Abstract

Purpose

Halving food waste has been included within the 17 UN Sustainable Development Goals. Food wasted out-of-home is the second source of food waste. However, the majority of the studies have focused on home generated food waste, and still little is known about out-of-home food waste and how it is managed by food service companies. The purpose of this paper is to adopt a double perspective in analyzing food waste generated at a food service level, by focusing on both the client and business perspective.

Design/methodology/approach

First, from the client perspective, the authors aim at analyzing consumer out-of-home habits, self-reported waste quantification, and doggy bag usage by reporting the results of an exploratory survey which involved 411 individuals living in central Italy. Second, from a business perspective, the authors analyzed an award-winning practice that manages out-of-home food waste in Italy by combining food surplus management and digital solutions with a profitable business model innovation.

Findings

Results obtained from the two perspectives of analysis support the need of business investments in innovations and digital solutions, in order to meet client needs and behavior, thus contributing to better manage and reduce food surplus and waste.

Practical implications

This study will raise practitioners’ knowledge on the advantages of digital solution in food surplus management, along with a better comprehension on food waste behavior from the client perspective.

Originality/value

This is the first study that analyses out-of-home waste from both the client and business perspective, emphasizing how digital solutions can help in reducing the phenomenon.

Abstract

Purpose

This paper aims to analyse the factors influencing refurbishment site managers’ waste management efforts.

Design/methodology/approach

Twenty-seven semi-structured interviews were held with managers from two large contractors involved in housing and office refurbishment projects in Sweden. Also, a web and postal questionnaire survey was sent to 232 refurbishment site managers and received a 34 per cent response rate.

Findings

Site managers devise waste management strategies based on environmental inventories and project size. In smaller projects, waste contractors are employed only for physical activities rather than providing advice. Site managers’ waste management efforts are influenced by project-related factors, organizational and personal factors, technical factors, industry culture and legislation. The level of contract detail, specific client demands related to waste management and project size are important factors.

Practical implications

Policies and guidelines for projects of different sizes should be developed at least for large contractors; scale influences site managers’ waste strategies. Waste management efforts in refurbishment projects can be improved by addressing simple technical problems including providing clear labelling of containers and ensuring shelter from rain and snow.

Originality/value

This is a pioneer survey of refurbishment site manager opinions and practices. Inefficient waste management in building refurbishment projects can be costly and harmful to the environment. There are many opportunities to improve waste management efforts.

Abstract

Purpose

The growth of Indian economy has brought with it significant increase in construction activities. These increased construction activities have further highlighted the problem of waste generation on construction sites. The purpose of this paper is to provide important insights and highlight some issues related to the implementation of effective waste management practices on construction sites in India.

Design/methodology/approach

This paper presents two cases and results from semi‐structured interviews which shed light on some of the major issues, challenges and drivers associated with the implementation of waste management in construction in India.

Findings

One of the key findings was that client preference and enforcement of existing laws could actually facilitate the implementation of waste minimisation effectively. Some of the practices being followed, and which are gaining more popularity, are waste quantification, waste segregation, and the implementation of 3Rs (reduce, recycle, and reuse). Congested construction sites, sites in heavily built‐up areas with no ability to have an alternate storage or staging location for materials, lack of ownership of waste due to the presence of multiple contractors on the construction site and lack of awareness and education among the construction workforce were regarded as major challenges associated with the implementation of waste minimisation practices in India.

Research limitations/implications

The cases and the interviewees chosen were through the authors' links with the Indian Green Building Council (IGBC). The cases were LEED registered projects therefore issues dealing with green construction had been taken into account. These cases might not be representative of the entire country, as there are significantly high proportions of construction projects that are not as green, especially in smaller cities in India. However, the two cases do provide important insights and highlight some issues related to the implementation of effective waste management practices on construction sites in India. The individuals interviewed also had link with IGBC. They had been involved with the green building movement in India for a significant length of time. But the length and breadth of their experience gave them the ability to comment on state of the construction sector and its green as well as non‐green practices associated with waste management.

Originality/value

This paper presents an exploratory study which assesses the implementation of waste management practices in the Indian construction industry. It also highlights activities within different stages of a construction project that can lead to more effective waste management in the construction sector.

Abstract

Purpose

The purpose of this paper is to describe benchmarking to evaluate the product development process (PDP) from a lean perspective.

Design/methodology/approach

The work was conducted by means of case studies at large companies in Brazil that develop products, based on a gap in the literature involving a lack of indicators to diagnose how lean are PDPs considering the principles and practices of the lean approach.

