Abstract

Purpose

This exploratory study aims to integrate both quantitative and qualitative methods to examine the influence of contemporary university dining attributes and practices on student patronage.

Design/methodology/approach

First, a review of the extant literature on-campus dining in universities was conducted. Second, innovative practices of on-campus dining facilities of a large public university were identified. Finally, student perceptions of those practices were examined using a mixed method approach.

Findings

The review of literature uncovered 49 articles across 35 years on key topics such as food waste, healthy eating, and service evaluation. From site tours and interviews with related personnel, 40 innovative on-campus dining practices were identified.

Research limitations/implications

Importance ratings revealed cleanliness of the environment, fresh fruit and vegetables, and digitally enabled ordering, as the top three highest rated practices. Factor analysis unveiled six factors that students find important: food diversity, good standards, innovativeness, quick options, menu variety, and fish and seafood. The thematic analysis further revealed four overarching themes (convenience, familiarity, food offerings, and value) and 13 subthemes which complemented the quantitative results.

Originality/value

In addition to shedding post-pandemic light on students’ dining needs, it highlights the paucity of theory used to support extant studies and suggests a novel theoretical underpinning.

Abstract

Purpose

The purpose of this paper is to examine students’ attitudes toward sustainable dining. It aims to identify the level of importance that students place on specific on-campus sustainable dining initiatives and the factors that affect their attitudes and behaviors.

Design/methodology/approach

A random sample of 197 undergraduate students completed an online survey in the spring semester of 2020. The survey was divided into four sections: demographic and background information; familiarity with on-campus dining, specifically with sustainable on-campus dining initiatives; the level of importance placed on these sustainable practices; and practiced sustainable behaviors.

Findings

Many students placed a high level of importance on common sustainable dining behaviors and practices such as recycling, waste reduction techniques and the use of eco-friendly utensils. Sex was found to be a significant factor in determining students’ attitudes and behaviors. While men had a higher level of knowledge of on-campus sustainable practices at the dining facilities, women consistently placed a higher level of importance on almost all sustainable dining practices. Additionally, the study also found that signage was not an effective method of influencing behavior.

Originality/value

Previous studies that have explored this topic have been limited. Additional research is needed to ascertain if better knowledge of on-campus sustainable dining initiatives can influence students’ inclinations to act more sustainably.

Abstract

Purpose

The purpose of this paper is to determine the students’ perceptions of an on-campus foodservice operation at an identified historically black college and university (HBCU) and its effect on their satisfaction and dining frequency.

Design/methodology/approach

A survey of 685 students was conducted to collect data. Partial least squares based structural equation modeling is used to test the proposed structural model with SmartPLS 3.0.

Findings

Results confirm that quality of food, ambience, value for money, food and beverage options and service quality have a positively significant impact on students’ overall satisfaction with the on-campus foodservice operation and dining frequency. As such, all the hypotheses are supported.

Research limitations/implications

These findings indicate that on-campus foodservice operators should focus on quality of food, ambience, value for money, food and beverage options and service quality to achieve student satisfaction. This in turn could positively impact the institution’s reputation, student retention and the marketability of the institution to future students.

Originality/value

This study would help on-campus foodservice operators to better understand the impact of the various elements of foodservice experience which will lead to students’ overall satisfaction and dining frequency, particularly in a HBCU setting.

Abstract

Purpose

This study aims to examine student’s foodservice experience and its effect on satisfaction, dining frequency and expenditures.

Design/methodology/approach

A total of 674 samples collected at a large Malaysian private university were used for data analysis. Structural equation modelling based on partial least squares method was conducted.

Findings

Results confirm that student foodservice experience significantly influences satisfaction, dining frequency and dining expenditure. Furthermore, four first-order constructs (product component, service component, price component and healthy component) are also validated on the designated second-order construct (customer foodservice experience).

Research limitations/implications

These findings indicate that on-campus foodservice operators should focus on student experience and satisfaction to increase visits and expenditures.

