively. The citation analysis by VOSviewer software, reveals that the medical applications field and the fabrication of metal parts are the areas that interest researchers greatly. Different new research niches, as pharmaceutical industry, digital construction and food fabrication are growing topics in AM scientific works. This study reveals that journals “Materials & design”, “Advanced materials”, “Acs applied materials & interfaces”, “Additive manufacturing”, “Advanced functional materials” and “Biofabrication” are the most productive and influential in AM scientific research.
Originality/value
The results and conclusions of this work can be used as indicators of trends in AM research and/or as prospects for future studies in this area.