Findings

The results indicate in a quantitative manner that the 12 companies of the multiple case study are implementing the lean approach in their PDPs in an isolated or systematic manner through the categories – process, management, structure, people, product, client, supplier and waste.

Research limitations/implications

The large companies in the case studies are located in different positions of the supply chain and the year that the company began introducing lean manufacturing was not considered, or the maturity of each firm.

Practical implications

Based on the diagnosis, it was possible to propose a set of actions so that the PDP at each company can be structured in a lean manner, improving competitiveness.

Originality/value

The main contribution of the study is a simple, useful and reproducible method that has a set of measurable indicators and graphic representation identifying the lean product development practices, as well as a structured guide to the implementation of improvements that allow companies from different sectors to be compared at a national level and also in the international market.

Purpose

The extent to which sustainability is integrated into conventional accounting practices, in the light of a more integrated thinking perspective, requires further exploration. This paper aims to investigate how management control systems (MCSs) and sustainability-specific control systems (SCSs) are mobilised and how they interact to support the environmental sustainability strategy of a small- and medium-sized entity (SME).

Design/methodology/approach

Through a case study in a waste disposal firm, this paper examines the influence of cognitive, organisational and technical factors on the interaction and integration of MCSs and SCSs to bolster an environmental sustainability strategy.

Findings

The MCSs that are mobilised vary according to the type of strategy that is pursued. Even though the technical integration of MCSs with SCSs was not achieved, interaction between them supported strategic decision-making and the pursuit of environmental performance in the light of a more integrated thinking perspective. The role of multidisciplinary teams formed by accountants and environmental scientists to support sustainability management control at the SME also enabled interaction and provided steps for integrated thinking.

Practical implications

Although based on single case study, this research offers practitioners useful knowledge about the potential levers and obstacles relating to the mobilisation of MCSs when a sustainability strategy is conceived and its impact on the development of integrated thinking.

Originality/value

The paper provides insight into how SMEs can mobilise their MCSs to support an environmental sustainability strategy, shedding light on the factors that enhance interaction among MCSs and SCSs.

Abstract

Purpose

The capacity of landfills will reach saturation in the 2020s. There are more than 50,000 buildings in Hong Kong over 30 years old and which may require extensive refurbishment under the Mandatory Building Scheme. Additionally, most new owners/tenants tend to renovate their premises before moving in. Hence, there is an urgent need in Hong Kong, to explore strategies and measures to enable the development of effective refurbishment and renovation (R&R) waste management for such projects. The objectives of this paper are to investigate the process of R&R for identifying the perceived barriers and thereby the strategies for minimisation and management of R&R waste in Hong Kong.

Design/methodology/approach

Desktop study, semi-structured interviews, site observations and document reviews were used as the data collection methods to achieve the objectives of this research. Considering the nature and characteristics of the industry structure, the snowball sampling process was deployed for data collection. Thematic analysis and content analysis were used for data analysis. Waste minimisation and management strategies for R&R projects were then discussed and developed by the research team and a focus group meeting was held to validate the research findings. Six strategies were then proposed to the government.

Findings

R&R projects contribute 10–20% of the construction and demolition waste. The barriers to recycling of R&R waste can be grouped into six major categories: (1) lack of sorting and storage spaces, (2) high cost, (3) insufficient government supporting policy, (4) complicated recycling processes, (5) immature recycling market and (6) insufficient public education. Also, six strategies are proposed in this study, which include (1) pre-refurbishment audit, (2) development of recycling market, (3) sea reclamation, (4) incineration, (5) government support and (6) education and research.

Originality/value

The strategies and measures proposed in this research could most adequately serve as reference for the government officials, building professionals and academic researchers. Such knowledge would make possible the development of effective strategies and measures for minimising and managing R&R waste.

Abstract

Purpose

This study explores practitioners' perspectives on and definitions of sustainable supply chain management (SSCM), which are then compared to academic definitions to identify new implications for researchers, educators and practitioners.

Design/methodology/approach

An abductive, explorative and qualitative approach was followed in the form of a review and classification of 31 academic definitions of SSCM as well as 30 interviews with supply chain (SC) practitioners.

Findings

The practitioners' answers show a lack of awareness of upstream and downstream challenges as the practitioners' focus on practices within the practitioners' firms, where the economic and environmental dimensions prevail. However, the practitioners highlighted understudied topics in SSCM: human resources policies, leadership for sustainability and ethics.