Originality/value

This study would enable on-campus foodservice operators to have a better understanding of various dimensions of foodservice experience which will lead to students’ satisfaction and encourage the development of their visits and expenditure.

Abstract

Purpose

The aim of this study was to determine the levels of satisfaction (food quality, service quality, ambience, price and portion) among postgraduate Health Sciences students on the cafeteria facilities in Universiti Kebangsaan Malaysia (UKM), Kuala Lumpur Campus. In Malaysia, the total number of postgraduate in higher institution increase from 75,199 in 2007 to 85,236 in 2010, an increment of 12 per cent. The increasing numbers of higher education postgraduates on university campuses has unquestionably raised the expansion of demand for food service availability and quality on campus.

Design/methodology/approach

A self-reported questionnaire was to 86 subjects at Faculty of Health Sciences, UKM, from September to November in 2012.

Findings

The findings showed that ambience and service attributes turned out to be the most dissatisfied attributes. Malay and non-Malay post-graduate Health Science students showed no significant difference on the satisfaction toward the four attributes. Respondents believed that increasing menu variation and introducing franchise outlet were the two supplementary factors that may increase satisfaction level.

Research limitations/implications

The major drawback of this study is the inability to generalize findings to the students’ satisfaction toward UKM KL food service because data of the current study were only assessing postgraduate students.

Originality/value

The points developed from this study clearly indicate the level of satisfaction among postgraduate Health Science student against food service system in one of the famous research university in Malaysia, UKM.

Abstract

Purpose

Food waste represents a major sustainability challenge with environmental, economic, social and health implications. Institutions of higher education contribute to generating food waste while serving as models in championing sustainability solutions. An experiential learning project was implemented as part of two university courses in a buffet-style university dining hall with the objective to reduce food waste while building student capacity to contribute to transformational food system change.

Design/methodology/approach

Partnerships were developed with university dining services. Students were trained to conduct a needs assessment in a university dining hall through food waste measurements. Students were facilitated through the process of applying baseline data on food waste to design, implement and evaluate a multi-component food waste intervention that consisted of offering reduced portion sizes, use of smaller serving utensils and educational messaging. Participant reflections were elicited to evaluate the effectiveness of the experiential learning experience.

Findings

The food waste intervention led to a 17 per cent reduction in total food waste, with a large portion of waste attributed to post-consumer plate waste. While the reduction in food waste was not statistically significant, it highlights the potential for food service operations to address food waste through reduction techniques while providing students an experiential opportunity that meets multiple learning objectives including systems thinking, collaboration and motivation for leading change in the food system.

Originality/value

This study highlights the opportunity of building student capacity to address sustainability challenges through an experiential learning model for reducing food waste in an institutional setting that other educators can adapt.

Abstract

Purpose

The purpose of this study is to investigate whether length of time spent in the USA impacts perceptions of international students studying in US schools regarding the service and food quality of on‐campus foodservice operations.

Design/methodology/approach

The researchers surveyed international students at one Southeastern and one Southwestern university in the USA regarding their perceptions of university foodservice, divided into six factors, i.e. service and sanitation, food dislikes, selection and taste, drinks, value, and crowding. A two‐way MANOVA test was performed using SPSS Version 17.0 to identify any significant differences between the six factors, time in the USA, and universities.

Findings

MANOVA testing indicated that there was a significant difference between length of time in the USA and the ratings of the service and sanitation factor. The group that had been in the USA for less than six months rated the service and sanitation factor higher than the group who had been in the USA for over a year.

Research limitation/implications

Campus administrators and food service operators need to consider that the interaction and socialization provided by the on‐campus dining experience may be an important step of the adaption process for international students.

Originality/value

The study applies theoretical concepts regarding service quality and adaptation that have not been used previously to study international students and their on‐campus foodservice preferences.

Abstract

Purpose

This study explored how food allergies have affected food-related behaviors and quality of life of college students with food allergies and identified factors influencing food choice decisions among this group of individuals.

