Abstract

The labour market experience of graduates and diplomates is a subject currently being explored in the United Kingdom. Reports on the findings of a study undertaken in Northern Ireland with special reference to the hospitality industry. Examines graduate and diplomate opinions on the preparatory value of hospitality management courses and their perception of job quality. Found that graduates in particular feel overqualified because of a lack of opportunity to implement their knowledge and skills acquired and developed in higher education. Part of the problem appears to lie with the conflicting expectations of graduates and employers in the hospitality industry and argues that this could be overcome by forging greater links between the educators and employers. As one of the major challenges of the 1990s is the recruiting and retaining of graduates, hospitality employers must offer training which builds on the foundation laid in higher education.

Abstract

The Food Safety (General Food Hygiene) Regulations 1995 stipulate the need for the control of food hazards. One such measure which satisfies this requirement is the use of hazard analysis and critical control points (HACCP). Considers some of the problems that occur when HACCP programmes are introduced to catering establishments. Documents risks, hazards and critical control points in the case of a medium‐sized hospital in Northern Ireland. Cites monitoring and control procedures for the control of HACCP and proposes specific recommendations for future education and training.

In recent times the importance of training and education have been recognised as important tools to foster economic growth within companies and industries in the global marketplace. Unfortunately the UK hospitality industry in general has been unwilling to train and develop its managers. This paper examines the contract catering sector of the hospitality industry in Northern Ireland. It commences by investigating the educational qualifications and training of managers within the contract catering sector and then proceeds to discuss the transference of hospitality skills and practices.

Abstract

In recent times the contract catering sector of the hospitality industry has grown substantially in size and scope. However, there have been few management studies carried out within this market sector. This study aims to bridge this knowledge gap by determining the essential competencies required by contract catering managers. These results are then compared with how managers spend their time. The differences between contract catering sub‐sections are discussed, in addition to the differences between contract catering and other sectors of the hospitality industry. Concludes that there is a need to develop the knowledge and skills of contract catering managers to assist in bridging the current gap between industry and education.

Abstract

Architectural drawing is changing because architects today draw with computers. Due to this change digital diagrams employed by computational architectural practices are often emphasized as powerful structures of control and organisation in the design process. But there are also diagrams, which do not follow computational logic worth paying attention to. In the following I will investigate one such other kind of diagram, a sketch diagram, which has a play-like capacity where rules can be invented and changed as you go. In that way, sketch diagrams are related to steered indeterminacy and authorial ways of directing behaviour of artefacts and living things without controlling this behaviour completely. I analyse a musical composition by John Cage as an example of a sketch diagram, and then hypothesize that orthogonal, architectural drawing can work in similar ways. Thereby I hope to point out important affordance of architectural drawing as a ¬hybrid between the openness of hand-sketching and the rule-basedness of diagramming, an affordance which might be useful in the migrational zone of current architectural drawing where traditional hand drawing techniques and computer drawing techniques are being combined with each other.

Abstract

Previous research provides evidence for a conceptual distinction between self‐assessed and objective knowledge, and relatively little is known about the relationship between knowledge and information search. The current research provides empirical evidence for differentiating the two knowledge types. Furthermore, it suggests that the relative effects of the two types of knowledge on pre‐purchase information search depend on the type of information source. Consistent with prior research, this study shows that self‐assessed knowledge is strongly linked to the consumer’s use of personal sources of information, including internal memory searches and word‐of‐mouth communication. Conversely, objective knowledge seems to have a positive impact on the consumer’s motivation to seek external information (e.g. newspaper articles, mass media sources) about the service provider. Managerial implications for professional service providers are discussed

SEPTEMBER, as always, sees us contemplating our activities for the winter months. Exigencies of publishing compel us to write these notes a short time before that month begins, and our contemplation of things this year is coloured by the now rather remote possibility that September may bring the invasion that has been the shadow ahead for a year or more. To plan in a twilight time, as it were, is more than ordinarily difficult, and yet it is a commonsense and correct course to go on, not as if nothing could happen, but to the full extent of our means as they exist. Otherwise general paralysis would occur every time our statesmen warned us of possible attacks. There is no fear of such premature paralysis, however, as our people only want to be up and doing “with a heart for any date.”

Abstract

Purpose

In 2016, Santé publique France launched for the first time “Moi (s) Sans Tabac,” a positive social marketing campaign inspired by Public Health England’s “Stoptober” campaign, the aim being to trigger mass quit attempts among smokers. Both programs include a mass-media campaign, national and local cessation help interventions, and the diffusion of various tools to help smokers quit. The purpose of this paper is to analyze the two programs’, specific national contexts and to describe resulting similarities and differences regarding campaign development.

Design/methodology/approach

A contextual analysis was performed to determine differences between the two countries regarding smoking prevalence, health services and culture.

Findings

Smoking prevalence is about twice as high in France as in the UK, leading to a lower degree of de-normalization of smoking. Moreover, cessation support services are much more structured in the UK than in France: all health professionals are involved and services are located near smokers’ residences.

Practical implications

Campaign progress and cessation tools provided during both campaigns are quite similar. However, Santé publique France needed to adjust the British model by favouring a regional smoking prevention network and by building an innovative partnership strategy to reach the target.

Originality/value

The results could be useful for other countries that wish to develop a smoking cessation campaign based on the same positive messaging at local and national levels.