Research limitations/implications

This research stimulates discussion on how to teach an SSCM course and which directions to follow to ensure that research has an impact on practices. Practitioners' focus on the practitioners' everyday practices confirms that practice-based theories, amongst others, are relevant in the field and that more interdisciplinary research is needed to highlight the contributions of human resource management (HRM) and business ethics to SSCM.

Practical implications

The proposed framework clearly defines the scope of the practices and research (upstream or downstream of the SC or within the firm), which will allow practitioners to contribute to SSCM more holistically.

Social implications

Educators and researchers have a crucial role to play in clarifying the meaning of SSCM for students who are future practitioners and consumers. Interacting more with practitioners could help.

Originality/value

This research is targeted not only to researchers and practitioners but also educators.

Abstract

Purpose

The UK construction industry produces up to one third of all waste to landfill. This study aims to identify specific project practices impeding the reduction of waste in construction projects as well as uncovering potential waste solutions throughout the project delivery process. The rationale being that for such a drastic reduction in waste to landfill, holistic and extensive measures would be required.

Design/methodology/approach

A two‐way methodological approach was used. This comprised qualitative unstructured interviews and a quantitative questionnaire survey of three major stakeholders in the UK construction industry: clients, architects and contractors.

Findings

Design factors remain the major cause of impediments to waste reduction to landfill. Critical impediments include clients making waste prevention a top priority in projects, overly complex designs, waste taking a low priority compared to project time and costs, lack of concerns by designers for buildability, among others. Critical solutions include early supply chain involvement in design process, choosing materials for their durability, early communication of design changes to all parties, longer project programmes and better lead times, among others.

Practical implications

In all, the target of halving construction waste to landfill based on the 2008 benchmark is achievable but would require construction companies to take it upon themselves to implement the proposed solutions suggested by this study.

Originality/value

The value of this research is to provide UK construction companies with solutions to reduce waste and aid the reaching of the landfill target, as landfill is decreasing as a solution to waste. In addition the cost savings on reducing waste could be crucial for companies in this current economic climate.

Abstract

Purpose

This case study shows how methods of lean philosophy can be successfully taught to undergraduate students and applied to improving a real-world loan process. Students were instructed to use newly acquired classroom skills to analyse and improve a bank loan process in Kuwait.

Design/methodology/approach

This study involved an initial gemba walk through the bank. A case study format with direct observation and semi-structured interviews was adopted by 27 undergraduate students to identify waste, analyse the loan process and develop an efficiency plan.

Findings

The results revealed that undergraduate students could quickly learn basic lean principles and techniques and utilize them in a real-world situation to significantly improve a bank loan process. Areas of waste included over-production, over-processing, defects in procedure, under-utilized skills, wasted motions and poor time management. Suggested corrective measures were expected to reduce loan processing time by 30%.

Practical implications

Increasing costs and competition in the business environment make efficiency improvements imperative, and it was shown that students can play a major role in applying lean principles to a bank loan process while gaining knowledge and skills highly valued in industry. Universities have the opportunity to create a valuable learning experience for undergraduate students in applying classroom skills to solving a real-life problem.

Originality/value

This is the first study of a novel classroom technique for teaching undergraduate students to apply lean techniques in a Kuwaiti bank.

Abstract

Purpose

The unitized curtain wall system (UCWS), a symbol of modern architecture, is gaining popularity among prefabricated components. Previous studies have focused on both construction technology advances and material selection strategies to facilitate the UCWS. However, the topic of client satisfaction, which drives industry development by targeting clients' demands, has gone unnoticed. Therefore, the current study aims to investigate client satisfaction with UCWS products in Hong Kong by finding its influential factors.

Design/methodology/approach

A systematic review was employed to first identify the influential factors. A semi-structured interview was employed to validate the reliability of the extracted factors. The machine learning algorithm Extreme Gradient Boosting (XGBoost) and the Pearson correlation were then employed to rank the importance and correlation of factors based on the 1–5 Likert scale scores obtained through a questionnaire survey.

Findings

The findings revealed that “reduction in construction time” and “reduction in construction waste” are the most important factors and have a strong positive influence on client satisfaction.

Originality/value

Unlike previous studies, the present study focused on a novel research topic and introduces an objective analysis process using machine learning algorithms. The findings contribute to narrowing the knowledge gap regarding client preference for UCWS products from both individual and collaborative perspectives, providing decision-makers with an objective, quantitative and thorough reference before making investments in the curtain wall management development.