Design/methodology/approach

One-on-one interviews were conducted with 26 college students with self-reported or clinically diagnosed food allergies, recruited from two universities located in the southern region of the United States. The participants were asked a series of questions based on a semi-structured discussion guide. Each interview lasted about 30 min; all interviews were audio-recorded and transcribed verbatim. The transcriptions were coded independently by three researchers, and themes were identified.

Findings

Food allergies affected the participants' food-related behaviors, including eating, food preparation and shopping, as well as some aspects of their quality of life. Individual factors, such as mood, other diseases, cultural background and sensory properties, also influenced food choices. Friends and families were the two most important social influencers of food choices. Regarding physical environmental factors, cost, convenience, value and variety were considered important in selecting food. However, the participants' food choices were less influenced by food advertisements and social media. Additionally, experiences and complex cuisines were also key factors in making food choices.

Research limitations/implications

Theoretically, this qualitative study applied a food choice decision framework in the context of college students with food allergies. Practical recommendations are provided, particularly to campus dining facilities, to fulfill the needs of college students with food allergies.

Originality/value

This study advanced the understanding of the complexity of food choice decision-making among college students with food allergies. A path diagram specific to food choice among college students with food allergies was developed based on the results of this study. This study also highlighted that food allergy management would involve various behavioral changes and revealed that the food choices are influenced by a wide range of factors.

Abstract

Purpose

The purpose of this paper is to provide an in‐depth examination of the outsourcing of food services on a university campus.

Design/methodology/approach

The paper uses a detailed case study including interviews with university administrators, contractor administrators, and students and background information taken from student satisfaction surveys and local newspapers.

Findings

A new set of challenges has arisen – both for the university and the corporate partners providing the outsourced services. On the one hand, universities need to ensure the delivery of high‐quality services while operating under increasing fiscal pressures. And, on the other, corporate partners are dealing with unique issues at every different institution they serve, ranging from local competition to labor availability and serviceability and low margins, among others.

Research limitations/implications

This case study examines the events at one private university located in the mid‐Atlantic region in the USA. While many of the findings may be applicable in a variety of settings, it is not possible to draw direct inferences from a case study.

Practical implications

As outsourcing increases at universities, administrators need to consider the unique aspects of the local environment – with respect to labor availability and wage structure, the student population and their relationship with the contracted employees, the surrounding community and the interplay among the local residents, the contractor, and its employees – as they develop the contract and structure long‐term agreements.

Originality/value

Empirical studies have examined broad trends in outsourcing at universities; this research provides valuable insight into specifics – and the insights are instructive to administrators who are in charge of managing the outsourcing.

Abstract

Purpose

The purpose of this paper was to document the food-related environmental beliefs and behaviours of undergraduate university students. More specifically, this research was focussed on determining if environmental sustainability is a consideration in students’ food choices, identifying the specific choices and behaviours adopted to reduce their food-related environmental footprint, and documenting the role of gender and pro-environmental values in these food-related environmental beliefs and behaviours.

Design/methodology/approach

This research employed a mixed methods approach, i.e. focus group discussions and a survey, to document the food-related environmental beliefs and behaviours of undergraduate university students. The survey was informed by the results of the focus group discussions, and included standard measures of pro-environmental values and worldview.

Findings

Results from focus group discussions revealed a broad array of beliefs and behaviours related to the connection between food, food production and the environment. The survey confirmed these results, but indicated a preference for such actions as recycling and reducing food waste in contrast to such alternatives as reducing meat consumption or avoiding processed foods. These results suggest that educational campaigns could focus on strengthening beliefs about the food-environment connection, as well as help to empower students to take a greater variety of actions to reduce their food-related environmental footprint.

Originality/value

Relatively little attention has been focussed on individual beliefs and practices with respect to achieving more sustainable food consumption, particularly on university and college campuses. The research also represents a departure from previous work in that it utilizes both qualitative and quantitative methods, and takes a broad approach to the food-environment connection.
